Salmon with Dill Cream Cheese Sauce

Salmon Dill Cream Cheese Sauce

I’m still struggling to find a good name for this recipe.  Two weeks ago, I had an omelet that had smoked salmon inside, and was topped by a cream cheese dill sauce.  It was so good!  It was like my favorite way to eat a bagel – without the bagel!  So I played around at home, eliminating the omelet factor in the equation, and got straight to the point—Salmon with Dill Cream Cheese Sauce!

Eat this with a salad or some roasted broccoli or asparagus.  The sauce recipe makes about half a cup, which is more than you’ll need to feed a family of four.  But fear not, it won’t go to waste!  It’s great on those same roasted vegetables, baked potatoes, and even as a dip for carrots (let it chill in the fridge for this, and maybe add a little more plain yogurt or diced green onion.)

Salmon with Dill Cream Cheese Sauce
(serves 4)

Ingredients:

  • about 1.5 pounds salmon fillets
  • drizzle of olive oil
  • 1 lemon
  • 1 heaping tablespoon cream cheese
  • 1 heaping tablespoon mayonnaise
  • 1 heaping tablespoon plain yogurt
  • 1/2 teaspoon dried dill (or use 1 teaspoon or more fresh dill)
  • salt and pepper
  • capers and diced red onion to serve

Directions:

  1. Heat the oven to 400*F.  Line a baking dish with parchment paper (optional, but it makes clean up much easier).  Lay salmon in baking dish in one layer – you may need to use another dish, or you can even use a sheet pan.  Drizzle with olive oil and season with salt and pepper.  Bake for about 14 minutes.
  2. Meanwhile, cut lemon in half and squeeze it into the bowl of a food processor.  Scoop in the cream cheese, mayo and yogurt.  Pulse to combine.  Add in dill, salt and pepper, and blend again.  Taste, adjust seasoning, and refrigerate until ready to serve.
  3. To serve, spoon a little sauce over the fish, and garnish with lots of capers and red onion.

Peace I Leave You

But as He came closer to Jerusalem and saw the city ahead, He began to weep.
“How I wish today that you of all people would understand the way to peace.
But now it is too late, and peace is hidden from your eyes.
Luke 19:41-42 NLT

Jesus really had emotions. Sometimes He wept and other times He danced with joy.  And there were times when He truly grieved.  In the Scripture passage above, Jesus wept because the city had refused Him.  And not only Him but the peace that only He could bring them.

As a parent, I truly want the very best for these precious children that I have been blessed with.  When I am no longer here, I hope that they have joy and peace and a faith that cannot be shaken.  Those long nights on my knees, praying over each one of their hearts and the days that were spent investing in their eternal future will pay off because, no matter what, they will know about their Savior.  I hope that they know that the things of this earth are so temporary and that only Jesus and a relationship with Him will give them eternal life. And while they wait on Him to return, that they will claim the peace that Jesus came to give them.

Isn’t that what Jesus wanted for us?  Right before His crucifixion, Jesus promised something so valuable—peace.

Peace I leave with you; My peace I give you.
I do not give to you as the world gives.
Do not let your hearts be troubled and do not be afraid.
John 14:27

He didn’t leave us fame or fortune or tangible things…although He can provide those things.  He left us something more beneficial. And if we are to be a Jesus follower and lead others to Him, we must have peace and joy to share with this struggling world.

What do you need from Him today?  Is there an area of your life where you find yourself needing peace?  I know that I have to be reminded daily that He doesn’t want me to worry about the cares of this world, so I write this verse so many places.  Maybe you have been struggling with something that you have been asking God to take away.  Don’t lose hope!  God may not choose to take your thorn just yet; however, you will still receive His peace.  And remember: regardless of the trial, Jesus will give you your inheritance…today, and everyday, He offers peace.

Do you know Jesus?  Do you need His peace today?  If so, I ask that you pray this simple prayer with me….

Dear God, I know that I am a sinner.  I am struggling today with so much and I just want to be free.  I believe that Jesus is Your Son and the Savior of the world.  He died for me so that I can live forever with You.  Help me to know more about You.  Thank You for loving me.  In Jesus’ name, amen.

This Week…1 Corinthians 3:16

This week, here on the Seeking Him devotional blog, Ann, Ahmee, Cynda and Tina have reminded us that we ARE a temple, a sanctuary that God chooses to dwell in.   In light of the importance of this subject, and the fact that we desperately need God’s help to do this, I would like to repost the humble prayers that our sisters included in their devotionals this week.  May each of us be drawn into a closer relationship with Almighty God recognizing the privilege of living as a sanctuary and a temple for Him.

Cynda‘s prayer in Living Sanctuary…

Father, gently remind me that Your Spirit permanently dwells in me.  Let my actions reflect that I am a sacred and holy place.  Taking care of Your temple, Your sanctuary is in itself an act of worship and gratitude.  Thank You for being there…a proven help when I struggle.  I am so thankful Your mercies are new each day and that I do not have to do this on my own.  In Jesus’ name I pray, Amen – It is so!

In Spiritual Temple, Ann prayed….

Dear Lord, thank You for giving us this insight that our bodies are Your temple and the Holy Spirit dwells in it.  We feel honored to be loved in such a way!  However we confess our sins of not doing the right things at the right time with our bodies.  Cleanse us with hyssop; let us be whiter than snow.  We pray for new beginnings in Jesus’ name.  Amen.

In Sanctuary, Tina prayed…

Father, I thank You again for Your wonderful example of how to trust You and how to seek You in all things.  Forgive us when we forget to seek You first.  Holy Spirit, come back to us!  Do not grow weary with our stubbornness to not seek You first.  We need you—like a headstrong child needs a patient, loving, and caring parent—be there with us.  We want to have solid food from our Father.  In Jesus’ name we pray, Amen.

I was talking to a client of mine the other day, and an interesting conversation came up.  The topic of the conversation was that we need constant reminders in life.  Whether it is having to remind our kids not to leave dirty clothes in the bathroom after a shower…or to put their backpacks away…or asking our husbands to please remember to fix the loose leg on the chair… we all need constant reminders.  We have planners, beeping phones, sticky notes—reminders in many forms.  This is not limited to parenting or marriage, or even work; it includes every area of life.

And when times get tough in life we also need reminders that all will be taken care of, that everything will be okay.  We know in our minds that God said He will meet our needs, but our hearts oftentimes still need to be reminded of this.  We need songs, scriptures, and people to remind us that He will ‘not give us more than we can take, that we may bend, but we will not break,’ and in our best moments, we are not alone.

We need to be reminded of the truths in this song.  Perhaps we need to add these truths to our sticky notes, our alerts and alarms.  Write them in your planner AND write them in your heart.  Thank God for these reminders of His love and His reassurance.

So, ladies, never forget what He said,
and never forget that He is always holding us up
despite the storms surrounding us.

Let’s pray: Dear Heavenly Father, we forget.  We are a society so easily distracted that we forget at times the truths You have promised us.  Forgive us for this and thank You for your continued reminders.  In Jesus’ name we pray, Amen.

Sanctuary

From Dictionary.com:

  • Sanctuary – a sacred or holy place
  • Temple – an edifice or place dedicated to the service or worship of a deity or deities

Paul was writing to the Corinthian Church, which was surrounded with idols and other pagan ways.  He was trying to encourage them to keep on the right path.  As with today’s church, we have to be mindful of the teachings that we submit ourselves to.

Oftentimes, when I hear someone speak of ‘keeping the temple pure’, I think of what I eat…not necessarily what I watch on television or what I might listen to on the radio, but those are important, too.  If I allow negative thoughts and feelings to enter my mind and stay there, I will become depressed and will struggle to focus on what is right and true.

It can also be the result of negative words spoken to us as a child.  Those can be overcome by the power of the Holy Spirit.  When we accept Jesus Christ as our Lord and Savior, the Holy Spirit indwells us to give us the power to overcome.

Just as the Spirit of God was there from the beginning.

Now the earth was formless and empty,
darkness was over the surface of the deep,
and the Spirit of God was hovering over the waters.

Genesis 1:2  NIV

The Spirit was also there when David fought Goliath and defeated him (see 1 Samuel 17).  David had no doubt that God would be there.  When the giant appeared to insult God, David knew he needed to defend Him. We know God could have struck down the giant, but this was the opportunity David needed to show himself worthy to be chosen as the next king of Israel.

What giants are you facing?  Have you faced them already?  I pray you will have the simple courage David displayed.  His faith was borne out of continued living in God’s presence and seeking God’s help in all situations.  Being a shepherd requires a lot of care and attention to the small things. David was such a man.

Jeremy Camp sings, “…‘cause even when I don’t see, I still believe.”  How about you?  It can be a struggle sometimes, agreed?  But our believing is not now, has never been, and never ever will be, based on what we can ‘see.’  Our believing is based on the One Whom we believe and on Him alone.

There is no doubt that our God wants us to believe Him with all of our heart and trust that everything He has promised will come to pass…amen?  He has given us, through His power and outlined in the Scriptures, ‘all things that pertain to life and godliness’ so that we can know Him and His promises.

His divine power has granted to us all things that pertain to life and godliness,
through the knowledge of Him who called us to His own glory and excellence,
by which He has granted to us His precious and very great promises,

Our knowledge  of the Scriptures is constantly growing as we faithfully read and study them.  Based on all that we learn about our Great God, His Will, and His desires for His people, we can take a firm stand on His promises believing Him and knowing by faith that they will come to pass.

What are some of the things that we are to believe?

  • He hears our prayers
  • He heals our bodies
  • He comforts our hearts
  • He never leaves nor forsakes us
  • He watches over us
  • He guards us
  • He prepares a path for us to walk
  • He lovingly reproves and corrects us
  • And…His faithfulness, His truth, His Holy Word

I still believe in Your faithfulness

For the word of the Lord is right and true;
He is faithful in all He does.
Psalm 33:4

I still believe in Your truth

So Jesus was saying to those Jews who had believed Him,
“If you continue in My word, then you are truly disciples of Mine;

Caprese-style Stuffed Mushroom Caps

How about you and your loved ones…do you have a meatless meal in your menu plan regularly?  Some folks term it ‘Meatless Monday’ and enjoy a meal typically on Monday 😉 that has a different source of protein.  We eat at least one supper each week that does not include meat…and this past week it was these healthy but oh-so-yummy stuffed portobello caps.  These included two proteins— quinoa and a few ounces of fresh mozzarella.

This recipe is very versatile, too.  You can switch out the fresh mozz for a different cheese (goat cheese or feta would be easy and simple); a different herb could be used (mint or parsley or sage come to mind); even different veggies could be chopped small and substituted for the tomatoes.  Or perhaps you could choose a different ‘container’ for the stuffing…maybe zucchini or small peppers?  If you do choose to add this, or a variation, to your menu plan…I would love to hear about it!

Caprese-style Stuffed Mushroom Caps

ingredients:
4-5 medium portobella mushroom caps
olive oil
balsamic vinegar
sea salt and ground pepper
1/8 to 1/4 cup of cooked quinoa per mushroom cap
1/2 red onion, sliced thin
big handful of yellow and red grape tomatoes, halved or quartered depending upon size
1 heaping tablespoon minced garlic
4 tablespoons pine nuts
4 ounces fresh mozzarella
fresh basil, sliced very thinly

directions:

  • cook quinoa according to package directions; set aside to cool slightly
  • preheat oven to 400
  • lightly oil the bottom of a baking pan
  • clean the dome of the mushroom caps with a damp paper towel
  • gently break off the stems (discard) and, using a sharp teaspoon, carefully scrape out the gills
  • place the mushrooms (rounded side down) in the baking dish
  • drizzle with a tiny amount of olive oil and a touch of balsamic vinegar; and season with a little sprinkle of sea salt and freshly ground pepper
  • pre-bake the mushrooms for about 15 minutes just to soften up a bit
  • remove from oven and set aside on the pan (there may be some liquid in the caps; carefully drain it off)
  • meanwhile, in a medium skillet, heat a tablespoon or so of olive oil over medium low heat; add red onion and tomatoes
    saute gently for 10 minutes or so ‘til the tomatoes have softened
  • add in the garlic and stir constantly for just a minute; remove from heat
  • add in the cooked quinoa and pine nuts; season to taste with salt and pepper
  • (if necessary, moisten with a bit more olive oil)
  • stir in the cut-up cheese and the basil
  • stuff each mushroom cap dividing the mixture evenly between them (either use an ice cream scoop or simply scoop up into a firm ball using moistened hands
  • bake in the oven for 15 minutes ‘til the mushroom cap is tender; remove from oven
  • if desired, run under broiler for 2 minutes
  • these can also be assembled ahead of time, refrigerated; and then baked for 30 minutes or so

Ouch!  This verse steps all over my toes.  Especially right now.  We just made a rush trip to Texas this weekend to visit an old friend who is in the end stages of liver failure.  It was emotional and stressful.  We also spent time with other friends that we haven’t seen in ages.  Not to mention all the yummy foods available in Texas that we can’t get here in Colorado.  (Can you say Tex-Mex heaven?)  I overindulged repeatedly…justifying my actions because it would be a loooong time before I could have such goodies again. The NLT version asks, “Do you not realize…”? The AMP version questions, “Do you not discern and understand…”?  Did I even think about being a living sanctuary—God’s temple?  Not really.

For we are the sanctuary of the living God…
2 Corinthians 6:16

And you are living stones that God is building into His spiritual temple.
What’s more, you are His holy priests.
1 Peter 2:5 NLT

As I read this verse, I thought about what a temple or sanctuary actually is….

Wikipedia defines a temple as “a temple (from the Latin word templum) is a structure reserved for religious or spiritual activities, such as prayer and sacrifice, or analogous rites. A templum constituted a sacred precinct as defined by a priest, or augur.”
Dictionary.com defines a temple as “any place or object in which God dwells.”
Dictionary.com and Wikipedia both state a sanctuary is “a sacred or holy place.”

So, I am a ‘sacred precinct’, a ‘holy place’ where God dwells.  Am I taking care of it properly?

Rick Warren puts it like this: “When you don’t take care of your body, you are vandalizing God’s temple.”  That is a very scary thought because I sure haven’t been treating my body as I would something sacred and holy!

And I “know” all this.  Why do I find it so hard to put this knowledge into action?  God’s Spirit has His permanent dwelling in me!  But there are times you would never know it by my behavior.  James 4:4 HCSB asks

“Don’t you know that friendship with the world is hostility toward God?
So whoever wants to be the world’s friend becomes God’s enemy.”

Yet I still can’t seem to do what I know is right!

Romans 7:21 NLT describes this perfectly: “I have discovered this principle of life—that when I want to do what is right, I inevitably do what is wrong.”  The struggle is constant and real.  It is a battle I cannot win alone.  It would be very easy to feel hopeless and give up.  Thankfully, Psalm 73:26 NASB whispers to me: “My flesh and my heart may fail, but God is the strength of my heart and my portion forever.”

These verses remind me I do not have to do it alone:

The Lord hears His people <me> when they <I> call to Him for help.
He rescues them <me> from all their <my> troubles.
Psalm 34:17 NLT

God is our <my> Refuge and Strength; always ready to help in times of trouble.
Psalm 46:1 NLT

For You have rescued me from my troubles
and helped me to triumph over my enemies.
Psalm 54:7 NLT

God will give me victory over my fleshly desires if I call out to Him. He is always there…waiting to help…if I am willing to give control to Him.

On Sunday, the Church celebrated the remembrance of the Day of Pentecost—the day almost 2,000 years ago when the Holy Spirit was sent by God Almighty to take Jesus’ place in the lives of His disciples.  You can read about this dramatic, unique event in the Book of Acts, chapter two.

After Jesus had ascended to Heaven, the apostles and many disciples had been waiting as their Lord had told them to do.    They were gathered together…the apostles, Mary, the other women who followed our Lord, along with some of His disciples.  The Scriptures tell us that they spent their time praying.  After Jesus’ arrest, His trial, and His crucifixion, Jerusalem was not a safe place for them to be (as many of them were known to have associated with Jesus).  But they were obedient to their Lord, even in His absence, and yearned to receive His promise.

While He was together with them, He commanded them not to leave Jerusalem,
but to wait for the Father’s promise.
“This,” He said, “is what you heard from Me; for John baptized with water,
but you will be baptized with the Holy Spirit not many days from now.”
“But you shall receive power when the Holy Spirit has come upon you,
and you shall be My witnesses in Jerusalem and all Judea
and Samaria and to the ends of the earth.”
Acts 1:4, 5 and 8

Jesus had promised them, “If I go, I will send Him to you” (John 16:7).  That promise was fulfilled on Pentecost.  Just as Jesus was always there to help them, and to guide them, and to teach them, the Holy Spirit would be also.   The Holy Spirit was, essentially, to be Jesus’ replacement.  Now they would have the Holy Spirit—One who would, just like Jesus, minister to them in all the ways that He had.

And I will ask the Father,
and He will give you another Counselor to be with you forever.
He is the Spirit of truth…
John 14:16 and 17

What an incredible promise!  Can you imagine?!!  During the Last Supper, Jesus taught His disciples much about much!  He was preparing them.  And He was helping them to know that, when the time came, they would not be alone.  He loved them SO much!  And so His communication with them during this time included instruction and encouragement regarding His promise to send the Holy Spirit.

Now before the Passover Feast began, Jesus knew that the time had come
for Him to leave this world and return to the Father.
And as He had loved those who were His own in the world,
He loved them to the last and to the highest degree.
John 13:1

Just as real as Jesus was to the disciples when He walked this earth, He is just that real to us (His current-day disciples) through the Holy Spirit.  The Holy Spirit continues to be Jesus’ presence with His disciples today—you and me.

To the same degree that those who were alive in Jesus’ time needed a Helper and a Comforter, so do we; wouldn’t you agree?  Our Lord loves us (you and me) also “…to the last and to the highest degree.”  His promise extends to each and every one who are His; who obey His commands.  His promise of One Who would take His place—the One Who would be Helper, Comforter, Teacher and Guide—is to you and me!  We are not alone!

Spiritual Temple

Don’t you yourselves know that you are God’s sanctuary
and that the Spirit of God lives in you?
1 Corinthians 3:16

Our bodies are a temple of God and so we have to keep them holy for the Lord is also holy (1 Peter 1:14-16).  We need to not corrupt our mind, body, and soul by participating in evil activities; we are to reject all forms of immorality.

God speaks to us about the many ways of not corrupting our bodies.  This also can be done in churches. Churches are a temple of God so those who go to church should not be corrupted—the elders, deacons, pastors, Sunday school children, and the youth.  All manner of people in the church should reject corruption in the church.  Read through these Scriptures and see how serious God is on this issue of temple of God:

Do you not know that your bodies are temples of the Holy Spirit, Who is in you,
Whom you have received from God? You are not your own….
1 Corinthians 6:19

What agreement is there between the temple of God and idols?
For we are the temple of the living God.
As God has said: “I will live with them and walk among them,
and I will be their God, and they will be my people.”
2nd Corinthians 6:16

And are built upon the foundation of the apostles and prophets,
Jesus Christ Himself being the Chief Cornerstone;
In Whom all the building fitly framed together grows unto an holy temple in the Lord:
Ephesians 2:20-21

Therefore, as Christians/believers, what we do surely matters.  We need not misuse our bodies in any way.  Our individual bodies are not ours; they are God’s creation and are to be used for God’s purpose.

Dear Lord, thank You for giving us this insight that our bodies are Your temple and the Holy Spirit dwells in it.  We feel honored to be loved in such a way!  However we confess our sins of not doing the right things at the right time with our bodies.  Cleanse us with hyssop; let us be whiter than snow.  We pray for new beginnings in Jesus’ name.  Amen.
