Shepherds Pie with Cauliflower Mash

Oh, so yummy!  My husband loves Shepherd’s Pie—and so I indulge him!   We’ve had Shepherd’s Pie with beef filling, chicken filling, turkey filling, vegetable filling.  We’ve had it topped with traditional mashed potatoes, with mashed sweet potatoes, with mashed turnips, and like this—our favorite way—with mashed cauliflower!  I always have my eye out for new variations!  This recipe fits into our healthy but oh-so-yummy category in a couple of ways:

  • it is low-carb (with the absence of potatoes)
  • it  is made with natural ingredients that you can pronounce (as the gravy is made from scratch), and not a can of cream of something or other
  • it is low in fat/high in protein (using boneless chicken breast as the protein and just 1/3 cup of shredded cheese and 1/3 cup Parmesan)

This recipe could easily be doubled and baked in an 11 x 13 baking dish.  Enjoy!

Shepherds Pie with Mashed Cauliflower Topping

Filling Ingredients:

1 sweet onion, chopped in pieces about 1/2 inch dice
4-6 ounces baby bella mushrooms, wiped clean and sliced chunky
2-3 tablespoons chopped garlic in oil (from a jar)
4+ teaspoons olive oil
1# boneless chicken breast, pounded flat, cut into 1″ cubes

1 tablespoon butter, or coconut oil
2 tablespoons brown rice flour (or all-purpose flour)
1/4 cup white wine (or broth)
1+1/4 cups chicken broth

1 bag frozen mixed vegetables (your choice), defrosted

Topping Ingredients:

1 medium-sized head of cauliflower, cored and chopped into small pieces
1/4 cup milk
1/3 cup finely grated parmesan cheese
salt and freshly ground black pepper to taste

1/3 cup shredded cheese (sharp cheddar, smoked gouda) *use a flavorful cheese

Instructions:

  • Preheat oven to 375.
  • Bring a medium-sized pot of salted water to a boil. Add cauliflower and simmer ‘til  soft enough to mash easily (10-12 minutes).
  • Drain cauliflower very well; place back into pot and  “mash” the cauliflower along with the milk and Parmesan.
  • Season very well with salt and pepper to taste.
  • While the cauliflower cooks, heat 2 teaspoons of olive oil in a large frying pan and saute the cut-up chicken.  Cook ’til just getting brown but don’t overcook.
  • Reduce heat to low, and add the chopped garlic for the last minute (don’t let the garlic burn).  Remove pan from stove; set aside cooked chicken.
  • Wipe pan with paper towels to remove bits.
  • Then add 2 additional teaspoons olive oil; and saute chopped onions for 3 minutes.  Add chopped mushrooms and saute for 4-5 minutes more to caramelize.
  • Reduce heat to low; add 1 tablespoon butter, and sprinkle flour over the mushroom-onion mixture, stirring with a whisk or wooden spoon.
  • ‘Cook’ this mixture for 3 minutes (to reduce the flour-y taste) occasionally scraping the pan.
  • Then gradually whisk in the wine ’til the mixture is smooth.
  • Slowly whisk in the  broth and your gravy will come together.  Gently simmer for 5 minutes.
  • Add back the cooked chicken and the defrosted veggies and heat together for 1-2 minutes.
  • Spread the chicken-vegetable-gravy mixture in the bottom of a 8 cup casserole dish.
  • Top with the cauliflower mixture, and spread across the pan almost to the edges.
  • Bake for 20 minutes, and then top with the shredded cheese.
  • Continuing baking another 10 minutes or so ’til bubbly.  (If top is not lightly browned, can be carefully placed under broiler for 2-3 minutes.)  Enjoy!

I handed Him the broken pieces of my life and He restored and redeemed it.  Maybe you need to hear that and to know that today—Jesus came for me AND He came for you, too!  May you know and believe who you are in Him. Your identity is not in who you used to be. You are who God says you areBlessed, Anointed, Redeemed, a daughter of the King!
Praise God that your past does not determine your future…He has great plans for you, sweet sister. You may see the struggle but He sees the reason He came.

Hey sisters, you know what joys a baby brings to a family! How about a miracle Baby like Jesus, who came into being through so many prophecies, miraculously, for that matter. Think of Mary how much joy did she have in her heart when the angel visited her despite being worried of what people, and what they would say about her.

I tell you a child brings GREAT joy to a family. Think of Hanna…she was grieved to a point of great distress that Eli thought she was drunk. Really, she needed a child. She cried to the Lord for a child and God granted the desire of her heart. She had great joy!

Now a child is given to us, JESUS—He should be received with all the joy a child brings! Especially now that this Child we have been given will have the power to heal all our diseases, remove all our iniquities, at His name every knee will bow, and every tongue will confess His Lordship. A Child who will have the power to speak to the devil and the devil tremble. And this Child is given to us; don’t we think we are privileged to be given this type of a child? I feel like singing aloud for you to hear what am feeling inside. (Thank God for this revelation!) Oh, HALLELUJAH! Praise the Lord!!!

In this world, when we have a child, he/she goes to school and later starts a job and we enjoy the fruit of paying the school fees and the like.

NOW this Child, Jesus, is given to us. He grew up, He worked, and He died on the Cross. He later paid the bill for us…for our redemption. What else do we need apart from appreciating this Child we are given freely by our loving Father in heaven? The way we dance with joy and hug our child when he /she has done something good—that’s the very same joy we should feel about God’s Son, Jesus. We write messages telling our friends/relatives what our child has done.

Here Jesus is not a mere son, but THE Son! He has come to serve; let’s praise the Lord again and again. Let’s tell our friends and relatives of what this Son, Whom we were given, has done and is doing and shall continue to do. Let us embrace Him with our hearts full of joy.
Let this Christmas season be full of joy. Share the joy with others the same way we share when we receive a worldly child.

Looking back and Looking Forward

Rejoice in our confident hope. Be patient in trouble, and keep on praying.     Romans 12:2

A verse for the new year, don’t you think? As I look back on 2013, I see God’s hand in all of it. I cannot imagine a day without Him, really, and I don’t want to. This year has been challenging for sure, yet my faith has grown by leaps and bounds. There have been times of scarce resources yet God has provided loaves and fishes. My children have not gone hungry and there has always been a roof over our heads. The Lord is so good.

Kyle started a new job this time last year. He has been on the road for most of 2013 and had a lot of time with His Creator. I have had the privilege of watching God grow and mold him into the husband and father that He intended him to be. The marriage that almost ended has been completely renewed  and restored to an even more magical and Spirit-filled marriage, and love for each other is greater than ever. We found a church home and a group of wonderful godly people who love us for us and accept us just the way we are, but love us too much to let us stay content. How amazing when God puts people in your path that actually speak truth to you and help you grow spiritually.

I’ve watched my children grow spiritually through some pretty hard things. But, isn’t that how God works? It’s through the tests and trials that our faith grows and we realize that with God we can do anything. They have seen God do the impossible, too. As much as I would love for their lives to be easy, without hardships and heartaches, their character and faith and relationship with Him grows out of the dark murky soil. I wouldn’t change anything. God is good and all He gives is good. We cannot see the big picture so we don’t see how all these pieces fit together. But God does—and He puts the tapestry of our lives together. I love that I can look back with a smile knowing that He WAS  in control; I love that I can step into next year knowing that He IS in control. What would I do differently? Nothing!

So what are my hopes for the new year? For starters, I don’t want to take one step that He does not ordain. And what is the best way to hear what He says about our future? We go to His Word. His promises always come true and His word is more valuable than any amount of money.

Not that I have already obtained this or am already perfect,
but I press on to make it my own,
because Christ Jesus has made me His own.
Brothers, I do not consider that I have made it my own.
But one thing I do; forgetting what lies behind
and straining forward to what lies ahead, I press on toward
the goal for the prize of the upward call of God in Christ Jesus.
Philippians 3, verses 12-14

‘Forgetting the past,’  ‘pressing on toward the goal,’  ‘for the prize,’  amazing words! And the prize is the the call on your life—an anointing on your life from your Father.

Therefore, if anyone is in Christ, he is a new creation.
The old has passed away; behold, the new has come.
2 Corinthians 5:17

You are a new creation, the old has passed! 2013 has passed, there is nothing that can be done about it now. If wrong has been done, then we repent, ask forgiveness and move forward, right? And that is all that is required. We are forgiven. Grace is ours for free! And there’s more…

Remember not the former things, nor consider the things of old.
Behold I am doing a new thing; now it springs forth, do you not perceive it?
I will make a way in the wilderness and (spring) rivers in the desert.
Isaiah 43:18-19

This is actually our family life verse. He does make a way in the desert—He always has and He always will. When there seems to be no way, He makes a way. He is the way. John 14:6 says, “I am the way, and the truth, and the life. No one comes to the Father except through Me.”

Friends, if you don’t know Jesus and you don’t know the way to the Father, please read these Scriptures and pray them back to Him. All you have to do is ask Him to come in to your heart and live forever. Then read His Word and begin the most important and amazing walk of your life.

Last is Isaiah 43:1-28, “Fear not, for I have redeemed you; I have called you by name and you are mine. When you pass through the waters, I will be with you; and through the rivers, they shall not overwhelm you; when you walk through the fire you shall not be burned, and the flame shall not consume you. For I am the Lord your God, the Holy One of Israel, your Savior. I give Egypt as your ransom, Cush and Seba in exchange for you. Because you are precious in my eyes, and honored, and I love you, I give men in return for you, peoples in exchange for your life. Fear not, for I am with you; I will bring your offspring from the east, and from the west I will gather you.” (Verses 2-5)

 He has called you by name and you are His!! Praise the Lord, He will walk in to 2014 with you and you will start fresh. You have an empty slate, a fresh start, a do over, if you will. All your steps are ordained and He will go before you and make a way for you! Oh…how He loves you and can’t wait to do life with you this year. So let’s take a deep breath, and take His hand and step on into the new year….

Let us pray: Dear God, our Father, thank You so much for this past year, for our successes and failures, for our victories and for trials, for keeping us safe and for loving us always. You are an amazing God, and even the rocks cry out to You. You are our Abba Father, our Daddy, we can crawl up in Your lap and forget the world. Thank You for going before us and making a way for us in the wilderness. Thank You for the fresh springs in the desert and for giving us the victory before the trial. Lord, as we walk in to this new year, I pray Your hedge of protection be around us and our families. Provide all we need, Dear Jesus, and keep us close to Your heart. I’m excited to see what;s in store for us this year! For it’s in Your name we pray, amen!

Quite the list, hmmm?  May I challenge you (oh, don’t worry—me, too!): don’t wait for the new year, 2014, to begin. Today, right now even, make a conscious choice to dedicate all that you are to Him. We have just come through the season of Advent along with the celebration of the birth of the Messiah.  During this season where we have considered God’s great love for mankind, we have been reminded of the vastness and enormity of God’s love for us!   God deserves our all, every bit of what makes you…you; and what makes me…me. Anything that is in us that is good and righteous and pure and holy He has given to us…none of it is of our own making.

Which verse is the one that resonates within your heart? Would you leave a comment below and share that with us…and why? I love ‘em all…but I think my favorite is “Take my will, and make it Thine; it shall be no longer mine. Take my heart; it is Thine own; it shall be Thy royal throne, it shall be Thy royal throne.”

If I surrender my will to God’s will (and so no longer my own!) then all the rest—my life, my moments, my days, my hands, my feet, my voice, my lips, my silver and gold, my intellect, my love—will also be offered to Him for His will to be dominant.

Consider these passages from the Scriptures in light of the gist of this song. Perhaps one or more of them might be just the impetus you need to make the decision to ‘take your life and let it be….”

God-Given Joy

Each week during the season of Advent, our blogs will focus on a central theme which is associated with the coming of Christ—His Advent.  This final week’s theme is JOY.  Christians throughout the world celebrate Advent.  Some light candles or sing songs; some give gifts or  hang wreaths.  All of these are simple joyous ways of extending the celebration of Jesus’s coming beyond a mere 24 hours on December 25. Our prayer is that these devotionals throughout this season of Advent would help you to celebrate His first Coming and anticipate with the peace and joy of His second Coming.

I’m sitting here thinking about joy  and what it truly means. I have read books, watched videos, and talked to people about the concept of joy and what it really means to be joyful, or to have joy, or to even fully understand the word joy.

The words joy and happiness are oftentimes used interchangeably, but I think it’s so much more than simple happiness. We’re happy opening presents, we’re happy when our family and friends are over to celebrate. This is great! But happiness is a temporary emotion, a feeling that can leave us once something goes differently than we planned. But joy is something different….

After all the looking and researching I learned that joy isn’t simply something that I can find. It isn’t the contents inside of a gift…it isn’t something I can find in a job well done. Even though I can’t touch joy, I can embrace it. I can embrace it because it is something that is given to us—something that we, as children of God, have been given a right to.

To me joy is a feeling in my heart and mind that no matter what happens in my life, that everything will be okay. I have joy in knowing that I am loved with the most unconditional love by the Creator of everything. Growing up I always heard that our joy is something that no man can ever take, that Satan can never take; this is because joy is God-given, and what God gives us can never, ever  be touched. Joy is ours.
What is joy to you?

Now may the God of hope fill you with all joy and peace in believing,
that you may abound in hope by the power of the Holy Spirit.

Why is it important that we remember that God is with us through His Son Jesus? Look at Who Jesus is:

Has Emmanuel been your focus during this Christmas season? He is everything we need. Jesus is Emmanuel, God with us. This is what God wants for us in 2014!

Zoe’s Crockpot Chicken

This past weekend, I invited my best friend and her family up to our house for dinner.  Instead of trying to make a meatloaf large enough to feed eight people, I decided to use my two crockpots to save time and effort in my prep.  In the one, a mushroom pot roast.  In the other, I made a lightly curried pot of chicken thighs.  I wasn’t sure if my friends’ kids would like it – they’re eight and ten years old, and I didn’t know if it would be a hit.  Ten year-old Zoe took one bite and her face lit up.  “Mama,” she excitedly told my friend, “you have to ask Dana for this recipe so you can make it at home!”  I have to tell you, I’ve never been so proud of a recipe in all my life!  This, then, will be called Zoe’s Crockpot Chicken.

You can use one or two pounds of boneless, skinless chicken thighs.  If you use one pound, you’ll have more sauce, and will probably want to serve this over rice or noodles.  If you use two pounds, like I did this time, it’s a thicker stew and doesn’t need anything under it – but jasmine rice would certainly be delicious.  Use any store-bought curry powder you like.  I have two, and the one I used this time was just a $4 jar from Trader Joe’s – nothing fancy.  I also used half a head of cauliflower, diced.  It doesn’t add much to the flavor, but it adds nutrition and body to the sauce.  I like to garnish with a big dollop of plain yogurt, and if you have cilantro, sprinkle some of that on top.  If you need a quick chicken dish that promises to please grown-ups and kids alike, check this one out.

Zoe’s Crockpot Chicken

Ingredients:

  • 1 large onion, sliced fine
  • 1 or 2 pounds chicken thighs
  • 2 tablespoons curry powder
  • 1/2 teaspoon salt
  • 15 ounce can of diced tomatoes (I like fire-roasted)
  • plain yogurt and cilantro to garnish, optional
  • rice or noodles, optional

Directions:

  1. Place the sliced onions on the bottom of the crock pot.  Layer the chicken thighs on top.  Season well with curry powder and salt.  Open the can of tomatoes and dump on top.
  2. Cover and cook on high for 4 hours or low for 6 hours.  When ready to serve, shred the chicken with a fork and mix all the ingredients.  Serve on top of optional rice, garnish with optional yogurt and cilantro, and enjoy!

Table Decorations for Women’s Christmas Luncheon

Merry Christmas Everyone!!!

On behalf of myself and my boys, Tristan and Asher, I would like to wish you all a very Merry Christmas Day. Recently I celebrated with my church, River City Church in Owensboro, KY, attending the Women’s Christmas Luncheon. It was a lot of fun and a great way to fellowship with others. I would like to share with you some of my ideas that I used to put together to make table settings and chair decorations for the luncheon.

Items Needed to Decorate the Table:

8 Red Napkins – poinsettia design
8 Placemats
8 Poinsettia Dish settings with silverware, coffee cups, and drinking glasses
2 Silk poinsettias
Greenery – I had one premade with snowmen
Tealights
Greenery Tealight Holders

Arrange the placements, napkins, dishes, cups, and silverware around the table. Place the decorations of your choice in the middle of the table.

Items Needed to Decorate the Chairs:

Red mesh Ribbon
Narrow red ribbon
3″x5″ Canvas
Red and White acrylic paints
Green paint marker
Paint brushes
Hot Glue gun

Paint the canvas using the red and white paint. Let dry. Write a favorite Bible verse with the green paint marker. Let dry. Cut about 8” of the narrow red ribbon, form a loop, and hot glue to the back of the canvas to hang the decoration.
Using the gold ribbon and the painted canvas, tie it to the top of the chair with a double knot. Now, tie the red mesh ribbon on top of the gold ribbon, it will curl up. Then take another piece of gold ribbon and make a simple bow. Tighten and you are done. (Use this photo to see the details.)

Each week during the season of Advent, our blogs will focus on a central theme which is associated with the coming of Christ—His Advent.  This final week’s theme is JOY.  Christians throughout the world celebrate Advent.  Some light candles or sing songs; some give gifts or  hang wreaths.  All of these are simple joyous ways of extending the celebration of Jesus’s coming beyond a mere 24 hours on December 25. Our prayer is that these devotionals throughout this season of Advent would help you to celebrate His first Coming and anticipate with the peace and joy of His second Coming.

Now, journey from a garden to the Bible…. Elizabeth and Zechariah were old when Gabriel told Zechariah his wife would have a son and they were to name him John. But Zechariah was struck with silence for a while because of his lack of faith that this could happen with certainty.  (See Luke 1:11-23.)  Elizabeth became pregnant and her response was, “The Lord has done this for me…” (verse 25).  She gave God the glory.

Months later, Gabriel appeared to Mary and told her, “You will be with child and give birth to a son, and you are to give him the name Jesus. He will be great and will be called the Son of the Most High…” (verses 31, 32). Mary asked how this was to happen since she was a virgin. (But she was not questioning whether or not it would happen.)

The angel answered, “The Holy Spirit will come upon you,
and the power of the Most High will overshadow you.
So the Holy One to be born will be called the Son of God.
Even Elizabeth your relative is going to have a child a child in her old age,
and she who was said to be barren is in her sixth month.
For nothing is impossible with God.”
“I am the Lord’s servant,” Mary answered. “May it be as you have said.”
Verses 35-38

Zechariah’s lack of complete faith is contrasted against Mary’s complete surrender and faith.  Catch the heart lessons as we move toward the reason of ultimate joy.

Mary quickly went to Elizabeth. “When Elizabeth heard Mary’s greeting, the baby leaped in her womb, and Elizabeth was filled with the Holy Spirit” (verse 41). Elizabeth proclaimed, “As soon as the sound of your greeting reached my ears, the baby in my womb leaped for joy. Blessed is she who has believed that what the Lord has said to her will be accomplished!” (verses 44, 45).  Joy happens when the beauty of Scripture takes place as it has been foretold (Jesus is coming!) and when one witnesses the great faith in God of another. Both of these things happen in the wonderful encounter between Mary and Elizabeth. It‘s a joyous time as the spotlight is turned toward Jesus’ coming.
What the prophets/Scripture had been foretelling for many years was finally about to happen: Jesus was coming soon!  Mary breaks into praising God right after her encounter with Elizabeth.  And Zechariah praises God out loud when his silence is broken soon after John the Baptist’s birth.

Two different journeys led to paths of praise (joy) when faith in God was the focus. Difficulties, hard times, miracles, and waiting can all produce joy when people have faith in God.  Let’s all be reminded of Gabriel’s words: “Nothing is impossible with God” (Luke 1:37).

Then, the day finally arrived! Mary was there when some of the most joyous verses in all of Scripture happened and when silence was broken with a baby’s cry:

While they were there, the time came for the baby to the born,
and she gave birth to her firstborn, a son.
She wrapped him in cloths and placed him in a manger,
because there was no room for them in the inn.”
Luke 2:6, 7

Jesus brought boundless, complete joy to a world that would never be the same again! The Light of the Word came to a dark world!

…the people living in darkness have seen a great light;
on those living in the land of the shadow of death a light has dawned.
Matthew 4:16
