Garlicky Green Beans and Pignoli

Who has memories of sitting with their gramma or favorite aunt and snapping green beans?  Such a simple, enjoyable way to accomplish a task that takes time AND have a great conversation.  Oh, and the end result? A big pile of fresh veggies just waiting to be prepared in the simplest of ways.  And truly it didn’t matter whether they were boiled or steamed or roasted (or microwaved…!), they were DELISH!!!  Just remember—only snap the stem end NOT the end with the little tail!  😉

The recipe I am sharing today uses a pile of green beans which have been steamed for just a few minutes. Click here  for a few ways to steam any veggies.  Meanwhile a simple sauce (yet VERY flavorful!) is prepared.  This sauce could also top any variety of fresh veggies…perhaps some broccoli or zucchini or carrots, even. And it all fits nicely within our healthy but oh-so-yummy POV, too! Enjoy!

Garlicky Green Beans with Pignolis

ingredients:
1# fresh green beans, snapped and rinsed
2 tablespoons butter (or a combo of butter and olive oil)
2 (or more) tablespoons finely minced garlic (I used jarred)
2 ounces pignoli (pine nuts)
sea salt, freshly ground pepper (I used a lemon-pepper blend)
zest and juice of 1 small lemon (optional)

directions:

  • steam the prepped green beans in the manner of your choice
  • in a large skillet, melt the butter/olive oil over a medium-low heat
  • add the garlic and pignoli stirring constantly for 2-3 minutes making sure they do not burn; remove from heat
  • add the cooked, drained green beans and toss together along with a generous amount of salt & pepper (and the optional lemon, if using)

God’s Promises

The Lord is a refuge for the oppressed,
a stronghold in times of trouble.
Those who know Your name will trust in You
for You, Lord, have never forsaken those who seek You.
Psalms 9:9-10

Indeed, those who seek the Lord will never be forsaken; that is the promise of God to us.  He also said “Seek Ye first the kingdom of God and its righteousness and all these things shall be added unto You”.  God is not a man that He can lie nor the son of man that He would change his mind.  What He says…He shall do it.  Especially to His very own.

What is it to seek the Lord?  Seeking the Lord means seeking His presence…having access to Him.  The Bible repeatedly calls us to seek the Lord and to seek His presence continually.

Now set Your mind and heart to seek the Lord your God.
1 Chronicles 22:19

God has made these promises to those who seek Him:
• Deuteronomy 4:29  But if from there You seek the Lord your God, you will find Him if you look for Him with all Your heart and with all your soul.
• 2 Chronicles 7:14   If My people who are called by My name will humble themselves and pray and seek My face and turn from their wicked ways, then will I hear from heaven and will forgive their sin and will heal their land.
• Proverbs 8:17   I love those who love Me and those who seek Me find Me….
• Luke 11:9   So I say unto you, Ask and it will be given to you, seek you shall find, knock and the door will be opened to you.

In all things when we seek the Lord we may ask anything in Jesus’ name and He will do it (John 14:14).

And will not God bring about justice for His chosen ones
who cry unto Him day and night? Will He keep putting them off?
Luke 18:7

Let us seek the Lord where He may be found for the rewards are great. He promises and He will do it. He cannot lie.  I thank God for He has given us room to be found when we seek Him with all our hearts and souls.

Father, we thank You for the wonderful Word at the right time.  Thank You for Your promises to Your chosen ones are YES and AMEN through Christ Jesus.  Thank You because You always stand by Your word and You perform it.  Your Word, dear Lord, does not go back to You the same.  As we seek You with all our hearts and souls in all areas of our lives, dear Lord, give us also the heart to wait to receive from You. We need grace to be patient in as much as we believe we have received whatsoever our hearts desired.  Forgive us of our unbelief in one way or the other. Be glorified always. Thank You for hearing and answering our prayers.  In Jesus’ name we pray.  Amen.

Blessings Are Better

“Why isn’t God helping me?”  {We feel like this sometimes, don’t we?}  “I mean, if God was helping me then I’d have food to eat, money to pay bills, a job, a happy marriage…” and the list goes on.  Truth be told, God never promised us rainbows and sunshine.  Jesus Himself said,

“… In this world you will have trouble. But take heart! I have overcome the world.”
John 16:33b

Not something you think you would be hearing from the Creator of the world.  Frankly, I don’t see why He couldn’t have said, “In this world you will have easy times.”  That sounds so much better; but that isn’t what He said. He warned us that things were going to come our way that were not going to be so pleasant in nature.

This doesn’t mean that we are meant to just lay down and take every trouble that comes our way.  God is a good God; by His nature, He cannot do bad things.  There are very logical reasons as to why some things happen.  If you don’t eat right and exercise, you are going to gain weight and that weight gain left unchecked can cause health problems.  God didn’t give you those health problems…this all started back when you decided not to make the right choices.  If you decide not to go to sleep on time at night and your work performance slips and you end up getting fired, God didn’t take your job from you, you chose to make poor decisions.  These examples have results—they are called “consequences.”

I believe that God can make anything right.  As long as we go to His Word, turn from our ways, and do things His way.  If we are willing to learn the better way, God will show us a better way.

For everyone who asks, receives. Everyone who seeks, finds.
And to everyone who knocks, the door will be opened.
Matthew 7:8

Here’s a thought: instead of asking God to give you money, why not ask Him to show you how to biblically manage your money so that you are better equipped to avoid money shortage situations.  Here’s another thought: instead of asking God for a better job, why not ask Him to show you how to appreciate the one you have.  My pastor told us that miracles are nice, but blessings are better.  At first I didn’t get it, but he explained that miracles go against natural happenings.  You know…the impossible.  Blessings go with natural happenings, i.e., blessed with a promotion for your great work or money in savings because you managed it correctly.

So, are you asking God to do all the work? Or are you willing to do your part?
God loves to help.

Go back and read those two verses again.  And again…and again.  Until it completely sinks in that NOTHING can or EVER will separate us from God’s love. When all else fails—when everyone else abandons you, when sin has defeated you—His love STILL remains!  Is that not the most comforting, reassuring thought ever?!?  No matter how far we have fallen, no matter what our past or present looks like, we can never fall out of the reach of His love.  Neither can our loved ones.  We are all held tightly in His hand and our names are written on His palm.

I give them eternal life, and they will never perish—ever!
No one will snatch them out of My hand.

What hope, what reassurance there is in each of these Scriptures!  Let us hold tightly to them.  Be confident in His great love and remember:

I can say that this is one of those hymns that the Holy Spirit brings to mind on many occasions and especially on the really hard days.  The Lord speaks to us through music, I know for sure.  Some days (even before the first cup of coffee) are already setting me up for failure.  I think in my head that there are words that I shouldn’t have said yesterday and I went to bed without an “I’m sorry”…and there will be words today that I will wish I could take back.  There are cluttered cabinets that need to be cleaned out, kind of like the cluttered  mind that needs to hear Jesus.  I am a frustrated perfectionist and I often compare my lack to others’ abundance.  But the Holy Spirit whispers early…in the form of a hymn…’it is well with my soul‘.  And it is….

In the 1800’s, a man named Horatio Spafford had lived through what he thought were the hardest trials of his life—his only son died and, shortly after, a horrible fire consumed all he had materially.  He recovered only to hit bottom two years later.  He put his wife and four daughters on a ship to England and he was to meet them soon.  Not long after they took off, the ship ran into another ship and the children sunk to the bottom of the ocean.  He received a telegram four days after from his wife that said, “Saved alone.”  He got on a ship to meet her and, as he went over the location where his daughters had drowned, these words came to his mind: “When sorrows like sea billows roll…” and there was birthed one of the greatest hymns of all times.

Yes, he lost his children (something I cannot even imagine).  But in all that tragedy, his God was enough.  The fact that Jesus loved him was all he needed to make it through.  He knew that Jesus was coming again to take him and his wife to meet his girls.  So here on earth, he would choose to live his days in praise.

What about you today?  Are you experiencing loss?  It may not be as severe as the loss of a child (or four children) but it may hurt still.  I pray today that you and I are able to look at all the chaos around us and still have peace and be able to say without hesitation that “It is well with my soul.”

Let us pray: Dear Lord, You are awesome and mighty, You bring me to my knees in worship and praise!  You are Holy and You are worthy of all that we are and all that we have and we love You.  Thank You for the peace that comes from just knowing You and knowing that Jesus took away all our sins so that we are looked at as pure in Your eyes.  Oh Lord, I pray for all the broken hearts today.  I pray that You can mend them and put a new song in each one; one that says “It is well with my soul”…no matter what.  Your love is enough.  In Jesus’ name, amen.

Plum and Basil Upside-Down Cake

Plum Basil Upside Down Cake

I  hadn’t really planned on baking a cake today.  But every Friday, I need to have a post up for you fine ladies, and sometimes…{sigh}.  The kids are acting crazy, work is busy, the husband has to work late—you know how it is.  So, you make all the family favorites for dinner because it’s easy and you don’t have to think about it.

This week, however, I was really stumped.  I looked in my fridge:  I had a LOT of plums to deal with that were edging toward soft.  I also have a basil plant in my front yard that I’m in love with!   I am plucking off leaves daily and trying to find new uses for it.  Well, I did a Google search for “plums and basil”…and guess what came up?  This Plum and Basil Upside-Down Cake!

It was easy to make and, while not instantaneous to whip up, I could still do it in steps—in between washing dishes, or folding some laundry.   You don’t need the basil in this recipe, but it adds a lovely complexity to the flavor and elevates it from being just another sweet cake.  If you don’t have plums, use nectarines or peaches – both taste great with basil.

Plum and Basil Upside-Down Cake

Ingredients:

  • 1/4 cup plus 2 teaspoons butter, divided use
  • 1 pound large plums – any kind, or peaches or nectarines – pitted and quartered (about 6 plums)
  • 1 1/4 cups sugar, divided use
  • 1/2 cup packed fresh basil leaves, roughly chopped
  • 1 1/2 cups whole wheat flour (or use regular flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 3/4 cup buttermilk (I used plain yogurt instead)

Directions:

  1. Melt 2 teaspoons butter in a large nonstick skillet over medium heat. Add plums, and cook for 3 minutes.  Add 1/2 cup sugar, basil, and a pinch of salt.  Cook for 10 minutes or until plums are tender, stirring frequently.  Remove plums from pan using a slotted spoon.  Bring cooking liquid to a boil.  Cook 5 minutes or until liquid is very thick, like jam.  Strain liquid through a sieve to remove basil.
  2. While the liquid reduces, arrange plums in the bottom of a 9-inch cake pan (I used square, but the author recommends round) coated with cooking spray.  Pour the liquid over the plums.  Let cool.  (I actually reserved about 3 tablespoons of the liquid for another use – read on!)
  3. Preheat oven to 350F*.  In a medium bowl, whisk together the flour, baking powder, and salt.  In a separate bowl, beat the remaining 1/4 cup butter and remaining 3/4 cup sugar with an electric mixer until fluffy.  Add one egg at a time, beating well. Add flour and buttermilk (or yogurt) alternately to sugar blend, beginning and ending with flour.  Pour batter over plums, spreading evenly.
  4. Bake for about 50 minutes, or until a wooden toothpick comes out clean.  Let cool for 10 minutes.  Run a knife around the edge of the cake.  Invert onto a plate.  Cool and serve plain, or with whipped cream, or even vanilla ice cream!

I saved a bit of the plum syrup.  My husband got a promotion today (Praise the Lord!), and I’m going to surprise him with a glass of sparkling wine with a teaspoon of the plum syrup stirred in for a champagne cocktail!  If you don’t like champagne, I bet this plum syrup would be delicious stirred into sparkling water or iced tea too.

Love is the Home for Both

In the fifteenth chapter of Luke, starting with verse 11, we read the story of the prodigal son.  I’m sure you have read or heard this so many times but bear with me for a minute.  The actual word ‘prodigal’ means ‘the squanderer or the waster’.  And the prodigal son did squander his inheritance and totally wasted all that his father gave him.

If you think about it, we have all played both roles at some time in our lives.  Maybe at one point we are the older, responsible son—keeping everything in order and never disappointing our Father, and looking down on those who do and those who give the sinner a break.  We have also been the younger one—wasting our inheritance from our Father, turning to anyone or anything that will make us “happy”, and running so far the other way.  But instead of finding happiness and freedom, we find ourselves in slavery to this other life that we thought we wanted so desperately.  We find ourselves starving for real substance and we are desperate for the life we had before.

And then there’s the father who never gave up on his son, and continued to search and wait and believe that they will one day be a family again. The son returns and the father lavishes love and compassion and hugs. He gives him his best robe and a ring and acts as if nothing happened. Even when the older son gets mad and protests, the father does not judge him. He is fair and just, resembling our Father in Heaven.

Here is the story:

The Parable of the Lost Son

Jesus continued: “There was a man who had two sons. The younger one said to his father, ‘Father, give me my share of the estate.’ So he divided his property between them. Not long after that, the younger son got together all he had, set off for a distant country and there squandered his wealth in wild living.  After he had spent everything, there was a severe famine in that whole country, and he began to be in need. So he went and hired himself out to a citizen of that country, who sent him to his fields to feed pigs. He longed to fill his stomach with the pods that the pigs were eating, but no one gave him anything.  When he came to his senses, he said, ‘How many of my father’s hired servants have food to spare, and here I am starving to death! I will set out and go back to my father and say to him: Father, I have sinned against heaven and against you. I am no longer worthy to be called your son; make me like one of your hired servants.’  So he got up and went to his father.  But while he was still a long way off, his father saw him and was filled with compassion for him; he ran to his son, threw his arms around him and kissed him. The son said to him, ‘Father, I have sinned against heaven and against you. I am no longer worthy to be called your son.’  But the father said to his servants, ‘Quick! Bring the best robe and put it on him. Put a ring on his finger and sandals on his feet. Bring the fattened calf and kill it. Let’s have a feast and celebrate. For this son of mine was dead and is alive again; he was lost and is found.’ So they began to celebrate.  Meanwhile, the older son was in the field. When he came near the house, he heard music and dancing. So he called one of the servants and asked him what was going on.  ‘Your brother has come,’ he replied, ‘and your father has killed the fattened calf because he has him back safe and sound.’  The older brother became angry and refused to go in. So his father went out and pleaded with him. But he answered his father, ‘Look! All these years I’ve been slaving for you and never disobeyed your orders. Yet you never gave me even a young goat so I could celebrate with my friends. But when this son of yours who has squandered your property with prostitutes comes home, you kill the fattened calf for him!’  ‘My son,’ the father said, ‘you are always with me, and everything I have is yours. But we had to celebrate and be glad, because this brother of yours was dead and is alive again; he was lost and is found.’ ”

Which son do you relate to?  Have you run so far or are you a slave to something other than God?  Have you wasted all that God has given you for something you thought was better?  Or are you the older brother, looking down on the one who made the bad choices, and maybe a little bitter when he is given mercy by others?

God is your Father and He loves you.  If you have run away, He is ready to meet you where you are.  He is willing to accept you just the way you are and give you the finest life and the abundant blessings that are yours!  All you have to do is ask.  God’s arm reaches so far and you can’t ever outrun Him.

This Week…Psalm 31:19

This week, here on the Seeking Him devotional blog, we  have been reminded of our God’s GREAT goodness!   Our devotional writers have shared the Truth given us in this week’s passage through the devotionals they have written.  Here are a few of their thoughts….

In Fear of the Lord, Tina gave us two examples: the Israelites who did NOT have the fear of the Lord as opposed to the first-century Church who DID live in the fear of the Lord….

“The first-century Church (shown to us in the Book of Acts) practiced the fear of the Lord.

So the church throughout all Judea and Galilee and Samaria
had peace and was being built up.
And walking in the fear of the Lord
and in the comfort of the Holy Spirit, it multiplied.
Acts 9:31

The early Church chose to focus on what was good in their lives and keep up their community by seeking daily to bless others and be God’s best.

We can walk in this way as well.  When we are coming into a state of turmoil, we can choose to walk in God’s goodness by following His Will in our lives.”

In God’s Goodness, Ann shared numerous Scriptures relating to the goodness of our God….

“Let me just show you a few verses in the Bible that show the goodness of God.

• Psalm 25:8  Good and upright is the Lord therefore He instructs sinners in His ways.
• Psalm 33:5   The Lord loves righteousness and justice; the earth is full of His unfailing love.
• Psalm 34:8   Taste and see that the Lord is good, blessed is the man who takes refuge in Him.
• Psalm 119:68   You are good and what You do is good, teach me your decrees.
• Psalm 145:7  They will celebrate your abundant goodness and joyfully sing of Your righteousness.
• Matthew 19:17  “Why do you ask Me about what is good?” Jesus replied. “There is only One who is good. If you want to enter into life, keep the commandments.”

The above Scriptures speak to us in many ways, showing us the ways of the goodness of the Lord.  It is by His grace and His lovingkindness to put in store all this goodness just for us.  The beneficiaries of His goodness are you and I—as long as we do His will and walk in His statutes.  God’s goodness is immeasurable. The grace of God takes us to that level where we are able to receive this goodness.”

And in Using Blessings to Share God, Ahmee encouraged us to be sure to point others to the goodness of our God….

Psalm 31:19 says “…blessing them before the watching world…”.  I like that!  God blesses us before the eyes of the watching world.  He is using us to draw attention to Himself so that others will be saved.  God reaches and searches and hunts down. Truly, I cannot see how any one person might be able to say that they did not know of the Almighty God.  In this world of evil He has done so much.  So, let the world watch!  Let them watch and let them see!  But don’t forget to point them upward.  Use your blessings as the opportunity to point someone to God.

If We Are The Body

I wonder what my part is in the Body of Christ, and I know others wonder as well.  Knowing we are part of the Body is not the concern—instead I struggle at times to know my place.  We have a membership event at our church on Sunday; we have been going to this church for three years but have never ‘officially’ joined.  One requirement for joining this church is picking a ministry to work with. My question leading up to Sunday has been, “Where am I supposed to be? Where in the body of Christ can I glorify Him to the fullest?”

This song offers only two examples of hurting people.  There are so many more, so many that need support, and so many that need to be lifted up. We are His hands, we are His feet, we are His Body. Whatever capacity it may be in, this is how we need to approach the situation. I will continue to pray for direction when it comes to where I need to be…and I will also pray that you find your place if you haven’t.

There is so much work that needs to be done for the Kingdom of God,
and it is going to take each and every one of us to do it.

Dear Heavenly Father, I pray that You give direction and guidance to all of those searching for a place in Your body.  There is so much to be done and, as You said in 1 Corinthians 12:27, each one of us are a part of it.  In Jesus’ name we pray, Amen.
