Sriracha Butter

Are you a griller?  Admittedly, I am not.  The two things I avoid, as far as cooking goes, are baking with yeast (it hates me and refuses to cooperate) and the grill.  I love it when my husband or my Dad grill up something, and I will prepare everything for the fire—as long as I am not the one doing it.  Why?  I don’t know.  I’ve never done it and I guess I’m intimidated.  So even though we live in sunny Southern California, we eat pan-fried steaks much more often than grilled.  Sound boring?  Not when you serve them with Sriracha Butter!

This is a Martha Stewart recipe I found in the back of her magazine this summer.  If you haven’t tried it yet, Sriracha is a brand of hot sauce that is beloved for it’s spicy, fruity bite.  If you don’t have Sriracha handy, try another hot sauce – just not something that’s got too much fire!  The other ingredient that makes this butter special is the anchovies.  I didn’t have any, but I always have a tube of anchovy paste in my fridge (for this Caesar salad recipe and this Green Goddess dressing).  HINT: Any time you see an anchovy fillet in a recipe, you can substitute one inch of anchovy paste.

We ate this on sirloin steaks that were very lean, so the added flavor and fat from the butter were a welcome addition.  My spice-shy daughter loved it and even put some on her steamed cauliflower!  Ready to try it?  Let’s go!

Sriracha Butter

Ingredients:

  • 1 stick butter, softened
  • 2 anchovy fillets, minced (or use a 2-inch squeeze of anchovy paste)
  • 1 tablespoon Sriracha or other chili sauce
  • 1 clove garlic, minced
  • salt to taste (I didn’t add any extra salt to mine)

Directions:

  1. Mash the softened butter together with the anchovies, Sriracha, and garlic.  Taste to see if you want any more salt.  Refrigerate until ready to use.  Melt on steaks, cooked vegetables, or potatoes.

God’s Will For Our Good Health

Sisters in the Lord, know this thing—that the Lord our God’s Will is for us to prosper and be in good health (3 John 1).  We know that there are some sicknesses that we suffer because of :

  • Lack of knowledge
  • Fear
  • Iniquities
  • Sin
  • Guilt
  • Envy
  • And many other causes

I therefore beseech each one of us to check out the above in our lives.  Do we have such attitudes?  Character faults, habits, etc?  FOCUS on Jesus.  He is the sure way to salvation and healing.

Diseases come in different forms. Check out the Scriptures below.

If you listen carefully to the voice of the Lord your God and do what is right in His eyes,
if you pay attention to His commands and keep all His decrees,
I will not bring on you any of the diseases I brought on the Egyptians
for I am the Lord who heals you.
Exodus 15:26

The Lord will keep you free from every disease. He will not inflict on you
the horrible diseases you knew in Egypt but He will inflict them on those who hate you.

For they are life to those who find them and health to a man’s whole body.

In our case today these diseases can be financial, marital, academic, spiritual, etc., (you name it).  Therefore let us carefully listen to the voice of the Lord our God.  As it says “Give and it shall be given unto you” (Luke 6:38)…let us do so.  We should allow the Lord to keep us free from every disease and trust in Him always.

Father, we thank You for You hear our prayers when we pray unto You.  You are a great God whose love endures forever.  We appreciate Your will upon our lives.  However we tend to think otherwise because of the challenges of this life but Your love never ends.  We pray for the grace for us to understand what Your will is in our lives so that we live according to Your will and be established and prosper.  May Your presence be visible in our daily lives.  In Jesus’ name, I pray, AMEN!

Ruth, Naomi, and Grace

The Book of Ruth was written to help us all see God’s grace in our lives and to help us trust His grace even when the clouds are so thick that we can’t see the road.  We also see how, in our own lives, God acts to turn our setbacks into stepping stones for joy and that God is always working on our behalf…for our good.

Naomi’s gift in Ruth: Naomi’s whole life caved in when she lived in Moab and God gave her Ruth.

And Ruth said, Urge me not to leave you or to turn back from following you;
for where you go I will go, and where you lodge I will lodge.
Your people shall be my people and your God shall be my God.
Ruth 1:16

Ruth has a commitment and a love for God. Because of that, she had a deep commitment to her mother-in-law, Naomi.  Ruth 2:12, Ruth goes to Judah with Naomi to take refuge under the shelter of God. She left her own home and family to serve her mother-in-law.  God was turning Naomi’s setbacks into joy—even when she didn’t see His grace.

Ruth 1:12, Naomi suggests that Ruth will not be able to remarry but little did they know that God was preserving a wealthy man after God’s own heart, named Boaz.  In Ruth 2:20, Naomi realizes that God is behind the meeting of Boaz and Ruth.  God’s lesson is this—in every loss we endure, God is already plotting our gain.

See, God was always at work in Naomi’s life and in her setbacks.  She loses her husband and sons…God gave her Ruth.  No children?…God gives her Boaz (Ruth and Boaz meet and they give Naomi grandchildren.)   So many lessons in this story show how God replaces the losses we endure, and He is so loving and faithful to do so.  Our lives, as we serve Him, may not go along perfect and straight, but God sees that we do get there.

The Book of Ruth wants us to learn that God’s purpose for our lives is to show us something far greater than ourselves and our circumstances.  As well as a life full of joy and peace and love abundant.  He wants us to know that when we follow Him, our lives have meaning; and that everything we do in obedience to Him, no matter how small, is significant.  He also wants us to know that the best is yet to come.  Stay the course, follow Him always and hang on for the greatest adventure of your life!  It’s gonna be wild, it’s gonna be great, and it’s gonna be full of Him!

Do you know Him?  He loves you and wants the best for you.  He has a life planned for you that is full of blessings and is to give you joy and so much more. If you do want to know Him, then pray this prayer with me:

Dear God, I know I am a sinner and I need You.  I believe that Your Son, Jesus died on the cross to save me from my sins.  I want You to come into my life and be my Lord and Savior.  I trust You and I love You.  In Jesus’ name, amen.

God named each and every star and planet in our universe.  From creation, which He spoke into existence in Genesis 1:1, “And God said… God has had a plan and a purpose for us.  God wants a relationship with us.  He has never wanted to be a dictator; He has believed in choices—in free will.  From the Garden of Eden to present day, God has given us many awe-inspiring wonders and blessings.

When Laura Story was writing her first album, she needed one last song.  She was driving along the road, singing and praising God, and she sang, “Indescribable, uncontainable, You are amazing God!”  Never did she imagine that God would use Chris Tomlin to record this song on his album and then for it to be used for worship in our churches.

What brought “Indescribable” into churches all across the U.S. and the world was when Chris Tomlin recorded it for his 2004 release, Arriving, produced by Ed Cash (Caedmon’s Call, Bebo Norman, Bethany Dillon). When Cash, a longtime friend of Story’s from YoungLife circles, suggested that Tomlin use “Indescribable” as his first single, Story was shocked. “I remember saying, ‘That song will never work for corporate worship. There’s no way congregations are going to sing that!’ But it’s humbling and amazing to see what the Lord has done. When I was looking for it, I couldn’t find it. When I just started worshipping, He blew me out of the water.”  (Read more here.)

Father, may there be other artists that will listen to Your prompting.  Give the songwriters the courage to know that You are in control.  All we need to do is write, to move out of the way, and let the Holy Spirit help us know that the words will line up with Scripture.  I thank You for the blessing we have to sing our humble praises and thanks to You.  In Jesus’ name, amen.

Where Were You (When The World Stopped Turning)

Today I felt led to share this poignant song by Alan Jackson. It is so hard to believe that it has been 13 years since the horrific attack on the Twin Towers and the almost 3,000 who died on 9/11/01. Mr. Jackson’s song brings us back to what will always be the greatest thing we can do—love.

Such a beautiful song which ends with the Truth of God’s Word—‘and the greatest is love.’

But now abide faith, hope, love, these three; but the greatest of these is love.
1 Corinthians 13:13

There is no doubt that we have been given the standard to love throughout the entire New Testament.  From Jesus’ words to His disciples, to Paul and Timothy’s encouragement to the believers of the 1st Century Church, to the standard that John, the beloved Apostle, laid out in the epistles he wrote…all point directly to the greatest thing we have to do.  LOVE.

Jesus said quite a bit to His disciples about love. Listen…

“Teacher, which command in the law is the greatest?”
He said to him, “Love the Lord your God with all your heart, with all your soul, and with all your mind.
This is the greatest and most important command.
The second is like it: Love your neighbor as yourself.”
Matthew 22:36-39

“A new commandment I give to you, that you love one another:
just as I have loved you, you also are to love one another.
By this all people will know that you are my disciples, if you have love for one another.”
John 13:34 and 35

“You have heard that it was said, Love your neighbor and hate your enemy.
But I tell you, love your enemies and pray for those who persecute you,
so that you may be sons of your Father in heaven.
For He causes His sun to rise on the evil and the good,
and sends rain on the righteous and the unrighteous.”
Matthew 5:43-45

Shortly before Jesus’ trial and persecution and His death, the disciples were asking Him about His return. Amongst other warnings, He admonished them about the great importance of love.

“But all these things are merely the beginning of birth pangs.
Then they will deliver you to tribulation, and will kill you, and you will be hated by all nations because of My name.
At that time many will fall away and will betray one another and hate one another.
Many false prophets will arise and will mislead many.
Because lawlessness is increased, most people’s love will grow cold.
But the one who endures to the end, he will be saved.”
Matthew 24:8-14

All of Jesus’ disciples died before He was sent by His Father to return to the earth and gather the faithful.  So these words must be taken seriously by those of us who still remain. We don’t know WHEN He is coming…but we DO know that He IS coming! And so these warnings should be heeded to.

The attacks of those who hate God against the Christians in the world have definitely increased.  Our military continues to fight heated battles in Afghanistan (and also in other regions of the world).  Christians in many countries are arrested, tortured, and some killed for their faith in God and Jesus Christ.  Even here within the borders of our own country, hatred increases it seems every day.  We must not be counted among those whose ‘love will grow cold.’  There is great hope, too!  Remember, Jesus said, ‘…MOST people’s love will grow cold.’ (Not ALL people’s.)  Love will survive and can even thrive where we (you and me!) choose to love and not hate. It will be hard…it IS hard! It will seem to be an up-hill battle, and it IS.  But we have the Holy Spirit within us to lead and guide and help us!  May God give us grace every day to choose love.

Even in the days of the 1st Century Church, Paul and Timothy and John encouraged the believers to choose love.

But realize this, that in the last days difficult times will come. For men will be lovers of self, lovers of money, boastful, arrogant, revilers, disobedient to parents, ungrateful, unholy, unloving, irreconcilable, malicious gossips, without self-control, brutal, haters of good, treacherous, reckless, conceited, lovers of pleasure rather than lovers of God; holding to a form of godliness, although they have denied its power; and avoid such men as these.
2 Timothy 3:1-5

Beloved, let us love one another, for love is from God, and whoever loves has been born of God and knows God. Anyone who does not love does not know God, because God is love. In this the love of God was made manifest among us, that God sent his only Son into the world, so that we might live through him. In this is love, not that we have loved God but that he loved us and sent his Son to be the propitiation for our sins. Beloved, if God so loved us, we also ought to love one another. No one has ever seen God; if we love one another, God abides in us and his love is perfected in us.

But our living love, practicing love, showing love is now of utmost importance, more important than having any of the other virtues or gifts, because love is the greatest (hey, I didn’t say it!).  Oh, yes, we must have faith and hope…and live our lives with those virtues.  But, since ‘the greatest is love’ we must remember…

is not selfish, is not provoked
keeps no record of wrongs
finds no joy in unrighteousness but rejoices in the truth

There are so very many ways for us to show love to those around us.  To some, it is easy and natural…but to others it takes effort and work (sometimes it seems we need supernatural help!).  But we can.  And we can grow in our ability to love others.  Paul wrote,

I pray, that your love may abound still more and more in real knowledge and all discernment.
Philippians 1:9

God’s Great Love

These verses are so full of promises.  God loves us so very much.  He is merciful and quick to forgive us.  All God requires of us is to love Him and put Him first in our lives.  Before Abraham knew who God was…God loved him. Before Moses knew who God was…God loved him.  How much more does God love us?  (I would imagine much more!)

For those who are suffering, who are hurting, when no end seems to be there—know that God sees and will give you a renewed strength.

And it shall come to pass in the day that the Lord shall give thee rest from thy sorrow,
and from thy fear, and from the hard bondage in which thou wast made to serve.
Isaiah 14:3

Who doesn’t know of someone that these words would minister to?  There will come a time of rejoicing.  A time when looking back at what was in the past will seem like a forever time ago.

Verse 5 of Psalm 103 refers to the eagle’s yearly removal of its feathers to allow new growth, therefore giving the illusion of youthful vigor.  How many times do we want to remove our troubles, our fears, our chains that bind us to earthly worries?  When we cast them onto God, we can rest assured that He will take care of them.  When we give Him our worries we should not be quick to take them back and take them on again. If our spouse or child is not doing what they should, it is for us only to live a life that is as free of sin as we can.  We will not be perfect.  In our human-ness we will fail but, with God’s grace and mercy, we will be shown how to live.

Father, we humbly come before You and ask for direction.  We do not know how important our words or actions can be until it is sometimes too late.  We thank You for Your forgiveness.  We thank You for the ability to start again.  We pray for the courage to speak words that will build up, not tear down.  Help us to know when to be silent, and when to be so on fire for You that nothing or no one can stop us.  Help us be bold and courageous for You.  In Jesus’ name, Amen!

 

 

The Pits

A pit This pit can take on many forms…it can be a pit dug by others, or a pit of our own making.  This passage doesn’t specify that He will only save us from what others do to us, but that He will “redeem your life from the pit”, even if we make it ourselves.  Where others will cover us in shame and anger, He will cover us with love and compassion.  He will not only save us from situations we create ourselves, but He will wrap His arms around us while doing it.  He promises that our desires will be met…He promises love, compassion…He promises forgiveness, and healing.

The difference between God’s promises and those we make (or those made to us by others), is that God’s promises ring true.  These promises will not be broken; they are not conditional.  In fact we are given these promises over and over again.  We are forgiven over and over again, we are loved always, we are healed, and we are clothed in compassion.  Such simple everyday concepts made beautiful; made permanent, made personal.

I will praise the Lord. My soul will sing His praises for all He has done for me, for all He will continue to do for me. I will praise His Holy name.

Let’s pray: Dear Heavenly Father, only You, Lord, know the workings of my innermost being.  Only You know when I need love and compassion.  Only You know when I truly need love and healing.  Only You understand when I need compassion.  Only You know when I need to be pulled from the pit.  Only You.  In Jesus’ Name, I pray.  Amen.

Living Water is the only water that satisfies… Father, “flood our hearts with holy fire!!!”

In order for the offspring of water to exist, everything starts in the rain..and Who gives the rain?  Where does it comes from?  It comes from God.

Then I will give you rain in its season, (…)
Leviticus 26:4

If I want to have the Living Water and become a fountain, I need to seek those waters from above, through my seeking of the Holy Spirit, through my surrender, my sincerity and daily sacrifice in order to obey God’s Word.  The Living Water will accumulate in us, forming our character and shaping us into God’s children, until the moment that God’s Presence also overflows and we become a fountain.  We will have for us and to give others.

My prayer is to be filled with the Living Water that I may not be a reservoir that keeps it stored up for myself, rather, a river so as I am filled to overflowing it may flow freely to those around me…

Our Good God

God is and will always be good. One of the most common phrases I hear well-meaning Christians say to one another is “Everything happens for a reason.” and “God always has a plan.”

First and foremost, we must always remember the character of God—God is good. So, if your friend gets into a car accident it wasn’t because God had a plan, it was because somebody forgot to hit their brakes (perhaps because they were too busy talking on the phone).  That wasn’t God’s plan. However, God can use moments like these to reach and teach others.

I definitely believe that God can take horrible situations and stupid mistakes and turn them into something good.  Does He always?  Nope.  But that doesn’t mean that God doesn’t love us.  There is a certain thing in this world known as ’cause- and-effect’.  Because you did not pay your electric bill, your lights got turned off. Because you did not buy groceries, you don’t have any food at home.  Because you decided to stay out all night, you slept through your 5 a.m. alarm.

God is in control…no doubt about it.  But just because you are in control of something doesn’t mean that you caused something to happen.  For instance, a manager of the store is in control of the store, but if an associate steals that does not mean he caused that to happen.  Same goes for God.  We have this thing called…yep...free-will.  I have mine and you have yours; everybody else has theirs.  Think about it!  That’s a lot of free-will that’s floating around.

Does God intercede and stop bad things from happening…of course.  Why He does or does not is His business. My job is to remember what Jesus said…

“The thief’s purpose is to steal and kill and destroy.
My purpose is to give them a rich and satisfying life.”
John 10:10

Thank You for being good to me, God. Amidst all that is happening in the world, help me to see things through Your eyes and remember that You are good and You always will be. Amen.

Oven Baked Encrusted Tilapia

Last week, Crystal shared her heart and encouraged us to find ways to prepare A Simple Healthy Meal at Home for our families.  She posted a wonderful recipe for Oven-Baked Chicken in that blog.  (Click the link to see her recipe.)  And she inspired me with an idea for something similar—Oven Baked Encrusted Tilapia.

Now while we all might enjoy a fried piece of fish or chicken…it isn’t very good for us!  Browsing through a few recipes online, I found that baking the fish or chicken versus frying it on the stovetop (or in the deep fryer!) will save, on average, 9-11 grams of fat per serving.  So, the choice is pretty simple, I’m thinking!  And this fits in perfectly with our healthy but oh-so-yummy POV!  You also could substitute a different white fish…cod, orange roughy, or even flounder.  Just remember the thinner the fillet, the shorter the baking time!  The fillets I prepared were actually called ‘loins’ and were about 1+1/2 – 2 inches thick; they took the whole 30 minutes.

This recipe would work out just fine with traditional wheat flour but since we have made the choice to eat gluten-free, I prepared it with almond flour. (You also could use a lesser amount of coconut flour.)  Coating the fish with these non-grain flours also ups the protein, too!  Also both Crystal and I used cooking spray…I have been using this coconut oil spray for quite some time now. I love how well it works!

Oven Baked Encrusted Tilapia

ingredients:
1# tilapia fillets
1/2 cup almond flour
1/4 cup cornmeal
1/4 cup finely shredded cheese (Parmesan, Asiago)
1 teaspoon lemon pepper
1/2 teaspoon garlic salt
1 egg
1 tablespoon water
1 tablespoon dijon mustard
coconut oil cooking spray

directions:

  • preheat oven to 375
  • line a baking sheet w/parchment (not waxed) paper
  • in a medium-sized bowl, beat egg and water together, then stir in the mustard
  • on a large plate, mix together flour, cornmeal and seasonings
  • run each fillet individually through the egg wash and then lightly coat w/seasoned coating mixture; give a little shake and place on parchment paper-lined baking sheet
  • give each fillet a 2-3 second spray with cooking spray
  • bake for 15-30 minutes total (depending on the thickness of the fillets), flipping over halfway through and giving another quick mist with the cooking spray
  • bake ‘til lightly browned and easily flakes with a fork
  • sprinkle with a pinch of sea salt and a couple of turns of freshly ground pepper
  • serve with a lemon wedge
