Your Word Have I Hid in My Heart

I have hidden your word in my heart that I might not sin against you.
Psalms 119:11

It doesn’t matter whether one is a child learning to memorize Scripture, or an adult who has endeavored to walk in the Truth for twenty years, or a new believer just learning the power that can be wielded by God’s Word—this can be the cry of every single child of God. May I be so bold as to say, ‘This SHOULD be the cry of every one of God’s children!’

As I studied this particular verse, and read the beautiful expression of it in different Bible versions, I saw such a bigger picture.  Here, listen:

  • Your word I have treasured in my heart, That I may not sin against You.
  • In my heart I have hid Thy saying, That I sin not before Thee.
  • In my heart I store up your words, so I might not sin against you.
  • I have treasured your promise in my heart so that I may not sin against you.

The word hidden is also translated as ‘treasured’ and ‘store up.’  I think it is like certain items that we treasure and hide, or store away.  I keep cards.  Birthday, Christmas, Happy Hearts Day, encouragement, thank you, miss you, Thanksgiving, sympathy cards…I keep ‘em all.  Why?  It is because I treasure the words of the loved ones who have given them to me and so I hide them away and store them.  (It is a BIG box!)  Similarly with God’s Words…we treasure them and so we hide them in our hearts storing them away.

Here are a few other verses that we can hide in our hearts to help us, to strengthen us:

I desire to do your will, my God; your law is within my heart.
Psalms 40:8

The mouth of the [uncompromisingly] righteous utters wisdom, and his tongue speaks with justice.  The law of his God is in his heart; none of his steps shall slide.
Psalms 37:30 and 31

My son, keep my words And treasure my commandments within you.
Proverbs 7:1

My son, if you will receive my words and treasure up my commandments within you,
Making your ear attentive to skillful and godly Wisdom and inclining and directing your heart and mind to understanding;
Yes, if you cry out for insight and raise your voice for understanding,
If you seek [Wisdom] as for silver and search for skillful and godly Wisdom as for hidden treasures,
Then you will understand the reverent and worshipful fear of the Lord and find the knowledge of [our omniscient] God.
For the Lord gives skillful and godly Wisdom; from His mouth come knowledge and understanding.
He hides away sound and godly Wisdom and stores it for the righteous (those who are upright and in right standing with Him); He is a shield to those who walk uprightly and in integrity,
That He may guard the paths of justice; yes, He preserves the way of His saints.
Then you will understand righteousness, justice, and fair dealing [in every area and relation]; yes, you will understand every good path.
For skillful and godly Wisdom shall enter into your heart, and knowledge shall be pleasant to you.
from Proverbs chapter 2

One last point: in every single one of the translations of this verse in different Bible versions, one thing remains the same.  (Did you notice it, too?)  “…that I may not sin against You.”  The motivation of our hearts, yes?  Our hearts desire is to love God and be pleasing to Him.  We know from the Scriptures that the way to do that is to obey Him.  We obey God by having His Words hidden (treasured, stored up) in our hearts so that we will not sin against Him.

John 14:15
If you [really] love Me, you will keep (obey) My commands.

1 Samuel 15:22
Has the Lord as great delight in burnt offerings and sacrifices,
as in obeying the voice of the Lord?

1 John 5:3
For the [true] love of God is this: that we do His commands….

The Word of God is our most powerful weapon against sin.  But useless are words on a page that are not hidden, treasured, and stored in the heart.

My prayer before our loving Father is that you…

…Put on God’s complete armor, that you may be able to resist and stand your ground on the evil day [of danger], and, having done all [the crisis demands], to stand [firmly in your place].
Stand therefore [hold your ground], having tightened the belt of truth around your loins and having put on the breastplate of integrity and of moral rectitude and right standing with God,
And having shod your feet in preparation [to face the enemy with the firm-footed stability, the promptness,] and the readiness of the Gospel of peace.
Lift up over all the [covering] shield of saving faith, upon which you can quench all the flaming missiles of the wicked [one].
And take the helmet of salvation and the sword that the Spirit wields, which is the Word of God.
Ephesians 6:13-17

Praying for each of you!

At Home with GCH – Perfect Soft Boiled Eggs

Here on our At Home with GCH  blog, Monday’s are always focused on healthy but oh-so-yummy! recipes.  This month I am on a “7” month journey with a few friends AND my husband!  We are fasting from some of the excess in our lives, and endeavoring to establish better boundaries to help us keep God as the focus of our hearts.  It is a ‘mutiny against excess!’ Our journey has certainly come along with quite a variety of challenges…but not necessarily setbacks!

This month, our journey is focusing on dealing with excess in the category of food.  In keeping with the “7” theme, we are choosing seven (ONLY!) foods.  That comprises our menu choices for breakfast, lunch, dinner, and snacks.  Total.  So here’s what Robert and I are keeping in our NON-excessive food list for 30 days (20 down…10 to go).  (Ready? it really is a short list.) Eggs, chicken, salad greens, grapes (me) and strawberries (him), potatoes, broccoli, -and- protein bars/smoothies.  Also, I am endeavoring to have everything that my husband and I eat be UNprocessed and made from fresh ingredients.

Needless to say, I am becoming very proficient in different methods of cooking eggs.  (Practice makes perfect, y’know!  If you made eggs virtually every day….)  But I have never prepared the PERFECT soft-boiled egg.  You know…firm, tender white with runny, yummy yolk.  I perused the Internet and found out that *Cook’s Illustrated and America’s Test Kitchen had set out to accomplish this task and communicate it to all of us.*  I am here to tell you that you, too, can perform this task in your own kitchen…here’s how!

Perfect Soft-Boiled Eggs

Be sure your eggs have no cracks and are straight out of the refrigerator. You can use this method for one to six large, extra-large, or jumbo eggs without changing the timing.

tools:
medium saucepan, with lid
tongs

ingredients:
4 large- or extra large-size eggs
kosher salt, freshly ground pepper

frozen hash-brown patties

directions:
Follow package directions for baking the desired number of hash-brown patties.

Bring 1/2 inch water to boil in medium saucepan over medium-high heat. Using the tongs, gently place eggs into the boiling water (eggs will NOT be submerged). Cover saucepan and cook eggs for 6+1/2 minutes ONLY. Remove saucepan from stovetop.

Bring saucepan to sink, remove lid and run cold water over eggs for 30 seconds to stop cooking. Remove eggs from saucepan and serve, liberally seasoning with salt and pepper to taste.  Perfect!

* Read all about it!  This is a link to the article from Cook’s Illustrated.  Very informative!   http://www.cooksillustrated.com/recipes/article.asp?docid=41579

Prayer is the Final Piece

Finally, be strengthened by the Lord and by the strength of His might.
Put on the full armor of God so that you can stand against the tactics of the Devil.
For our battle is not against flesh and blood, but against the rulers, against the authorities,
against the world powers of this darkness, against the spiritual forces of evil in the heavens.
This is why you must take up the full armor of God, so that you may be able to resist
in the evil day, and having prepared everything, to take your stand.
Stand, therefore, with truth like a belt around your waist,
righteousness like armor on your chest,
and your feet sandaled with readiness for the gospel of peace.
In every situation take the shield of faith, and with it you will be able
to extinguish all the flaming arrows of the evil one.
Take the helmet of salvation, and the sword of the Spirit, which is God’s word.

Pray at all times in the Spirit with every prayer and request,
and stay alert in this with all perseverance and intercession for all the saints.

Ephesians 6:10-18

In our current study of Lisa Bevere’s book, Girls With Swords haven’t we SO loved looking at this encouraging section in the Scriptures?!?  We have considered the various pieces of the Armor of God.  We have been encouraged to put them on each morning as we prepare for our day. We have been reminded that they are TRUTH, RIGHTEOUSNESS, PEACE, FAITH, and SALVATION—a strong foundation on which to take our stand.  We have seen that, clothed with this Armor of God, we are equipped and enabled to stand, resisting all the tactics and wiles of the enemy.

Now, consider this…. We garb ourselves in this protective suit of Armor.  We take up the sword of the spirit.  And then we are told “pray.”  One would think that we are ready to go, right?  But truly prayer is the final piece, the item that links all the pieces together.  It reminds me of a football player…outfitted with all those pieces of his uniform (pads, helmet, etc.) that are designed to protect him…ready to head out of the locker room to battle his ‘enemy’—the other team.  And the coach says, ‘Take a knee.’

This final piece—prayer—is not the half-hearted whispering of a prayer.  But rather it is prayer spoken with passion, with faith, with ‘strong purpose and perseverance.’  It is prayer uttered with humble wholeheartedness to the One Who hears our prayers and answers.

So often when the Scriptures communicate to us on the matter of prayer, the words used are compelling.  As you read these next few verses see which words jump out at you.  (Clue: they are NOT the words marked in red!)

Philippians 4:6
Do not fret or have any anxiety about anything, but in every circumstance and in everything, by prayer and petition (definite requests), with thanksgiving, continue to make your wants known to God.

Colossians 4:2
Continue steadfastly in prayer, being watchful in it with thanksgiving.

Romans 12:12
Rejoice and exult in hope; be steadfast and patient in suffering and tribulation; be constant in prayer.

Which words did you find grabbing your attention…were they words like, ‘steadfast’ and ‘constant’ and ‘everything’ and ‘watchful?’

prayer

So as you put on your Armor, my sisters, never forget that the last piece—the prayer piece—is not put ON but rather put IN—into your heart!  Prayer is a truly important part of the equipping of a Jesus girl who desires to be a hero…a warrior.

My prayer is that as you draw near to Your heavenly Father, seeking His guidance and direction, His help and protection, you would recognize how tenderly He looks on you…His daughter, His child, His warrior, His hero.  He loves you with an everlasting love, and He never EVER will leave you…You are His!

Praying for each of you!

At Home with GCH – Protein Bites and Bars

Here on our At Home with GCH blog, Monday’s are always focused on healthy but oh-so-yummy! recipes.  This month, along with the next six months also, I am on a “7” journey with a few friends.  We are fasting from some of the excess in our lives, and endeavoring to establish better boundaries to help us keep God as the focus of our hearts.  We are, it has been said, having a ‘mutiny against excess!’ It has been very good but not without challenges!  But I think challenges and trials are a necessary part of the journey when you are making lifestyle changes.  If you would like to take a peek at what we have committed to do, please follow this link and visit my friend Megan’s website,  The Future

Also here is a link to Jen Hatmaker’s book we are reading on our journey:  7 Experimental Mutiny Against Excess

This month, we have begun the journey dealing with excess in the category of food.  (Say, WHAT?!?) Yes, yes…. So here’s what Robert and I are keeping in our NON-excessive food list for the next 18 days (ready? it is a short list): eggs, chicken, salad greens, grapes (me) and strawberries (him), potatoes, broccoli, -and- protein bars and smoothies.  Also, I am endeavoring to have everything* that my husband and I eat be UNprocessed and made from fresh ingredients.

A few of my friends are supporting their desire to keep to this discipline of  “7by having protein shakes and bars as part of their foods.  ‘Wow,” I thought, “that is a great idea…why didn’t I think about that?!?”  So, I did think about it!  And found some incredible ideas out there!  The two recipes that follow are adaptations of what I found.

I think that these bites and bars are healthy and satisfying on so many levels!

IMG_0207

  • The bites are “raw;” so good for you.  The bars are only lightly baked.
  • They are loaded with protein.
  • They are chock full of nutritious dried fruits.
  • Use ‘better-for-you’ alternative sweetener.
  • Great chew factor – ok, maybe only important to me 😉
  • Easily adaptable to fit almost any eating style (vegan: substitute agave nectar for honey; gluten-free: substitute chia seeds–or just more flax–for wheat germ)

This recipe comes together almost more quickly than you can gather the ingredients!  Super simple, easy…and in the end…super healthy but oh-so-yummy!

Pistachio-Cranberry Energy Bites (makes 48 or so)2013-04-07 10.20.51

Ingredients:
8 ounces (about 1 packed cup) chopped dates
1/2 cup honey
1 tablespoon flax seeds
1 tablespoon wheat germ
pinch of kosher salt
1+1/2 cups old-fashioned oats (dry, not cooked)
1 cup shelled pistachios
1 cup dried cranberries

Directions:
Combine the dates, honey, flax seeds, wheat germ and salt in a food processor, and pulse until smooth and combined. You should be able to stir the mixture—if it is too thick, add in another tablespoon or two of honey.

Transfer this mixture to a large bowl and add in the oats, pistachios, dried cranberries until well combined. Cover with plastic wrap and refrigerate for at least 30 minutes.

Once the mixture has been refrigerated (so much easier to work with), use a spoon or cookie scoop to portion out the energy balls, and give a quick roll to them.  (Mine were about 1-inch in diameter.)  Occasionally, you should rinse your hands and dry them; then start rolling the mixture again.  Store covered in the refrigerator for up to 2 weeks. (Storing them in the refrigerator especially helps the bites keep their shape.)

Note: Instead you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars.

  * ————————————- *

Now, these bars are of a totally different consistency…more like a cereal bar.  Very filling, tasty and delicious!

Breakfast Protein Bars (Paleo-friendly)2013-04-07 11.54.51

Ingredients:
1 cup blanched almond flour**
1/4 teaspoon sea salt
1/2 cup coconut oil
2 tablespoons honey
1 tablespoon water
1 teaspoon almond extract
1/4 cup unsweetened shredded coconut
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/4 cup blanched slivered almonds
1/2 cup raisins

Directions:
Preheat oven to 350.  In a food processor combine almond flour and salt.  Pulse in coconut oil, honey, water, and almond extract.  Pulse in coconut, pumpkin seeds, sunflower seeds, almonds and raisins.
Press dough into a 8x8inch baking dish, (your hands should be slightly damp to pat dough down.)  Bake at 350 for 20 minutes. Cool.  Cut into 16 pieces.

NOTES: *The only “processed” thing that I am including in anything that I am preparing is protein powder for our bars and smoothies.

God loves you!  ♥  (Don’t ever forget that!)

How Our Hearts Burned Within Us!

Luke 24:13-33
And behold, that very day two of [the disciples] were going to a village called Emmaus, [which is] about seven miles from Jerusalem. And they were talking with each other about all these things that had occurred. And while they were conversing and discussing together, Jesus Himself caught up with them and was already accompanying them.

But their eyes were held, so that they did not recognize Him. And He said to them, What is this discussion that you are exchanging between yourselves as you walk along? And they stood still, looking sad and downcast.  Then one of them, named Cleopas, answered Him, Do you alone dwell as a stranger in Jerusalem and not know the things that have occurred there in these days? And He said to them, What [kind of] things? And they said to Him, About Jesus of Nazareth, Who was a Prophet mighty in work and word before God and all the people— And how our chief priests and rulers gave Him up to be sentenced to death, and crucified Him. But we were hoping that it was He Who would redeem and set Israel free. Yes, and besides all this, it is now the third day since these things occurred. And moreover, some women of our company astounded us and [drove] us out of our senses. They were at the tomb early [in the morning] But did not find His body; and they returned saying that they had [even] seen a vision of angels, who said that He was alive!

So some of those [who were] with us went to the tomb and they found it just as the women had said, but Him they did not see. And [Jesus] said to them, O foolish ones [sluggish in mind, dull of perception] and slow of heart to believe (adhere to and trust in and rely on) everything that the prophets have spoken! Was it not necessary and [essentially fitting that the Christ (the Messiah) should suffer all these things before entering into His glory (His majesty and splendor)?

Then beginning with Moses and [throughout] all the Prophets, He went on explaining and interpreting to them in all the Scriptures the things concerning and referring to Himself. Then they drew near the village to which they were going, and He acted as if He would go further. But they urged and insisted, saying to Him, Remain with us, for it is toward evening, and the day is now far spent. So He went in to stay with them. And it occurred that as He reclined at table with them, He took [a loaf of] bread and praised [God] and gave thanks and asked a blessing, and then broke it and was giving it to them.

When their eyes were [instantly] opened and they [clearly] recognized Him, and He vanished (departed invisibly). And they said to one another, Were not our hearts greatly moved and burning within us while He was talking with us on the road and as He opened and explained to us [the sense of] the Scriptures? And rising up that very hour, they went back to Jerusalem….

****************************************

What a glorious account!  Can you even imagine???  …try…  Put yourself in the sandals of Cleopas and his friend as they trudged along saddened to their very core.  Three days earlier Jesus had been crucified to death on the Cross before the entire city.  And His disciples had clearly been expecting that He would be alive (not that they understood HOW that would happen!).  But after the women came back from the now empty tomb…and Jesus’ body was missing…and told them a “tale” about angels…and Jesus being alive…well, it was just TOO much!   Perhaps these two disciples just needed a break from all the emotion and drama and weariness and desperate sadness, and set out for this short journey.  Obviously all that had transpired was pressing on their minds and hearts…it was the center of their conversation as they meandered along.

Then, the very One Whom they spoke of was suddenly walking alongside them.  (Not that they recognize Him as the Lord…their eyes were “held.”) And Jesus (so kind!  Is our Lord not the most compassionate?!?) spoke with them, drawing them out…and finally, our Lord begins to explain.  “…and interpreting to them in all the Scriptures the things concerning and referring to Himself….” as He continued walking along them.  All the while, teaching and reminding and explaining and expounding to them about Himself…to no avail…UNTIL He was sharing a meal with them, and had taken the bread, broken it, and was giving it to them.  Then their ‘eyes were instantly opened and they clearly recognized Him’…they got it!  The next words they spoke always thrill and amaze my heart: “Were not our hearts greatly moved and burning within us while He was talking with us on the road and as He opened and explained to us the Scriptures?

(Ok, you can put your own sandals back on.)  This—dullness of heart and mind, failure to hold the Word in our hearts, inability to put the truth of the Scriptures together—is our quandry too.  But we DO also have those times when our hearts are ‘greatly moved’ and are ‘burning within us,’ don’t we?  And so we should praise and thank the Lord for those times…and ask for more!  This Jesus who strolled along the road to Emmaus with Cleopas and his friend also walks and talks with us…with me…with you!  In fact, He now lives within us; He is always available to us; He is interceding for us at the Father’s right hand!

My prayer for all of us is that we would seek our Lord, asking His wisdom, seeking His truth, receiving discernment and guidance and knowledge…and that we would voice our thankful praise saying, “Were not our hearts greatly moved and burning within us while He was talking with us….”

One final thought to consider…is this not the way that the Sword and the Holy Spirit move in our hearts and our minds?  We have already been armed with God’s Word, we have already been instructed how to use the Truth, we have the Sword…may our hearts be greatly moved and burn within us!

Praying for each of you!

At Home with GCH: Mac and Cheese

Here on our At Home with GCH blog, Mondays are always focused on healthy but oh-so-yummy! recipes.  This week we are going to bake a yummy mac and cheese that is loaded with veggies, and low on the calories by reducing the amount of cheese.

macncheese

Mac and Cheese. C’mon, who does not like Mac and Cheese?  I read a poll, and Mac and Cheese was voted overwhelmingly as ‘favorite comfort food!’  Now I am hoping that your favorite version does NOT come out of a blue box 😉 but, if it does, perhaps you might consider my recipe and see if it does not convince you to try it instead of the blue box version in the future. 🙂

This version of Mac & Cheese has lots of veggies snuck in there.  Some of the pasta is made with pureed carrots and tomatoes, and there is butternut squash throughout the cheese sauce.  I love this because it makes the cheese sauce even more colorful (ORANGE)  causing the eaters to ‘think’ it is more cheesy!  Also, there is only 6-ounces of shredded cheese in the whole dish which helps to keep this recipe in our ‘healthy-but-oh-so-yummy!’ category.

Have you ever made a white, or bechamel, sauce?  Well, today you will!  It is very easy, and a great technique to add to your repertoire!  In a future post, I will share some recipes that need a white sauce, and by then you will be a pro at making it!

The following recipe makes an abundantly filled 9×13 pan…enough to feed 6-8 hungry folks, )or, if you have a husband who LOVES leftovers like mine does, lunch for 2-3 days.)  This recipe is easily doubled, and I always make a double batch.  A menu suggestion:  Mac & Cheese, steamed broccoli, grilled ham steak.  A big, delicious salad is often our only accompaniment.

Macaroni:
1#box small macaroni (shells, penne)
12oz box veggie pasta (i used penne made with carrots and tomato) *2012-11-03 19.21.38

Cheese Sauce:
1/2 small onion, diced
2T butter
2T flour
1c 2 percent milk
1c chicken or vegetable broth
2 (10-ounce) packages frozen pureed winter squash, thawed
1/2c part-skim ricotta cheese
4oz sharp Cheddar, shredded (about 1+1/3c)
2oz Monterey jack cheese, shredded (about 2/3c)
1tsp salt, 1 tsp fresh ground pepper
1tsp ground (dry) mustard

Topping:
2 slices stale bread, crumbled into fine crumbs
2T freshly grated Parmesan cheese
1tsp olive oil

Preheat your oven to 375.  Coat a 9 by 13-inch baking pan with a small amount of  butter.  Bring a large pot of water to a boil; add 1 tsp of salt and the macaroni; cook  according to package directions.  Drain in a colander and place back into the cooled pot (this is where you will mix the macaroni and all that cheesy goodness together!)

Meanwhile, over medium heat, melt the butter in a medium saucepan, adding the  diced onion. cook ‘til the onion is soft and translucent, approximately 5 minutes.  Then sprinkle the flour over the cooked onion and, using a whisk, stir constantly for one minute.  Adjust the heat to very low, and cook for 2-3 minutes to get the starchy taste out of the mixture.  Do not let the mixture brown.   Increase the heat back to  medium and immediately slowly pour in 1/4 cup or so of milk while whisking briskly.  Just keep stirring!  As this is absorbed, continue to slowly add the balance of the  milk in a steady stream, followed by the broth; stirring constantly as the liquid  becomes absorbed.  This will take about 3 minutes.  Adjust the heat lower again and  let this mixture simmer slowly for another 5  minutes, stirring occasionally.  (You  have now made a white, or bechamel, sauce; congratulations!!!)  At this point, add in the thawed  butternut squash, stirring ‘til it is incorporated, allowing the mixture to come back  to a simmer.  Remove the saucepan from the heat.  Stir in the ricotta, and the  other cheeses, along with the ground mustard, and salt & pepper.  Carefully taste (it’s hot!) the  cheese sauce, adjusting for seasoning.

2012-11-03 20.00.28

Pour cheese mixture over the macaroni in the large pot and stir gently to combine.  Transfer the macaroni and cheese to the 9×13 baking dish and bake for 20 minutes.  Remove from oven.  Adjust the top rack in the oven to a higher position, and turn  the broiler on.  Combine bread crumbs, parmesan cheese and oil in a small bowl.  Mix with your fingers; get a little messy!  Then sprinkle over the top of the cooked mac and cheese.  Carefully place the baking dish back in the oven and broil for 3  minutes.  Keep your eye on it; you want the breadcrumbs to brown but not burn and  for some of the macaroni to get just a little crispy (my husband loves that part!).  Again, carefully remove from the oven…and you are ready to serve!

He Is…

How can one ever fully define all that our Lord, Jesus the Christ, is?  God has bestowed upon His Son many, many names.  There are a vast number of prophecies in the Old Testament that Jesus fulfilled…and was allocated the glorious Name associated with these prophecies.  Below is a very small list of the names of our Lord as they pertain to us.  I pray that as you read them and consider them, your heart will be lifted in praise..and thankfulness to Almighty God for all that He has provided for us in Jesus our Lord!

And whoever continues to live and believes in Me
shall never [actually] die at all. Do you believe this?
John 11:25

He is our High Priest
Inasmuch then as we have a great High Priest
Who has [already] ascended and passed through the heavens,
Jesus the Son of God, let us hold fast our confession [of faith in Him].
Hebrews 4:14

He is the King of kings, and LORD of lords
And on His garment and on His thigh He has a name inscribed,
King of kings and Lord of lords.
Revelation 19:16

He is the AMEN
These are the words of the Amen, the trusty and faithful and true Witness,
the Origin and Beginning and Author of God’s creation:
Revelation 3:14

One final name that we all love to call our Jesus is—King.  Please listen to Dr. S.M. Lockeridge as he exalts the name of our Lord Jesus as King…may your praises ring out as loudly as Dr. Lockeridge’s.

Praying for each of you!

At Home with GCH: Spring Salad Side Dishes

Here on our At Home with GCH blog, Mondays are always focused on healthy but oh-so-yummy! recipes.  This month we are spotlighting vegetarian dishes.  Each Monday will actually be a Meatless Monday!

So, I was talking with my dad about what to make for our family’s get-together on Easter Sunday.  Now, something you should know about us—every event is a food event. 😉  Is your family like that, too?  My contributions this year will be for dinnertime.  By request, I have been relegated the side dishes.  Two of them will be vegetarian salads: Broccoli-Craisin Salad and New Old-Fashioned Carrot Slaw.  Both fit into our healthy but-oh-so-yummy! category nicely!  Yes, there is a good amount of mayonnaise in the broccoli salad, but I think that you will find it balanced out by the rest of the healthy ingredients.  Plus this recipe provides 6-8 servings.  And in the carrot slaw, fat-free greek yogurt is substituted for the majority of the mayo that traditional ‘old-fashioned’ carrot slaw usually contains.  Enjoy!

Broccoli-Craisin SaladIMG_0196

dressing:
3/4 cup good mayonnaise
3 tablespoons honey
3 tablespoons white balsamic vinegar (red wine vinegar also yummy)
freshly ground pepper, to taste

salad:
3 heads broccoli crowns, cut up into small florets – no stems
1/2 cup finely chopped red onion
1/2 cup sunflower kernels/seeds
1 cup craisins (dried cranberries)

Combine dressing ingredients in a small bowl.  Mix together ‘til emulsified;  set aside.

In a salad bowl, toss all salad ingredients ‘til well distributed. Pour dressing over and stir ‘til everything is nicely coated.  Put completed salad into a storage container or bag and refrigerate for a minimum of 2 hours to meld the flavors together (overnight is optimum).

Notes:
The smaller you chop the florets, the nicer this salad will be.  Takes a little time…but so worth it!  I use less mayo than most recipes call for; feel free to add more if you desire. ALSO, for your meat-loving family members, you can add 2-3 slices of crumbled, crispy, cooked bacon; makes for a nice addition!

New Old-Fashioned Carrot SlawIMG_0200

dressing:
1 container lemon greek yogurt
2 teaspoons freshly squeezed lemon juice
2 tablespoons mayonnaise
freshly ground black pepper, to taste

salad:
2 cups julienned carrots *
1/2 cup fresh pineapple, cut in 1/2″ cubes
1/4 cup sliced or slivered almonds
1/4 cup golden raisins

Combine dressing ingredients together in a small bowl; set aside.

Mix all the salad ingredients together in a large bowl, and then pour on the dressing; mix together well.  Place in a storage container or bag; refrigerate for at least 2 hours or overnight so that the flavors can blend together.

Notes:
I buy bagged ‘matchstick’ carrots; usually available with the baby carrots in the produce section of your grocery store.

Jesus, Our Lord, Loved To the End

The Lord God Almighty, our Heavenly Father, had it in His heart to provide a Savior for all mankind.  A Redeemer who would save us from eternal damnation and would be THE Way to eternal life and grace for all time.  God purposed throughout mankind’s history to bring His plan into existence.  Nothing ever thwarted or deterred our God from bringing His perfect plan—a plan of love and grace—into fruition. And His Son, our Lord, willingly sacrificed Himself to execute His Father’s plan.

From early in His earthly ministry, Jesus told His disciples about this.

…but there is One Who has come down from heaven—the Son of Man
And just as Moses lifted up the serpent in the desert [on a pole],
so must [so it is necessary that] the Son of Man be lifted up [on the cross],
In order that everyone who believes in Him [who cleaves to Him, trusts Him, and relies on Him]
may not perish, but have eternal life and [actually] live forever!
For God so greatly loved and dearly prized the world
that He [even] gave up His only begotten Son,
so that whoever believes in (trusts in, clings to, relies on) Him
shall not perish (come to destruction, be lost) but have eternal (everlasting) life.
For God did not send the Son into the world
in order to judge (to reject, to condemn, to pass sentence on) the world,
but that the world might find salvation and be made safe and sound through Him.
John 3:13-17

God’s Son came to the earth and lived His life on this earth single-mindedly to do His Father’s Will.  God’s plan was one of Love, and Jesus’ life was all about Love—Love to the end.

[Now] before the Passover Festival began, Jesus knew (was fully aware)
that His hour had come to depart from this world and return to the Father.
Having loved those who were His own in the world, He loved them to the end.
John 13:1

Jesus purposed to share a final last meal and communicated many important things with those closest to Him.  The Gospel of John records just some of Jesus’ words to them (and to us) that He spoke during this Last Supper just prior to His betrayal, His persecution, and His death.  He spoke to them (recorded in chapter 13) about loving one another in the same way that He had shown His love to them (verses 2-19), and demonstrated it through the lowly task of washing their feet…He clearly pointed out exactly who His betrayer was (verses 20-31)…He again commanded them to love one another (verse 34).

In chapter 14, Jesus shares with them about the Comforter—the holy spirit—Who He was sending to take His place.

In chapter 15, Jesus shows the importance of dwelling with Him and abiding in Him.  He talked with them in so much detail about His and the Father’s love…and how our love toward Them is proven by our obedience.

In chapter 16, Jesus is deeply concerned that they will be prepared for His leaving.  He communicates, with encouragement as well as admonition, as He tells them again about the Comforter.

And in chapter 17, Jesus prays for them.  We ‘hear’ as He speaks with the Father of His great concern and love that He had for them.  How beautifully and compassionately He asks the Father to care for them.  He truly loved them to the end.

And, wondrously, He even spoke of us:

Neither for these alone do I pray [it is not for their sake only that I make this request],
but also for all those who will ever come to believe in (trust in, cling to, rely on) Me
through their word and teaching,   That they all may be one, [just] as You, Father, are in Me and I in You,
that they also may be one in Us, so that the world may believe and be convinced
that You have sent Me. (verses 20 and 21)

Our Lord, Who knew exactly what was transpiring and how His betrayal was imminent prayed these final words for them:

I in them and You in Me,
in order that they may become one and perfectly united,
that the world may know and [definitely] recognize
that You sent Me and that You have loved them
[even] as You have loved Me.
Father, I desire that they also
whom You have entrusted to Me [as Your gift to Me]
may be with Me where I am, so that they may see My glory,
which You have given Me [Your love gift to Me];
for You loved Me before the foundation of the world.
O just and righteous Father, although the world has not known You
and has failed to recognize You and has never acknowledged You,
I have known You [continually];
and these men understand and know that You have sent Me.
I have made Your Name known to them
and revealed Your character and Your very Self,
and I will continue to make [You] known,
that the love which You have bestowed upon Me
may be in them [felt in their hearts]
and that I [Myself] may be in them.
(verses 23-26)

Perhaps this coming week as we are contemplating and considering just what it took for God to fulfill our redemption through our Lord’s suffering and death, you could read the Gospel of John, chapters 13 through 17.  Nowhere else in the Scriptures, is so much communicated to help us know beyond a shadow of a doubt of our Father’s and our Lord’s unconditional love for us.  Our Lord’s entire life was all about love…and He truly and completely and perfectly loved us to the end.

Praying for each of you!  May we each recognize the love of our Lord, and all that Jesus accomplished for us, and sing our praises to Him!

At Home with GCH – Meatless Mondays – HashBrown Crusted Quiche

Here on our At Home with GCH blog, Mondays are always focused on healthy but oh-so-yummy! recipes.  This month we are going to spotlight vegetarian dishes.  Each Monday will actually be a Meatless Monday!  This week we are making quiche!  Oh, yum!  But in light of our healthy but oh-so-yummy inclination, we are substituting a shredded potato crust for a pastry crust.  So delicious…so easy…so nice and crispy!  I took a peek at a few similar recipes, and calorie counts on ingredients like those below will add up to approximately 250-300 for each wedge of this quiche.  This along with a simple salad (we had spinach-strawberry salad with ours) makes for a filling yet light supper.  You certainly can exchange different veggies and cheeses for the spinach-tomato-fresh mozzarella combination in this recipe.  During the spring and summer, we often have quiche once each week on our menu.  It is quick and nutritious; and, if I prepare different varieties from time to time, no one gets bored!  I would love to hear about your quiche if you make a different variety!  Enjoy!

Caprese Quiche with Hash Brown Crust (makes 4 generous servings)

Crust:
3 cups frozen hash browns, thawed
2 tablespoons butter, melted
1/4 cup grated Parmesan cheese
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Preheat oven to 425. Thaw hash brown potatoes, and blot between paper towels to remove excess moisture.  Combine in mixing bowl with melted butter, Parmesan cheese, and seasonings.  Lightly grease 9″ glass pie plate.  Pour potatoes mixture into pie plate and press down onto bottom and up sides of pie plate…go all the way up to the rim.  Bake for 15-20 minutes until lightly browned; do not let burn!  When done, remove from oven.  Place on a cooling rack and allow to cool slightly.  Reduce oven temp to 350.

Filling:
1 medium sweet onion, diced
2 teaspoons olive oil
good-sized handful (12-14 grape tomatoes), chopped
1/2-3/4 cup fresh spinach leaves, sliced 1/4″ slices
1 heaping tablespoon chopped garlic (I use jarred)
Heat olive oil in medium-sized saute pan over medium heat.  Add diced onions and cook for 6-7 minutes until softened but just slightly browned.  While onions are cooking, chop tomatoes (drain away any excess juice).  To slice spinach, stack a number of leaves, and then just carefully slice down through them into 1/4″ slices; repeat until all spinach is sliced.  When onions are ready, add tomatoes, spinach, and garlic.  Saute for 1-2 minutes, stirring constantly, until spinach has wilted.  Remove from stovetop and allow to cool.IMG_0189

Egg Custard:

4 large eggs, lightly beaten
3/4 cup 2% milk
1/2 cup ricotta
dash of Kosher salt
1/2-1 teaspoon freshly ground black pepper
1/4 cup breadcrumbs
1 cup fresh mozzarella balls, rough chopped
To the eggs, add the milk, ricotta, seasonings, and breadcrumbs; whisk together until smooth.

To assemble:
Once baked crust has cooled slightly, layer in filling ingredients and then pour the custard on top.  Add chopped cheese and swirl with fork to evenly distribute ingredients.  Carefully place in middle of 350 oven, and bake until eggs are set and cheese is slightly browned, approximately 30 minutes or so.  Let stand for 10 minutes to set up and finish cooking.  Cut into four wedges.
