Such grace…such amazing grace!!!

How blessed are we {mankind} to have been shown such love and grace by Almighty God that He would give us the gift of grace through the awesome, incredible gift of His Son? !! ?

But not as the offence, so also is the free gift.
For if through the offence of one many be dead,
much more the grace of God, and the gift by grace,
which is by one man, Jesus Christ, hath abounded unto many.
Romans 5:15

But God, being rich in mercy, because of the great love with which He loved us, even when we were dead in our trespasses, made us alive together with Christ—by grace you have been saved—and raised us up with Him and seated us with Him in the heavenly places in Christ Jesus, so that in the coming ages He might show the immeasurable riches of His grace in kindness toward us in Christ Jesus. This is amazing grace!  That we…dead in our trespasses and our sins, without hope, destined for eternal damnation…have been redeemed, saved, set apart, made alive, raised up, seated in heavenly places!

He <Jesus>appeared to me also. For I am the least of the apostles,
and not fit to be called an apostle, because I persecuted the church of God.
But by the grace of God I am what I am, and His grace toward me did not prove vain;
but I labored even more than all of them, yet not I, but the grace of God with me.
1 Corinthians 15:8-10

The apostle Paul was a man who always purposed to magnify God and speak well of the grace he had received.

…and the grace of our Lord overflowed for me with the faith and love that are in Christ Jesus.
The saying is trustworthy and deserving of full acceptance,
that Christ Jesus came into the world to save sinners, of whom I am the foremost.
But I received mercy for this reason, that in me, as the foremost,
Jesus Christ might display His perfect patience as an example
to those who were to believe in Him for eternal life.
1 Timothy 1:14-16

In all of Paul’s encouragement and admonition through each of the Epistles, he wrote over and over again to the first century believers of the greatness of God’s grace. Paul seemed always to endeavor to help the people (and us, too!) to remain aware and thankful for God’s grace!

According as He hath chosen us in Him before the foundation of the world,
that we should be holy and without blame before Him in love:
Having predestinated us unto the adoption of children
by Jesus Christ to Himself, according to the good pleasure of His will,
To the praise of the glory of His grace, wherein He hath made us accepted in the beloved.
In whom we have redemption through His blood,
the forgiveness of sins, according to the riches of His grace;
Ephesians 1:4-7

I pray for each of us that our hearts will cry out every day with praise and acknowledgment of His great grace to us.  And that we, like our brother Paul, would share this with others.

In Christ Alone

The words of a song can be so stirring!  For myself, I have found hymns to have this effect on me.  A choir director once told me that hymns are songs that “are soaked in doctrinal truth.”  One definition of hymns says that they are “… songs that help teach faith.”  What we sing through this type of song can profoundly affect how we think and feel.  And each of us have our own favorite hymns and choruses…they come to mean so much to our hearts!  This song, In Christ Alone, is considered a modern-day hymn. It contains such foundational truth.

Take for example, the very first three words of this song, “In Christ alone…” You could say them in other ways, too—‘only Jesus…’ ‘Jesus is everything to me…’ ‘You, Lord, JUST You…’

The Son is the image of the invisible God, the firstborn over all creation.
For in Him all things were created: things in heaven and on earth,
visible and invisible, whether thrones or powers or rulers or authorities;
all things have been created through Him and for Him.
He is before all things, and in Him all things hold together.
And He is the head of the body, the church;
He is the beginning and the firstborn from among the dead,
so that in everything He might have the supremacy.
Colossians 1:15-18

In and through Jesus we have been given so very much!  He truly is our ‘Light… (John 8:12), our Strength… (Psalms 28:7 and 8), our Cornerstone (1 Peter 2:5 and 6)!’

I just love to sing these next lines of this song; they are so beautiful!

What heights of love, what depths of peace,
when fears are stilled, when strivings cease!
My Comforter, my All in All, here in the love of Christ I stand.

Through Jesus, also, we have love (Romans 8:38 and 39), peace (Philippians 4:7), comfort (Psalm 46:10)!  He IS our ‘All in All.’

And when all things shall be subdued unto him,
then shall the Son also himself be subject unto him
that put all things under him, that God may be all in all.
1 Corinthians 15:28

In Jesus our hope, our trust, our constant assurance is in the right place—on the solid foundation of who we are in Christ.  In my own life I seem to need continual reminding  to not let my feelings get in the way or my circumstances be allowed to dictate my actions.  But, as we (I!) stand firmly on the unchangeable truths of the gospel of Christ, our (my!) faith is being continuously built.

This hope we have as an anchor of the soul,
a hope both sure and steadfast and one which enters within the veil,
where Jesus has entered as a forerunner for us….
Hebrews 6:19 and 20

CrockPot Apricot Lamb Roast

Oh!  If only there were a way to share with you the aroma that filled the house when this was cooking away in the CrockPot…delectable! (But there is not…so…if you want to smell it you will just have to put this together yourself!)  My husband loves lamb! It is a bit of an indulgence, but he deserves it!  So we enjoyed this for our Easter Sunday dinner.  This was super-easy, too!  I served it with this Sweet Potato – Spinach Mash.  This meal fit well into our healthy but oh-so-yummy POV also. Full of protein, low-carb…and delish!  Lamb is ‘in-season’ now so you shouldn’t find it difficult to purchase either in your grocery store or at the butcher shop. Enjoy!

CrockPot Apricot-Honey Lamb Roast

ingredients:
3-4# boneless lamb roast
1 lemon, zested and juiced
2 tablespoons spicy mustard
2 tablespoons honey
2 tablespoons chopped garlic
1 teaspoon dried crushed rosemary
1 teaspoon dried thyme
1 teaspoon freshly ground pepper
1/2 cup (or more) dried apricots
1 medium sweet onion, cut into thin wedges
1/2 cup pitted green olives
2-4 teaspoons cornstarch (or your favorite gravy thickener)
1/2 – 1 cup sour cream or plain Greek yogurt (optional)

directions:

  • use a small CrockPot (I used my 2-quart insert); turn it on and put the lid on to begin warming it up
  • add the onions, olives, and apricots to the bottom of the insert
  • in a small bowl, combine mustard, honey, garlic, the spices, lemon zest, and lemon juice; stir with a spoon to form a paste
  • rub this on all sides of the lamb roast; place into the CrockPot liner on top of the fruit and veggies
  • cover and cook on low for 8 hours (you can check it with a meat thermometer, if you’d like, but I usually cook ‘til it’s very tender and falling apart)
  • remove the meat; slice, and keep warm
  • skim off (and discard) as much fat as you can (just use a small ladle)
  • using an immersion blender right in the CrockPot liner, puree the fruit and veggies into a smooth sauce
  • optional – you can add a bit of cornstarch slurry to thicken as you puree, or a bit of sour cream

NOTE: the juices can be served as a simple au jus spooned over the meat, or you could even make a quick gravy!

God Has The Final Say

Each week during this season of Lent, here on the Seeking Him blog, we will be focusing our devotionals on a different aspect of Jesus’ revelation of Himself as I AM.  The aim of Lent should be to prepare our hearts for the remembrance of Jesus’ sacrifice—His trial and torture, the Crucifixion and His death…and above all, the celebration of His Resurrection from the dead.  We pray that this will be a great encouragement to each of you who read them.  And that all of us will consider the significance of Jesus’ words and, through them, be helped as we remember and are thankful for all Jesus went through during the last few weeks of His life on this earth.

“…I AM the Resurrection and the Life.”
John 11:25

“He isn’t here! He is risen from the dead!
Remember what He told you back in Galilee—
that the Son of Man must be betrayed into the hands of sinful men and be crucified,

I know Easter is all about what Christ has done for us and our sins and our salvation.  Jesus IS the Resurrection and the Life, and because of Him we live. Here’s another way to look at it though…

God has the final say in everything.

When times look rough and just make no sense at all…when bad is just surrounded by bad and worse just keeps getting worse…we have to remember that God has the final say.

Jesus answered, ‘You would have no power over me at all
unless it were given to you from above…’
John 19:11a

  • At the Red Sea, when the Israelites appeared to be trapped with nowhere to go, God appeared and made a way. When Pharaoh and his army began to follow, God washed them away. (Exodus 14)
  • In the boat during the storm, the disciples were afraid they would die, but Jesus delivered them. (Matthew 8:23-27)
  • When Lazarus died and all hope was lost, Jesus brought him back! (John 11)

When life starts to beat you down and nothing makes sense, and the fight seems lost remember the next sentence in Luke 24:

“Then they remembered that He said this.”
verse 8

The great thing is this—when all else fails remember, no matter what you are facing, God has the final say.  It’s not over until God says it is, and (in case you forgot!) we win at the end!

Things in this life are simply things in this life.  1 John 2:17a says, “And this world is fading away…”  This is not the end.  Nothing can happen to us that can rob us of our ultimate prize.  Whether it be illness, death, sorrow, or fear…we still have a place in Heaven.

Yes, it would be awesome to have an easy life here on Earth, and for everything to be just comfortable and perfect, but that’s not how it works!   This is not the end, and nothing will be perfect until we are home in Heaven.   So, keep that in mind.

Yes, we are may face some horrible situations and circumstances
but, in the end, everything will be okay.

God’s Great Dance Floor

Last week I kept thinking about starting over and getting back to basics.  I have been trying so many different things to make changes in my life that I lost my focus.  I was doing lots of things…but none of them well.

First of all, in one of my secular FaceBook fitness groups, a girl posted she was wiping out all her accomplishments and starting over.  Then something similar happened in a Christian group.  (This song was mentioned multiple times.) Finally, for the last several days I have had this verse stuck in my head:

“I’m coming back to the start
Where You found me
I’m coming back to Your heart
Now I surrender
Take me
This is all I can bring”

Ok, I may be slow at times, but even I could tell God was trying to make a point with all of this—I need to go back to the start.  So I reread all the material from when I started my current fitness journey and decided to begin again.  To start applying the basics in diet and exercise, and stop trying all the crazy new things or current fads.  But that line from the song kept playing over and over in my head. “I’m going back to the start….”  Then I realized I needed to go back to the start in my relationship with God…back to the foot of the Cross.

I was searching for anything that could help me regain control of my health and wellness but I was looking at worldly solutions.  At the same time I was seeking to deepen my relationship with God by doing multiple studies; and, again, doing none of them well.  I felt tired, weary of the struggle.  Nothing was working.  I was wearing myself out, physically and mentally.  Finally, I realized I needed to surrender.  Thank goodness God never gives up on us.

This song is such a celebration of God’s grace.  We come alive because of the grace He extends to us. Ephesians 2:1 & 5 (NKJV) state:

And you He made alive, who were dead in trespasses and sins…
…even when we were dead in trespasses,
made us alive together with Christ (by grace you have been saved)…

Christ wants us to feel alive in Him.  Not tired, not weary, not defeated—ALIVE.  We have something to celebrate.  If I am struggling, I need to stop and ask myself  “Am I living in Christ?”  If I am, then, (as Philippians 4:13 tells us), I can do all things because Christ is my Strength.  2nd Corinthians 12:9 (NKJV) reminds us “…for My strength and power are made perfect (fulfilled and completed) and show themselves most effective in [your] weakness.”

I know this to be true, yet I so easily forget and go back to striving on my own. So, I am going back to the start because God IS my freedom.  I want to feel alive and the only way I can do that  is through God’s {great dance floor of} grace.  Let the future begin!n

That’s My King

My King was born King.
The Bible says He’s a seven way King.
He’s the King of the Jews – that’s a racial King.
He’s the King of Israel – that’s a National King.
He’s the King of righteousness.
He’s the King of the ages.
He’s the King of Heaven.
He’s the King of glory.
He’s the King of kings and He is the Lord of lords.
Now that’s my King.

Well, well, He’s enduringly strong.
He’s entirely sincere.
He’s eternally steadfast.
He’s immortally graceful.
He’s imperially powerful.
He’s impartially merciful.
That’s my King.

Well, I wonder if you know Him.  Do you know Him?
Don’t try to mislead me.  Do you know my King?

David said the Heavens declare the glory of God, and the firmament shows His handiwork.
My King is the only One whom there are no means of measure that can define His limitless love.
No far seeing telescope can bring into visibility the coastline of His shore of supplies.
No barriers can hinder Him from pouring out His blessing.

He’s God’s Son.
He’s the sinner’s Savior.
He’s the centerpiece of civilization.
He stands alone in Himself.
He’s honest.
He’s unique.
He’s unparalleled.
He’s unprecedented.
He’s supreme.
He’s pre-eminent.

Well, He’s the loftiest idea in literature.
He’s the highest personality in philosophy.
He’s the supreme problem in high criticism.
He’s the fundamental doctrine of proved theology.
He’s the carnal necessity of spiritual religion.
That’s my King!  That’s my King!

He supplies strength for the weak.
He’s available for the tempted and the tried.
He sympathizes and He saves.
He’s God and He guides.
He heals the sick.
He cleanses the lepers.
He forgives sinners.
He discharges debtors.
He delivers the captives.
He defends the feeble.
He blesses the young.
He serves the unfortunate.
He regards the aged.
He rewards the diligent and He beautifies the meek.

Well, my King is a King of knowledge.
He’s the Wellspring of wisdom.
He’s the Doorway of deliverance.
He’s the Pathway of peace.
He’s the Roadway of righteousness.
He’s the Highway of holiness.
He’s the Gateway of glory.
He’s the Master of the mighty.
He’s the Captain of the conquerors.
He’s the Head of the heroes.
He’s the Leader of the legislatures.
He’s the Overseer of the overcomers.
He’s the Governor of governors.
He’s the Prince of princes.
He’s the King of kings and He’s the Lord of lords.

That’s my King!

His office is manifold.
His promise is sure.
His light is matchless.
His goodness is limitless.
His mercy is everlasting.
His love never changes.
His Word is enough.
His grace is sufficient.
His reign is righteous.
His yoke is easy and His burden is light.

Well. I wish I could describe Him to you…
but He’s indescribable. He’s indescribable.

Yes. He’s incomprehensible.
He’s invincible.
He’s irresistible.
I’ve come to tell you, the heavens of heavens cannot contain Him,
let alone a man explain Him.
You can’t get Him out of your mind.
You can’t get Him off of your hands.
You can’t outlive Him and you can’t live without Him.

Well, Pharisees couldn’t stand Him,
but they found out they couldn’t stop Him.
Pilot couldn’t find any fault in Him.
The witnesses couldn’t get their testimonies to agree.
Herod couldn’t kill Him.
Death couldn’t handle Him and the grave couldn’t hold Him.
That’s my King!

He always has been and He always will be.
I’m talking about He had no predecessor and He’ll have no successor.
There was nobody before Him and there’ll be nobody after Him.
You can’t impeach Him and He’s not going to resign.
That’s my King!

Thine is the Kingdom and the power and the glory.
Well, all the power belongs to my King.
The glory is all His.
Yes. Thine is the Kingdom and the power and glory,
forever and ever and ever.
How long is that? And ever and ever and ever and ever.
And when you get through with all of the evers…then…Amen.

And when He returns to the earth, He will come in power and glory!

Then the King will say to those on His right, ‘Come, you who are blessed by my Father,

That’s my King!  Is He yours, too?

I deeply yearn and endeavor to live in submission and obedience to my King so that I can be gathered with His sheep and inherit life in His Kingdom.  You, too?

This week, here on the Seeking Him devotional blog, we have listened to the words of our Lord recorded in John chapter 14.  Here Jesus made it clear that He is the only Way to the Father.   Jesus was direct in His words…it was ‘all or nothing’ (as Cynda so succintly put it)!  Our devotional writers have shared some insight on these words spoken by our Lord…specifically regarding the statement He made, “I AM the Way, the Truth, and the Life.”    Here are a few highlights from the devotionals that Tina, Laura, Cynda, Ann, and Ahmee wrote to encourage us.

In One Path, Cynda encouraged us to believe Jesus’ statement in verse 6.

“In this verse, Jesus makes a very bold statement—one that forces us to make a decision.  It is an all-or-nothing deal.  There is simply no middle ground. Either Jesus is the only Way to the Father or Jesus is not telling the truth.  (That was so hard for me to type!)

Consider the following verses:

Jesus said to her, “I AM the Resurrection and the Life.
The one who believes in Me, even if he dies, will live.
Everyone who lives and believes in Me will never die—ever.
Do you believe this?”
John 11:25-26 HCSB

“Do you believe this?”  That is the crux of the matter.  Those four words sum it up in a nutshell.   What do you believe?”

In Your Compass, Ahmee reminded us of the importance of knowing the Truth from the Scriptures.

“If ever we wonder what we should do, we have a Compass to point us in the right direction.  Jesus said that He is “…The Way, The Truth, and The Life.”  So, when we come across new teachings we need to be diligent in comparing this teaching to the Word of God that we know.

Anyone can look at the Bible and interpret it the way they want; but that doesn’t mean that you should blindly follow every interpretation of the Bible.  Go to it and read for yourself.  What does God say to you about what you are reading, and what does He say to you about the teaching you just heard?

There are concepts and things in the Bible that we KNOW for a fact.  We would know it immediately if we were to hear a teaching that contradicted what we KNOW to be true from our time spent in the Word.”

In Jesus IS The Way, The Truth, and The Life, Ann pointed out the dangers of being without The Way, The Truth, and The Life!

“Without The Way?  There is no going…where can you go if there is no way through?  We cannot go to the Father except through Jesus.  The way gives us access to wherever we want to go.  Therefore Jesus is the True Access to the many blessings the Lord has in store for us.

Without The Truth? Wow, just having Christ in us and us in Him we are assured of having knowledge of the truth of the great things—for Christ knows all.  For it means we know God, too!

Jesus is life.  Without The Life?  Well,  “no Jesus=no life”.  Accepting Him as the Lord and Savior gives us eternal life.  We thank God for giving us life through Christ Jesus.”

In The Map to Salvation, Laura reminded us of the practical application of being able to follow directions when we follow Jesus.

“Here on Earth, directions can be very confusing.  Directions can especially be confusing when landmarks are similar, or the person giving them can confuse me if they start describing landmarks or road names when I have never been in the area.  It is probably this way for a lot of people.

Yet, when it comes to eternal life, we have a great road map for directions!  Jesus gave us this road map when He spent His last moments before the Crucifixion with His disciples.  He told them that He is the Way to God.  He is the Truth from God.  Jesus brought God’s truth to us and gave us the life.”

And in Know The Father Through His Son Jesus, Tina pointed out how Jesus, being the very image of His Father, made Him known to the Apostles.

“Through their training and living with Jesus, the Apostles may have just looked at him as just a man with an anointing from God.  Not as Who He truly is—Jesus being the image of God.  This thought is pretty cool though.  Just think of being around Jesus, who is the image of God, for three years.  I would imagine I might  just take for granted Jesus being with us everyday, not thinking He was going to ever leave.  I would, not intentionally, not listen as intently. I would hear, but not really.  Then once He was gone I would regret not having been more intentional in listening, as well as noting everything being said…watching the miracles being performed…wishing I had asked for God to anoint me in much the same way as His Son. ”

Tomorrow is Easter Sunday, the day that Jesus rose from the grave and defied death.  Are you as humbled as I am?   Today is the day in-between. Yesterday, the world turned dark as Jesus hung on the Cross. All of our sin and shame was nailed with Him and forgiveness replaced fear.  Jesus tore the veil between us and God and we are free to go to Him; not through a priest,  but through Jesus.

As the music plays, close your eyes and picture what He did for you…what He did for the whole Church.  Now death will not end here but we will forever live with Him in eternity.  The enemy will not be victorious for he will be defeated. Now, as Christ’s Church, we will stand together, in the light and shout that He is alive and He reigns forever!  And yes, God has defeated the night.  He is not dead, He is alive!!!!!

Oh death, where is thy victory, oh grave, where is thy sting?

Let us pray: Dear Heavenly Father, how awesome and amazing You are.  How grateful we are for Jesus’ victory over death and for saving us, His Church, from all sin and shame.  We cannot even begin to thank You for Your plan to save us from ourselves, through the death of Your only Son. We love You and we praise You.  Keep us faithful and full of joy!  In Jesus’ name, amen.

Braised Beef Shanks with Gremolata

Braised Beef Shanks with Gremolata

 

…otherwise known as “Osso Buco”.   I didn’t use veal, so I’m calling it something else.  When you’re the boss in the kitchen, you can do that!  These Braised Beef Shanks with Gremolata would be perfect for Easter or any other lazy Sunday afternoon.  Make them now, before spring heats up and you don’t want to have your oven on for three hours!

Yes, I said three hours, but the prep is pretty easy.  Then you just pop this dish in the oven letting the low and slow cooking turn something pretty plain into magic!  Look for thick cross-sections of shank (the leg) with a large bone in the middle, or ask your butcher.  The meat will fall off the bone, the marrow will soften and become delicious, and you top it off with a bright and flavorful gremolata.  Serve with roasted potatoes and vegetables and eat like a king!

Braised Beef Shanks with Gremolata

Ingredients:

  • 4 pounds of cross-cut beef shanks (or ask for ‘osso buco’ cut)
  • 1/4 cup flour, seasoned with 1 teaspoon salt and 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large onion, diced
  • 3 carrots, diced
  • 1 stick celery, diced
  • 1/2 teaspoon celery salt (or plain salt)
  • 1 can of tomatoes (I used fresh tomatoes – just dice them, about one cup)
  • 2 cups red wine
  • 2 cups water
  • 1 lemon, zested (or peeled, and mince the peel)
  • 1 large clove garlic, minced
  • 1 small handful parsley, minced

Directions:

  1.  Preheat oven to 300*F.  Place the seasoned flour in a wide bowl or pie plate, and dredge all the shank pieces.  In a very large pot, heat the oil and butter together, and brown the meat.
  2. When browned, remove the meat to a plate, and add the diced onions, carrots, celery, and celery salt to the pan.  Sauté for about five minutes, or until starting to soften.  Add the tomatoes, wine, and water, then  simmer for five minutes.
  3. Add the meat back to the pan, and make sure it is submerged in the vegetable and wine mixture.  Cover with a lid and bake for 2.5 – 3 hours, or until done and very tender.
  4. Remove the meat from the pot and return the pot to the stovetop.  Stir the juices and vegetables over medium heat and let it reduce while you make the gremolata.
  5. To make the gremolata:  mix together the lemon zest, minced garlic, and minced parsley.  Stir to combine.
  6. To serve:  Spoon some veggies and juice into your bowl.  Place a shank on top, and garnish with a spoonful of gremolata.
