GCH: What’s on Your Plate? – Crockpot Apple Oatmeal

I love this recipe!  You can throw all the ingredients in the crock pot before you go to bed and when you wake up in the morning, breakfast is ready!  I made this Christmas Eve night and we woke up to a wonderful smelling house and had a delicious breakfast ready to go!  Because who wants to cook on Christmas morning?  This would also be perfect for Sunday mornings when you don’t want to cook before church.

What you need:

Two sliced apples (I used Golden Delicious)

2/3 cup brown sugar

1 tsp cinnamon

pinch of salt

2 tbsp butter

2 cups oatmeal

4 cups water

crockpot

Directions:

Throw the sliced apples, the brown sugar, cinnamon, salt, and butter in the bottom of the crockpot.  Then pour in the oatmeal and then the water on top.  DO NOT STIR.  Cook overnight 8-9 hours on low.  Makes about 4 servings.  Depending on your tastes, you may need to add more sugar or butter to your individual serving 🙂

That’s it!  Easy peasy… and delicious!

FAN OR FOLLOWER? and MEET MISS RACHEL!

acceptJesus_NewHey ALL! It feels so good to blog again for my sweet friends at GCH: decaf!! I have been going through withdrawal! I hope everyone has had a beautiful Christmas and I pray everyone has a safe and happy evening ringing in the new YEAR! I am so pumped to start the not a fan study! I am even more pumped to introduce to you one of our very own Online Bible Study participants and my new friend, Rachel! If you are wondering what not a fan is all about and if you are just as excited as I was to get to know Rachel a little more then read on dear readers…
“not a fan”…those words bring back some really great memories for me! I did the not a fan study with my small group a while back. It was brought into my life at just the right time-thank you Jesus. It makes me laugh because as we were doing this study and even after it was over you could constantly hear me say to just about everyone I encountered that this study changed my life! Some friends constantly teased me that I was being so dramatic. However, what those friends seemed to not realize is saying that this study changed my life was an understatement. You see, during this study, I learned to let God into this study with me. I let God change me! People can think what they want, dramatic or not, when God changes you there is this huge desire you get to let everyone know what it is God has done in your life, right?
There were so many burdens in my life that I was carrying on my cross when I did this study. I wanted so desperately to be free from these burdens, but they were so much a part of me I did not know how to break free. Then, I did it. I followed God into therapy. I gave Him EVERYTHING even the parts of me I had been holding onto for so long for fear that if I gave them up I wouldn’t be “me” anymore. The best thing happened, I put everything that belonged on His cross there and I finally became the “me” I was so scared of becoming…the “me” that God created me to be. That same day I vowed to take up my cross each day and follow Jesus just like it says in the Bible in Matthew 16:24 Then Jesus said to his disciples, “If any of you wants to be my follower, you must turn from your selfish ways, take up your cross, and follow me.
This verse is mentioned a lot in the not a fan study. It is one of those verses that make you stop what you are doing and think to yourself, “am I a follower of Jesus? To be a follower we must turn from the things in our life that are keeping us from God, we must give up our entire life for God as He did for us on HIS cross that dreary day, and follow His desires and plans for our lives, follow His truth that is shared with us in His Living Word. Rachel explains this perfectly when I asked her what her thoughts were, so read on!
I can confidently tell you (without an ounce of convincing) that I am a follower of Jesus. Pre-study, I would not have been able to say that with confidence—can you see why I was so excited to share what God changed me to be through this study; one of his followers? Now, your turn, can you say with confidence and without an ounce of convincing that you surely are a follower of Jesus? Whatever your answer may be, I am excited to start this journey with you. A journey in which we give up our lives to receive God’s strength, healing, and freedom through what Jesus has done for us on HIS CROSS.
One of the girls going on this journey with us would be Miss. Rachel. I had so much fun talking back and forth with this amazing GOD GIRL earlier today. She inspires me. She is only 15 and ¾ (even though she told me 15 1/2) and she really gets God. She knows the importance of having a relationship with God and embraces that. I am so glad to have “met her” even though we have never really met! I had some very important questions to ask Miss. Rachel and it just so happens that through her answers I learned we have a lot in common (especially our frustration with prematurely hitting enter while sending a facebook message, they really need to change that)! Any time I meet a sister in Christ I can be guaranteed that we will have one thing in common: our love for Christ and that is just the best thing to have in common! Here is how our conversation went. Enjoy getting to know Rachel, she is one fascinating young lady! Thank you Jesus for bringing her to GCH: decaf!

ME: What is one thing that changed your life?
RACHEL: One thing… well I started going to World Outreach Church last May. At first I wasn’t excited, but I think it’s helped in my relationship with God, with me going there and stuff I hope that’s good!

A follower? Well we just talked about that last month at church. For me, I guess, a follower of Christ would be choosing to be like Him. Of course, perfection is out of the question but that doesn’t mean you can’t strive to make yourself better, with God’s help. A fan is “an enthusiastic admirer.” They aren’t willing to give EVERYTHING up for Him.
I do not think I could say it any more perfectly Rachel!! Thanks for sharing with us!! I had so much fun talking with Rachel. As we prepare our hearts for this study, I am excited to continue to get to know each and every one of you!

GCH: What’s on Your Plate? – SoupPalooza

One of my favorite ways to feed a crowd during the winter months is with a variety of soups. Warming, satisfying, healthy but oh so yummy soups! So, it was easy to figure out what was on the menu when I was planning for my extended family’s Christmas party.  I am blessed to have 7 siblings, almost all with spouses, 16 nieces and nephews (and 8 spouses, too) along with 5 great-nieces and nephews.  Unfortunately, some live quite a distance away—Oklahoma, Minnesota, Florida—and are not always able to join in the family gatherings. So this year we “only” have 26 expected to join us!  Wish I could show you a picture of us enjoying our soup & sandwich buffet!  May God bless you and all your lovies! <3

This soup is definitely in the ‘comfort food’ category—very creamy and full of flavor, while still healthy but oh-so-yummy!

Potato – Corn Chowder
makes approximately 8 servings

1/4# bacon, cut into 1″ pieces
1 tablespoon olive oil
2 large sweet (vidalia) onions, choppedpotatocornchowder
4 tablespoons (1/2 stick) butter
1/2 cup flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon dried thyme
12 cups chicken stock
2# peeled Yukon gold potatoes, cut into ½” dice (about 6 cups)
2 bags frozen white & gold corn (cut bags open to defrost)
1 cup half-and-half
1 can evaporated milk
1/2# sharp white cheddar cheese, grated
dried parsley

Cut bacon into 1″ pieces; use scissors to make this quick and easy. In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon and drain on paper towels; reserve.
Reduce heat to medium, add onions and butter to the bacon drippings left in the pot, and cook for 10 minutes ‘til the onions are soft and translucent. Sprinkle the flour, salt, pepper, and thyme over the onions; stir in and cook for 3 minutes. Slowly stir in 2 cups of chicken stock, mixing ‘til smooth. Then add the rest of the chicken stock and potatoes. Bring to a boil and simmer uncovered for 15 minutes, or ‘til the potatoes are tender. Add the corn to the soup, and bring back to a simmer. Reduce heat a bit, then add the half-and-half and milk; stir ‘til combined. Do not boil. Sprinkle cheese over soup; stir in. Cook for 5 more minutes over low heat just ‘til the cheese is melted. Season, to taste, with salt and pepper. Ladle into serving bowls or mugs; top with a bit of bacon and a pinch of parsley. <3

Some of you are probably familiar with a variety of soup that comes in a blue can made by a company that begins with a “P.” I just l-o-v-e that soup! But I don’t love all the sodium that is included in canned soup. So, I googled and tried recipes ‘til I found one that fit our healthy but oh so yummy criteria. We thoroughly enjoy this soup…hope you do, too!

Homemade Mini Meatball Soup (aka “Chickarina” soup)chickarina

Soup
2 tablespoons olive oil
2 tablespoons chopped garlic
2 carrots, peeled and chopped
2 ribs celery, chopped
1/2 medium onion, chopped
8 cups chicken broth, divided
2 cups water
2 cups “small” pasta (acini di pepe, ditalini, tubettini or even large coucous)
3 cups cooked chicken, diced
2 tablespoons dried parsley
kosher salt, ground black pepper to taste
1/4 cup grated Parmesan cheese (freshly grated, if possible)

Mini Chicken Meatballs
1/2 cup plain bread crumbs (I used gluten-free)
2 tablespoons dried parsley
2 tablespoons chopped garlic
1 large egg, lightly beaten
3/4 cup finely grated Parmesan cheese
3/4 each teaspoon kosher salt, freshly ground black pepper
1# ground chicken

In a large stockpot, heat olive oil over medium heat. Add onion and cook 5 minutes ‘til softened and translucent. Add the celery pieces and chopped carrots, and cook for 5 more minutes. Then add the chopped garlic and cook for 1 minute, stirring gently. Pour in 5 cups of chicken broth and the water, stirring well. Bring to a boil, reduce heat so that the broth is simmering. Add salt and pepper to taste (carefully!). Cover and let simmer away ‘til the other components are completed.
In a separate smaller pot, heat the remaining 3 cups of chicken broth to boiling; reduce heat to simmer.
Then in a medium bowl, stir together the bread crumbs, chopped garlic, parsley, Parmesan cheese, and salt & pepper; stir in the lightly beaten egg. Add the ground chicken and gently stir with a fork to combine.
Use a teaspoon measure to get an idea of how much mix for each meatball. Take a nice rounded teaspoonful for each meatball. With slightly damp (not wet) hands, roll the chicken pieces into mini meatballs. As you complete each mini meatball, carefully drop into the gently simmering chicken broth in the smaller pot. When you have added the final mini meatball to this pot, remove from heat and let sit for 10 minutes. Then pour into larger stockpot, broth and all, along with the diced chicken pieces.
Cook the pasta of your choice, according to package directions. Drain when done. Add pasta at the bottom of each soup bowl or mug, and then ladle your finished broth and ingredients over. (This is my personal preference…otherwise the pasta just continues to expand.) Sprinkle with a pinch of freshly grated Parmesan cheese…and enjoy!

Here is my biggest soup-making tip: make it ahead! The flavor is ALWAYS enhanced as the ingredients meld together as they rest.

GCH: What’s on Your Plate? – Norwegian Fattigman “Poor Man’s Cookie”

A few weeks ago, I posted a delicious recipe for Scandinavian Spritz and talked about the “syv slag kaker til Jul,” the seven cookies of Christmas. (You can click HERE to go to that post.) I am back this week with a second, and my favorite, Norwegian Christmas cookie… fattigman!

Fattigman is an ages-old Norwegian cookie that translates to “Poor Man,” and was named so either because purchasing all of these ingredients would’ve cost someone in the old country quite a bit of money, leaving them “poor,” or because sugar was so expensive in Norway that even a poor man (or woman) could afford to make these, since there isn’t much sugar used in these cookies. I’ll let you decide which version of the story you like better, but I grew up hearing the first version, and I’m sticking to it 😉

The recipe(s) for fattigman was brought to America by Norwegian immigrants in the 1800’s… my family included. Christmas just isn’t Christmas without these on the table, and they quickly disappear once put out! They’re traditionally rolled out, then cut using a fattigman roller. My grandmother, however, rolled them out and cut them in triangles, so that’s how we’ve always made them… no special cutter required! I hope you enjoy them as much as we do!

Ingredients:

  • 3 eggs, beaten
  • 4 T. heavy whipping cream
  • 3 T. powdered sugar
  • 1/2 tsp. ground cardamom
  • 1 T. brandy (optional)
  • 1/2 tsp. grated lemon rind
  • 1 1/2 – 2 c. flour
  • lard for deep frying

Directions:

  1. Mix all ingredients together, stirring in flour until dough becomes thick enough to knead. Dough will be slightly rubbery.
  2. Chill in the refrigerator for a few hours.
  3. On a floured cutting board, roll out dough (small pieces at a time) to 1/8″ thick.
  4. Cut in triangles.
  5. Fry in lard, which has been heated to approximately 350 degrees (F.) Dough will rise to the top. Turn dough over with tongs and fry to a very light golden brown.
  6. fattigman fryingRemove from lard and place on a cookie sheet covered in paper towels.
  7. Generously sprinkle both sides of cookies with powdered sugar.
  8. Store in airtight container on counter or in pantry.

Notes:

  • This goes much faster with 2 people making the fattigman. One person to roll out and cut cookies, and one person to fry them.
  • The cookies are very fragile (and VERY yummy!)

GET READY!!!!! 2013 is Almost Here

Welcome Back, EVERYONE!!!  2013 is almost here and we are READY to get started in a BIG way.  We just completed our very first online Bible study of “A Daughter’s Worth” by Ava Sturgeon.  We had approximately 30 girls and lots of women participating in our ministry in 2012.  As our study came to a close, we were looking forward to Christmas and then the New Year.  We had time off from school for winter break in the United States and summer break in South Africa.  Is that not a wild concept???  Christmas is still Christmas, but it’s winter on one side of the world and summer on the other!  We have gone from a brand new online ministry to a ministry that is being read and has participants in over 100 countries across the globe.  God is SOOOOO good!

Do you think that when Jesus told the disciples to “Go and Tell the World” he would know that we would have the internet and Facebook and friends all over the world that are as close as our keyboards and phones?  The original disciples and followers of Jesus walked from city to city.  They floated a boat from coast to coast.  It wasn’t as easy to tell the world about Jesus as it is today, BUT THEY DID IT!!!  You know how I know they did it?  Because if they hadn’t, you and I would not know the name JESUS.  We would not be here, in this place, in this time if the followers of Jesus had not GONE and TOLD about the Savior of the World.

Over the next few weeks, the month of January, we are going to get to know each other.  We are going to see just how much we have in common, no matter where we live.  The central, most important thing we have in common is JESUS.  I want to “hear” you guys talking and getting to know one another.  I have had the chance to “meet” some wonderful friends here at Girlfriends Coffee Hour and my teen friends here at GCH:decaf are THE BEST!  I have even gotten to meet some of the girls and ladies face-to-face.  That has been so much fun.  Megan, Tina and I are going to start meeting with girls in our area to help the friendships grow.  I want you guys to form your own groups and send us pictures, videos and stories of how you are sharing GCH:decaf and Jesus with your friends and your community.  Jesus said, “Go and Tell the Good News”.  Let’s DO IT!!!

We are going to be studying the teen book “not a fan” by Kyle Idleman and working through the teen edition Follower’s Journal.  You will need both books to keep up and get the most out of our study.  We are going to look at our relationship with Jesus and see what our relationship status is.  The book starts out telling us that believers fall into TWO (2) categories:

1.  The “I Like Jesus on Facebook” group, and

2.  The “Why does Facebook even ask about religion?” group.

I liked this book from the start.  No nonsense, no church-y words, just real life.  We are going to learn a new term:  D.T.R.  (Define The Relationship).  Every girl knows that when you have a crush you want to know if that special someone likes you too.  It doesn’t take very long before you want to define the relationship (know where you stand).  We are going to do that with our relationship with Jesus, too.  He already knows how HE feels about us.  He loved us so much that he came to earth as a baby (Christmas) and died (Easter) for our sins so that we can live with Him forever.  While He was here, he taught average, normal, lost people about himself and His Father in Heaven.  Then He told them to spread the word.  The story of Jesus started with 12 disciples who followed Him and has grown to believers that cover the globe.

As we finished the study of “A Daughter’s Worth” by Ava Sturgeon, we hope that you have a better understanding of who you are to God and why Jesus came to save you.  Some of you shared how your lives were being changed and we are very thankful for that feedback and for the difference Jesus makes in your life.  The leaders were definitely changed and grew closer to the Lord and each other through this study.  We ask you to go a little deeper and define your relationship with Jesus.  Find out just how deep your crush on Him goes.

In addition, we are going to have TWO (2) age groups in GCH: decaf.  The older group will have ladies from 18-24 years old and we call them VENTI.  The younger group is for young ladies 12-18 years old and is called GRANDE.  We want you all to feel comfortable talking about relevant life issues in an age appropriate way.  The fellowship group is open to all ages, so we will get to “see” all our friends and chat and giggle with each other.  Tell all your friends.  There will be a contest coming in January and the student with the most referrals gets cool prizes.  The leaders are already recruiting and want to compete too (SMH, smh).

I cannot tell you all just how excited we are to be offering “not a fan” beginning Monday, February 4th, 2013!!!!!  My relationship with JESUS is the most important one in my life.  I hope you D.T.R. and see that it is the most important in yours as well.  Get your books.  Begin READING the RED book and we will begin the Follower’s Journal on February 4th.  Same great bloggers, same great schedule.

GCH:What’s on Your Plate? – Uncle Everett’s Coffee Cake

Note from my Aunt Phyllis:
Everett started making this, several years ago, when our family was small enough that one cake was enough to go around!! Now, he has to make two of them!! Every Christmas Eve, before noon, you can find Everett and I in the kitchen making this recipe.  We have this after Midnight mass, along with Pork Roast sandwiches for the family. Everett wouldn’t think it was Christmas if we didn’t fix a pork roast for breakfast!! That was the tradition in his family and we have continued it into ours.

I asked if my Aunt would mind if I shared her and Uncle Everett’s recipes here on our blog, and she said, “I would be honored!”  So here go…. Uncle Everett’s Coffee Cake!! 🙂  ENJOY!!

Uncle Everett’s Coffee Cake

Ingredients:

For the Dough:
2 pkgs–dry yeast
1/4 cup–warm water
1 cup–scalded milk
1/2 cup–shortening
2 teaspoons–salt
1/4 cup–sugar
2 well beaten–eggs
4 1/2 cups–flour

Honey Nut Filling:
1/2 cup honey
1/4 cup sugar
grated rind of 1 orange
1 Tablespoon orange juice
1 teaspoon–cinnamon
1/3 cup chopped raisins
1/3 cup chopped nuts
1 Tablespoon melted oleo
.
Glaze:
1/2 cup honey
1/2 cup sugar
1 Tablespoonmelted oleo
1 Tablespoon grated orange rind
.
Directions:
Dissolve yeast in warm water. Scald milk. Add the shortening, sugar and salt. Stir until the shortening is melted. Add the yeast mixture and the eggs. Beat well. Add flour and knead until smooth.(This is a very soft dough). Place in an oiled bowl and allow to double in bulk. Punch down and let rise for another 10 minutes. (Use a generous amount of flour when you roll this, as it is very sticky).

Divide the dough in two parts and roll each, to 1/2 inch thickness. Brush with melted oleo and cover with the Nut Filling. Roll like a jelly roll and slice in 1 inch slices. Arrange, in an oiled tube pan, in layers. Allow to rise until doubled. Bake at 350 degrees for 45–60 minutes. Cool in the pan. Remove and pour the heated glaze over the top and a bit on the sides.

Lord, Teach Us to Pray – Week 13

Last week we concluded our series on prayer entitled Lord, teach us to pray! Each week we asked with that same desire as Jesus’ disciples did — ”Teach {me} to pray.” And graciously He did, didn’t He? This week, I would like to join in as we finish this part of our journey together.

We have now completed our study A Daughter’s Worth from the book by Ava Sturgeon. All week we have been focusing on God and the optimism that our hearts have as we do so. We have been SO encouraged and exhorted!

  • On Monday, Diane shared about giving honor and praise to God.
  •  On Tuesday, Teresa reminded us that God is holy and that we can live holy lives.
  •  On Wednesday, Jordan talked about having happiness and joy.
  •  On Thursday, Tonya communicated about trusting in Him, knowing He cares for us.
  •  On Friday, Tina shared about our eternal Hope of life with God.

As such our focus has been all about God!  Nothing wrong about that, hmmm?  Every day we have so very much to be thankful to God for and to voice our praises to Him!  Whether by ourselves in our own hearts as we pray…or when we fellowship in our small groups or Bible studies (like this one!)…or perhaps when we gather to corporately praise and worship in the churches we belong to…we are living our lives right NOW praising our God and our Lord. AND we look forward to raising our praises forever! That’s right…we will be right along with the angels and the host of heaven!

Revelation 5:11-14
Then I looked, and I heard the voices of many angels on every side of the throne and of the living creatures and the elders, and they numbered ten thousand times ten thousand and thousands of thousands,  Saying in a loud voice,  Deserving is the Lamb,  Who was sacrificed, to receive all the power and riches and wisdom and might and honor and majesty (glory, splendor) and blessing!  And I heard every created thing in heaven and on earth and under the earth [in Hades, the place of departed spirits] and on the sea and all that is in it, crying out together, To Him Who is seated on the throne and to the Lamb be ascribed the blessing and the honor and the majesty (glory, splendor) and the power (might and dominion) forever and ever (through the eternities of the eternities)!  Then the four living creatures (beings) said, Amen (so be it)!  And the elders [of the heavenly Sanhedrin] prostrated themselves and worshiped Him Who lives forever and ever.

We SO look forward to this time…it is our HOPE!  We wait for the return of our Lord to gather His church together.

Revelations 22:20,21
He Who gives this warning and affirms and testifies to these things says, Yes (it is true). [Surely] I am coming quickly (swiftly, speedily). Amen (so let it be)! Yes, come, Lord Jesus! The grace (blessing and favor) of the Lord Jesus Christ (the Messiah) be with all the saints (God’s holy people), those set apart for God, to be, as it were, exclusively His). Amen (so let it be)!

Yes, come, Lord Jesus, come! Amen!

In this final week of our study A Daughter’s Worth, we have focused on living optimistically because of how great our God is…honoring and praising Him…living holy because we CAN BE holy…having true joy…resting in Him, trusting Him…looking forward to eternal life with Him. All of which are great reminders of how much worth we truly have!

Instead of a question this week, I ask you to proclaim this TRUTH,  ‘I, _________ (insert your precious name here) am a daughter of the Most High God, and to Him I am of SUCH worth! One way in which my Father shows me just how much worth I have to Him is ________________________________!

GCH: What’s on Your Plate? – Rice Pudding

Rice pudding is one of those comfort foods that my family really enjoys throughout the year, but especially at Christmastime. One Norwegian tradition we keep in our home is to serve rice pudding on Christmas Eve. An almond is hidden in one person’s pudding, and the lucky person who gets it, gets a marzipan pig! (Much like the German tradition of hiding a pickle ornament in the Christmas tree – another tradition of ours!) It’s a fun way to create memories, and we get to enjoy eating this yummy dessert at the same time!

Ingredients:

  • 3 eggs, beaten
  • 2 cups whole milk
  • 1 1/2 cups cooked rice
  • 1/2 cup granulated sugar
  • 1 1/4 tsp. pure vanilla extract
  • 1/2 tsp. salt
  • a mixture of ground cinnamon and sugar
  • Reddi Whip or light cream (optional)

Directions:

  1. Preheat oven to 325 degrees (F.)
  2. Combine eggs, milk, rice, sugar, salt, and vanilla in a bowl and mix well.
  3. Bake in an 11×7 baking dish for 20 minutes.
  4. Remove from oven. Lightly sprinkle with cinnamon sugar. Stir well.
  5. Return to oven and bake for another 25 minutes.
  6. Remove from oven. Put into individual serving dishes. Chill well in the refrigerator.
  7. Before serving, sprinkle the top with cinnamon sugar. You may also top with Reddi Whip or a little bit of light cream.
