Gingerbread Cupcakes

Many of you have gone on Spring Break or are anticipating taking a vacation this summer. It is a time to refresh spirit, soul, and body. Over the next couple of weeks, our faithful bloggers will be taking a ‘spring break’ from writing so that they can come back to us refreshed and freshly anointed.

For our family’s Thanksgiving Feast (as the grandchildren call it!), we always divvy up all of the different dishes that make up our spread.  This year I was happy to prepare a side dish (Quinoa Veggie Salad w/ Orange Vinaigrette), the beverages (one <adult> choice of which was Apple Cider Sangria), and a dessert…these spicy-sweet Gingerbread Mini-Cupcakes. Oh, they were so darling! And just the perfect mouthful (and I mean FULL).  <Of course you certainly could make these in a standard cupcake size, too!>

For those of you who are just beginning to follow the path of gluten-free baking, try this recipe.  When I first made these cupcakes, I used a ‘gf all-purpose flour blend.’ You can pick up a box in the gluten-free section of almost any grocery store. However, if you have a pantry filled with jars of different gluten-free flours, I used 1/2 cup brown rice flour, 1/4 cup tapioca flour, 1/4 cup potato starch, 1/4 cup hazelnut flour).  Note that these cupcakes are dairy-free if you prepare them with coconut oil…and of course no whipped cream!

This is a quick recipe to pull together…and only takes 10-12 minutes to bake. We enjoyed ours with Spiced Whipped Cream (see the recipe from last week’s blogpost here).  But they would be equally yummy with a cream cheese frosting or a simple buttercream frosting, too.  Enjoy!

Mini Gingerbread Cupcakes

ingredients:
1+1/4 cup gluten-free all purpose flour blend **
1+1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground allspice
1/4 teaspoon salt
4T butter, room temperature (I used coconut oil)
1/2 cup brown sugar
1/2 cup molasses
1 egg, room temperature
1 teaspoon baking soda
1/2 cup boiling water

directions:

  • set out the butter (or coconut oil) and egg to come to room temperature
  • fill muffin/cupcake tins with liners (mini = 30; regular = 12)
  • preheat oven to 350
  • mix flour(s) and spices together in a small bowl
  • with mixer, cream together butter (or coconut oil) and sugar
  • add egg, then molasses; beating ‘til nice and creamy
  • microwave the water in a measuring cup ‘til boiling; remove and <carefully> stir in the baking soda; set aside
  • add the dry ingredients to the mixer bowl, and blend for about 1 minute ‘til it all comes together
  • continue to blend while pouring in the water; beat for an additional minute or so (batter will seem thin but it very quickly thickens up)
  • fill lined cupcake tins about 3/4 full with batter
  • bake minis for 10-12 minutes (regular for 20 minutes), or ‘til firm to the touch and slightly browned
  • take pan from oven and immediately remove cupcakes to a cooling rack
  • once completely cool, frost as desired

God Always Keeps His Promise

Remember Your word to Your servant,
for You have given me hope.
My comfort in my suffering is this:
Your promise preserves my life.
Psalms 119:49-50

Throughout the Scriptures, there are many, many records of God fulfilling His promise to His people.  Whether it be to an individual, or a group of people, or all mankind—God always keeps His promise.  I am so thankful to have these stories recorded in the Scriptures because they encourage and comfort us.  At any time, we can sit down with a bible and open up to one of numerous accounts.  One that I am always reminded of when thinking of God’s promises fulfilled is the record of Abraham and Isaac climbing Mount Moriah…remember? (Click here to read the entire record.)

As he walked toward Moriah with Isaac, Abraham must have felt conflicted…and heartbroken beyond words….  Can you imagine?  How could God ask him to sacrifice this miracle child He had blessed him and Sarai with!  No doubt, he did not understand all that God was doing.  He didn’t know he was illustrating for God’s people for all time what faith and trust looked like.

Was not our father Abraham considered righteous for what he did
when he offered his son Isaac on the altar? You see that his faith and his actions
were working together, and his faith was made complete by what he did.
And the Scripture was fulfilled that says, “Abraham believed God,
and it was credited to him as righteousness,” and he was called God’s friend” (James 2:21–23).

He didn’t know this provision for the sacrifice would foreshadow the sacrifice of God’s only Son —a Son who would not be spared because He was the provided Lamb.

The next day John saw Jesus coming to him and said,
Look! There is the Lamb of God, Who takes away the sin of the world!
John 1:29

He only knew that God had promised and that He surely knew what He was doing. He stood on his faith and belief that God could be trusted to keep His promise—even if it appeared like the promise was going to die. And God proved himself faithful to Abraham.

By faith Abraham, when he was tested, offered up Isaac,
and he who had received the promises was offering up his only begotten son;
He considered that God is able to raise people even from the dead,
from which he also received him back as a type.
Hebrews 11:17, 19

Jehovah – Jireh, our faithful Father, proves Himself faithful to us constantly. Even if it doesn’t look like it right now, God will bring His promise to pass. We have hope through His Word. Trust Him.

What particular promise has God has made to which you can confess,

“Remember Your word to Your servant,
for You have given me hope.
My comfort in my suffering is this:
Your promise preserves my life.”

Walking through life everyday, we can become complacent.  Not searching for any more than what we have right now, right here.  But, God does not want us to live that way.  He wants us to live life to the fullest.  He wants us to seek Him and seek His ways. Until we do that, we will never experience the life He holds. We can be safe…we can be ‘free’;  but are we really?  Are we truly free if we have to come to the same job everyday, perform the same tasks everyday, and are not living for Him?

  • When was the last time you told someone about your walk with God?
  • When was the last time you were on your knees with God?
  • When was the last time you were in His word, seeking His will for you?

You may say, ‘I am too old’ or ‘I am too young.’  Perhaps you may even say, ‘I am not physcially able to do anything.’  Sister in Christ, you are able. You can pray.  You can say positive words to a hurting person. You can even post things to your Facebook page to encourage someone.  You never know when your words, your actions, your kindess will impact a person who needs a touch from God.

“If I’m so thankful, why do I easily forget?’”

That question goes straight through my heart.  Oh, around Easter—I don’t forget.  But the rest of the year…it can be hit or miss.  How could I ever forget it should have been me?  That my sins nailed Christ to the cross?  How could I possibly take that for granted?

This song is my reminder. It reminds me —

  • He was handed over to die because of our <MY> sins, and He was raised to life to make us <ME> right with God.  Romans 4:25 NLT
  • God proves His own love for us <ME> in that while we <I> were still sinners, Christ died for us <ME>!  Romans 5:8 HCSB
  • For God made Christ, who never sinned, to be the offering for our <MY> sin, so that we <I> could be made right with God through Christ.  2 Corinthians 5:21 NLT
  • And He Himself bore our <MY> sins in His body on the cross, so that we <I> might die to sin and live to righteousness; for by His wounds you <I> were healed.  1 Peter 2:24 NASB

Take a minute and read back through those Scriptures substituting your name for the <pronouns>.   Makes it much more real and personal when you do that, doesn’t it?

As I was typing this, I kept thinking about the first two verses of the “Roman Road” I learned growing up….

For all have sinned and fall short of the glory of God

For the wages of sin is death, but the gift of God is eternal life in Christ Jesus our Lord.
Romans 6:23 HCSB

It really should have been me.  It REALLY should have been me!  The shame, the scars, the stains should have been mine.  How could I forget to thank God for the ‘should have been’?  Instead of being forgetful, let me make this my refrain:

This song could be about a marriage that two went into with great but unrealistic expectations; and they realize that it really wasn’t what they expected.  And yes, it is a mystery because no one can see the real road ahead.  If you grew up in the times when our moms watched their “stories,” (television soap operas) you would really have a totally different idea of marriage, of sunset walks, and dancing around the room before you go to bed.  However, the real picture may actually look like the wife walking out the door and taking a walk by herself because she cannot remember what she saw or what she was thinking that day she said “I do.”

But God is the Inventor of marriage.  He knows that we are human and imperfect, as well as that two are better than one…no matter how hard the road.  Because one falls down and then the other picks them up.  We have someone that always has our best interest at heart.  And we have each other to lean on and laugh with and seek His will together.

What if we listened to this song and thought about our relationship with God? WE are His bride and He is our groom. We say ‘yes’ to this relationship and He lifts the veil between us and we are one.

Sometimes the walk is easy, fun, and exciting—full of good moments.  Other times are really hard, walking in a valley just waiting and waiting to finally see the mountaintop. But all along, He never leaves us.  Just like in a marriage, when the hard times come—we don’t walk out or call it quits.  We keep seeking Him and we still love Him and, like a husband, He always wants what is best for us.

When you are listening today, what are you thinking of, who comes to mind? Basically, we are broken and together we can all be broken together. God can and will heal what is broken and He can fulfill each one of us just by walking with us. And oh! how He loves us!  So today, if this hit home to you, I pray that God’s grace will wash over you like rain and that if you’re married and things aren’t what you thought, hold on and seek the One that can make all things new..and praise Him for all the miracles and blessings He has given you. And if God is your groom, take His hand and walk through life together.  Joy will be yours!

As the bridegroom rejoices over the bride, so shall God rejoice over you.

Dear Lord, You are our forever, today, and yesterday.  You have no beginning and no end.  Thank You for Your steadfast love and for rejoicing over us as a groom does over his bride.  Lord, You are our Groom and You are with us always.  Yes, we are broken but still you never leave us. And in marriage, You give us grace and mercy to live out our vows. You enable us to walk with this person and to have a good life together.  We love you so much!  We look forward to what is to come!!  In Jesus’ name, amen.

The One Who Thanked Jesus

And as He went to Jerusalem, it just so happened that He went through the midst of Samaria and Galilee. And as He entered into a certain village, ten lepers met Him, who stood afar off. And they lifted up their voices and said, “Jesus, Master, pity us.” And seeing them, He said to them,”Go show yourselves to the priests.” And it happened, as they went, that they were cleansed. And one of them, when he saw that he was healed, turned back and glorified God with a loud voice. And he fell down on his face at His feet, thanking Him. And he was a Samaritan. And answering, Jesus said. “Were there not ten cleansed? But where are the nine? Were none found who returned to give glory to God except this foreigner?” And He said to him,”Rise and go, your faith has cured you.”

Luke 17:11-19

This story is quite simple to understand….  As Jesus was passing between Galilee and Samaria, He saw ten lepers coming toward Him.  They were begging Him for mercy and healing.  So Jesus told them to go show themselves to the priests (which was a prerequisite to be declared clean and free from leprosy).  And, as the ten of them ran off, they were healed!  But, can you believe out of the ten, only one—a Samaritan—came back and praised Him.

{Aren’t we guilty of this?}  God blesses us a thousand times and we forget to thank Him and we find something to complain about.  Something He didn’t get quite right and we want a do-over.  Friend, until we begin to thank Him and praise Him, even in the hard times, we will never be fully filled with joy. Praising and thanking Him  and naming each gift reminds us of how much He has blessed us and how much He loves us…and that we serve a good God Who can only give good things.  It may not look good on the outside, but there is good to come of it or from it.  If we let Him in and allow Him to work in those times, He will  make it all worth the ride.

In the story of these lepers, we see that Jesus healed each one physically.  But the one leper that came back actually received far more for his faith; for not only was he cured physically—he was cured spiritually.  His soul was saved and he received a real relationship with God.  Nine lepers received a partial healing.  A temporary blessing for their time on earth.  The grateful Samaritan received an eternal blessing.  All he did was give thanks—he praised Him for the healing.  See, they all had the faith to trust Jesus, come close to Him, be heard by Him, and ask for His mercy. But only one had the humility and the honesty and character to say, “Thank You.”

Who are you today?  Are you one of the nine…who has just enough faith to ask something of the Father and take it for granted?  Are you one of the nine…who really didn’t care about a real relationship with Jesus, and left right after the blessing?  Or are you the Samaritan…who not only had enough faith to ask for complete healing, but returns time and time again to the One Who wants so much more for us and longs for a real relationship with us.

Friends, I pray that you begin to really thank Him for what He has done for you.  All the small ways that He loves you.  And yes, of course the biggest way—when He sent Jesus to come and go before us.  And then to pay the ultimate sacrifice with His life so that we may live.  He continues to give us grace and mercy even when we fail Him over and over again.

Do you know Him?  Today can be the day that everything changes.  Your life can truly be one of joy and blessings.  All you have to do is ask.  I encourage you to pray this prayer with me.

Dear God, I know I am a sinner. I need You to come into my life and change me.  I believe that Jesus is Your Son and He died on the cross to pay for my sins.  Thank You for this free gift. Help me on this journey to seek You.  In Jesus’ name, amen.

Martha Shows Her Faith

Recorded in the Gospel of John, our Lord made seven statements referring to Himself as I AM…

I AM The Light of the World
I AM The Bread of Life
I AM The Door
I AM The Good Shepherd
I AM The True Vine
I AM The Way, The Truth, and The Life
I AM The Resurrection and The Life

Each week during this season of Lent and into Easter, here on the Seeking Him blog, we will be focusing our devotionals on a different aspect of Jesus’ revelation of Himself as I AM.  The aim of Lent should be to prepare our hearts for the remembrance of Jesus’ sacrifice—His trial and torture, the Crucifixion and His death…and above all, the celebration of His Resurrection from the dead.  We pray that this will be a great encouragement to each of you who read them.  And that all of us will consider the significance of Jesus’ words and, through them, be helped as we remember and are thankful for all Jesus went through during the last few weeks of His life on this earth.

Lazarus had passed away.  Mary and Martha were heartbroken that Jesus had not made it back in time to heal their brother.  Little did they know Jesus knew Lazarus had passed and was going to use his death as a way to minister to the sisters and to test their faith.

Martha was the first to meet Jesus.  She ran out to meet Him and gently asked why He had not been there earlier.  Jesus knew she was going to ask and was not hurt or angry.  Jesus explained that He would raise Lazarus up and He meant now, not later in the last days.  As He told her, “I AM the Resurrection, and the Life: he that believeth on Me, though he die, yet shall he live….”  Upon telling her these things—and that we would never die—He asked her if she believed what He said.  She stated ‘yes’, and declared that He was the Christ, the Son of God.

She would not deny who He was, even in deep sorrow.  She had probably seen many of His miracles and was counting on Him to perform another one.   That somehow, someway, He would help her and Mary.  And then, when He called forth Lazarus from the grave, many believed on him. For who could call the dead to life, unless they were of God!

Even Jesus wept about Lazarus’ death.  When He asked where they had laid Lazarus’ body, He went to the tomb, asked for the stone to be removed and called Lazarus out of the grave. He called Lazarus by name…out he came, still wrapped in his grave clothes. Everyone was astonished! Mary and Martha were grateful to Jesus for bringing their brother back to be with them.

Jesus wants us to trust and love him as Martha and Mary did. To have faith that Jesus would help in our times of sorrow and fear. He will always be beside us, comforting us, and showing us how to be brave and face our fears. We are to be overcomers and doers of His word. He is an example of what we can do and accomplish in His name.

Father, thank you for sending your son Jesus to be an example for us. Help us when we doubt, when we fear. Help us be overcomers and seek in your word how we can be imitators of your Son. Thank you for your grace and mercy present each and every day. Protect from the attacks of the evil one. In Jesus’ name, I pray, Amen!

Jesus Is All The World To Me

This song came into my mind a few weeks ago, and I kept “singing” it over and over.  I noticed that the word “Friend” was in each verse at least once.  Mr. Thompson referred to Jesus as his ‘Friend’. I decided to go to Biblegateway.com to look at Scriptures with “friend” in them.  There are 170 verses in the NIV translation with that term and many more with references to friendship.  Some verses refer to betrayal or jealousy, while others refer to intimacy.  The verses I pulled out refer to the personal friendship with God and Jesus that means “all the world to me.”

Even now my Witness is in Heaven; my Advocate is on high.
My Intercessor is my friend, as my eyes pour out tears to God;
on behalf of a man He pleads with God as one pleads for a friend.
Job 16:19-20

A friend loves at all times,…
Proverbs 17:17

…there is a friend who sticks closer than a brother.
Proverbs 18:24

One who loves a pure heart and who speaks with grace
will have the King for a friend.
Proverbs 22:11

When Jesus saw their faith, he said, “Friend, your sins are forgiven.”
Luke 5:20

Greater love has no one than this: to lay down one’s life for one’s friends. 14 You are my friends if you do what I command. 15 I no longer call you servants, because a servant does not know his master’s business. Instead, I have called you friends, for everything that I learned from my Father I have made known to you.

Here are just a few more “friend” verses that you may want to read at your convenience: Exodus 33:11, Song of Songs 5:16, Matthew 11:19, Luke 12:4, James 2:23.

There have been (and will be) times when we fall, and we fail to do God’s perfect will.  I’m so thankful that Jesus is there for us.  He is our Strength, and lifts us up back into fellowship with Him.  In Him we find true joy.  Jesus is “all the world to me!”

The LORD upholds all who fall and lifts up all who are bowed down.
Psalm 145:14

Humble yourselves before the Lord, and he will lift you up.
James 4:10

…and those the Lord has rescued will return.
They will enter Zion with singing; everlasting joy will crown their heads.
Gladness and joy will overtake them, and sorrow and sighing will flee away.
Isaiah 35:10

When we are in fellowship with Jesus, we will experience blessings even when we are going through trials.  That’s because wherever Jesus is blessings are too.  They are a part of Him, and we are the benefactors.  Jesus is “all the world to me.”

All praise to God, the Father of our Lord Jesus Christ,
Who has blessed us with every spiritual blessing in the heavenly realms
because we are united with Christ.
Ephesians 1:3

There is no truer Friend you or I can have than Jesus who laid down His life for us (John 15:13), and promises us that He will never forsake us. Jesus is “all the world to me.”

…be content with what you have, because God has said, “Never will I leave you; never will I forsake you.” So we say with confidence, “The Lord is my helper; I will not be afraid. What can mere mortals do to me?” Hebrews 13:5-6
Because of our friendship with Jesus, we have this assurance:

Beautiful life with such a Friend,
Beautiful life that has no end;
Eternal life, eternal joy,
He’s my (your) Friend.

And we know that the Son of God has come and has given us understanding,
so that we may know Him who is true;
and we are in Him who is true, in His Son Jesus Christ.
He is the true God and eternal life.
1 John 5:20

Jesus said to her, “I am the Resurrection and the Life.
The one who believes in Me will live, even though they die;
and whoever lives by believing in Me will never die.
John 11:25

He will wipe every tear from their eyes. There will be no more death or mourning or crying or pain, for the old order of things has passed away.”

Is Jesus your Friend?  If not, He’s waiting for you.  My friendship with Jesus means “all the world to me,”  and I pray you can say the same.  You will have “no better Friend.”

“Here I am! I stand at the door and knock.
If anyone hears My voice and opens the door,
I will come in and eat with that person, and they with Me.”
Revelation 3:20

 

Dear Jesus, thank You for laying down Your life and rising to new life for us. Through Your ultimate sacrifice, You made the way for us to become Your friend, a part of Your family. We have no better Friend. You are our life, our joy, our all. You are “all the world to us.” Thank You! We give You our all to be Your friend. In Your Holy Precious Name we pray, Amen.

Belief in Christ

Recorded in the Gospel of John, our Lord made seven statements referring to Himself as I AM…

I AM The Light of the World
I AM The Bread of Life
I AM The Door
I AM The Good Shepherd
I AM The True Vine
I AM The Way, The Truth, and The Life
I AM The Resurrection and The Life

Each week during this season of Lent, here on the Seeking Him blog, we will be focusing our devotionals on a different aspect of Jesus’ revelation of Himself as I AM.  The aim of Lent should be to prepare our hearts for the remembrance of Jesus’ sacrifice—His trial and torture, the Crucifixion and His death…and above all, the celebration of His Resurrection from the dead.  We pray that this will be a great encouragement to each of you who read them.  And that all of us will consider the significance of Jesus’ words and, through them, be helped as we remember and are thankful for all Jesus went through during the last few weeks of His life on this earth.

“Lord,” Martha said to Jesus, “if You had been here, my brother would not have died.
But I know that even now God will give You whatever you ask.”
Jesus said to her, “Your brother will rise again.”
Martha answered, “I know he will rise again in the resurrection at the last day.”
Jesus said to her, “I AM the Resurrection and the Life.
The one who believes in Me will live, even though they die;
and whoever lives by believing in Me will never die. Do you believe this?”
“Yes, Lord,” she replied, “I believe that You are the Messiah, the Son of God, who is to come into the world.”
John 11:21-27

Raising Lazarus from the dead was one of Jesus’s miracles while He was here on Earth.  Jesus brought him back from the dead and healed many others during His time on Earth.  It was also like a foretelling of Jesus’ own Resurrection.  Jesus defeated death to save Lazarus.  He would go on to defeat death again to save us all.

Martha believed that since Lazarus had died she would not see him again until he was resurrected at the end of time.  She believed that Jesus was the One sent to save all of us from our sins.  She believed in Him.  She did not falter in her belief when Jesus asked her if she believed He was Resurrection and the Life.

When the last day comes, will you be able to answer “Yes, Lord…I believe.” like Martha did?  Can you answer ‘Yes” today?  For those who believe that Jesus is the Messiah, the Savior, they will not die.  When Judgment Day arrives, Jesus will answer for the believers, and they will live for all eternity.  The debt for sin has been paid, and the believer will never die.

Dear Heavenly Father, thank You for the sacrifice that Your one and only Son made for us.  If it were not for His love, we would be confined to death for the consequence of sin.  May those who do not know Him come to Him.  May those who already know grow stronger in their relationship with the Messiah.  In Jesus name, Amen.
