So…what’s your story for His glory???   Why is Jesus your passion?

My passion for Jesus started at the age of 22 when two sweet ladies who were my clients invited me to their home and shared the Gospel of Jesus with me. I had already believed in God. However that was the very first time I was introduced to a relationship with Jesus.

My past had not been pretty and, up until that point in my life, I did not believe there was any hope for someone like me who had made extremely poor choices. They began at the age of 16 when I started to dabble in the things of the world and gave in to many of the temptations out there. It was a very dark journey. My poor choices led me into a domestically violent first marriage and then a divorce before I was 21 years old. I felt lost and as though I had failed at life…. So I continued down the dark path of despair.

When I was in the deepest of pits…that was when Jesus found me…and my life has never been the same since! I discovered that I could be forgiven for my poor choices and be made a new creation in Him! I have been running hard after Jesus ever since.

Therein lies my passion….  Amazing grace that saved someone like me and gave me a second chance at life. That one moment, when those sweet ladies took a risk and introduced me to something I had not known, changed my life forever. Today I have been blessed with an amazing life—one that I certainly don’t deserve. However that’s God…He is the God of second chances.

Quinoa-Beef Stuffed Portabellos

Remember that delicious and so-good-for-you red quinoa recipe from last week? Well, I was looking around for a use for the rest of it and so…these were going to be stuffed sweet peppers but the portobello caps were SUCH a good price!  (Well, y’know I could not resist!)  I par-cooked the mushroom caps on a grill pan but they would be great done on your outdoor grill too!

We enjoyed these as an entree with steamed broccoli–they were VERY filling!  I figure two caps per person unless you choose to serve these as a side dish.  This recipe fit nicely into our ‘healthy but oh-so-yummy’ point of view!  Enjoy!

Quino-Beef Stuffed Portabellos

ingredients:
4 medium-sized portabello mushroom caps plus 1 extra for chopping
1/2 # ground beef (or turkey, chicken, or lamb)
1 cup cooked quinoa
1 cup kale (or spinach), stems removed and chopped
1-2 ounces blue cheese, crumbled (I used havarti)
1 small red onion, cut into 1/2 moons
2 heaping tablespoons chopped garlic
1/2 cup red wine
2 tablespoons balsamic vinegar
olive oil

directions:

  • preheat oven to 375 (heat grill pan, also, if using)
  • in a large saute pan, heat 1 tablespoon of olive oil over medium heat; add sliced onions and cook for 4-5 minutes
  • using a spoon, scoop out the dark gills of each mushroom cap. (if they have stems, add these along with the 1 extra cap for chopping.)  brush the caps with olive oil & place rounded side down on the heated grill pan (or onto a foil-lined baking sheet)
  • bake for 6-7 minutes; remove from oven and set aside to cool slightly
  • chop up the set-aside mushroom cap (and stems, if any) and add to onions in saute pan; cook over medium heat until mushrooms get brown & fragrant (caramelize them), perhaps another 6-7 minutes
  • once onions and mushrooms are done, pour into a large mixing bowl along with the cooked quinoa
  • (using the same skillet), add ground meat. cook over medium high heat ‘til browned.  lower heat just a bit (don’t want to burn the garlic!) and add chopped garlic and saute for another minute or two stirring constantly
  • stir in red wine and chopped kale (or spinach) and cover pan; simmer ‘til liquid is evaporated
  • add meat and kale to the veggie/quinoa mixture in the large bowl
  • stir in the balsamic and mix the ingredients all together in the bowl. season well w/ salt and pepper
  • place scoops of mixture into mushroom caps (I find my hands worked well!) dividing the stuffing mixture equally amongst the caps. top each mushroom with a few crumbles of cheese
  • bake for about 12-15 minutes, ‘til mushroom caps are tender & filling is slightly browned.

Have you ever felt prompted to do something, felt it was right, only to be talked out of it by friends and family, or your own insecurity? I know I have. But you know, if it is of God, there will be opportunities to pursue those outreaches. It may not have the same blessing as before, but you can still receive a blessing from your service opportunity. It is almost like the son that said he would help in the garden, then doesn’t. Then the other son says no, but then does. I so understand.

Age does not mean that we obey any better than when we were younger. Sometimes we just get more stubborn and figure who wants to hear from this old person. Let me tell you, we are not old. We have alot of life to live and experiences to share. We may need to practice our delivery, may need to soften our demeanor, but we also do not ever need to give up hope. There are people I am sure you have been ministering to and praying for. Never give up on them. Jesus has not given up on us!

 

Praising God Everywhere

Psalm 113

The whole of Psalm 113 describes three of my favorite things:
1. We are called to praise God
2. Praise celebrates God because He is beyond compare
3. God’s grace

We are called to praise God. (Read verses 1-3.) Verse one states, “Praise the Lord!” This is an imperative, meaning it is a command we are to obey.

Who offers praise?  God’s servants
What is to be praised? His name. The name of God represents who He is. No matter our circumstance we can always praise God for who He is.
When is His name to be praised? From this time forth…right now!
How long is He is be praised? Forever
Where are we to praise God? From the place where the sun rises all the way to the place where it sets. We are to praise God wherever we are and in all places.

Can you think of a time or place where it is difficult to praise God?  Focus on who He is and continue to praise Him!   Two concepts are included in this one illustration about God’s creation praising Him.

First, since the sun rises in the east and sets in the west it means that the Lord is to be praised or recognized as God, everywhere.

Secondly, since the sun rises in the morning and sets in the evening it means that God is to be praised all day long, at all times. From the bursting forth of each new day to the slow-spreading shadows of the evening each and every new day is a gift from God’s hand to us. Each and every new morning sunrise has within it a promise of fresh new blessings from the same hand that created the sun.

Through the LORD’S mercies we are not consumed,
Because His compassions fail not.
They are new every morning;
Great is Your faithfulness.
Lamentations 3:22-23

God’s mercy ensures us that we will not get what our thoughts and actions deserve. Mercy is not getting what we merit. Sometimes mercy comes in interesting packages that are really God’s grace.

A doctor who is a believer had seen an unusually large number of unscheduled patients one morning, and was exhausted. As he sat down for lunch at the hospital canteen, he placed his hands over his eyes, closed his eyes, and thought to himself, “I’ll scream if another patient shows up without an appointment…” Opening his eyes, he saw an elderly woman approach. She said, “You know, I was nervous about coming to this hospital … but now I know this place is okay, because I see that the doctors pray before eating.”

Do you think that was a fresh new mercy from God?  I do!

Take a moment, would you, to listen to this song again. And, while doing so, think of Jesus’ hands…. Think of how they look to you…maybe you picture them in just one way—bleeding and oh-so-very painful as He carried the Cross. Or perhaps you picture a whole vignette of scenes featuring Jesus’ hands ministering over and over and over…. Here are a few instances that I recalled from the Scriptures:

This they said to try (test) Him, hoping they might find a charge on which to accuse Him.

Think about it, my friend—Jesus is holding out His hand at this very moment to you (and me, too!)  With the very same degree of compassion and love, He is reaching to you (and me, too!) and is willing and able to support, provide for, guide and protect you (and me, too!)  In what area of your life, do you need for Jesus’ hands to carry you?

The Name of Jesus is more than enough to take care of every need in your life:

  • Who saves us from our sins?  Jesus

He is the One all the prophets testified about, saying that everyone who believes in Him will have their sins forgiven through His Name.

Crunchy Chopped Salad

I think this was originally a recipe from a South Beach Diet cookbook.  But I started making it so long ago, and have added and deleted ingredients over the years…so that I am not sure it’s the same one in the book.  That’s okay – it’s not about exact ingredients.  You can add or subtract as you like.  It’s about CRUNCH!  And that’s what you get in this Crunchy Chopped Salad!

I know that chips aren’t great for me.  I usually don’t crave them, and I make sure I don’t keep them in the house (because as a stay-at-home mom, you DO eat whatever is in the pantry!)  But sometimes you just get that urge for something kind of salty and crunchy.  I make this salad instead.  Is it the same?  Of course not!  (Otherwise I’d call it Doritos Salad!)  But this satisfying, fun-to-eat dish  scratches that itch for me, and maybe it will for you too.

If you need a break from lettuce, try this.  If you have lots of singleton vegetables in your crisper drawer, try this.  If you want something fresh and different for your next cookout, try this!

Crunchy Chopped Salad

(Serves four as a side dish)

Ingredients:

  • 6 baby carrots
  • 1 bunch radishes, trimmed
  • 3 stalks celery, trimmed
  • 2 Persian cucumbers, or one large cucumber
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 2 green onions
  • 2 cloves garlic
  • juice of 1 lemon or lime
  • 2 or 3 drops of honey
  • salt and pepper
  • 1/4 to 1/3 cup olive oil
  • 2 avocados

Directions:

  1. Wash and trim all your veggies.  Cut them all into medium-small pieces.  This is up to you, but for example, I cut the peppers into 1/2″ square pieces.  The radishes, cucumbers, carrots, and celery all get sliced vertically, then cut into 1/4″ slices.  If you dice everything too small, you won’t get the crunchiness.  If you cut everything too large, you’ll only get one or two veggies on your spoon at a time.  Experiment and see what size you like best.  If you are using a large cucumber, you may want to peel off the waxy skin and scoop out the seeds.  I like Persians because they are thin-skinned and have very little squishy gel around the seeds.  Pile all your chopped veggies into a big bowl and toss.  Beautiful, right?
  2. In a little food processor, blend up your garlic, lemon juice, honey, salt and pepper, and 1/4 cup olive oil.  Taste and dilute with more oil if you like.
  3. To serve, dish the salad into a bowl and drizzle liberally with dressing.  For each serving, dice half of an avocado and place it on top (otherwise it gets smushed.)  Eat this salad with a big soup spoon so you get a little of each vegetable in every bite!

If you have leftovers, you can mix in a can of tuna the next day.  It’s wonderful!

Praise Him

What does praising the Lord look like to you? Is it going out into nature and drinking in the glory of it all, listening to the birds singing, the wind swirling about you or the sounds to the insects? Or do you prefer the corporate worship, where you enter the sanctuary and sing to your hearts content and settle in and listen to the minister teach or preach? Whatever your style is, worship Him. Worship Him with your whole life, your whole being.

Just as David praised God in the good and the bad times of his life, we can too.  We can be angry with God as well, just as David was.  Our God is such a big God. Growing up I had such a reverence for God..I still do.  What has changed is that I have learned that God loves me more than my earthly parents, my husband, my child or my friends ever could. Only—to come to that conclusion—I had to understand who God is.

God loves us and wants what is best for us. Here is an example of His protection of Job:

Have You not put a hedge around him and his household and everything he has?
You have blessed the work of his hands,
So that his flocks and herds are spread throughout the land.
Job 1:10 NIV

Even though God allowed Job to suffer, Job never wavered from his faith.  Job was a strong leader for his friends and for his wife.  Job always looked out for those around him and looked for ways to improve his relationship with God.

God is sure to give us rest when we need it.

I do not give to you as the world gives.
Do not let your hearts be troubled and do not be afraid.
John 14:27

I pray, as this week closes and we begin to celebrate our fathers, that we choose to honor them for who they are. My dad (who raised me) was brought up during the Depression Era. He was the second or third of five children whose father was a saw miller. His mom was a stay-at-home mom who was responsible for the four boys and daughter. Dad started out on his own with only an eighth grade education and  joined the Army. He served only two years and was discharged. He followed his dad and joined him and older brother in the saw mill business for a short period. Then he was employed by Mr. Pride Car Wash where he became a manager. Dad did his best for his family. He worked hard and advanced with what education he had and took advantage of the skills God had given him.

Father, thank You for our fathers. They may not be the one we would have chosen, but You have plans. You know who was the best person to help develop us for who we were meant to be. I know I would not be who I am today without the two dads You placed in my life. I thank You for both of them and I thank You for the other people who have helped develop me into the person I am today. I know I still need to improve and seek to know more about You and Your Son.  In His name, I pray.  Amen.

Have you searched to find meaning and SOMEthing that would fill the emptiness of your soul?  I have….  Oh, how I yearned to KNOW I was l-o-v-e-d!  Probably for most of the first quarter century of my young life, I attempted to fill that void. But nothing…not accomplishments, not approval, not food, not inappropriate relationships…nothing was able to fill that hole in my heart.  And, assuredly, there is nothing COULD fill that hole in my heart…only Jesus.

perhaps you have heard this quote,
“There is a God-shaped vacuum in the heart of every person,
and it can never be filled by any created thing.  It can only be filled by God, made known through Jesus Christ.”
(Blaise Pascal)

I think that pretty much describes it well—a ‘God-shaped vacuum in the heart.’  I believe God created man (and woman) with that need.  And I know He perfectly provided for the filling of that vacuum when He made Adam and Eve and gave them the opportunity to have perfect fellowship with Him every moment of every day.  And I trust He would have always supplied their need…but they were deceived.   They chose to think that something else—being equal and alike to God Almighty—was the true answer to their needs.

But the serpent said to the woman,
You shall not surely die, for God knows that in the day you eat of it your eyes will be opened, and you will be like God, knowing the difference between good and evil and blessing and calamity.
And when the woman saw that the tree was good for food and that it was delightful to look at, and a tree to be desired in order to make one wise, she took of its fruit and ate; and she gave some also to her husband, and he ate.
Genesis 3:4-6

And, because they chose the deception of the enemy of their souls, and disobeyed the One Who truly DID love them, they lost that fellowship and perfection connection and the fulfillment that a relationship with their God gave them.

And mankind has suffered under the sin of Adam since.  But God would not allow His plan, His desire to fail.  And He provided so that all of humanity could have that ‘God-shaped vacuum’ filled in the way He has originally planned.

By this the love of God was manifested in us,
that God has sent His only begotten Son
into the world so that we might live through Him.
In this is love, not that we loved God, but that He loved us
and sent His Son to be the propitiation for our sins.
1 John 4:9-10

Jesus IS the perfect and complete filling of that vacuum!  We do not need to search or attempt to fill the void inside…we need to accept God’s perfect provision making Jesus our Lord and Master and live our lives in obedience to Him.

In this beautiful song, Moriah Peters sings, “He chose to love me when I felt unlovable…He chose to reach me when I felt unreachable…He carried me out of my fear and doubt.”  No longer do I (nor you either!) have to search for something to fulfill the emptiness, the void.  We need to choose Jesus!  He has chosen me (you, too)!

Sharing His Glory

Let them give thanks to the LORD for His unfailing love
and His wonderful deeds for mankind.
Let them exalt Him in the assembly of the people
and praise Him in the council of the elders.
Psalms 107:31-32

The elders in the church held key roles within the congregation—they would settle disputes, they were the leaders, and they would teach and govern. I was looking through different translations to get a better feel on this passage and I came across the New Living Translation (below):

Let them praise the LORD for his great love
and for the wonderful things he has done for them.
Let them exalt him publicly before the congregation
and before the leaders of the nation.

The last line replaced the term “elders” with the phrase “leaders of the nation;” this helped me to see this verse differently.  I think that in these times we, as Christians, need to make our voices heard.  We need to exalt, we need to shout, we need to make sure that all He has done for us is heard and known.

Declare His glory among the nation’s, His marvelous deeds among all people.
Psalm 96:3

His gentle commands call for us to share His deeds.  By doing this we are declaring His glory.  It tells those around us how wonderful and loving our Heavenly Father truly is!

Let’s pray: Dear Heavenly Father, thank You for the ability to share with others what You have done for us. In a world where an expression of faith is frowned upon in so many countries, freedom of speech is no minor gift.  I pray for courage and for the right words at the right time.  In Jesus’ name we pray.  Amen.
