Roasted Apples and Sweet Potatoes

In my continuing quest to find new and yummy ways to serve more veggies, I have had some successes…and a few failures.  Like roasted cauliflower with a healthier spinach-artichoke dip topping.  Ummm, yeah…it did NOT come together on the plate like it did in my head.  But this—the Roasted Sweets and Apples—so yummy!

We enjoyed this alongside a roasted chicken.  This is healthy but-oh-so-yummy comfort food!   I prepared this for supper on the coldest day I think I have ever experienced…with the windchill factor, our temps never got out of the below zero range.  So when my husband walked in, I literally heard him say, ‘ahhhhh….’  (Made me happy, too!)

This recipe makes enough for leftovers.  We enjoyed this a day or two later for lunch accompanied with breakfast sausage and a nice, runny sunny-side up egg. However you serve it, I hope you and your loved ones enjoy it!

Sincere Love

SeekingHimLogo

Little children, let us not love [merely] in theory or in speech
but in deed and in truth (in practice and in sincerity).
1 John 3:18 AMP

This verse always steps on my toes.  Today’s ‘me first’ mentality is encouraged and supported by society.  Yet, John 13:34 (HCSB) instructs us on what Jesus says we are to do:

“I give you a new command: Love one another.
Just as I have loved you, you must also love one another.”

My struggle with selfishness is a daily battle.  It is so easy to profess love.  But getting my actions to match my words is where the rubber meets the road.  Romans 12:9a (HCSB) states “Love must be without hypocrisy.”  OUCH!  Real love is demonstrated by deeds.  It requires a deliberate choice.  That choice doesn’t necessarily have to be monetary.  Encouragement and support cost nothing, except perhaps a little bit of time.  Sincere expressions of affection and labors of love show God’s love DOES dwell within us.

Galatians 5:13 (NLT) says we “have been called to live in freedom, my brothers and sisters. But don’t use your freedom to satisfy your sinful nature. Instead, use your freedom to serve one another in love.”  We have a choice to make—live in bondage to our selfishness or live in freedom by putting our love into action.  The decision seems to be an easy one but persevering is the real challenge.

  *  ~  ♥  ~  ✞  ~  ♥  ~  *

Abba Father, this is a struggle I cannot beat on my on. I truly want Your love to be seen in me by my actions and how I love. Please help me conquer my selfish desires so my expressions of affection will be sincere. In Your mighty name I pray – AMEN, It Is So!

Love Divine, All Loves Excelling

psalmshymnsspiritualsongskjv

Love divine, all loves excelling,
Joy of heaven, to earth come down;
Fix in us Thy humble dwelling;
All Thy faithful mercies crown!
Jesus, Thou art all compassion,
Pure, unbounded love Thou art;
Visit us with Thy salvation;
Enter every trembling heart.

Breathe, O breathe Thy loving Spirit
Into every troubled breast!
Let us all in Thee inherit;
Let us find that second rest.
Take away our bent to sinning;
Alpha and Omega be;
End of faith, as its beginning,
Set our hearts at liberty.

Come, Almighty to deliver,
Let us all Thy life receive;
Suddenly return and never,
Nevermore Thy temples leave.
Thee we would be always blessing,
Serve Thee as Thy hosts above,
Pray and praise Thee without ceasing,
Glory in thy perfect love.

Finish, then, Thy new creation;
Pure and spotless let us be.
Let us see Thy great salvation
Perfectly restored in Thee;
Changed from glory into glory,
‘Til in heaven we take our place,
‘Til we cast our crowns before Thee,
Lost in wonder, love, and praise.

God is love. Whoever lives in love lives in God, and God in them.
1 John 4:16

Since we just finished celebrating St. Valentine’s Day, we should not stop celebrating the Author of love, God our Father.  He wants to love us in a way that no human ever could. I was listening to a podcast earlier in the week, in which the person made a comment that caught my attention. He said,

“God wants us to love each other as He loved His Son.”

How many of us do that? Now, how many of us put our kids before our spouses? We should not do that!  We are to love our husbands the way we love our son or daughter.  Our children are important, but not more than our spouse.

Or even God….  God should always hold first place in our lives, our thoughts, and our actions. Then comes our spouse…and then our children. We may not have seen it modeled for us, but now we know.  With all that in order, our families would be okay. God will help us, all we have to do is ask for the help from the Holy Spirit.

*  ~  ♥  ~  ✞  ~  ♥  ~  *

Dear Father, as Charles Wesley wrote in his song, “Let us see Your great salvation perfectly restored in You; changed from glory into glory, ’til in Heaven we take our place, ’til we cast our crowns before You, lost in wonder, love, and praise.” We will one day stand before You. Let us never forget to love and to forgive as You have shown us. In Jesus’ name, Amen.

Love With Actions

SeekingHimLogo

This is how we know what love is:
Jesus Christ laid down His life for us.
And we ought to lay down our lives for our brothers and sisters.
If anyone has material possessions
and sees a brother or sister in need
but has no pity on them,
how can the love of God be in that person?
Dear children, let us not love with words or speech
but with actions and in truth.
1 John 3:16-18 NIV

For the last few years our military men and women have been in other countries fighting for freedom.  Some have paid the greatest price—they have been killed in the line of duty.  Some of those who have served in the police departments and fire departments have also given their lives in doing their jobs.

Now we are hearing of people in the Church being martyred in other countries because of the persecutions occurring there.  This is what the verse is speaking of—“lay down our lives…”.  I pray that we would be brave and strong. And that we would stand up when we need to for our religious freedom.  That we would encourage our children to speak up when our God is being put down and not be embarrassed to speak about His glory.

When we see a brother or sister in Christ having trouble we should not hesitate to help them.  God will surely honor us in this act of kindness.   We will be changed when we do this.  We will understand the struggle of our fellow Christian as they share the struggle they have been through and we can usually offer sound advice. But we will be surprised at being blessed by the other person who shows how their faith has grown as they have gone through the struggle and hurt they have experienced.

“A new command I give you: Love one another.
As I have loved you, so you must love one another.
By this everyone will know that you are My disciples,
if you love one another.”
John 13:34-35

As Jesus told us, we are to love one another and in doing so we show that we are His.  It is not about a competition to see who can do more, do better; it is about what is in our heart that makes a difference.  God is looking for those whom He has called to step up and bring the good news to everyone.

  *  ~  ♥  ~  ✞  ~  ♥  ~  *

Father, help us to reach out to those who are hurting and lost. Remind us to pray before we act to know what You want us to do to further Your Kingdom.  Reveal Your Word to us so we can know we are hearing from You, not ourselves.  We want to do what is right.  In Jesus’ name, amen!

You Lead

psalmshymnsspiritualsongskjv

I’ve got waves that are tossin’ me
Crashin’ all over my beliefs
And in all sincerity, Lord,
I wanna be Yours

So pull me out of this mess I’m in
‘Cause I know I’m wanderin’
Lead my soul back home again
I’ve always been Yours
And this world may push, may pull
But Your love it never fails

You lead, I’ll follow; Your hands hold my tomorrow
Your grip, Your grace, You know the way
You guide me tenderly
When you lead, I’ll follow
Just light the way and I’ll go
‘Cause I know what You got for me is more than I can see
So lead me on, on, on and on
Just lead me on, on, on and on

As a child I heard Your voice
But as a girl I made my choice
There is no other way for me
I’m devoted to You
You’re my Peace on the heavy days
You’re the warmth of an autumn blaze
Your love carries me away
And it’s never too soon, no…

Sometimes when I wake up, I don’t wanna rise up
Out of my bed, too many thoughts in my head
Don’t wanna be who I used to be
Gonna take the back seat and let You lead
And I…need to stop, need to stop
‘Cause I’m going too fast
And I…know my God is still God
And you got my back

For this new year, God gave me a phrase (instead of just one word).  A phrase made up of three simple words—Let God Lead.  Seems so easy, but in reality it’s a struggle.  I am a fixer.  I can be a control freak.  I think I should be able to handle things on my own.  I feel the need to have a plan mapped out. Life just doesn’t cooperate.

I am always humbled, though, when I finally come to my senses and realize there is no need for me to blaze my own trail.  I have a perfect Guide who is never wrong, never falters, never fails, never makes a wrong turn.  As this songs reminds me “Your hands hold my tomorrow, Your grip, Your grace, You know the way….” It would be so much simpler if this dawned on me BEFORE I take matters into my own hands.

Psalm 139:10 (AMP) reminds me “Even there shall Your hand lead me, and Your right hand shall hold me.” Even there.  I can never reach a place where the Lord refuses to guide me.  Even in the smallest of details, Isaiah 43:19 (NLT) tells us “I will make a pathway through the wilderness. I will create rivers in the dry wasteland.” He is there to lead me through whatever is going on.  Or (as Jamie Grace puts it) “and I know my God is still God…and You got my back…I know Ya got me, I know Ya got me, I know Ya got me…”.

In Proverbs 4:11(NIV) God promises that He will “instruct you in the way of wisdom and lead you along straight paths.”  I truly desire to let God lead.  But when life throws me a curve (as it has recently) I am tempted to focus on what needs to be done and how best to do it.  I need to be reminded (as the song goes) “‘Cause I know what You got for me is more than I can see...”.

I need to remember God is in control and already has the perfect plan worked out.  Sometimes He just isn’t willing to show me the whole plan all at once and I get impatient.  I feel like I need to be doing something…anything.  I think I need to take action when the only thing I really need to be doing is praying and taking the time to listen for a response.  Jeremiah 33:3a (NASB) tells us “Call to Me and I will answer you, and I will tell you great and mighty things, which you do not know.”  He promises to answer us.  Psalm 32:8(AMP) promises “I [the Lord] will instruct you and teach you in the way you should go; I will counsel you with My eye upon you.” So what I need to do is “…take the back seat and let you lead, and I…need to stop, need to stop, ‘cause I’m going too fast...”.

*  ~  ♥  ~  ✞  ~  ♥  ~  *

Father, I really want to let You lead.  I just get in the way sometimes. I get impatient.  Remind me that You have my back, that You are in control.  Stop me when I race ahead of Your plan.  Keep me on the right path.  In Your name I ask this – Amen, It Is So!

Love Gives

This is how we know what love is: Jesus Christ laid down his life for us.

Dear children, let us not love with words or speech

1 John 3:16-18 NIV

What made God give us Christ Jesus?—It is Love
What made Christ give us the Holy Spirit?—It is Love
What makes Holy Spirit give us gifts?—It is Love

For God gave us Jesus Christ (John 3:16) and Christ (as He was ascending into Heaven) said that He must go but gave the Holy Spirit who would be with us always (John 14), and the Holy Spirit is the one who gives us gifts (1 Corinthians 12).

So in our focus Scripture this week, we are commanded to act in love the same way we were loved and given the free gift of Christ as well as gifts of the spirit. Brethren, we are in this physical world and so our love can also be expressed by sincerely helping persons in need.

  • We can do this by sharing our earthly possessions with them (James 2:14-17)
  • If we refuse to give of our food, clothing, or money to help others in real need it is to close our hearts to them (Deuteronomy 15:7-11)
  • This also includes giving our money to help bring the gospel to those who have not heard (through evangelism) (James 4:9-10)

May the good Lord help us as we decide to express love
by giving with all our hearts without murmuring.

Dear Heavenly Father, we thank You and we bless You because You are God. We honor You because You are the I AM who I AM, the omnipresent God. Blessed be Your Holy name in all the earth. Immortal God, invisible God, You are so great. Thank You for Your love for us. The free gifts to us are so precious that we glorify Your name because of such wonderful gifts. Teach us to love one another as You loved us, as Christ loved us, and as Holy Spirit loves us. Thank You for hearing our prayer and granting us the desire of our heart. It is in Jesus’ name that we have prayed. AMEN!!

He Knows

psalmshymnsspiritualsongskjvall the bitter weary ways
endless striving day by day
you barely have the strength to pray
in the valley low

how hard your fight has been
how deep the pain within
wounds that no one else has seen
hurts too much to show

all the doubt you’re standing in between
And all the weight that brings you to your knees

He knows, He knows
every hurt and every sting
He has walked the suffering
He knows, He knows
let your burdens come undone
lift your eyes up to the One
Who knows…He knows

we may faint and we may sink
feel the pain and near the brink
but the dark begins to shrink
when you find the one who knows

the chains of doubt that held you in between
one by one are starting to break free

every time that you feel forsaken
every time that you feel alone
He is near to the brokenhearted
every tear  He knows

He does knowHe knows the last of our days and the beginning, and the number of hairs on our heads.  He knows how much pain you can actually bear and He knows when it will end.  You struggle with hard choices and exhausting circumstances…He knows and He wants to carry the struggles for you and He wants to help you make the right decisions. He knows….

He knows when you are walking in darkness and you desperately need His Light. All you have to do is ask. He knows what your deepest sin and secrets are.  He will never tell, but He wants to hear them from you. He will only give you grace, forgiveness, mercy, and all the love you will ever need. He knows when you feel alone and when you feel the world is unfair.  He is just and He fills every void you will ever feel.

He is pulling for you to win every battle. He is cheering you on as you reach the finish line of this life; and He has a place for you, with Him, forever, in eternity. He is singing over you daily and rejoicing over each victory in your life. He also sheds tears with you when you feel defeated.

He knows your heart (even when you don’t) and He loves you even when you don’t feel it.  He is never far away and He will never, ever leave you! He is always for you! So that hard thing that you are dealing with?  You know… the one you feel like you could never tell anyone? My friend, He knows and He is ready to step in and deliver you…just ask!

But the very hairs of your head are all numbered.
Matthew 10:30

Even as the Father knows Me and I know the Father;
and I lay down My life for the sheep.
John 10:15

The secret things belong to the LORD our God,
but the things revealed belong to us and to our sons forever,
that we may observe all the words of this law.
Deuteronomy 29:29

It is He who reveals the profound and hidden things;
He knows what is in the darkness,
And the light dwells with Him.
Daniel 2:22

Let us pray:
Dear God, oh how amazing You are. You created each one of us in Your image and You know the intimate details of our lives. How comforting to know that we are never alone. Your hand is always there to hold, and You are willing to walk with us every day, never stopping. Thank You for loving us, for cheering for us, and for guiding us through this sometimes hard world. Because of You, we are always loved and we have a full abundant life. And when we don’t know, You do. In Jesus’ name we pray, amen.

Almond Joy Chocolate Bark

Almond Joy Chocolate Bark

What’s Valentine’s Day without some chocolate?  This is pretty healthy stuff though, so as long as you don’t eat the whole batch in one sitting, you can have a treat and not be naughty.  Almond Joy Chocolate Bark is the way to go!

I love dark chocolate and I use the darkest I can find in the grocery store.  Here I used a bag (11.5 oz) of 63% cacao Guittard chocolate chips, but feel free to use whatever dark chocolate you like.  I also used roasted, salted almonds because that little bit of salt really offsets the sweet and makes the flavors pop.  If you want a sweeter bark, you can use “Angel Flake” coconut that has sugar added.  I used unsweetened coconut flakes and it’s quite yummy!  I also used 2 tablespoons of coconut oil.  I like that it makes the chocolate a little smoother, and I think it tastes great too.  You can leave it out if you don’t have it.

Give some to your sweeties, treat your friends at work, or just nibble on this chocolate bark and enjoy some quiet time.  Happy Valentines Day!

Almond Joy Chocolate Bark

Ingredients:

  • 1 bag of semi-sweet chocolate chips (use the darkest chocolate you can find, with the highest percent of cacao)
  • 2 tablespoons coconut oil
  • 1 cup whole, roasted, salted almonds
  • 1/3 cup shredded, unsweetened coconut

Directions:

  1. In an oven-safe bowl, microwave the chocolate and coconut oil together for 30 seconds.  Stir very well with a rubber spatula, then microwave again.  Keep doing this until your chocolate and coconut oil are smooth and blended.  Mine took 3 blasts of 30 seconds each.
  2. Line an 8×8 baking pan with plastic wrap.  Pour in 1/3 of the melted chocolate and spread over the bottom of the pan.
  3. Spread the almonds over the chocolate layer and sprinkle with coconut.
  4. Pour the rest of the chocolate over the almonds and coconut and lightly spread to cover.  Put in the freezer for about 2 hours until solid.  Cut or break into 2″ pieces.

Feed My Sheep

encouragementbloggraphicromans15When they had all had enough to eat, He said to His disciples,
‘Gather the pieces that are left over. Let nothing be wasted.’
John 6:12

America, the land of the free.  Also the land with plenty, so much that there really shouldn’t be so much hunger and poverty.  We don’t have to cross oceans to see hunger and poverty, although the levels are definitely different.  Not only is the world suffering from lack of food, there’s a lack of Jesus.  And because God doesn’t want to see anyone perish, He gave each one of us a spirit hungry for more of Him.  Before we go any further, I want you read John 6:1-15…a familiar story I know but we need to be reminded.  So read on:

Some time after this, Jesus crossed to the far shore of the Sea of Galilee (that is, the Sea of Tiberias), and a great crowd of people followed Him because they saw the signs He had performed by healing the sick.  Then Jesus went up on a mountainside and sat down with his disciples.  The Jewish Passover Festival was near.
When Jesus looked up and saw a great crowd coming toward him, he said to Philip, “Where shall we buy bread for these people to eat?”  He asked this only to test him, for he already had in mind what he was going to do.
Philip answered him, “It would take more than half a year’s wages to buy enough bread for each one to have a bite!”  Another of his disciples, Andrew, Simon Peter’s brother, spoke up, “Here is a boy with five small barley loaves and two small fish, but how far will they go among so many?”
Jesus said, “Have the people sit down.” There was plenty of grass in that place, and they sat down (about five thousand men were there).  Jesus then took the loaves, gave thanks, and distributed to those who were seated as much as they wanted. He did the same with the fish.
When they had all had enough to eat, He said to His disciples, “Gather the pieces that are left over. Let nothing be wasted.” So they gathered them and filled twelve baskets with the pieces of the five barley loaves left over by those who had eaten.
After the people saw the sign Jesus performed, they began to say, “Surely this is the Prophet who is to come into the world.”  Jesus, knowing that they intended to come and make Him king by force, withdrew again to a mountain by Himself.

You know, Jesus knew what these people needed before they did. The crowds had followed Him to hang on His every Word, and the disciples were trying to protect their Master and get Him away, but Jesus wanted to feed His sheep.  His people were hungry, not only for food but for His wisdom.  And today, there are multitudes who are hurting too, and can’t voice it…but we can.  We must spread the Word of Salvation to the lost.  We must teach His Word, because He entrusted it to us.

Over one billion people call themselves Christians, and not all are really born-again, God-fearing, Bible-reading and Bible-believing Christians.  Just as God knows every hair on their heads, He also knows which ones actually call Jesus ‘Lord,’ and He has made them ambassadors of Christ Jesus, commanding them to offer to all people in all nations the Bread of Life.  But how can a few reach so many?

In the story above, in verse 5, Jesus asked Philip, as they were faced with feeding so many people,”Where shall we buy bread for these people to eat?” Of course Jesus knew the answer, He was testing him. “He asked this only to test him, for He already had in mind what He was going to do” (verse 6).  Doesn’t Jesus sometimes place a question in our minds to make us seek Him for the answer?  Today our question is this: “How will you obey Me and reach out to my people?”

I know I am like Philip…I often feel ill-equipped, outnumbered, without confidence, and intimidated.  Sometimes the task at hand seem so huge that you don’t even know where to start!  And let’s be honest: sometimes we don’t even try.  But aren’t we to do it the same way it was done in John 6?  Miraculously…every time any one offers to anyone else the hope they have in Jesus, something miraculous happens.  Even if you feel like you don’t have anything to give, if you give it all to Jesus, He can do wonders with what you do have to give.

The boy in the story only had five small loaves of bread and two small fish and look what Jesus did with it!!  Because this little one was willing to give Jesus all he had, He multiplied it into all He needed.  You are all He needs…you can reach His people and you can change someone’s life. Whether you share your Jesus or your food, God can and will use you. Surrender all that you have. The world is needy, in all kind of ways, and God created us to do His work.

Do you know Him?  I urge you to read more of John’s Gospel and learn Jesus’ heart.  And pray this prayer with me:

Dear God, I know that I am a sinner.  I need forgiveness.  I believe that Jesus is Your Son and He died for me.  I want You to come into my heart and be my Lord.  Walk with me.  In Jesus name, amen.

I Keep Falling In Love

I am found in Your embrace
Covered by Your love
You’re my deepest dream I know
Your love so strong, Spirit come

You lift me up to heaven’s door
You restore my soul
I come here without Your touch
I need You so much, I need You more
You’re my Rock and my Redeemer
The Rock on which I stand

I keep falling in love with You, Lord
Every beat of my heart, breath that I take
Through the seasons that change, Your love remains
My hiding place, my home…falling in love

God is the husband to those who are not married.  He is the husband of those who are widowed.  God is the ultimate mate for us.
He knows what we want and need before we ever speak it.  Remember our words are what will happen.  If we speak positive over our lives, it will be be positive. If we speak negative, only negative will occur.  And, oh, how we struggle with our tongue.
Most of our lives we are not admonished on what we say. It is hard to break habits and begin to always speak positive words to ourselves and to those around us.  We often speak of where are are in our life.
When we allow God to be our Rock and our Redeemer, our words will change.  Even if we have been a believer we can sink back into our old ways.  We are so blessed to have a Father, Husband, Friend who loves us more than any human ever could.

Father, help us to keep our focus on You. Forgive us for taking our eyes off of You—as Peter did when walking on the water with Your son Jesus.  Help us keep on track to seeking You.  Help us to forget the wrongs we imagine or even those things that are real.  Unforgiveness keeps only us captive, not the one who wronged us.  Help us become free to truly love as You made us to.  Help us to love You more deeply while developing our trust.  In Jesus’ name, Amen!
