Cheesy Chicken and Rice with Bacon

Cheesy Chicken and Rice with Bacon

What you need:

1/2 lb bacon (save 2 tbsp bacon grease), crumbled

4 tbsp butter

1/4 cup all purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon chili powder

1 1/2 cups chicken broth

1 1/2 cups shredded cheddar cheese

2 cups cooked, shredded chicken

4 cups cooked white rice

1 cup shredded cheddar cheese (for topping)

9×13 casserole dish

skillet for cooking bacon

medium saucepan

whisk

large spoon

Instructions:

Cook bacon, drain and set aside.  Reserve 2 tablespoons of bacon grease.  After bacon has cooled, crumble into pieces.

Place butter into a medium saucepan over medium heat.  Once melted, whisk in flour, pepper, salt, and chili powder until smooth and bubbly.  Slowly whisk in chicken broth.  Increase heat to high while whisking broth until thickened.  Reduce heat to low and stir in 1 1/2 cups of cheddar cheese.  Reduce heat to a simmer and set aside.

Put shredded chicken and cooked rice in a casserole dish and mix in the 2 tablespoons of reserved bacon grease.  Add cheese sauce, mix to combine all ingredients.  Top with 1 cup shredded cheddar cheese, then top with crumbled bacon.  Place under oven’s broiler for 3-5 minutes until cheese is melted.  Serve immediately.

Makes 4-6 servings.

“An important method of limiting your own self-defrauding is through daily discipline over “prenuptial fantasies.”  Such fantasies may provide you an escape from monotonous reality, but these moments are dangerous.  They will aggravate your struggle for contentment because they are not innocent daydreams, but an attack on your godly contentment.  You may be so used to daily fantasies that you might not even realize when you begin daydreaming again about your prince.”

“Often single women’s struggle with contentment can be traced back to her fantasies more than to her frustrating circumstances.  Just think for a moment about three words from 2 Corinthians 10:5: Casting down imaginations.  Fantasizing about a future with a guy you have been watching in Sunday school or at work is nothing more than your very active imagination.  What should you do when you start daydreaming about a guy you’ve never dated or even formally met?  You must take your thoughts to Jesus and leave them in His capable hands.  This daily discipline of taking your fantasies to Jesus is the foundation for your future as a contented woman, whether you are married or single.”

LET’S PRAY
Father God, we treasure our time with You. So many times we talk incessantly about our needs, our wants, our hopes and dreams. We know that You love hearing our cares, but we also know You love to speak to us also. Help us to slow down in our prayer and devotional time so that we can hear from You. It is You who guide us, and without taking the time to listen to the guidance we will become lost. Thank you Jesus for Your patience and love as we continue the process of drawing close to You.

As we wind down this study we come to last section of this wonderful book and that is “What about our kids” in this journey of our spiritually mismatched marriage.

(what do we do? Where do we start?)

My kids were not the ones who went to church every week with two parents leading them into the church building, or praying with them, or reading the Bible with them, nope it was just me.   Now I am not complaining mind you, but it would have been “wonderful” for both of us to do the leading.

When I had children I was constantly thinking how in the world am I going to raise them in a godly home when the home was not a complete godly unit…and then I remembered how my granddaddy used to teach me saying “Beverly, there is nothing you can do about others, you must just work on yourself, love Jesus yourself, and as He teaches you then you teach them.”

I listened to him and just like I did the 9 years of my marriage before having children I did the same after the children were born……I went to church and took my children with me so they could learn about my Jesus, and learn about WHO will be and make the difference in their life as they grow up.

Even though I took them to church I constantly thought:

  • Am I doing things right
  • Am I teaching them the truth
  • Will they accept Jesus as Savior one day
  • Will they learn to be a prayer warrior
  • Will they love Jesus
  • Will they wake each morning with a desire to live every moment for Him
  • Will they seek a godly mate for their life
  • Will they love God’s Word and want to spend time getting to know Him

My children were learning about God and getting to know Him…both accepted Christ as Savior and then the first big day came when my daughter left for college and then all those same thoughts began creeping back in my head…..except a few different ones…now my thoughts were:

  • Will she remember what she learned growing up
  • Will she stick to the truth in this world of peer pressure
  • Will she not give in to the idea of dating just anyone but continue her commitment to seeking God for her life mate
  • Will she still remain in God’s Word

Oh so many thoughts were swirling around in my head and I could not seem to get enough of wanting to know that she was not straying from the path she was taught.

Then I got the call…the phone call….Mamma I met this guy that I really like….go to the school BCM website and look at his picture….he is so cute Mamma….and I told her hmmmm….let me take a look and so I did…..and my first thought was REALLY?  HIM?  (you know we all do that, those initial judgmental thoughts just based on someone’s looks)……and let me say right now……

 MY JUDGMENTAL THOUGHTS WERE WRONG

 This was the man God set aside for my girl….as her life mate….at that time he was the campus missionary at the college she attended and 3 years later they were engaged/married,  now he is the youth pastor at the church they attend…..and oh how God is moving in their life…..and just think if I had done my normal mamma meddling I would’ve been messing up God’s plan for her life.

So here we are, one child trained and on the path God set for her…..but still one more at home and still my same thoughts creeping in now for this one…

In his high school years my son began showing the same aspects as my husband (not wanting to go to church, I had to “make him go”)  and then the day came when he went off to college…..and here I go with my thoughts again…..and now these thoughts were way different from when my daughter left home….because now that he was in the thought process of “not wanting to go to church”  I knew that the peer pressure of the world would start sinking in heavy on him…..and yes that is where he is now…..NOT GOING….NOT SERVING….not following that path he had been taught as a child…..

 BUT….

 I have the wonderful promise of Proverbs 22:6 that I cling to that He will turn to it……and as he comes home for visits/holidays he sees me continuing to love and serve Jesus, he sees me living out what I taught him all the young years of his life.  He has watched me in times spent in study/devotion…..this has and is the silent witness to my son. He has heard me lifting him up in prayer to God–this is the audible witness to my son.

I await that day to see his faith has not wavered, that he remembers the training he received growing up and that he will make the Lord “priority” in his life.  And I await to see/hear when he says “yes Lord I am here ready to serve” I have not given up….

Oh, What a day that will be!

 So to answer the question of this lesson today; Where to start?   Here’s the answer from Pg. 170 of our study. Help our love for Jesus be so contagious; it can’t help but rub off on our loved ones and when our kids see us loving God in this way, they will love Him too!

 

Let’s Pray:   God I thank you for each lady that has been a part of this study and I pray that your love will seep out through our daily life in subtle effective ways that will influence our children, in your name I pray. Amen!

A Daughter’s Worth: Week 11/ Day 1 – Be Ready to Hear God’s Voice

The first question Ava asks us this week is have you ever heard the voice of God.  When I was your age I don’t think I ever thought God had a voice.  I surely never heard Him talk to me.  For as much as I prayed to God I never thought of it as a communication; one in which God would actually talk back to me!  As I grow in my relationship with God my favorite moments with Him are when He is talking to me.  Do you believe God talks to us?  Have you ever thought what His voice sounds like?

I have come to find out that His voice sounds like a powerful song full of God’s truths.  His voice sounds like scripture found in God’s living Word.  His voice sounds like my mother, sister, or godly friend who speaks God’s truth and encouragement to me from time to time.  His voice sounds like my grandmother’s letters to me.  All of the ways he talks to me have one thing in common.  God’s voice is found in His truth.  There are lots of things in this world that are filled with God’s truth we just have to open our eyes, ears, and hearts to them.  God’s voice is found differently to everyone, but when you find it you will hear the same thing, His truth!

How do we go about opening up to hear from God?  I just recently have figured this one out, and I continue to learn as I spend time with God.  It is all about the relationship that we have with God.  When I was your age I did not understand what having a relationship with God was.  When I found out that God desired to have a relationship with me, it changed my life!  When I started embracing the relationship I could have with God, I started to open my heart, eyes, and ears to what the Bible had to say about this relationship.  I started knowing God as my God and not just as a God.  I also found the truth of what this relationship is like through lyrics in a Christmas song by Amy Grant.

Fragile finger
Sent to heal us
Tender brow prepared for thorn
Tiny heart
Whose blood will save us
Unto us is born
Unto us is born

I have heard this song over and over again for the last 10+ years, never feeling my heart ever so gently touched by the sound of these words. Last year when I heard these lyrics for the first time in the Christmas season I actually shed a tear knowing the Lord was speaking to me through these words. How beautiful, how precious is our Savior. Tiny heart whose blood will save us and it has, and it will forevermore. How blessed I am to have accepted such a sacrifice. I thank the Lord for bringing me to the point where I am today; as hard as it was. I am to the point where I understand that I will never fully understand the depth of those words, the pain and love behind every one of them.  Have you accepted the beautiful sacrifice of Jesus’ blood?  Are you living in a personal relationship with God?

Are you wondering what a relationship with God looks like?  The relationship itself is different for everyone but there is one factor that is the same with everyone-God.  The only places we can go to find out who He is and what He is like is in the Bible or in praying to Him.  The more time we spend with Him the more we are ready to hear from Him.  When we believe who God is, when we are confident in His truths that is when we are ready to hear from Him!

Really think about how amazing it would be if you could hear from God all of the time.  Wondering what you should do about a situation in your life?  Wondering what is right and what is wrong?  Wondering who you should talk to about this or that?  God has all of the answers for you.  He is willing to tell you what to do, what is right, and is the one we should be talking to about everything in our lives.  It may seem too good to be true.  Do we really have access to a perfect best friend?  One who will always be there for us, and always lead us towards Heaven.  It is true, we do have access daily to our perfect best friend, Jesus.

It is my prayer that you find your relationship with God.  It is my prayer that you desire to hear God’s voice in your life, daily.

Philippians 1:9-10 And this is my prayer: that your love may abound more and more in knowledge and depth of insight,  so that you may be able to discern what is best and may be pure and blameless for the day of Christ.

Think about where you need to hear God’s voice in your life.  What are you unsure of or needing answers for?  Do what the Bible tells us to do, grow in Christ’s love gaining HIS knowledge and HIS depth of insight so that you may be able to hear HIS voice in your life!

Let’s Pray:  Lord, I thank you for the privilege we have in prayer.  We get to communicate with the creator of the Heavens and the Earth.  Even better, we get to hear back from you!  Thank you for guiding us and speaking to us exactly what we need to hear.  I ask that the hearts of these girls are open to accepting your love and voice in their life.  We thank you for the relationship we have with you!  We love you so much, Amen!

GCH:What’s on Your Plate? – Chicken Shepherd’s Pie with Parmesan Cauliflower Topping

Now that title’s a mouthful, hmmm?  Pun FULLY intended!  My husband loves Shepherd’s Pie—and any variation I can come up with!  And so I indulge him! 🙂  This recipe fits into our healthy but oh-so-yummy category in a couple of ways:

  • it is low-carb (with the absence of mashed potato topping)
  • it  is made with natural ingredients that you can pronounce (as the gravy is made from scratch)
  • it is low in fat/high in protein (using boneless chicken breast as the protein)

This recipe could easily be doubled and baked in an 11 x 13 baking dish.

Chicken Shepherd’s Pie with Parmesan-Cauliflower ToppingIMG_1310

Filling Ingredients:

4 tablespoons olive oil, divided
1# boneless chicken breast, pounded evenly, cut into 1″ cubes
1 sweet (vidalia-type) onion, chopped in pieces about 1/2 inch
4 ounces baby bella mushrooms, wiped clean sliced chunky
2 tablespoons chopped garlic in oil (from a jar)
16 ounce package frozen mixed veggies (your choice), set out to defrost

1 tablespoon butter
2 tablespoons flour
1/4 cup white wine (or broth)
1 + 1/4 cups chicken broth

Topping Ingredients:

1 medium-sized head of cauliflower, cored and chopped into small pieces
1/4 cup milk
1/2 cup finely grated parmesan cheese
salt and freshly ground black pepper to taste

1/3 cup shredded cheese (sharp cheddar, smoked gouda) *use a flavorful cheese

Instructions:

Preheat the oven to 375.  Bring a medium-sized pot of salted water to a boil. Chop cauliflower into small pieces and simmer ‘til  soft enough to mash easily (10-12 minutes). Drain cauliflower very well in colander; place back into pot and  use an immersion blender or hand beater to “mash” the cauliflower with the milk and Parmesan. Season very well with salt and pepper to taste.

While the cauliflower cooks, heat 2 tablespoons of olive oil in a large frying pan and saute the cut-up chicken adding the chopped garlic for the last minute (don’t let garlic burn).  Saute ’til just getting brown but don’t overcook.  Remove pan from stove; set aside cooked chicken.  Wipe frying pan with paper towels to remove bits. Then add 2 additional tablespoons olive oil; heat over medium, and saute chopped onions for 3 minutes.  Add chopped mushrooms and saute for 4-5 minutes more to caramelize.  Reduce heat to low; add 1 tablespoon butter, and sprinkle flour over the mushroom-onion mixture, stirring with a whisk.  Cook this mixture for 3 minutes occasionally scraping the pan.  Then gradually whisk in the wine ’til the mixture is smooth.  Gradually whisk in the  broth and your gravy will come together.  Gently simmer for 5 minutes.  Add back the cooked chicken and the defrosted veggies and heat together for 1-2 minutes.

Spread the chicken-vegetable-gravy mixture in the bottom of an 8 cup casserole dish.  Top with the cauliflower, and spread across the pan almost to the edges.  Bake for 20 minutes, and then top with the grated cheese.  Continuing baking another 10 minutes or so ’til bubbly.  If top is not lightly browned, can be carefully placed under broiler for 2-3 minutes.  Enjoy!

Lady In Waiting: Meditation: My True Community – Mother Teresa (1910 – 1997)

 

“Accept whatever He gives— and give whatever He takes with a big smile. You belong to Him.”

Beloved girlfriends, it has been an honor being with you each week throughout our study of the book, Lady in Waiting.  The journey has been amazing and we have learned so many truths together.

This is our last week together and we will be going through some of the meditations that each one of us bloggers has chosen.  However, there are seventeen meditations that you can do throughout the Christmas season as we wait for the next study to begin.  I trust that you have already signed up or are prayerfully thinking of signing up!

Our meditation today is based on a special woman of God, Mother Teresa.  A woman who dedicated her life to serving the poorest of the poor in India.  Mother Teresa is one example of what a single woman who took advantage of her single status to serve the Lord diligently.  Her decision to serve the Lord in this way impacted many lives and many more women have joined her cause.

A Lady in Waiting must also be a Lady of Diligence.  Remember what we covered in the topic of diligence in Chapter 2 of our Bible Study?  We were given so many examples of how as single women we can serve our Lord and Saviour Jesus Christ.

This statement from chapter 2 still stands out to me today Singleness is an enviable condition. An unmarried woman has something that a married woman gives up on her wedding day: extra time for Jesus. Too many young women waste valuable years as they wait for life to begin—after marriage. They rarely realize the priceless free time they waste, until it is gone. Have you neglected some mission or ministry opportunities because you feared prolonging your unmarried state?

Being single is enviable because one is free to serve the Lord in whatever way you can.  As we meditate today, lets us allow the Holy Spirit to help us to see in what ways we can minister to others.  You don’t have to be a nun like Mother Teresa to do what she did.  Our Lord Jesus Christ was full of ministry to others; He healed the sick, fed the hungry, and had compassion on all those who were suffering to mention but a few.  As we are in the Christmas season, let us bring Christ to everyone around us by reaching out and serving others.  This is what the Gospel of Matthew verse 4:23-25 says about our beloved Lord. “Jesus went throughout Galilee, teaching in their synagogues, preaching the good news of the kingdom, and healing every disease and sickness among the people.   News about him spread all over Syria, and people brought to him all who were ill with various diseases, those suffering severe pain, the demon-possessed, those having seizures, and the paralyzed, and he healed them.  Large crowds from Galilee, the Decapolis,  Jerusalem, Judea and the region across the Jordan followed him.”

This is a great quote from our meditation today which is worth remembering.

“Keep giving Jesus to your people not by words, but by your example, by your being in love with Jesus, by radiating his holiness and spreading His fragrance of love everywhere you go. Just keep the joy of Jesus as your strength. Be happy and at peace. Accept whatever He gives— and give whatever He takes with a big smile. You belong to Him. My true community is the poor— their security is my security, their health is my health. My home is among the poor, and not only the poor, but the poorest of them: the people no one will go near because they are filthy and suffering from contagious diseases, full of germs and vermin— infested; the people who can’t go to church because they can’t go out naked; the people who can no longer eat because they haven’t the strength; the people who lie down in the street, knowing they are going to die, while others look away and pass them by; the people who no longer cry because their tears have run dry! The Lord wants me exactly where I am— He will provide the answers.”

LET’S PRAY

Lord Jesus Christ, we thank You for being with us each and every week as we studied the Lady in Waiting.  Lord, thank You for teaching us through Your life and the life of Mother Teresa the importance of service.  I pray that the Holy Spirit will guide us and lead us to the place where we can be of service to others who are hurting and need our support.  I pray that we will not be comfortable with just receive but we will give of ourselves in Jesus Name.  Amen.

Week 11 — Fulfilling Your Purpose

Did you know that you, yes YOU, were created to do good things for the Lord, for such a time as this?  Ephesians 2:10 tells us, “For we are God’s masterpiece. He has created us anew in Christ Jesus, so we can do the good things he planned for us long ago”.  God knew before you were even born that you would do good things!  He already had those things planned out before you were even thought of!  Isn’t that something to think about?!?!

So how do we know what those good things are that He has planned for us to do?  It starts by seeking Him first.  Being ready and willing to seek Him, to hear Him, and to follow Him.

This week in Week 11, that’s exactly what we are going to talk about….”How do I fulfill the purpose God has for me?”  So let’s start by looking at our Reading Assignment for this week.  If you are behind on the study, I would encourage you to catch up as quickly as possible.  This is really going to be an amazing chapter this week!

Hope you have been a awesome time in this study!  This next week is all about fulfilling our purpose on Earth, which I know may sound strange to some of you, but we have a purpose we were put here on Earth for a reason. Which to me blows my mind, this week we will be talking about how we need to listen to God when He talks to us, And that we also need to be sensitive to the Holy Spirit, and follow His lead.

We will also talk about just being confident that God is at work in us, and to also be willing to hear “Yes” or “No” from Him, which is hard at times, but I know that over this next week we will grow closer to God, and listen to His Call for our lives!

GCH: What’s on Your Plate? – Mexican Chicken Casserole

Our Women’s Online Bible Study Group will be reading “Crazy Love: Overwhelmed by a Relentless God” by Francis Chan.  This is an amazing book about God’s love for us!  My church did this study a few years ago, and it made a huge impact on my own life!  I know it will impact yours, as well!  God is love. Crazy, relentless, all-powerful love. Have you ever wondered if we’re missing it? It’s crazy, if you think about it. The God of the universe–the Creator of nitrogen and pine needles, galaxies and E-minor–loves us with a radical, unconditional, self-sacrificing love. And what is our typical response? We go to church, sing songs, and try not to cuss. Whether you’ve verbalized it yet or not…we all know somethings wrong. Does something deep inside your heart long to break free from the status quo? Are you hungry for an authentic faith that addresses the problems of our world with tangible, even radical, solutions? God is calling you to a passionate love relationship with Himself. Because the answer to religious complacency isn’t working harder at a list of do’s and don’ts–it’s falling in love with God. And once you encounter His love, as Francis Chan describes it, you will never be the same. Because when you’re wildly in love with someone, it changes everything.

Our Single Women’s Online Bible Study Group will be reading Captivating: Unveiling the Mystery of a Woman’s Soul” by John and Stasi Eldredge.  The message of Captivating is this: Your heart matters more than anything else in all creation. The desires you had as a little girl and the longings you still feel as a woman are telling you of the life God created you to live. He offers to come now as the Hero of your story, to rescue your heart and release you to live as a fully alive and feminine woman. A woman who is truly captivating.  

Our brand new GCH:Victorious Healing Online Bible Study Group will be reading “Life’s Healing Choices” by John Baker.   We’ve all been hurt by other people, we’ve hurt ourselves, and we’ve hurt others. And as a result, every single one of us ends up with some sort of hurthang-up, or habit. But the question we all face is, Where do we go from here?  Life’s Healing Choices offers freedom from our hurts, hang-ups, and habits through eight healing choices that promise true happiness and life transformation. Using the Beatitudes of Jesus as a foundation, Senior Pastor Rick Warren of Saddleback Church and John Baker, who is also a pastor at Saddleback, developed the eight choices shared in this book.  This is going to be an AMAZING study!!

And now onto our amazing Mexican Chicken Casserole! Oh my goodness, this is so good!  I found this on www.SouthernPlate.com.  Christy Jordan is one of my favorite bloggers!  I have her cookbook “Southern Plate”, and it is filled with some amazing home-style recipes that will please any palate.  The recipe below is how I actually made this recipe.  Check out both recipes to see which one you and your family love!  Click on the recipe headline to be taken to the actual recipe.

Mexican Chicken Casserole

 

Ingredients:

4 cups of cooked, chopped chicken (about 4 to 5 breasts halves)
2 cups of instant brown rice
1 can cream of chicken soup
1 cup sour cream 
1 small can of minced green chilies
1/2 cup frozen diced onion
1 can Ro*Tel tomatoes
1/4 teaspoon cumin
1/2 teaspoon garlic powder
1 1/2 cups chicken broth
8 oz shredded cheddar cheese, divided

Instructions
  1. Combine all ingredients and half of cheddar cheese in a large bowl. Mix well.
  2. Turn out into a greased casserole dish and top with remaining cheese.
  3. Bake at 350 degrees F for 30 minutes, or until hot and bubbly.
