Cobb Salad with Homemade Bleu Cheese Dressing

I think you guys know how much I love a big salad for dinner.  One of my favorites is this Cobb Salad with Homemade Bleu Cheese Dressing, because it’s got so many different components.  So satisfying!

Of course you can use store-bought dressing, but I decided to make my own.  You can really control how salty, how creamy, how peppery it is when you make it yourself – plus there are no binders, stabilizers, thickeners, et cetera like there are in bottled dressing.  (How else do you think they make that stuff shelf-stable?)  This is a basic recipe; feel free to jazz it up with a little lemon juice, hot sauce, or Worcestershire sauce to take it to the next level.  You can also add more veggies to the salad or change up the protein.  Have at it!

Cobb Salad with Homemade Bleu Cheese Dressing

Ingredients (for 2 servings):

  • 1/2 cup crumbled bleu cheese or gorgonzola
  • 1/4 cup mayonnaise
  • 1/2 cup plain yogurt
  • 1/4 cup whole milk
  • lots of ground pepper
  • washed salad greens, any kind
  • 2 hardboiled eggs, sliced
  • 1 avocado, diced
  • 1 large chicken breast (or use two chicken thighs), cooked and diced
  • 2 (or more!) slices bacon, cooked crisp
  • sliced or cherry tomatoes (would be great, but I don’t like raw tomatoes)

Directions:

  1. In a mixing bowl, stir together the bleu cheese, mayo, yogurt, and milk.  Grind in lots of black pepper.  Let chill in the fridge until you are ready to eat.  (Do it a day before and get an even better-tasting dressing!)
  2. In two large salad bowls, divide the washed salad greens.  Into each bowl, add a sliced egg, half of the avocado, the diced chicken, and some bacon crumbles.  Drizzle with dressing and serve.

In You Alone

I read David’s writings daily.  Who can’t relate to an awesome king that loved God…yet was extremely human and sought forgiveness when he was wrong.  There is so much hope and healing in his writings and I find myself praying his words back to God.

David was a spiritual man and an extremely emotional one, too.  Many times he wrote these psalms out of his own feelings—feelings of amazement, fear, love, anger, and pain.  And this particular psalm was written in a time of disappointment, a time that David had been let down over and over.  If you have lived into adulthood, then you know how this feels.  It’s even harder when the person who disappoints you is a man or woman of God.  It can shake us off our firm foundation if we let it.

The person in David’s life was Saul and David’s eyes were opened as a teenager.  He couldn’t believe that someone could really go that far off the right path and let sin take him down so far.  Later in his life, David himself would slip, too.  No one is immune to sin and no one will ever walk a perfect journey here on earth—except Jesus!  Pastors will mess up. Friends in the congregation may stop coming. But good can from this…if we don’t let bitterness and resentment in.

The theme in this psalm of David’s is God alone.  He didn’t let bitterness come from his shattered expectations.  Instead he found hope in his Father.  He realized that the only constant on this earth is God.  Good people will hurt you and they will slip and sometimes they may never come back into God’s house again.  This shouldn’t sway you either way; and, if it does, it is time to do some reconnecting with God the Father.

Read verses 1-2 and 5-8 out loud.  Put the emphasis on every repetition of the words ‘God, He, and Him’.  Can you hear it?  See, because David poured out his heart to God, and he didn’t let it fester and build up, bitterness couldn’t take hold.  He had a hope and a rest in God.  In Hebrew, the word ‘hope’ means “a cord or an attachment.”  Everyone is holding onto something, or someone, for security.  Sometimes we hold onto a knotted rope and depend on whatever is on the other end to keep us from falling.

close your eyes and look up the rope…
who do you see on the other end?

Unless God is at the end of your rope, you’re about to fall…and you’re hanging on by a thread.  God alone can hold us up.  So the next time you allow someone to disappoint you, whisper two words to yourself—“God alone“.  When you decide to let that person off the hook and let God alone hold the other end of your rope, you will attach yourself to God’s strong arm.  He can hold you up over the deep and strong waves.  You will be secure enough to let one arm go free to help the person that disappointed you along the way, until he or she gets back on their feet.  And you will be able to say that it was worth all of the hard!  For you will really have found that your strength can only be found in Him.

Let us pray:  Dear God, You are so great and You are fully able to do anything we ask or think according to Your will.  I am in awe of You.  Thank You for loving us so much and for sending Jesus to die in our place.  Oh God, forgive us when we place people above You and expect them to fulfill us…for only You can satisfy our every need.  Let us never forget that only You are perfect.  Help us to keep our eyes on You.  In Jesus’ name, amen.

This Week…Psalms 25:6-7

In Forgiveness for All, Ahmee  reminded us of how great God’s forgiveness is…

Have you ever forgiven someone and then find yourself still thinking about it?  That’s when you have to remind yourself that you forgave them.  Human forgiveness is flawed.  We remember what was done to us.  Given some people can just let stuff go, but most people still remember.  God’s forgiveness is different.  God does not remember our past sins.  God’s Word says plenty about His forgiveness.

Then He adds, “Their sins and lawless acts I will remember no more.”
Hebrews 10:17

As far as the east is from the west,
so far has He removed our transgressions from us.
Psalm 103:12

If we confess our sins, He is faithful and just
and will forgive us our sins
and purify us from all unrighteousness.

In God’s Mercy and Goodness, Tina  wrote about David, and his example of a repentful heart…

You have to love how transparent David is in his prayers to God..David made a habit of pouring out his heart and soul before His Almighty Father.  David was human and he made mistakes just as we do. The only thing is he had a repentful heart; and, most of the time, we are busy and forget to confess our sin.  Then it all turns to regrets, and kind of piles up into such a huge mess that we even forget where the top or bottom is.  Daily…hourly…by the minute we should bring our issues, our thoughts,  our prayers to the throne of God.  Often we need to leave them there, leave them at the foot of the Cross because He is better able to handle each of our needs, wants, and desires.

Not just grace, but amazing grace….  The word ‘grace’ has had many meanings tied to it.  It can mean something small or it can mean something large—depending on who you ask, and on what you read.  In my eyes grace is LARGE.  It is the only way we can make it through life.  It is the only way we can be more than the labels assigned to us, more than our past, more than our imperfections.  I always find it amazing that God loves me past who I am; well past who I see myself to be and definitely past who the world sees me to be.  He really sees us as flawless.

I was watching the video for this song and I imagined God’s grace in our life—removing the paint, removing the sin and the hurt and the pain.  I imagined Him seeing us as flawless.  He makes us flawless.  His love, shown through the Cross, wiped us clean.

“Amazing grace, how sweet the sound, that saved a wretch like me…”. Without God’s grace I don’t know where I would be. I don’t know who I would be.  What I do know is that I don’t have to worry about that.

This reminder is written in my heart and mind (and in my planner and journal)…

Forgiveness For All

Have you ever had to forgive someone?  It’s not always the easiest thing to do.  You have to process your feelings and then consciously make the decision to forgive.  Then (for some of us) it’s a daily thing—we often have to remind ourselves that we have already forgiven that person.  On the other hand, forgiving comes naturally to some people.  I am not one of those people.  If I feel I have truly been wronged, it takes me some time to process my emotions (usually 1-3 days).

Often we as humans find it hard to accept God’s forgiveness because we compare it to human forgiveness.  God does not have to process emotions before forgiving us and He doesn’t throw our past sins in our faces.  His forgiveness is far grander than anything we know.  Yet, people still struggle with guilt, shame, and condemnation.  These three emotions are not from God…they stem from our inability to forgive ourselves. (Yes, I said ‘ourselves’.)  When was the last time you messed up?  Did you need more than God’s forgiveness?  Did that other person forgive you?

How about we try forgiving as God does – towards ourselves and others.

The simple words of this bluegrass ballad are, sadly, so true: we do forget to give God thanks and we do take for granted oh-so-very-many things that God has done for us.  I am ashamed that I can sing the line ‘You’ve given everything I need…and still I asked for more’ right along with the Isaacs Family.  Oh, it’s not that I am not thankful—I am SO thankful!  Or that I don’t voice my thanks and praise to my heavenly Father.  And I am SURE you do, too!  But truly our mouths should be filled with thanks and not petitions.

Here is just one short passage full of incredible blessings (I’ve counted more than ten things to praise and thank Him for):

Blessed be the God and Father of our Lord Jesus Christ, who according to His great mercy has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead, to obtain an inheritance which is imperishable and undefiled and will not fade away, reserved in heaven for you, who are protected by the power of God through faith for a salvation ready to be revealed in the last time. In this you greatly rejoice, even though now for a little while, if necessary, you have been distressed by various trials, so that the proof of your faith, being more precious than gold which is perishable, even though tested by fire, may be found to result in praise and glory and honor at the revelation of Jesus Christ;

And another:

Blessed be the God and Father of our Lord Jesus Christ, who has blessed us with every spiritual blessing in the heavenly places in Christ, just as He chose us in Him before the foundation of the world, that we would be holy and blameless before Him. Ephesians 1:3-12

“Thank You for the things that I’ve never thanked You for!”  Have we intentionally thanked God for being ‘blessed…with every spiritual blessing…in Christ’? Or purposefully thanked Him for being ‘predestined according to His purpose…to the end that we…would be to the praise of His glory’?  Or thanked Him from the depth of our hearts for the truth that ‘He chose us in Him before the foundation of the world that we would be holy and blameless before Him’?

Our giving of thanks to God should fill our days!  When we get up, we have much to be thankful for (breath, life, new day, new mercies…).  As we go throughout the day, we have much to be thankful for (protection, guidance, forgiveness, peace, comfort…).  As we lay our heads down at night, we have much to be thankful for (provision, joy, trials gotten through, loved ones…).  And even as the Psalmist wrote,

At midnight I will rise to give thanks to You because of Your righteous ordinances.
Psalm 119:62

So let’s not be forgetful but thankful.  Truly, we should

Rejoice always; pray without ceasing;
in everything give thanks;
for this is God’s will for you in Christ Jesus
1 Thessalonians 5:16-18

Every day, throughout each day, speak and sing out your thankfulness to your heavenly Father!

To the end that my tongue and my heart
and everything glorious within me
may sing praise to You and not be silent.

GF Strawberry Muffins

So, I don’t know about your area, but we have had strawberries in abundance here in upstate NY…and they have been beautiful and fragrant and delicious!  My granddaughter, Kaylie Joy, just LOVES strawberries!  I had made a batch of these muffins and when she tasted one, she asked if we could bake some together…how could i say ‘no’?!  We actually doubled the ingredients and it worked very well. And we baked them up as a dozen standard size muffins and 3 dozen mini-muffins.  In either size, they baked beautifully!

This recipe (adapted from a similar one over at the Spunky Coconut – one of my very favorite gluten free, refined sugar free blogger/bakers) fits well into our healthy but-oh-so-yummy point of view:

  • uses honey or agave nectar and liquid stevia rather than refined white sugar
  • are gluten free with protein-rich almond flour and a bit of brown rice flour replacing wheat flour

Strawberry Muffins

ingredients:
2 cups almond flour
1/2 cup brown rice flour
1/2 teaspoon baking soda
1/2 teaspoon finely ground sea salt
1 cup fresh strawberries
1/2 cup coconut oil, liquified
1/3 cup honey or agave nectar
6-8 drops vanilla liquid stevia
1/2 teaspoon vanilla extract
3 large eggs, at room temperature

directions:

  • preheat oven to 350
  • line muffin cups with paper liners
  • wash and dry strawberries; chop finely (not mushed, but small)
  • sift together the dry ingredients; set aside
  • pour liquified coconut oil, sweeteners, and extract into bowl
  • using electric mixer, beat for one minute, then add eggs one at a time
  • slowly add dry ingredients, beating just ’til thoroughly combined
  • by hand, gently fold in finely-chopped strawberries
  • scoop into muffin cups, filling almost to brim
  • bake at 350 degrees for about 25 minutes
  • immediately remove from muffin pan onto cooling rack; allow to completely cool

tip: Coconut oil needs to liquify in order to be blended into a batter. Depending on the time of year (summer..no problem; winter…a problem) you might need to warm it up. You could either scoop out the required amount of coconut oil and place it in a glass measuring cup on your stovetop as the oven preheats. Or it can be microwaved for approximately 30+ seconds (depending on the quantity you need) and then stirred. Either way, add it into your mixing bowl and combine with other liquid ingredients prior to adding room temperature eggs.

God of Mercy and Steadfast Love

O Lord, we are so thankful that You are full of mercy and steadfast love!  Truly we do recognize our sins, our faults, our  frailties…but far more important than dwelling on them is to acknowledge  how faithful and good You are in forgiving us!   Thank You for the many examples You have given us throughout the Scriptures…of men such as Your man, David.  Thank You for showing us Your heart towards their repentance.  Thank You for the encouragement we have to do the same, knowing that their God is our God.  And that the same way You remembered not their sins, You will do the same for us according to Your goodness, Your mercy, Your steadfast love.  Thank You!  We love You and adore You!  May our hearts be set to honor and glorify You as we endeavor to be in obedience to You.  We pray these things in Jesus’ name, amen.

In The Stillness

One of the absolute joys of being in a relationship with our heavenly Father is our ‘quiet time’ with Him.  Not only is it a joy but it is a need, too. It is necessary to dwell in His Presence…to choose to have a dedicated, purposeful, intentional, devoted quiet time.  Of course there are many other components that make up this time with God, such as:

  • reading the Scriptures
  • meditating and considering those words
  • singing our praises
  • thankfulness
  • intercession
  • prayer for ourselves

But I do believe that there is one essential aspect—stillness—which presents itself in two very needful ways:

1) actual physical-absence-of-distracting-noise quiet
(and, perhaps even more necessary,)
2) a quiet, still, peaceful heart

Our Lord recognized His need for quiet and time alone to pray to His Father.  If He, in His perfect sinless life, needed quiet time to be still and alone seeking the Father then we surely do also…and even more so! His example speaks clearly to us.

And in the morning, long before daylight,
He got up and went out to a deserted place,
and there He prayed.
Mark 1:35

…and great crowds gathered to hear Him and to be healed of their infirmities.
But He would withdraw to desolate places and pray.
Luke 5:15, 16

(Perhaps, when our Lord was alone, He sang words similar to those in that beautiful song we just listened to….)

And there is the second type of stillness—a quiet, still, peaceful heart.  Isn’t this something that each of us yearns for?  Truly I believe it can only be found as we seek Him.  There is a quietness that we are promised as we trust in our Lord.

Be still and rest in the Lord;
wait for Him and patiently lean yourself upon Him;
fret not yourself because of him who prospers in his way,
because of the man who brings wicked devices to pass.
Cease from anger and forsake wrath;
fret not yourself—it tends only to evildoing.
For evildoers shall be cut off,
but those who wait and hope and look for the Lord
shall inherit the earth.
Psalms 37:7-9

Be still, and know that I am God.
I will be exalted among the nations,
I will be exalted in the earth!”

In closing, consider these verses in which the psalmist speaks about his quiet time with his God.  As we intentionally pursue having quiet time alone with our God may we ‘pour out our heart before Him; God is a Refuge for us!’

For God alone my soul waits in silence; from Him comes my salvation.
He alone is my Rock and my Salvation, my Fortress;
I shall not be greatly shaken.
For God alone, O my soul, wait in silence, for my hope is from Him..
On God rests my salvation and my glory;
My mighty Rock, my Refuge is God.

May I suggest, before you and I run along and jump into your ‘to-do’ list, that we each stop for a few minutes and be still and quiet before the throne of God…worshipping and giving Him our praise for the joy and privilege of these times of stillness and quiet alone with Him!  Oh, how He loves us so!

Divine Remembrance

Psalms 25:6-7

This is David’s prayer.  He had searched in his heart and saw that there was no one who could help him at that hour—only Sovereign God. He cried out for remembrance.

To be remembered is ‘to be thought of.’  And you can only remember someone you have had interaction with at one time or the other.  For one to remember you it means there has been a relationship between the two of you.  Why did David call on God to remember him?  David went to a Someone he was comfortable with trusting.

Even in this physical world we live in, sometimes you meet someone who says they know you, but you don’t quite remember them…even when they try to remind you of where the two of you met.  Perhaps you feel confused.  This is the same way with the spiritual realm.  God cannot remember you if you have never been in a relationship with Him.  He will only remember you if you have interacted with Him and that your relationship is strong and operating at the highest level.  David took courage to call for remembrance for he knew His Friend, God, would come to his rescue.

How many of us can boldly come to God today asking Him to remember us without feeling perhaps guilty in one way or another because of unconfessed sin or repeated sins?  Sins hinder us from the hand of God, brethren.

Nehemiah also cried unto God for remembrance.

Remember me, O my God, concerning this,
and wipe not out my good deeds that I have done
for the house of my God, and for the offices thereof.
Nehemiah 13:14

We also see David in Psalm 106:4 calling on God for remembrance.

Remember me, O Lord, with the favor Thou beareth unto thy people,
O visit me with Thy salvation.

O Lord, Thou knowest: remember me, and visit me,
and revenge me of my persecutors;
take me not away in Thy longsuffering:
know that for Thy sake I have suffered rebuke.
Jeremiah 15:15

And he said unto Jesus “Lord, remember me when Thou comest into Thy kingdom.”
Luke 23:42

Brethren, for us to be remembered of God it means we are in a good relationship with Him.  Let us work out our relationship with God.  We need Him to remember us in all areas of our lives.

Dear Heavenly Father, I thank You for You are the Lord…full of steadfast love.  Great is Thy faithfulness.  We need Your grace, Lord, to be in good relationship with You.  Help us in our shortfalls, build us with Your love, create in us a clean heart, Lord.  This we ask in Jesus’ name, Amen!
