In today’s day and age it can be easy to get discouraged with all the things we see around us.  We have to decide if we are going to focus on all the stuff surrounding us or CHOOSE to look at the good.

I love the lyric ‘Do you hear the bells they’re ringing’?  I think of this every time I walk out of the apartment where I live now.  When I go outside every so often I can hear the faint sound of church bells ringing from the church close to where I live.  In today’s world with all the evil around us it would seem that you have to intentionally listen for the still, small voice of God in the midst of it.  This does not mean that God has stopped working.  He is still there.  He is a gentlemen.  It is up to us to be looking for Him.  Are we listening?

But Jesus replied, “My Father is always working, and so am I.

The key to peace in this world is the peace that can only be found in Him.  Jesus said…

I have told you all this so that you may have peace in Me.
Here on earth you will have many trials and sorrows.

A baby’s first cry gets the attention of everyone around, yes?  At the very moment of birth, all in attendance pause to hear a baby’s first cry—expectant parents, other relatives and loved ones, the nurses, doctors, and other caregivers—and then sigh with joy, with relief, and with thankfulness at that wonderful sound!  When the baby Jesus was born, His cry, too, brought great joy to his parents, Joseph and Mary. Think of the setting:

And while they were there, the time came for her delivery,
And she gave birth to her Son, her Firstborn;
and she wrapped Him in swaddling clothes and laid Him in a manger,
because there was no room or place for them in the inn.
Luke 2:6 and 7

Joseph and Mary had traveled many, many miles to come to Bethlehem to register in the census.  Upon their arrival, there was nowhere for them to stay but in a stable…and this is where Mary birthed her firstborn, Jesus, God’s Son.  Not the best surroundings!  So I would think baby Jesus’ first cry meant oh-so-very much to them!

But…both Joseph and Mary were fully aware of just Who this tiny baby was!  Both had been told of the significance of this baby’s life by angels. (Read the records here: Luke 1:26-38;   and  Matthew 1:18-25).  Don’t you think they each had contemplated for the entire duration of Mary’s pregnancy the magnitude and awesome, eternal implications of just Who their Son would be!  Think for a moment…place yourself in their sandals: when the baby was birthed and took His first breath and released a cry, can you only imagine the praises that must have welled up out of their hearts?  Can you imagine the look they must have exchanged as they realized that the promises that the angel had made to each of them came forth into fruition?  That initial cry of baby Jesus truly changed the world!  Perhaps Mary remembered the words she spoke when she was visiting her cousin Elizabeth:

“Oh, how my soul praises the Lord.
How my spirit rejoices in God my Savior!
…because the Mighty One has done great things for me, and His name is holy.
His mercy is from generation to generation on those who fear Him.”
Luke 1: 46-47 and 49-50

And so we, too, do also exclaim and praise!  Even now, don’t we love to sing these beautiful carols and anthems and songs that tell of Jesus’ coming and His birth.  We are reminded of all that first little cry meant as it sounded out that the Savior was born!  He had come…just as promised throughout the ages!  As the words of this beautiful song say,

“How suddenly a baby cried and all forever changed.
Through history soul by soul have come to find His healing grace.
He filled my troubled heart with peace, with hope of endless worth.
My voice will join the song of praise that tells Messiah’s birth.”

May our voices rise up in praise and thankfulness to our heavenly Father!  Because of His great love for us (you and me!), He sent His Son to redeem and save us; to rescue us and make available to us a relationship with Him for all eternity.

Thumbprint Cookies

It is the season for cookie baskets and cookie exchanges. How many dozen cookies have you made already? How about you, Coleen…(you ask?) Ummmm, zero….well, ‘til these! (I know, I know…better get on it!) Yup, part of my plan for this week. Here’s what I am hoping to accomplish.   I would LOVE to hear what varieties you are making for your loved ones this year!!!

Mexican Wedding Cookies (Snowballs)
Gingerbread Hearts
Pignoli Cookies (here’s my recipe)
Chocolate Chip Oatmeal
Italian Almond Cookies (Robert’s constant request-here’s my recipe)
Spritz (my all-time, hands-down, yes, please! favorite)

But these are where I started. I just love thumbprint cookies! Most of you know that I bake/cook gluten-free. These also are paleo, dairy-free, and refined sugar-free. (Hope that is helpful to a few of you!) And all of that helps to keep these within my healthy but oh-so-yummy POV!  Enjoy!

Thumbprint Cookies

ingredients:2014-12-14 21.36.14
1/3 cup arrowroot flour
1/3 cup almond flour
1/3 cup coconut flour, sifted
1/4 teaspoon sea salt
5 tablespoons coconut sugar**
1 tablespoon water
1/4 cup coconut oil, melted
1/2 teaspoon vanilla extract
1 egg, room temperature
all-fruit marmalade or jam (I used ginger/orange and raspberry)
1 egg white beaten with 1 tablespoon water, for egg wash
1/2 cup finely chopped nuts (I used walnuts)

directions:

  • preheat oven to 350
  • line baking sheet with parchment paper
  • in a large bowl, whisk together dry ingredients (first 5)
  • in mixer bowl, combine the wet ingredients (next 4) for 1 minute
  • add the dry ingredients to the wet ingredients and combine with mixer
  • take tablespoon-sized balls of dough and quickly roll into a ball
  • dip into egg wash and then run through chopped nuts
  • place on lined baking sheet about 1″ apart
  • make an good-sized indentation with your thumb (or a wooden spoon handle)—but don’t poke through the bottom
  • fill the indentation with about 1/2 teaspoon marmalade/jam
  • bake for approximately 15 minutes ‘til just lightly browned; remove from oven
  • carefully transfer to a cooling rack
    makes 15 to 20 cookies

** NOTE: these are on the not-so-very-sweet side…you may want to add additional sugar!

Joy of Growth

My heart was filled with joy this past Sunday (December 7). Our daughter turned four just a little over a month ago. Now, at our church, they have nursery for those 4 and under during early and late services. We usually attend the early service. (Yes, I manage to get a 4-year-old and 6-year-old up early on Sunday mornings in order to make 8 am church service.) I decided to try something this past Sunday with our daughter…and I hoped that it would not backfire on me.

Now as I was saying, our daughter just turned 4. I decided to take her with us to “big” church this Sunday to see how she would do. I was nervous thinking she would be loud and wiggly like a lot of kids. However, I had faith. I also made sure to have a coloring book and pad of paper available for her to draw on to keep her busy. She surprised me, though. She tried to sing the first chorus with us, and the only major thing she did was she was a little wiggly and curious. She never did get loud. My heart really filled for joy when she put our Lottie Moon offering in the offering plate. It was the joy of being a parent and watching my child learn.

I can only imagine the amount of joy that Mary felt that first Christmas night. Her firstborn Son was born, but also her Savior was born. She was overjoyed that she had been chosen to be His mother. She would have the joy of watching Him grow and mature into adulthood. She already knew the pain and anguish that would come with being His mother, but she trusted God. Mary put her whole faith in God. By putting her faith in God, Mary knew that she was given a most glorious gift.

Just as Mary had faith in God, we should have faith as well. Our faith in Jesus can bring us joy all year long—not just during this time of the year. Our reward for trusting in Him and believing that He died on the Cross for us is the saving of our souls when Jesus returns. We will go to Heaven with Him and celebrate in great joy and peace.

Dear Heavenly Father, thank You for the birth of Your Son. Without Him we would be nothing. Thank You for the joy of watching our own children grow and for the chance to lead them in them in the right direction—to You. Watching them and guiding them brings its own joy. In Jesus’ name, Amen.

As I was researching this song I came across the following excerpt on its history:

“The text of Joy to the World was originally titled “The Messiah’s Coming and Kingdom” when it first appeared in Watt’s Psalms of David Imitated of 1719. It was his interpretation of Psalm 98 which read in the King James Bible, “Make a joyful noise unto the LORD, all the earth: make a loud noise, and rejoice, and sing praise.” Watts connected the joy found in the Psalm to the worship and praise of the coming Messiah. The song was conceived by Watts as a poem celebrating the second and final coming of Jesus but as we know, it has become a precious Christmas carol for the churches. It would not get set in its current musical form until a Jersey born son named Lowell Mason put his musical arrangements to the hymn in 1836.”

I find it interesting that this was written about Christ’s second Coming but has become a beloved carol celebrating His first Coming.  Yet it all ties together neatly, for without the first Coming there would be no second Coming.

As I was reading all of this, God prodded me with a question,

“Have you prepared room in your heart?”

My first response was “Of course!”  I accepted Christ as my Savior as a child.  But God made it clear He wasn’t talking about that.  He wanted to know if I had made room in my busyness for Him.  Ouch!  Why is it we become so consumed with the shopping, the gifts, the preparations, and the celebrations we forget the joy?  Joy is found in what Christ has done for us not in what we do to celebrate His birth.  It is a gladness, an exultation that leads us to rejoice.  Look at Psalm 92:4 NLT…

You thrill me, Lord, with all You have done for me!
I sing for joy because of what You have done.

That’s what Christmas should be about.  We should be so thrilled at the reminder of all He has done that we cannot contain our joy!   We have to sing.  Our excitement as we recall the wonders of His love is to be shared.

The light in the eyes [of him whose heart is joyful] rejoices the hearts of others…

Have you made room in your heart for Him?
Is the light in your eyes bringing joy to someone else?

Lord, we thank You for this wondrous time of year.  Remind me to check my heart and make sure there is plenty of room for You instead of getting caught up in my own busyness.  Bring to mind the wonderful things You have done for me.  May I reflect the joy of what You have done.  In Christ’s name, I pray – Amen, it is so!

Joy in the Night

For hundreds of years the Jewish people had prepared for and hoped for the Messiah to come. Finally the time had arrived, but it didn’t come as many had expected—with great fanfare and pomp. (Not that angels lighting perhaps a moonless sky wasn’t pretty fantastic!) But there was no big parade in the middle of the day down the center of town for all to see. Instead it came to a few. Instead it came to the forgotten of society. Instead it came in the darkness of night.

That night there were shepherds staying in the fields nearby, guarding their flocks of sheep.
Suddenly, an angel of the Lord appeared among them,
and the radiance of the Lord’s glory surrounded them.
They were terrified, but the angel reassured them.
“Don’t be afraid!” he said. “I bring you good news that will bring great joy to all people.
The Savior—yes, the Messiah, the Lord—has been born….
Luke 2:8-11

The joyful news of the arrival (the Advent) of the long awaited Savior, the Messiah, came at night. Not only was the world dark with physical night-time. I quote from Reverend Billy Graham,

“It wasn’t night because the sun had gone down. It was night because the world was surrounded in spiritual and moral gloom. People were driven by greed, intolerance, and lust for power. Religion had become a device for the rich in the exploitation of the poor. Men robbed and swindled and profiteered under the cloak of religion; they even fought wars in the name of religion. In every arena of life, it was night when Jesus came.”

And all this is still true today. People still live in darkness—the darkness of all kinds of sin and its repercussions. But the joyful news is that Jesus came, and He brought light to all mankind.

The Rock of Israel said to me:
‘The One who rules righteously,
Who rules in the fear of God,
is like the Light of morning at sunrise,
like a morning without clouds,
like the gleaming of the sun
on new grass after rain.’
2 Samuel 23:2-4

Jesus, the Light of morning, came for all people so that none of us would have to walk in darkness.

Again Jesus spoke to them, saying, “I am the Light of the world.
Whoever follows Me will not walk in darkness, but will have the Light of life.
John 8:12

Jesus knew that His Light would bring life and joy to all who choose to follow Him. Even in His last major prayer for His disciples He said this:

“Now I am coming to You <His Father.>
I told them many things while I was with them in this world
so they would be filled with My joy.
I have given them Your Word.”
John 17:13-14

If you feel forgotten, if you are mourning, if you are still walking in darkness, then now is the time to allow Jesus, the Light of the world, to step into your world and give you His life and His joy.  Rejoice with great joy!  Jesus Christ, the Messiah, is the Light of the morning!  We don’t have to walk in the darkness of night (sin), because JOY comes in the morning!

Sing to the Lord, all you godly ones!
Praise His holy name.
For His anger lasts only a moment,
but His favor lasts a lifetime!
Weeping may last through the night,
but joy comes with the morning.
You have turned my mourning into joyful dancing.
You have taken away my clothes of mourning and clothed me with joy,

Dear Lord Jesus, thank You for Your great compassion.  Thank You for Your joy that comes when we walk out of our “night” and into Your Light.  For those who make that decision during this Christmas season, I pray they will experience Your Light and Joy like they have never experienced anything before.  For those of us who already walk in Your light, we thank You for Your Joy, unspeakable joy!  You are our Light of Life!  All honor and glory belong to You, our Savior and King!  IT IS SO!

Strange Way To Save The World

He was just a young man, just  a carpenter.  A perfect example of the ordinary becoming extraordinary!  He coulfn’t believe his ears, and how in the world woulf he ever tell his family? Yes, they were engaged to be married and oh, he loved her with all his heart.  But a baby?  He knew it couldn’t  be his.  Then, in a dream, an angel came to him and explained everything. Yes…he was convinced, but sure that no one else would be. Why me, he said…I’m no one special.

The Savior, God’s Son, could have come to earth any way He wanted.  He could have come with trumpets or on a chariot or already a grown man or never having to go through anything, really.  But He didn’t.  He chose to come as small as He could—a baby born to common people, in a stable, in a manger.  He was wrapped in strips of cloth, instead of the latest trend in the expensive boutiques.  He came for one purpose alone…and that was (and is) to save us.

She was just a teenage girl engaged to a carpenter.  She was planning a wedding, getting ready to move in with her fiancé’s family, as tradition would tell her to do.  And then, on an ordinary night, an Angel of the Lord appeared to her and told her,

“Don’t be afraid, Mary…for you have found favor with God.
You will conceive and give birth to Son, and you will name Him Jesus.
He will be very great and will be called the Son of The Most High.
The Lord God will give Him the throne of His ancestor David,
And He will reign over Israel forever, His Kingdom will never end.”
Mary asked the angel,”But how can this happen? I am a virgin.”
The angel replied,”The Holy Spirit will come upon you
and the power of the Most High will overshadow you.
So the baby to be born will be holy and He will be called the Son of God.”
Luke 1:30-35

So they, Mary and Joseph, traveled to Bethlehem and found room in a stable.  And there the Christ-child was born.  And now we celebrate His birth every Christmas.  His coming to earth to save the world ultimately saved us from ourselves.  We will live forever, all because of that night in Bethlehem.

And, yes, it WAS a strange and
wonderful, awesome, amazing, loving way to save the world.

Let us pray: Dear God, You are amazing and awesome and loving.  You give and give…and You gave the greatest gift of all, Your Son.  He came as a baby, a sweet baby boy, grew to be a man and the ultimate Sacrifice for us.  Thank You for all You have done for us; for loving us so much and giving so much grace that we don’t deserve.  The way You saved the world was perfect.  In His name we pray, amen.

Rosemary Chicken and Potatoes

Rosemary Chicken and Potatoes

Once again, I’m presenting a recipe so simple, I almost hesitate to call it a “recipe.”  This takes 5 minutes to put together, and is so quick and simple you’re going to laugh if you’re not making this already.  This one pot Rosemary Chicken and Potatoes is the best!

If you don’t have a big Le Creuset Dutch oven (or something similar; I’m not a stickler for name brands), it’s time to put it on the Christmas list.  This heavy enameled pot makes stews on the stove top as well as roasted meats and veggies in the oven a snap.   The tricks to this recipe are the fresh rosemary and the bone-in, skin-on chicken thighs.  The rosemary has to be fresh, because the oils that come out of the chopped leaves are what perfume the whole dish.  The chicken skin gets crispy and keeps the chicken moist.  Make sure that you don’t use too many thighs when you make this.  You want some space between the chicken pieces, so the air can circulate around them and crisp up the skin.

Ready for the easiest and tastiest one pot meal around?  Let’s go!

Rosemary Chicken and Potatoes

Ingredients:

  • 1 pound potatoes, any kind
  • 1 large  or 2 small onions
  • 1 1/2 – 2 pounds skin-on, bone-in chicken thighs (five thighs work best for us)
  • olive oil
  • salt and pepper
  • 1 large sprig of fresh rosemary

Directions:

  1. Preheat the oven to 375*F.  Wash the potatoes and cut into bite-sized chunks.  Cut the onion into large chunks.  Combine in the bottom of a large Dutch oven.
  2. Place the chicken thighs, skin side up, on top of the potatoes and onions.  Make sure there is space between the chicken pieces – you don’t want to crowd the pan too much.  Drizzle the whole pan—chicken pieces and down into the potatoes—with olive oil; use about 4 tablespoons.  Season the oiled chicken with salt and pepper.
  3. Strip the leaves from the rosemary and mince.  Sprinkle over the chicken and potatoes.
  4. Bake for one hour.  After an hour, set the temperature in the oven to 400*F, and cook for another 15-30 minutes, until the skin is golden and crispy.  Serve hot!

The Savior—yes, the Messiah, the Lord—has been born today in Bethlehem, the city of David!
And you will recognize Him by this sign:
You will find a baby wrapped snuggly in strips of cloth, lying in a manger.
Luke 2:11

Our first vision of Jesus is a baby lying in a manger, with shepherds and animals and Mary and Joseph all gazing at this beautiful baby.  It’s the Christmas scene, a beautiful one that we see on greeting cards and church programs.  But don’t leave Him in the manger.

Tiny, sweet, delicate and small, this helpless baby grew and lived an amazing life…
witnessed to many,
fed the five thousand,
healed the sick,
gave sight to the blind,
gave life to the dead,
and ultimately carried His own Cross and died for us.
Then He rose again after three days,
ascended into Heaven,
leaving us the gift of the Holy Spirit,
and He will come back to earth as King of Kings.

Out of that manger came a Savior Who came to earth to become a man, to walk the streets as we do, and to experience life before us…so that we could live by His example.  He was despised and rejected and hated by many.  And He was followed by crowds of people, longing to be healed.  He was loved by His Father, yet  sacrificed for us, God’s children.

Do you ever wonder what kind of follower you would’ve been?  Would you have believed that HE was who He said He was?  Would you have had the faith to touch His garment knowing you would be healed?  What is so amazing is that even today, your faith can move mountains.  Your faith in Jesus can still heal sickness.  Your faith in Him can bring plenty of provision to your family and your belief inHim can save your life.

Yes, He came as a baby and we still picture Him in the stable in the manger on that first Christmas night with the bright star leading the shepherds to Him.  But we can’t leave Him in the manger. We must bring Him into our lives, into our hearts and let Him lead us and guide us into being all that God has created us to be.  There is so much good that He wants for us, if only we will have the faith and the courage and endurance to walk with Him through the hard and sometimes the impossible.  And without Him, life is impossible.

He is for you and He is waiting with His nail pierced hands open to accept you into His Kingdom.

Do you want Him to be Lord of your life?

I pray, today, that you ask Jesus to come into your heart and to be Lord of your life.  If you made this decision today, I ask you to pray this prayer.

Dear God, I know that I am a sinner and I need forgiveness.  I believe that Jesus is Your Son and He came to earth as a baby and grew to be Son of Man.  He sacrificed His life on the cross for our sins so that we can live a life of freedom.  I want this for my life.  Walk with me now. In Jesus’ name. Amen.

This Week…PEACE (Advent, week two)

Here on the Seeking Him blog this past week, we have focused on the subject of PEACE as part of our Advent devotionals.  Jesus came to be our peace…to bring the peace that comes from redeeming us from sin.  Here are some excerpts from this week’s devotionals…

Tina reminded us in Sweet Peace of the angels’ words to the shepherds.

And suddenly there was with the angel a multitude of the heavenly host praising God, and saying, Glory to God in the highest, And on earth peace among men in whom He is well pleased. And it came to pass, when the angels went away from them into heaven, the shepherds said one to another, Let us now go even unto Bethlehem, and see this thing that is come to pass, which the Lord hath made known unto us. And they came with haste, and found both Mary and Joseph, and the Babe lying in the manger. And when they saw it, they made known concerning the saying which was spoken to them about this Child. And all that heard it wondered at the things which were spoken unto them by the shepherds. But Mary kept all these sayings, pondering them in her heart. And the shepherds returned, glorifying and praising God for all the things that they had heard and seen, even as it was spoken unto them.

In her devotional, Peace Which Passes Understanding, Ann encouraged us to remember the following promise.

And the peace of God, which passeth all understanding,
shall keep your hearts and minds through Christ Jesus.
Philippians 4:7

 

Ahmee also reminded us of another of God’s promises…of great comfort in Peace, Be Still

Be still, and know that I am God!
Psalm 46:10a

 

Writing on the Prince of Peace, Cynda shared with us the prophecy that Isaiah spoke about the coming Messiah.

For to us a Child is born, to us a Son is given;
and the government shall be upon His shoulder,
and His name shall be called Wonderful Counselor,
Mighty God, Everlasting Father [of Eternity], Prince of Peace.
Isaiah 9:6 AMP

At the conclusion of their devotionals,Tina, Cynda, Ann, and Ahmee each shared a beautiful prayer or a blessing; and I thought it would be a joy to revisit them here at the end of the week.

May the Lord turn His face toward you

Father, we pray for Your peace during the Christmas season.  We want to understand and learn about You and Your Son in a new and unexpected way.  Holy Spirit, open our eyes and hearts to receive You in a new and exciting way.  Let us have a new passion for Your word and Your ways, Lord.  In Jesus’ name we pray and ask these things, amen.

Lord, I thank You for the peace that passes all understanding.  I thank You for the peace I have within that is moving me from one level of glory to another.  I really appreciate You, Abba Father, for this is not unto me alone, it is also to my friends who are reading this devotion.

May You give us the grace of increased faith in You which will bring peace into our hearts.  May our hope be in You as You are PEACE Yourself, Lord.  Blessed be Your name now and forever more.  In Jesus’ name, I pray.
