GCH: What’s on Your Plate? – Norwegian Fattigman “Poor Man’s Cookie”

A few weeks ago, I posted a delicious recipe for Scandinavian Spritz and talked about the “syv slag kaker til Jul,” the seven cookies of Christmas. (You can click HERE to go to that post.) I am back this week with a second, and my favorite, Norwegian Christmas cookie… fattigman!

Fattigman is an ages-old Norwegian cookie that translates to “Poor Man,” and was named so either because purchasing all of these ingredients would’ve cost someone in the old country quite a bit of money, leaving them “poor,” or because sugar was so expensive in Norway that even a poor man (or woman) could afford to make these, since there isn’t much sugar used in these cookies. I’ll let you decide which version of the story you like better, but I grew up hearing the first version, and I’m sticking to it 😉

The recipe(s) for fattigman was brought to America by Norwegian immigrants in the 1800’s… my family included. Christmas just isn’t Christmas without these on the table, and they quickly disappear once put out! They’re traditionally rolled out, then cut using a fattigman roller. My grandmother, however, rolled them out and cut them in triangles, so that’s how we’ve always made them… no special cutter required! I hope you enjoy them as much as we do!

Ingredients:

  • 3 eggs, beaten
  • 4 T. heavy whipping cream
  • 3 T. powdered sugar
  • 1/2 tsp. ground cardamom
  • 1 T. brandy (optional)
  • 1/2 tsp. grated lemon rind
  • 1 1/2 – 2 c. flour
  • lard for deep frying

Directions:

  1. Mix all ingredients together, stirring in flour until dough becomes thick enough to knead. Dough will be slightly rubbery.
  2. Chill in the refrigerator for a few hours.
  3. On a floured cutting board, roll out dough (small pieces at a time) to 1/8″ thick.
  4. Cut in triangles.
  5. Fry in lard, which has been heated to approximately 350 degrees (F.) Dough will rise to the top. Turn dough over with tongs and fry to a very light golden brown.
  6. fattigman fryingRemove from lard and place on a cookie sheet covered in paper towels.
  7. Generously sprinkle both sides of cookies with powdered sugar.
  8. Store in airtight container on counter or in pantry.

Notes:

  • This goes much faster with 2 people making the fattigman. One person to roll out and cut cookies, and one person to fry them.
  • The cookies are very fragile (and VERY yummy!)

Saturdays with Shandy: Christmas Edition! “Tea-Stained” Fabric

This week and next is a two-part project. This week I am teaching you how to make the  “tea-stained” fabric that you will need for next week’s Prim Christmas Stitcheries. This is one of my favorite craft projects to do. It’s easy, smells wonderful for years, and looks beautiful.

What You Will Need:

  • muslin fabric (I dye 1 yard at a time)
  • cheap instant coffee
  • cheap imitation vanilla extract
  • cinnamon
  • large pot
  • large cookie sheet

Directions:

  1. Fill a large pot with water (approx. 5 cups) and heat on the stove to boiling.
  2. Remove from heat and add 1/3 c. vanilla extract, 2 cups of instant coffee, and 1/4 c. cinnamon to the water.
  3. Put the fabric in the pot and let sit for an hour.
  4. If you want a “grubbier” textured fabric, you can rub cinnamon directly into the fabric as well, after you take it out of the pot.
  5. Gently wring out, then hang to dry, or place fabric on a large cookie sheet and bake on low heat (200 degrees F) for a few minutes. You will need to stand by and watch the fabric so it doesn’t burn. This is my preferred method, and it makes for a slightly stiffer fabric as well.

Tips:

  • You can make more stained fabric with the remaining mixture, or put it in a container and refrigerate to reuse later.
  • This fabric is wonderful for all sorts of craft projects, especially for those like me who love primitive country decor.
  • I buy my coffee, cinnamon, and vanilla at dollar stores. No need to spend money on good ingredients!
  • I never pay full price for fabric! The popular craft stores have apps with 40% off coupons!
  • I also dye embroidery floss to give it a muted or aged look, and just put it on a plate to dry. Works well for lace, too!
  • Use for craft fabric only, and not for garments, as it will at least partly wash out.
  • I once dyed a shower curtain in the bathtub using the mixture, leaving it in for a few hours, and it came out beautifully. I just hung it to dry! When it came time to wash it, I washed it in COLD water, and it preserved some (but not all) color.

This opens up a whole new world of crafting. Have fun with it! The possibilities are endless!

GCH: What’s on Your Plate? – Old-Fashioned Scandinavian Spritz

No Christmas in our home is complete without Scandinavian Spritz (Sprits.) I’m of Norwegian and Swedish descent, and grew up in a family that was mighty proud of its heritage. As a child, we always had two kinds of Scandinavian cookies at Christmas time – spritz and fattigman – but I’ve learned a lot in my adult years about a “proper” Norwegian Christmas, and to do it right, the hostess must offer the “syv slag kaker til Jul,” the seven cookies of Christmas. Yes, seven! Fortunately, Norwegian housewives know how to take a few basic ingredients and turn them into something delicious, and spritz are no exception. They’re also one of the easiest to make, and don’t require any special tools (like some of the other Norwegian cookies) other than a cookie press.

Ingredients:

  • 2 sticks salted butter, softened
  • 2/3 c. sugar
  • 3 egg yolks
  • 1 tsp. pure vanilla extract
  • 1 tsp. pure almond extract
  • 2 1/2 c. unbleached flour
  • food coloring

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, cream softened butter and sugar.
  3. In a separate small bowl, whisk the 3 egg yolks.
  4. Mix the vanilla and almond extracts into the egg yolks.
  5. Add the yolk mixture into the bowl with the butter and sugar, and mix well.
  6. Add flour, one cup at a time, into the mixing bowl. Combine well.
  7. Divide dough into smaller bowls. (I wanted to make three different colors of cookies this time, so I divided the dough equally into three separate bowls.)
  8. Add a few drops of food coloring into each bowl to make colored dough. Mix well.
  9. Using one color at a time, put dough into a cookie press and press cookies onto an ungreased cookie sheet in the shapes of your choice. (*Tip: I have found that a chilled cookie sheet works best, so I stick mine in the freezer for 5 minutes before pressing the cookies.)
  10. When your cookie sheet is full, bake in oven for approx. 8 minutes, until the cookie is just slightly golden. The cookie will be very soft the touch, but will firm up just a bit while cooling.
  11. Remove cookie sheet from oven, and allow cookies to cool for a couple minutes.
  12. Using a spatula, carefully remove cookies and place on a cooling rack.

*I used a little bit of leftover dough to make the candy canes in the picture, just to see if it would work. If you do make a few cutouts with this dough, you will need to be very careful, as it’s a very soft dough. Using the cookie press is much better, and is the traditional way.

Saturdays with Shandy: Christmas Edition! Cinnamon Applesauce Ornaments

I have such fun decorating our family’s Christmas trees. Yes, TREES. Plural. We have our big tree that is beautifully decorated in our front room, and we have two smaller trees… a Norwegian and Swedish tree in our dining room, and our kitchen tree, decorated with miniature kitchen utensils and cinnamon applesauce ornaments – which I am going to teach you how to make today! They are very simple, last for years, and make the house smell wonderful! And who doesn’t love a spicy aroma wafting from the kitchen this time of year? It just shouts Christmas! By the way, kids of all ages will have fun joining you in the kitchen to make these, so let them help, and make some memories together!

Here’s what you may need to pick up at the store if you don’t have them on hand:

Applesauce. Cinnamon. Cookie Cutters. Material Scraps or Twine.

Easy, right? Let’s get started!

Directions,  adapted from McCormick.com:

  • Preheat oven to 200° F.
  • In a bowl, mix together 3/4 c. applesauce and 1 cup + 3 T. cinnamon until well incorporated and smooth.
  • Sprinkle cinnamon on a cutting board, and roll out dough to 1/3″ thickness.
  • Cut out with small cookie cutters.
  • Carefully place cut outs on an unprepared cookie sheet.
  • Using a straw, poke a hole at the top of each ornament, as shown in the picture at the top.
  • Bake in oven for 2-1/2 hours, until hard. I kept mine in for an additional 15 minutes.
  • Cool on a wire rack.
  • Cut or tear strips of muslin, homespun, or twine for each ornament. I used coffee-stained muslin. Mmmm, smells delicious!
  • Place a strip through the hole of each ornament and knot at the top.
  • Hang on tree!
  • These will last for years if stored carefully in an airtight container!
  • Note: even though these are made with just applesauce and cinnamon, they are not edible. Trust me 😉

Here is a picture of my kitchen tree. It’s a work in progress… needs primitive grungy lights, another strand of red beads, and a few more handmade ornaments yet, but I wanted to give you a peek at what I do with my applesauce cinnamon ornaments!

Saturdays with Shandy: Christmas Edition! All That Glitters…

I just LOVE glitter. I love the way it sparkles, and I especially love the way it shimmers in the light. And Christmas lights? Even better! I found three fun and simple Christmas crafts that are not only beautiful, but they won’t break the bank either! Time to get our glitter on, girls!

Shopping list:

  • Glitter in your choice of colors (I love the Martha Stewart glitter from Michael’s!)
  • Clear ornaments
  • Pledge Floor Care Finish
  • Faux fruit (I like using all pears as shown in the picture. Check your local dollar store!)
  • Glue
  • Small brush to apply glue
  • Clothespins
  • Double-stick tape

You’ll also need:

  • Scissors
  • Workspace covered with newspaper

Ornaments – You can find the tutorial at Plum Adorable. I will be making several of these! They would make wonderful gifts as well!

Fruit – You can see the picture at Iowa Girl Eats. This is a very easy craft. Simply brush with glue, sprinkle with glitter, and let dry! Then display them in a bowl or basket, and you have a classy centerpiece! Mine are going to be done in a champagne colored glitter. Very classy, indeed!

Clothespins – You can find the tutorial at Posh Little Designs. Use these to hang Christmas cards from garland on a mantel or bannister, or from ribbon or twine. I’ll be using these (all in gold!) to hang the cards I get this year from the garland on our bannister. It’s going to be beautiful!

When do you start decorating for Christmas? I always get my decorating done the day after Thanksgiving, and everything stays up until the end of January. Saturdays with Shandy: Christmas Edition! Distressed Wooden Sign

It’s beginning to look a lot like Christmas! If you joined us during our last six weeks, your house is sparkling clean and organized! The hard work is behind us; now it’s time to have fun! For the next five weeks, we will meet here every Saturday for tutorials on homemade Christmas gifts, crafts, and decorating! Turn up the Christmas music, and let’s get started!

This week, we are making distressed wooden signs. I’ve been making signs for years, and they are wildly popular! You can make them in any size and color you want, and with any name or quote you’d like! The versatility makes them not only beautiful decor, but wonderful gifts as well… and inexpensive, too!

Materials:

  • wood (reclaimed wood, pallets, or pre-cut wood from a home improvement store)
  • base color paint (color of your choice) I used a barn red acrylic paint from the craft store. Only $1.19, yay!
  • lettering paint (color of your choice) I used black acrylic paint from the craft store.
  • paint brush
  • stencil sponge (spouncer)
  • paper plates
  • letter stencils
  • fine grit sandpaper
  • sawtooth picture hangers (1 or 2 depending on size of sign. Nails are included.)
  • hammer
  • hair dryer
  • newspaper or paper bags

Instructions:

  1. Put your piece of wood on top of newspaper to protect your table. Make sure it is free of dust and DRY. If it’s too rough, you will need to sand it down a bit, and then wipe away the dust.
  2. Shake your base color paint and squirt a good amount on a paper plate (you may want to double up the plates.)
  3. Using a dry paint brush, paint the top and sides of the sign. The key is thin layers! You don’t want drips or dollops.
  4. Allow to dry. I’m impatient, so I use a hairdryer on low to dry the paint. It only takes a minute or two this way.
  5. Paint a second thin coat on the sign, and dry.
  6. Lay out your stencils… planning is important! You don’t want to run out of room with a letter or two to go! For this reason, it’s good to know what you want your sign to say BEFORE you buy your wood.
  7. Shake your lettering paint and squirt a small amount on a new paper plate.
  8. Press your spouncer in the paint, then press it down on a clean part of the plate. Again, you don’t want to put too much paint on your sign, and you don’t want your paint to seep under the stencil.
  9. Place your stencil on the wood, and holding it perfectly still, in an up and down motion, use your spouncer to paint each letter. You will need to use the hair dryer to dry each letter before moving on to the next one, and when removing your stencil from the wet paint, carefully lift it UP. Do not slide it off.
  10. Continue stenciling your letters until your name or phrase is complete.
  11. When the sign is completely dry, take the fine grit sandpaper to distress the sign, especially the edges and at random spots on the front of the sign. The goal is to make it look aged and the letters somewhat faded.
  12. Using a soft cloth, remove any trace of dust from the sign, then nail the picture hangers onto the back of the sign… either one in the middle, or one on each end. Your sign is now ready to hang, or to give away as a gift!

Saturdays with Shandy: 6 Weeks to Make Your Home Shine for the Holidays! Week Six

Congratulations! You made it to week six, and by Friday your home will be clean, organized, and ready for the holidays! This week we are organizing the office/craft room, and cleaning the laundry room. You’ll also have two days to work on any additional spaces that need cleaning, and to catch up on anything you may have missed.

I’m so excited about getting started, we’re going to get right to it! But first, I just want to quickly thank you for following us these last six weeks, and let you know what we’ll be doing in the upcoming weeks… You are invited to join us for our next series starting next Saturday – “Saturdays with Shandy: Christmas Edition!” That’s right – on to the fun stuff! Today & Monday – If Mt. Washmore has formed in your laundry room, today is the day to catch up. Wash, dry, fold or hang, put away, and repeat until Washmore is no more. Then, it’s time to clean, clean, clean! Laundry rooms can quickly become dusty, cluttered messes if you don’t take care of them. Toss old detergent and fabric softener containers, and clear away any clutter. I like everything to look pretty, so I use baskets to hide unpretty things and a glass container for my homemade detergent. I’m so blessed to have my grandma’s big wicker laundry basket, as well. It makes doing laundry more pleasant. Special even.

Let’s move on to the deep cleaning. By now, you are a pro at this! You know the drill… wiping down shelves, walls, light fixtures, etc. Just save the floor for last, because I have a couple projects for you to do first… cleaning your washer and dryer. And I’m willing to bet you know my next words. That’s right! Check out our Saturdays with Shandy Pinterest board for the how-to. You’re so smart!

All done? Ok, NOW you can clean the baseboard and floors. P.S. That homemade laundry detergent I mentioned… I will be blogging about it on my personal blog at the end of next week. Check it out! I will never go back to my old favorite. It’s that awesome.

Tuesday & Wednesday – We are deep cleaning the craft room and/or office today, just as we’ve done the last five weeks in the other rooms of our homes. And it’s time to get our paper and craft clutter supplies under control.

Paper is my downfall. I am a recovering paper hoarder, really. Fortunately, when I moved last month, I recycled mountains of papers and magazines that I told myself I would use someday. But it created more problems than it was worth. Organization became more important than the stacks of craft magazines, project and decorating ideas, and receipts from years ago. Learning to file things right away, in the right place, and knowing how to discern what to keep and what to throw away is the first step. Check our Pinterest board on Tuesday for some awesome solutions to your paper dilemma! I will have what I’ve found to be the best tips on there.

We also have some ideas for you now about how to organize your craft room. I’ve gone from having bags full of yarn in the closet, to having them organized by color on a shelf. Cute and functional! The key to any kind of organization is, “a place for everything, and everything in its place.” Use baskets and decorative boxes whenever you can, and your home will not only be organized, but beautiful, too.

Saturdays with Shandy: 6 Weeks to Make Your Home Shine for the Holidays! Week Five

Wow! Can you believe week five is already here? The main living areas of your house must be looking fabulous! This week we are working on bedrooms and bathrooms. Then, for our final week, we’ll be organizing the office/den/craft room – whichever you have! – and cleaning the laundry room. Plus you’ll have two days to work on any additional spaces that need cleaning, and to catch up on anything you may have missed. Let’s finish strong so we can move on to the fun stuff: decorating and making gifts!!!

Let’s talk a little about how our families help around the house. I have a 12 year old daughter. She is old enough to keep her bedroom and bathroom clean, but still needs me to remind and encourage her on a regular basis. She may not clean and organize it exactly how I would, but it’s important that we let our children be responsible for their own belongings. It’s also important that we give our children proper instruction. If we tell them to do something, but don’t take the time to teach them how, we can’t get frustrated when the results are not what we expected. When cleaning the bedrooms and bathrooms in your house this week, please don’t do it all by yourself if you have children at home. Even preschoolers can (and should!) help keep their rooms clean! Today –  Break out those rubber gloves, girls. We’re deep cleaning the bathrooms today! This is an important day, I kid you not. A pristine powder room is a must, especially when you have company coming over for holiday celebrations! Because there are so many things I want to share with you about cleaning your bathrooms, please head on over to Pinterest for everything you need to know to do the job, and do it well.

Monday – Today, we are showing our master bedroom some love. I could do a whole post on just this room alone! Your bedroom is your own private retreat. Do you treat it as such, or is it a catch-all? Let’s work on making it a serene, inviting, romantic place to be.

Let’s start by stripping the bed of all linens, including the mattress cover. Throw them in the washing machine so it can work while we work. Next, take down your window treatments and blinds. Wash your blinds (remember, there’s an excellent way to do this… see the post on Pinterest!) Wash your window treatments once your bedding is done.

If there’s anything on your floor, or clutter on your dresser or nightstand, pick it up and put it away. We don’t want to clean around “stuff.” Once everything is picked up and organized, we’ll move on to dusting…

Dust your ceiling fan (check our Pinterest board for the how-to!) Then dust the furniture, lamps, clocks, and decor. Wipe down walls, light switches, trim, and baseboards. Clean your light fixture, then wash the windows and mirrors. (My husband and I agreed not to have a television in our bedroom, but if you have one, now is the time to clean it. Don’t forget to clean your remote, too!)

Before making your bed, check out Pinterest to find out how to clean your mattress. Very important step! Vacuum (be sure to move your furniture!) or sweep & mop if you have hardwood. Then, make your bed, taking the time to make it look nice!

Now let’s clean those closets! You guessed it! Check our Pinterest board! (I’m telling you… it’s absolutely awesome!) When you’re done, put your window treatments back up, light a candle, and invite your hubby in to look at what you’ve accomplished!

Tuesday –  Moving on to bedroom #2… Since you’ve mastered the master bedroom, you’ll know what to do for the other bedrooms in your home! 🙂 Check out Pinterest for tips especially for children’s rooms and guest rooms.

Wednesday – Bedroom #3 is next. (If you don’t have a 3rd bedroom, you can catch up on anything you’ve missed, or work in an area of your house, like the basement, that we’re not covering during these six weeks.)

Thursday – Today, we’re working on bedroom #4. (See Wednesday’s assignment if you don’t have a 4th bedroom.)

Friday – Catch up on anything else you haven’t completed. Smile at a job well done, then enjoy your evening!

Saturdays with Shandy: 6 Weeks to Make Your Home Shine for the Holidays! Week Four

I am so excited! We are halfway there, and already the hardest part is behind us! That’s very encouraging!

As I write this, I am listening to my Michael Buble© Christmas album. I am feeling joyful, at peace, and excited for Christmas as I listen to my favorite crooner sing “Have Yourself a Merry Little Christmas.” There is nothing like Christmas. It makes me overflow with happiness and nostalgia.

Speaking of Christmas… it is less than 2 months away! Time to start planning if you haven’t already, so today, after you read your cleaning assignments for the week, be sure to head over to our Facebook group for some free printables to help you get ready! (I just love printables. It’s an addiction, really.)

In week one, I had you get a 3-ring binder. You will start to put it to good use today! And be sure to share your pictures from this past week! We want to “oooh!!!” and “ahhhh!!!” over your organized pantries and sparkling appliances!

Lord, as we prepare our homes in anticipation of Thanksgiving and Christmas celebrations, let us do so with joy in our hearts. We know you love a cheerful giver, and it’s my prayer that as we make out our gift lists, you put it on our hearts to happily give to those in need, Lord. Christmas isn’t about the latest gadgets and games. Help us to keep the focus on You, Jesus. Help us to remember the “Christ” in Christmas. Give us the desire to serve others and to help spread Your love and the joy we have because of You. In Jesus’ name, Amen.

Your assignment:

Today – Time to clean out those kitchen cabinets. Take everything (yes, EVERYTHING) out of your cabinets and put them on your table or kitchen island. Use hot, soapy water or cleaner of your choice to clean the insides of your cabinet. Then take a clean towel to wipe them dry. Put in new shelf liner if you wish. Throw out all the things you never use. (How many empty whipped cream containers does one need anyway?) Then put everything back, organizing as you go.

Monday – Today we will tackle our kitchen drawers. Follow the same procedure for cleaning the cabinets. Be very selective in what you choose to put back in the drawers. A place for everything and everything in its place. Make that your mantra, and you won’t have a junk drawer.

Tues – Now that the insides of our cabinets and drawers are clean and organized, we are going to focus on the outsides. Get some hot, soapy water to clean them. Don’t forget the top of your cabinets and any decor that’s up there! Dry with a clean towel. And to really make a difference, use your favorite oil, or product like Old English furniture polish, to make them shine! (There is a DIY furniture polish on our Pinterest board!) Once you’re finished with that, take the time to wipe down your walls & switch plates. Use touch up paint if needed. And lastly, dust wall hangings and other decor.

Wed – Time to make those windows and patio doors sparkle! We are cleaning the windows, blinds, and window treatments today. (*Hint: crumpled up newspaper works like magic to shine those windows!) Then, move on to the sink and make it shine! I like to disinfect mine with bleach water. Then I rinse it out very, very well before freshening up my garbage disposal.

Thurs – Today, we are cleaning light fixtures and replacing bulbs if need be. Next, wipe down your counters. Now move on to the baseboards, then sweep and mop. (My plan is to get down on my hands & knees and give the floor a good scrubbing since we’re deep cleaning.)

Fri – Today is a good day to clean out your garbage can, inside and out. Recycling bin if you have one in the house, too. Catch up on anything you haven’t completed. Step back and admire your work! Then, enjoy your evening!
