We Wish You a Merry Christmas

For me, Christmas is all about family.  Ever since I was little Christmas always meant big family get-togethers.  When we moved to Colorado big family get-togethers became few and far between. Two years ago was the first time in several years we actually got to spend Christmas Day with both of our girls together. That was the year the little love in this picture was born on Christmas Eve. This year we will spend Christmas Day with him. We will see all our family this year, just not all at the same time. I miss our big family get-togethers. But there is one thing that ties us all together, either way.  We all celebrate the birth of the Christ Child – God in human form. The perfect gift for all mankind!

May joy and blessings be yours as we celebrate the birth of the sweet little Holy Child!

Discipling Our Children at Home

Over the last several months, the teaching team at our church has been speaking about discipleship. They have taught us what a disciple is, which is basically a student; what it looks like to disciple others, which is to bring friends and family along with us on our journey with Jesus; how time, talent, and treasure are all a part of being a disciple (giving); and so much more! As we began this series, and moved forward each week, I wondered whether I was discipling anyone. I am a disciple myself, a follower of Christ, and I am striving to lean in and follow Him even more carefully as the weeks and months go on. I do write for a few blogs as a contributor and on my own blog, and those could be considered a way of discipling. I pray that what I write encourages someone along their faith-walk at some point. But I kept asking myself, who am I discipling? How can I disciple someone?

Then it dawned on me.

Those I am discipling every day are my children.

You may think that is an odd realization since, as a mom in her 8th year of homeschooling, I am with my children all day, every day. Still, it took me a while. I guess I was looking outward, towards a church ministry area or leading a bible study in my neighborhood, as many of my friends and acquaintances are doing. However, in this season of my life, while I am busy homeschooling and raising my five children from ages 3 to 16, I have limited opportunities to disciple those outside of my own home. But what a ripe-for-the-harvest ‘field’ I have right here before me! Once I realized this, I was even able to encourage another friend who was asking the same questions that I had been asking.

Homeschooling. This is our ‘discipleship program’! What a blessing it is to be able to be home, to learn together, to stop academics as needed to teach biblical principles and to correct behavior, to discipline, and to disciple, as we walk the homeschooling journey together with our children.

I want to encourage you, homeschool mama, as you move through each day and especially in this holiday season—do not compare yourselves to others. God has given you very specific duties to carry out with your own children! Perhaps you can fit in some volunteer hours at church or in a shelter in your area, or in some other setting where you are able to disciple others. Maybe you were able to participate in the Christmas cookie exchange, hang hundreds of tiny lights on the exterior of your home, and bake holiday breads for 10 days straight in preparation for the local holiday bake sale.

If you cannot and did not, please do not despair.

God has you in this season right now to pour into your children. On the days when it seems too difficult, and you feel like you have nothing left, lean further into Him. He will give you the strength, the wisdom, His words to pour into and speak over your children, and to lead them just a bit closer to Him each day!

Gluten Free Oatmeal Peanut Butter Drop Cookies

How many varieties of cookies have you baked in preparation for filling up cookie platters…and hungry mouths?!!?  So far, I have done four different types, and have two more in mind: Gluten Free Spritz cookies and Thumbprint Cookies. Can’t get much more traditional than those!

Here on our At Home with GCH blog, Monday’s are usually focused on healthy but oh-so-yummy! recipes. This week we are making Oatmeal Peanut Butter Drop Cookies. These yummy and easy cookies are gluten free, grain free, refined sugar free. They have the addition of some fruit as well as the great healthy benefits of walnuts and oats. You can include the add-ins that your loved ones enjoy such as chocolate chips, craisins, chopped walnuts, etc. (I would love to know what add-ins were chosen at your house!  Please let me know in the comments below!  Thanks!!!!)

Ingredients:2013-07-05 09.16.32
1/2 cup dried cranberries
2 teaspoons baking soda
4+1/2 cups rolled oats
1+1/2 cups crunchy peanut butter
1/2 cup coconut oil, or butter
3/4 cups packed brown sugar
3/4 cup coconut sugar, or granulated sugar
3 eggs
1/2 teaspoon vanilla extract
1 cup chocolate chips
1 cup chopped walnuts optional (suggested!)

Directions:

  • In a medium sized bowl, mix together the oats, baking soda, and dried cranberries; set aside.
  • Using a stand mixer, cream the peanut butter, other ‘butter,’ and sugars together ‘til light and fluffy. Add eggs, one at a time, and also the vanilla. Mix to blend well.
  • Slowly pour in the dry ingredients, mixing just until everything is combined. By hand, stir in the chocolate chips, and walnuts (if including), too.
  • Place in refrigerator for 10-15 minutes to firm up. Preheat the oven to 350.
  • Line a baking sheet with parchment paper. Using a small cookie scoop or a tablespoon, scoop the cookie batter and drop it onto lined cookie sheet, 2 inches apart.
  • Bake for 9 to 12 minutes until light golden brown and just getting firm. (If you enjoy your cookies a little on the softer side, underbake by one minute.)
  • Makes approximately 4 dozen cookies.

Note: this dough is sticky because of the peanut butter, so I strongly suggest using your hands as little as possible. Using a cookie scoop or tablespoon and simply dropping the dough is best!

Joy of the Season

Each week during the season of Advent, our blogs will focus on a central theme which is associated with the coming of Christ—His Advent.  This final week’s theme is JOY.  Christians throughout the world celebrate Advent.  Some light candles or sing songs; some give gifts or  hang wreaths.  All of these are simple joyous ways of extending the celebration of Jesus’s coming beyond a mere 24 hours on December 25. Our prayer is that these devotionals throughout this season of Advent would help you to celebrate His first Coming and anticipate with the peace and joy of His second Coming.

The definition of Joy: “…the emotion evoked by well-being, success, or good fortune or by the prospect of possessing what one desires; the expression or exhibition of such emotion gaiety; a state of happiness or felicity bliss; a source or cause of delight”

And the angel said to them, “Fear not, for behold,
I bring you good news of great joy that will be for all the people.
Luke 2:10 (ESV)

I can just imagine the awestruck look of the shepherds when they saw and heard the Angel of the Lord right beside them. Then seeing and hearing the heavenly host singing praised to God about the birth of His son Jesus! I would think that not many people had ever heard the voices that are God’s exclusive choir. We have the opportunity every day to share the joy of God’s love, mercy, and grace.

During the Christmas season, we need to focus on what is real about this holiday—celebrating the birth of Jesus and what promises He brings to us, His people. As we celebrate this Christmas season, let us find new ways to bring Christ back into our homes. This can be done by reading the Nativity story, or asking the younger children to act out the story at home and by singing praises to God our Father.

Be sure to share the joy of receiving Christ into your heart with others. Write down your testimony and prepare to share it with others. You may be surprised of how much your story could inspire others to believe—or better yet—to rededicate their life to God. We each have our journey that began at birth. We have walked out things in common with each other but some things will be unique to our own lives. Who knows if God had us walk through those circumstances to come through and be able to help others with similar situations…?

Joy is ultimately a choice, just as forgiveness is a choice. We each have a decision to make. Belief and trust in God will allow us to make changes in what we do and think and say in our everyday life. Joy is an inward change and one that was greatly hoped and prayed for when Jesus was born several thousand years ago.

Let’s pray.  Father, thank You for loving us enough to send Your Son, Jesus, to become one of us. Thank You for wanting to show us the kind of relationship You have desired with us since You created Adam and Eve. We each search for that relationship that only You can give. You will always complete the void in our lives.  We pray in Jesus’ name, amen.

We Are The Reason

This verse pretty much speaks mountains of why God gave….\ It was all for us! He wanted us to know His love so He demonstrated His love!  Listen and let this song speak to His reasons as to why He gave and continues to give.

And all the gifts and toys we knew we’d find
But we never realized a baby born one blessed night
Gave us the greatest gift of our lives

Sing Along

A couple years ago I was in the car with my sister and nieces, and my niece instantly started singing along to “Angels we Have Heard on High.”  It was such a sweet moment. My sister told me she just loves that song! Now, each Christmas season when I hear this song playing, I think of that moment years ago and smile.

 

I simply love that one of my niece’s favorite songs is one which highlights the glory of God!  I want all of my nieces and nephews to grow up loving God and knowing that He is their Savior. I am thankful they hear about Him daily.

Just as my nieces and nephews hear, how is the entire world going to learn about God’s goodness and love and know Him personally unless they are hearing about Him?

But you will receive power when the Holy Spirit comes on you;
and you will be my witnesses in Jerusalem,
and in all Judea and Samaria, and to the ends of the earth.
Acts 1:8

I love this verse so much! It challenges me to truly share Jesus with everyone I pass by in a day. Whether it be a smile, a kind word, or lyrics to a Christmas song—don’t pass up any opportunity to be God’s witness to the whole wide world!

One thing we can take advantage at this time of year is the fact that many people who normally listen to stations playing music with empty words are now hearing Christmas songs filled with God’s words blast through their speakers. These new lyrics can leave them searching for something, for Someone. Let’s be ready to share the good news that Jesus is Who, what they have been searching for. He came into this hurting world for you and me, in order to save us and so we could spend eternity in His glory one day!
Truth be told, maybe the only time Jesus will be heard on most of these stations is during the Christmas season.

Think about the words of this song alone, Angels We Have Heard on High:

Shepherds, why this jubilee
Why your joyous strains prolong
What the gladsome tidings be
Which inspire your heavenly song
Gloria in Excelsis Deo (Glory to God in the Highest)
Gloria in Excelsis Deo (Glory to God in the Highest)
Come to Bethlehem and see

What is the reason for your joy? What is the reason for the hope you have found? What is the reason for these songs of praise? Just as this song answers these questions, let us, too, answer these questions for the single mom asking…the drug addict asking…the homeless person asking…the quiet child asking.

Let us pray for each for these ones to be brought along our path this Christmas so we can share with them God’s love…so that one day they will be singing along with us and the angels, to His glorious song in Heaven, Glory to God in the Highest!

Oh the memories this song brings to mind;  really, all my childhood Christmases are wrapped up into it. Every Christmas, our church put on a Christmas musical called “Carols by Candlelight” and my sweet precious daddy sang this song and my sweet little sister sang in the children’s chorus behind him. My sweet precious mom and I sat side-by-side in the pew, along with my dad’s parents.  We were all dressed up in our Christmas best and I remember how much I loved sitting right beside my mom. I remember how I loved holding her hand and how safe I felt. How she knew my every need before I asked, and how she knew I would want that piece of gum she had in her purse. Oh, how she loved me and how she took such good care of me. Isn’t that a picture of how our Father in Heaven loves us? And takes care of our every need before we even realize we need it?

The hymn was sung a little differently than the lyrics above. It started like this:

“Welcome, we’ve gathered today to praise the Christ of Christmas.
Let’s invite Him in today!” And then these beautiful words:
“Lord, You left Your throne and Your kingly crown,
when You came to this earth that day.
But in Bethlehem’s home there was found no room for your Holy Nativity.
Oh! Come to my heart, Lord Jesus!  There is room in my heart for You.”

Our God, our Creator sent His only Son to this earth as a baby. He entrusted Him to a carpenter and his wife, Mary. He came into this world in a filthy stable where He was and is still most comfortable—among the dirty. He was laid in a manger, made of wood, and He was to be the Savior. He would later die on a cross, made of wood, so that we, the dirty, could be clean. Do you realize what a miracle this was?

“You came, Oh Lord, with the Living Word that should set Your people free! But with mocking scorn, and a crown of thorns, they sent You to Calvary. Oh come to my heart, Lord Jesus, Your Cross is my only plea. Oh, come to my heart, Lord Jesus. “ And the final verse, that’s full of hope, send chills and brings a smile I can’t contain. “Let Thy voice call me up saying ‘Yes there is room,there is room at My side for you!’” Isn’t that what we long to hear one day? I know I’m living for that day!

So today, if you haven’t given your life to Him or made room in your heart for your Savior, He is waiting. All you have to do is ask. I can’t imagine a better birthday gift for Jesus than to have another of His children ask Him to be in their heart. Can you? Doesn’t matter how dirty you are or how you live or where you live, He meets you where you are and He can’t wait to walk with you through this life. Once He comes into your heart, you will never be the same and He will never leave you or forsake you!

Where are you this Christmas? He knows and He cares and He wants to sit beside you and hold your hand and make you feel safe. Will you ask Him to come into your heart today?

Let us pray: Dear Heavenly Father, Thank You so much for the gift of Your Son! He came to earth and paid the ultimate price so that we don’t have to. You know where we are right now and You meet us and You love us! Help us to remember and to celebrate You this season and to not get tangled up in the material aspect of it. Help us to keep You in the center of Christmas and the center of our lives. We love You and praise You. Give those who don’t know You the courage to try life with You. Give us Your Holy Spirit to guide and direct us until that awesome day when face-to-face we will see You!  In Your Son’s name we pray. Amen.

Chocolate Cranberry Quinoa Biscotti

Girlfriends Coffee Hour runs on prayer and  coffee, and sometimes coffee needs biscotti!  If you’ve ever paid $2 for a biscotti at your local coffee shop and thought, “It can’t be that hard to make these,” you are right!  This recipe for Chocolate Cranberry Quinoa Biscotti takes a few extra steps, but if you are looking for a gluten-free, nut-free treat for your afternoon coffee break, read on!

I was looking for nut-free biscotti recipes online, and I found one using quinoa flour, which I’d never heard of or used.  Time to experiment!  It turns out that quinoa flour is incredibly easy to make, and exceeds wheat flour in fiber, protein, and nutrients.  If you don’t want to make your own at home, I understand – you can find it in health food stores and online, and Bob’s Red Mill makes it (I really like and trust their products.)  I used red quinoa, so the biscotti has a darker color, but feel free to use the regular white kind.  To make quinoa flour at home, pour one cup of quinoa on a baking sheet and bake for 12-15 minutes at 300*F.   When cool, grind in a spice grinder, grain mill, or superpowerful blender.  I have a hand-crank grain mill that made short work of the job!  One cup of dry quinoa will yield one and a quarter to one and a third cups of flour.  If you don’t want to go through the trouble, you can use regular or whole wheat flour instead.

Everything else in this recipe is pretty customizable.  Don’t like chocolate chips?  Leave them out or use white chocolate or even butterscotch chips.  Add in any kind of nut, like almonds, pecans or pistachios.  Replace the dried cranberries with cherries, apricots, or just lemon zest.  Drizzle with white or dark chocolate.  These make great gifts, too, because they are pretty hearty and don’t get stale too quickly.  After rigorous and exhaustive testing, I can report that these stand up well to dunking in coffee.  The things I do for you ladies!  😉

If you have a friend who loves coffee, make these as a treat for her (and keep a few for yourself!)

Chocolate Cranberry Quinoa Biscotti

Ingredients:

  • 1+ 1/3 cups quinoa flour (you can use whole wheat flour instead)
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup melted coconut oil (or use butter)
  • 2 teaspoons vanilla extract
  • 3/4 cup coconut sugar (or use brown sugar)
  • 3/4 cup dried cranberries (or cherries or diced apricots)
  • 3/4 cup chocolate chips
  • White chocolate for drizzling (Confession:  I was out of white chocolate, but I found a cookies and cream white chocolate bar that fit the bill.)

Directions:

  1. Preheat oven to 300*F.  Line a baking sheet with parchment paper.
  2. Combine quinoa flour, coconut flour, baking powder, and salt in a bowl.
  3. In a large bowl, combine the eggs, coconut oil, vanilla, and coconut sugar together.  Mix well, then stir in chocolate chips and cranberries.  Stir in the flour mixture a little at a time until thoroughly combined.
  4. Turn the dough out onto the parchment, and using damp hands, mold into a log that measures about 4 or 5 inches wide, one inch high, and about 15 inches long.  Bake until firm, about 25 minutes.
  5. Remove pan from oven, then pick up the parchment with the biscotti log on it, and let it cool on a rack.  You want this cooled to room temperature, so it won’t crumble too much.  With a serrated knife, slice the log into 1/2 inch biscotti.
  6. Place the biscotti back on the baking sheet and bake for about 15 minutes until dry and crunchy.  Let cool completely, then drizzle with white chocolate.  Store in an airtight container to keep them crisp.

This is how God showed His love among us:
He sent His one and only Son into the world
that we might live through Him.
1 John 4:9

He called fishermen to be His disciples (Matthew 4:18). He was anointed by a sinful woman (Luke 7:36-50). He defied social customs and revealed Himself to an outcast Samaritan woman (John 4:1-26).

Whom does Jesus love? Everyone. Whom does Jesus accept? Everyone. Jesus said,  “For I did not come to judge the world, but to save the world, John 12:47b. When Jesus came to Earth He deemed the greatest commandments to be to love of his Father and to love our neighbors (Mark 12:29-31).

Jesus showed us that we could love all people, and love people that sin, but hate sin. He loved the woman at the well. He loved the cripple by the pool. He loved the blind man who sat near the gate. He loved. He did not look at them and dissect every sin they commited, every thought they had. No! Jesus, knowingly, looked at people and just loved them.

The love we have been called to give is love with action. We can choose to love or we can choose not to love. We can even call that which we think is love love when it truly is not.

The Lord has been showing me that I’ve added something to my love. My love is not unconditional like His. No, my love is rather conditional, and this is no way to love at all. I’ve  begun, without noticing, to decide who is “worthy” and “safe” enough for my love. This is not the kind of love that spurred Jesus forward to the Cross that awaited Him. This is not a godly love.

I am no one’s judge, but somewhere along the way I decided I was. The Lord has shown me the error of my “loving.”  How many people have I missed out on truly loving because of the conditions I have placed.  My cousin very recently passed away…he was murdered.  I know that he was one of these whom I have missed out on loving; and now I don’t have the opportunity to make amends.

The problem with adding conditions to our love—besides the fact that it’s not Godly love—is that my conditions may be different from your conditions; and although I may think I’m loving you, you may not feel the same. The beauty of God’s unconditional love is that there is no confusion. Conditional love is isolating. Unconditional love is inclusive. Conditional love judges. Unconditional love accepts.

Conditional love is self-serving. Unconditional love comes down from heaven to a world of people who don’t accept You, who have sinned against You, and who nailed You to a cross, so that You could give them eternal life.

Jesus was sent to save people, not judge them. We are sent to do the same. Dare we love like Jesus???

{Dairy Free} Cranberry and Cocoa ‘Nib’ Oatmeal Cookies

My inspiration cookie recipe for today is found here, and is one of my own creations. The cookie recipe listed below underwent a few changes, but the basic idea is the same. Enjoy!

Ingredients List

  • 1/4 cup pure maple syrup
  • 1/2 cup granulated sugar
  • 1 cup coconut oil OR Earth Balance
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3 cups steel-cut oats
  • 1/2 cup cocoa ‘nibs’ (Can’t find nibs in your area? Substitute chocolate chips or walnuts for a slightly different texture and flavor!)
  • 3/4 cup fresh or frozen cranberries

Preparation Instructions

  1. Maple syrup, sugar, and coconut oil (or Earth Balance) should be placed in mixer bowl and blended well.
  2. Add eggs and vanilla. Briefly mix again.
  3. Add all dry ingredients to bowl. Mix well.
  4. Remove mixer bowl from stand and add berries and cocoa ‘nibs’.
  5. Stir until just combined.
  6. Measure dough onto sheet pans by rounded tablespoon.
  7. Bake in 350 degree oven for 12 to 15 minutes.
  8. Let cool on wire racks.

Enjoy these cookies with a cold glass of milk (dairy free or regular, your choice!) or a hot cup of coffee. Delicious and healthy!
