Hot Cocoa Mix (and more!)

Oh, don’t you know it!  There’s all that AND the celebration of God’s love come to earth—Jesus’ birth!  Oh, yes, and baking and cooking and gift-making! Lots of joy and fun and happiness!
This week I am sharing a homemade Hot Cocoa mix with you. This would be great kept in your own pantry!  However, one of my favorite things to do with it is to package them up in cute little jars with handmade labels and gift them to loved ones. They pack up nicely, too, to be mailed.  If you really want to go over the top, google a recipe for ‘Chocolate Dipped Spoons’…easy-peasy!  Also here is a quick link.

Next week, I will share a recipe for a ‘Cream of Just-About-Anything’ Soup and Sauce Mix.  What makes me happiest with these mixes is that they are all gluten-free and all fall well within our healthy but oh-so-yummy point of view!  Try them!  Gift them!  Enjoy them!

Hot Cocoa Mix

Ingredients: 2013-12-02 14.16.18
6 tablespoons unsweetened cocoa powder
1/2 cup dehydrated nonfat powdered milk
1 teaspoon cornstarch
1/2 teaspoon salt
3/4 cup baking stevia OR 1+1/2 cup “measures like sugar” sweetener (I used Truvia) * of course you can choose to use plain old sugar
Add-ins:
small peppermint candies
mini chocolate chips
tiny marshmallows
Options:
Mocha: substitute 2 tablespoons of instant coffee crystals for a like amount of cocoa powder
Peppermint: include a small jar of peppermint extract (“add 1-3 drops to each prepared cup”)

Directions (for preparing mix):
Mix everything together in a medium mixing bowl until ingredients are well combined. Pour mixture into a closed container, such as a mason jar for a beautiful and festive gift! If you are ‘adding’ anything, just pour onto the top of the mix and cover.

Directions (print on a tag to attach):
To enjoy hot cocoa, mix 1 tablespoon dry mix with your choice of: 1 cup HOT almond milk, OR skim milk, OR water. Stir until hot cocoa mix is completely dissolved and well combined.  Add additional sweetener (if necessary).

How Suddenly a Baby Cried

A baby’s first cry gets the attention of everyone around, yes? At the very moment of birth, all in attendance pause to hear a baby’s first cry—expectant parents, other relatives and loved ones, the nurses, doctors, and other caregivers—and then sigh with joy, with relief and with thankfulness at that wonderful sound! When the baby Jesus was born, His cry, too, brought great joy to his parents, Joseph and Mary. Think of the setting:

And while they were there, the time came for her delivery,
And she gave birth to her Son, her Firstborn;
and she wrapped Him in swaddling clothes and laid Him in a manger,
because there was no room or place for them in the inn.
Luke 2:6 and 7

Joseph and Mary had traveled many, many miles to come to Bethlehem to register in the census. Upon their arrival, there was nowhere for them to stay but in a stable…and this is where Mary birthed her firstborn, Jesus, God’s Son. Not the best surroundings! So I would think baby Jesus’ first cry meant oh-so-very much to them!

But, remember, both Joseph and Mary were fully aware of just Who this tiny Baby was! Both had been told of the significance of this Baby’s life by angels. (Read the records here: Luke 1:26-38;  Matthew 1:18-25). They each had contemplated, wouldn’t you think, for the entire duration of Mary’s pregnancy the magnitude and the awesome, eternal implications of just Who their Son would be! Think for a moment…place yourself in their sandals…when the baby was birthed and took His first breath and released a cry, can you only imagine the praises that must have welled up out of their hearts? Can you imagine the look they must have exchanged as they realized that the promises that the angel had made to each of them came forth into fruition? That initial cry of baby Jesus truly changed the world! Perhaps Mary remembered the words she spoke when she was visiting her cousin Elizabeth:

Oh, how my soul praises the Lord.
How my spirit rejoices in God my Savior!
…because the Mighty One has done great things for me, and His name is holy.
His mercy is from generation to generation on those who fear Him.
Luke 1: 46-47 and 49-50

And so we do also exclaim and praise! Even now, don’t we love to sing these beautiful carols and anthems and songs that tell of Jesus’ coming and His birth. We are reminded of all that first little cry meant as it sounded out that the Savior was born! He had come…just as promised throughout the ages!

As the words of this beautiful song say,
“How suddenly a baby cried and all forever changed.
Through history soul by soul have come to find His healing grace.
He filled my troubled heart with peace, with hope of endless worth.
My voice will join the song of praise that tells Messiah’s birth.”

May your voice rise up in praise and thankfulness to your heavenly Father!  Because of His great love for you, He sent His Son to redeem and save you; to rescue you and make available to you a relationship with Him for all eternity.  Never—don’t ever—doubt His love!

For I am sure that neither death nor life, nor angels nor rulers, nor things present nor things to come, nor powers, nor height nor depth, nor anything else in all creation, will be able to separate us from the love of God in Christ Jesus our Lord.

His Love Endures Forever

Don’t you just love to sing this praise anthem?!!?  The words give our hearts such an awesome way to acknowledge God’s goodness and praise Him for His enduring love!

This praise-filled phrase—He is good; His love endures forever—is recorded in many places throughout the Old Testament.  One of the most outstanding records, in my opinion, is found in the 2nd Book of Chronicles, specifically chapters 5-7.

We see (2 Chronicles 5) King Solomon calling the elders of Israel, the leaders, the heads of the tribes (along with all the people of Israel) to accompany the Ark of the Covenant to its long-awaited proper home in the Temple. (It had been his father, David, to whom God has given the vision and provision for the building of the Temple, which was never accomplished in his lifetime.)  The priests brought the Ark to its proper, anointed place in the Holy of Holies.  Surrounding the altar were the Levites and the priests ready to praise in unison with all their instruments and their voices.

The trumpeters and singers joined together to praise and thank the LORD with one voice.
They raised their voices, accompanied by trumpets, cymbals, and musical instruments,
in praise to the LORD: For He is good; His faithful love endures forever.
The temple, the LORD’s temple, was filled with a cloud.
And because of the cloud, the priests were not able to continue ministering,
for the glory of the LORD filled God’s temple.
(Verses 13 and 14)

The record of the dedication of the Temple continues (chapters 6 and 7) as Solomon prays and blesses the people.

As soon as Solomon finished his prayer, fire came down from heaven
and consumed the burnt offering and the sacrifices,
and the glory of the LORD filled the temple.
2 Chronicles 7:1

The peoples response?

When all the Israelites saw the fire coming down
and the glory of the LORD above the temple,
they knelt on the pavement with their faces to the ground,
and they worshiped and gave thanks to the LORD, saying,
“He is good; His love endures forever.”
Verse 3

And throughout the continued sacrifices and the ceremony of dedicating the Temple, continual praise “His love endures forever” was offered to God by the priests and the people along with the sacrifices of animals.

And, as such, this <without the animal sacrifice!> should be our continual praise. We are oh-so-very blessed!  The provision and supply that our great God brings to our lives deserves our continual exclamation, “He is good! His love endures forever!”  Just as the psalmist communicates in every single verse of Psalm 136, our conversation and our communication  should always include this praise.

Give thanks to the Lord, for He is good, for His (steadfast) love endures forever.

As we thank God for His goodness our hearts should overflow with words of gratitude and praise confessing that truly, “His love endures forever!” … Perhaps in your celebration of Thanksgiving with your friends and loved ones, you could have a time of praise and worship and use these same words that David, and Solomon, and the Israelites used to declare God’s goodness.  Because no matter what the age, the situation, the circumstance, the season, the time, the day or the hour… ‘He is good! His love endures forever!’

Here are a few different ways this glorious praise is written in different translations:

  • His love endures forever (NIV)
  • His faithful love endures forever (NLT)
  • His lovingkindness is everlasting (NASB)
  • His mercy endureth for ever (KJV)
  • His steadfast love endures forever (ESV)
  • His love is eternal (HCSB)
  • His loyal love endures (NET)
  • His mercy and lovingkindness are everlasting (AMP)

Roasted Beet and Goat Cheese Salad

The countdown has begun!  The lists are made…the shopping for groceries is happening…maybe the forks and knives, plates and napkins have been counted out, too! Just a few days now ‘til we will celebrate Thanksgiving with our loved ones recognizing the goodness of our great God (and eating some yummy food, too)!

For the past few weeks, we have been sharing some of the dishes that we will be preparing to serve and share; did you take a peek at that scrump-diddly-umptious Mocha Brownie Torte that Dana gave us her recipe for?  Today I am sharing my recipe for an equally delicious dish that is in a totally different category: Roasted Beet and Goat Cheese Salad. This recipe keeps within the parameters of our healthy but oh-so-yummy point of view.  A very light vinaigrette is served on this salad.

I hope you each have a wonderful, thanks-filled, counting your blessings kind of Thanksgiving Day!  May we each always remember how very, very much we have to be thankful for and give thanks to the One Who so mercifully and abundantly and graciously provides for our every need!

Oh, that men would praise the Lord for His goodness and lovingkindness and His wonderful works to the children of men!
Let them sacrifice the sacrifices of thanksgiving and rehearse His deeds with shouts of joy and singing!

Roasted Beet and Goat Cheese Salad

Ingredients:

1/4 cup balsamic vinegar
1 tablespoon honey
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
3-4 medium beets, peeled and cut into bite-size pieces
6 cups fresh arugula (or your favorite lettuce blend)
1/2 cup pistachios
3 ounces soft fresh goat cheese, coarsely crumbled

Directions:
Line a baking sheet with foil. Preheat oven to 450.
Whisk the balsamic vinegar and honey together in a small bowl to blend.
Slowly whisk in the oil. Season the vinaigrette with salt and pepper.
In a different bowl, toss the beets with just enough of the vinaigrette to coat.
Place the beets on the foil-lined baking sheet and roast ‘til the beets are slightly caramelized, stirring once or twice, for about 30 minutes.  Set aside and cool.
Toss the arugula (and/or other lettuces) along with a small amount of the remaining vinaigrette in a large bowl ‘til lightly coated.
Season the salad, to taste, with additional salt and pepper. Place the dressed salad onto a large serving plate.
Arrange the beets around the salad.
Sprinkle with the nuts and small dollops of the goat cheese.
Serve the balance of the vinaigrette alongside in a small pitcher.

Bless the Lord, o my Soul

Bless the Lord, O my soul, and all that is within me bless his holy name.
Bless the Lord, O my soul, and forget not all his benefits.

Now that is what I want to do! How about you? Of course…it comes so easily to the heart of one of God’s children! Oh, how we love to praise and declare His goodness!

I will [earnestly] recall the deeds of the Lord;
yes, I will [earnestly] remember the wonders of old.
I will meditate also upon all Your works and consider all Your [mighty] deeds.
Psalms 77:11 and 12

Haven’t we all had times when you have so palpably experienced the goodness and faithfulness of God so intensely that you want to leap in the air and shout and say, “How could I ever doubt You, my God, after this? How could I ever again despair of your help?” And we go along remembering His goodness and blessing…and then…some short time later…we falter. We find ourselves doing just that—being discouraged, and doubting, forgetting our confidence in the goodness and greatness of God. Why does this happen? Perhaps because we so easily forget the evidences of God’s goodness which we ourselves have experienced; not to mention the vast number of records in Scriptures which tell us of God’s faithfulness and His goodness.

What are some of His ‘mighty deeds’…the ‘wonders of old’ spoken of in Psalm 77? Think about it; I am sure you won’t need to think but a moment to recall God’s awesome works! Here’s a few that immediately came to mind—and these are all from the very first book in the Bible:

  • God spoke into existence His Creation (Genesis 1:3-31)
  • God gave Noah His plan for saving a remnant of mankind, along with the animals and the birds (Genesis 6:13-21)
  • God protected mankind from making too much of themselves (Genesis 11:3-9)
  • God promised (Genesis 18:10-15) AND then made a way for a 100 year old man and a 90 year old woman to conceive a child (Genesis 21:1-7)
  • God provided in an incredible way as Abraham intended to sacrifice to God his precious boy…obeying to the uttermost (Genesis 22:1-14)

That God is GREAT in every imaginable way that greatness could possibly be described should be obvious to everyone. Paul reminds us,

Ever since the creation of the world, His invisible nature, namely, His eternal power and deity, has been clearly perceived in the things that have been made. So men are without excuse for, although they knew God, they did not glorify Him as God or give him thanks.
Romans 1:20 and 21

We ARE without excuse if we are not continually voicing our gratitude and our thanks! Our great God, the Great I AM, has done many and mighty works throughout time! And His lovingkindness and goodness continue…His faithfulness to each of us is incredible! We each have numerous stories to share praising God for His incredible blessings in our lives. Every day in a variety of ways we should be expressing our thanks.

I will praise the name of God with a song. I will magnify him with thanksgiving.
Psalm 69:30

Through Him then, let us continually offer up a sacrifice of praise to God,
that is, the fruit of lips that give thanks to His name.
Hebrews 13:15

Offer to God a sacrifice of thanksgiving and pay your vows to the Most High;
Call upon Me in the day of trouble; I shall rescue you, and you will honor Me.
He who offers a sacrifice of thanksgiving honors Me;
And to him who orders his way aright I shall show the salvation of God.
Psalms 50:14 and 15, 23

16 Day Love Challenge: Chapter 16 – Love Never Fails

Love is patient, love is kind.
It does not envy, it does not boast; it is not proud.
It does not dishonor others, it is not self-seeking,
It is not easily angered, it keeps no record of wrongs.
Love does not delight in evil but rejoices with the Truth.
It always protects, always trusts, always hopes, always perseveres.
Love never fails.
1 Corinthians 13:4-8

Quite a list of accomplishments, wouldn’t you say?  Perhaps you might say to yourself, ‘Do you really think anyone can do that—love that way?’  Well, I DO know someONE Who can!  (You do, too!)  Our Father, Almighty God, the Great I AM…He can! And He does!

Here are a few verses just to remind us of God’s never failing love.

But I have trusted in your steadfast love; my heart shall rejoice in your salvation.
I will sing to the Lord, because he has dealt bountifully with me.
Psalms 13:5 and 6

I have loved you with an everlasting love….
Jeremiah 31:3

Psalm 136 tells us “Give thanks to the LORD, for He is good, for His love endures forever.” And this truth is reiterated in every single verse throughout this psalm…26 times!

As our study of the 16 Day Love Challenge: Matching our Words and Actions with 1 Corinthians 13:4-8 draws to a close, we look at God’s final statement in this passage about LOVE.

Love never fails.
1 Corinthians 13:8

It doesn’t say ‘almost never’ or ‘almost all the time’ or ‘99 out of 100 times’, does it?  No, ma’am…it says ‘Love never fails.’

never (adverb)

1. at no time in the past or future; on no occasion; not ever.
synonyms: not ever, at no time, not at any time, not once, ne’er.

2. not at all
synonyms: certainly not, not for a moment, under no circumstances, on no account

(and here are a few informal synonyms: no way, not on your life, not in a million years, when pigs fly, when hell freezes over.)

Can I tell you something?  I do know someone else, besides our great God who can love that way!  Really!  It is y.o.u.  Yes, my friend, you CAN love others in that same way!  Hey, now, no scoffing, no pshawing, no doubting—the Scriptures clearly communicate this!

…Because God’s love has been poured into our hearts
through the Holy Spirit who has been given to us.
Romans 5:5

A new commandment I give to you, that you love one another,
even as I have loved you, that you also love one another. By this all men will know that you are My disciples, if You have love for one another.
John 13:34-35

This is my commandment: that you love one another as I have loved you.
John 15:12

Beloved, let us love one another, for love is from God
and whoever loves has been born of God and knows God.
Anyone who does not love does not know God,
because God is love.
Beloved, if God so loved us, we also ought to love one another.
1 John 4:7-8, 11

God is love. Whoever lives in love lives in God and God in them.

This is how love is perfected with us
so that we will have confidence on the day of Judgment;
because as He is, so are we in this world.
Verses 16 and 17

And He has given us this command:
anyone who loves God must also love their brother or sister.
Verse 21

God’s Word is Truth!  And so, we are what the Word of God says that we are!  We ARE able to love as God loves.  As we were reminded the other day by Cherie, truth is not determined by our experience but simply by the Truth of the Scriptures.

Try this! Read through these verses again (out loud, please!), inserting your name along with ‘love.’ Like this…

Let’s Pray:
Lord, we are so thankful that it was Your plan for us to study together and to work the 16 Day Love Challenge together!!!  Our lives are forever changed.  We do so need Your help through the Holy Spirit that You have placed within us, Lord!  You know (we do, too) that there will be times we are tempted to think that we cannot love like this.  Help us to recognize that lie and to replace it with the Truth that we can love because You have placed Your love within us! Today may we reach out to everyone around us with Your love that is in our hearts!  Thank You, Lord!  It is only because of Your great grace and mercy!  We pray these things in Jesus’ name.  Amen.

16 Day Love Challenge: Chapter 13 – Love Always Trusts

I am trusting (a tiny pun!) that it is not just my heart that is stirred up thinking about this trust issue…yes?  But here is where I stand and I am not moving:  God is absolutely worthy of my completely and totally trusting Him with my life.  In her sharing of today’s chapter from The 16 Day Love Challenge, Rebecca makes a definitive statement that could not be any more true: “…God is perfectly trustworthy and He will never let you down!”  I love that!

Throughout the Scriptures, we find promise after promise as well as testimony upon testimony directing us to see His trustworthiness and faithfulness.  God’s people throughout time, have shown incredible faith and trust in their God.  The psalmist gives praise time and time again to the One to Whom he trusted with his life.  Psalm 40 contains some of my most favorite words of confession acknowledging my trust in our great God.

I waited patiently and expectantly for the Lord; and He inclined to me and heard my cry.
He drew me up out of a horrible pit, out of the miry clay,
and set my feet upon a rock, steadying my steps and establishing my goings.
And He has put a new song in my mouth, a song of praise to our God.
Many shall see and fear and put their trust and confident reliance in the Lord.
Blessed is the <wo>man who makes the Lord <her> refuge and trust….
Psalms 40:1-4

As we read the Scriptures, they relate to us the confessions (both the praises and the struggles) of others who have gone before us who have made the choice to trust our God.

You will guard him and keep him in perfect and constant peace
whose mind [both its inclination and its character] is stayed on You,
because he commits himself to You, leans on You, and hopes confidently in You.
So trust in the Lord
(commit yourself to Him, lean on Him, hope confidently in Him) forever;
for the Lord God is an everlasting Rock [the Rock of Ages].
Isaiah 26:3 and 4 AMP

Whom have I in heaven but You? And I have no delight or desire on earth besides You.
My flesh and my heart may fail, but God is the Rock
and firm Strength of my heart and my Portion forever.
But it is good for me to draw near to God; I have put my trust in the Lord God
and made Him my refuge, that I may tell of all Your works.
Psalms 73:25-26, 28

Answer me quickly, Lord; my spirit fails.
Do not hide your face from me or I will be like those who go down to the pit.

Trust in the Lord with all your heart and lean not on your own understanding;
in all your ways submit to Him, and He will make your paths straight.

Listen to this, if you would, it is a beautiful song of trust sung by Mrs. Twila Paris.

 I sing that song, often, when I am tempted to waffle in my trust in my God.  It encourages me and spurs me on to stand on His promises and choose to continue to trust.

As Holy Spirit-led women, we strongly desire to obey God and put our hope/trust in Him.   We follow the example given to us in 1 Peter 3 of women who trust God:

Instead, it should consist of what is inside the heart
with the imperishable quality of a gentle and quiet spirit,
which is very valuable in God’s eyes.
For in the past, the holy women who put their hope in God
also beautified themselves in this way, submitting to their own husbands,
just as Sarah obeyed Abraham, calling him lord.
You have become her children when you do what is good
and are not frightened by anything alarming.
verses 4-6

In closing, here’s something to ask ourselves…”When others think of me, am I a woman whose life reflects a heart that trusts God? Is there an outer beauty that is the result of a submitted, grateful, yielded, trusting spirit what shows on my face? Or is it the ‘worry lines’ and chapped, bitten lips or nails that show the lack of resting/trusting in my God?”  Maybe you have an older woman in your life whose trust in God is ‘written all over her face.’  I would love it if you would share your thoughts….

Dear Lord, You are…You ARE…YOU ARE trustworthy!  Please help us, Lord, to ‘trust in the Lord with all your heart…and in all your ways acknowledge Him, and He will make your paths straight.”  We want to be known as women whose trust is in the Almighty God…not to bring attention to ourselves but to bring honor, glory, majesty to You!  May You be pleased, Father, by our sacrifice and our obedience—it is You and You alone Whom we trust with all that we are.  We will trust You, Lord…You never change!  Praise You, Lord!

Cornbread Stuffing with Apples, Sausage, and Cranberries

So…how are your Thanksgiving plans progressing? Do you have your menu for the big feast set yet? (I don’t…still trying out a few recipes.) Here on At Home w/ GCH, we have been featuring a few recipes that would make good candidates to serve as side dishes for your Thanksgiving meal.

Today’s recipe is for Cornbread Stuffing with Sausage, Apples and Cranberries. OK, here’s the big question: do you call yours ‘stuffing’ or ‘dressing?’ Oh, and another question: to cook inside the bird or as a casserole? I’d love to hear your replies in the comments below!

The recipe I prepared included gluten-free cornbread but can be made in the same manner with traditional cornbread which is made with wheat flour. Also, this could be made without the sausage 🙁 to make a vegetarian side dish (as a suggestion, increase the liquids slightly and add some melted butter, too). Enjoy!

Cornbread Stuffing with Sausage, Apples and Cranberries

Ingredients:
1 pound Italian sausage, casings removed 2013-11-17 18.17.16
2 tablespoons butter
1 medium onions, chopped
2 stalks celery, chopped
3 cups sliced leeks, white and pale green parts only, cleaned well (about 2 large leeks)
Kosher salt and freshly ground black pepper
2-3 apples, cored and chopped coarsely
2 teaspoons poultry seasoning *
1/2 cup apple cider
1 cup dried cranberries, soaked in boiling water for 15 minutes
2 cups turkey or chicken stock (or broth)
2 eggs, beaten
Cornbread croutons (see below)

Directions:

  • Preheat the oven to 375.
  • A day or so beforehand, prepare a 9×13 pan of cornbread. After cooling in pan, cut into smallish cubes (croutons) and set aside to dry on a large baking sheet. (I left mine out overnight.)  About an hour or so prior to preparing the stuffing, place cornbread croutons into a 350 oven and bake, to dry even further, for 20-30 minutes. (Alternately, you could purchase cubed and dried cornbread stuffing cubes.)
  • Saute the sausage in a large saute pan over medium-high heat until cooked through, breaking up with a spoon, about 10-15 minutes. Using a slotted spoon to drain, remove the cooked sausage to a very large bowl.
  • Meantime, beat the eggs lightly and then mix with the cider and 1 cup of stock or broth.
  • Add the butter to the sausage drippings, and melt over medium-high heat. Add the leeks and onions and celery to the skillet and saute until the leeks are just getting soft, about 5-6 minutes.
  • Add the chopped apples and continue to cook for 5 more minutes.
  • Mix in the soaked cranberries (with their liquid) and the poultry seasoning.
  • Add this mixture to the sausage in the bowl. Then stir in the cornbread croutons.
  • Next add the additional 1 cup of stock, 1/4 cup at a time, until the stuffing is very moist. Be careful not to overdo it; it should not be mushy. Season with salt and pepper as you are adding the stock.
  • Bake in a glass 14-inch oval or 9×13  casserole dish, uncovered, in the oven for 30 minutes ‘til the top is crispy and the middle is piping hot. Remove and serve immediately (or cover loosely with aluminum foil).

To make your own Homemade Poultry Seasoning, combine:2013-11-17 18.11.27

1 tablespoon ground sage
1/2 tablespoon ground thyme
1/2 tablespoon dried thyme leaves
1 tablespoon dried marjoram
1/2 tablespoon ground rosemary
1 tablespoon freshly ground black pepper

The Five B’s: Butternut, Brussels Sprouts, Baby Bellas, Bacon, and Balsamic

Raise your hand, please, if you—like me—are planning out and testing recipes to serve at your Thanksgiving Day meal!  Over the next few weeks, both here on the blog and also over in our FaceBook GCH-Fellowship page, we will be chatting about recipes for the big feast.  Last Friday, Dana shared that “…it is always good to have a couple of side dish recipes in mind.”  She gave us her recipe for a delicious-looking side dish salad here on the At Home with GCH blog.

So today I am giving you a recipe entitled The Five B’s: bacon (yum!), butternut (oh, yum!), brussels sprouts (yumm-o!), baby bellas (yum-yum!) and balsamic (yummy!)….silly, I know.  But seriously, consider trying this as a side dish for your Thanksgiving feast!  Easy to prepare (the veggies can be prepped the day before).  And the prepared dish can be popped into the oven the moment you take the bird out!  It will be done and piping hot when your bird has finished resting and been carved.  This dish definitely fits into our healthy but oh-so-yummy point of view!  Enjoy!

Five B’s: Butternut, Brussels Sprouts, Baby Bellas, Bacon and Balsamic

Ingredients:

3-4 tablespoons olive oil, divided
1/2# thickly sliced bacon, chopped
1+1/2# Brussels sprouts, trimmed and halved
1 medium-large butternut squash, cleaned and cubed
8 ounce container Baby Bellas, cleaned and quartered
3 tablespoons balsamic vinegar
2 tablespoons maple syrup (the REAL stuff, please!)
1+1/2 teaspoon coarse kosher salt
1 teaspoon fresh ground pepper
1/2 teaspoon ground allspice
pinch fresh grated nutmeg

Preparation:

  • Preheat oven to 400.
  • In a medium-sized saute pan, heat 1 tablespoon of oil over medium heat. Add the chopped bacon and cook 8-10 minutes ‘til crispy. Lay out on a paper towel to drain; set aside.
  • Lightly oil a large sheet pan (or two!) with olive oil.
  • In a very large bowl, or stockpot, pour in the prepared veggies…Brussels sprouts, butternut squash, Baby Bella mushrooms…along with 1-2 tablespoons olive oil; stir well to evenly disperse the oil and season well with salt & pepper.
  • In a small bowl, whisk together balsamic vinegar, additional 1 tablespoon olive oil, and maple syrup. Drizzle this mixture over the vegetables and toss so that they are evenly coated.
  • Spread out vegetables in a single layer (very important!) in the pan(s); sprinkle with salt, pepper, allspice and nutmeg.
  • Roast in the oven for about 20 minutes; carefully remove pan(s) stir and flip over the veggies so that the other side can caramelize. Place back in over and continue to cook for an additional 10-15 minutes or ‘til the veggies are slightly brown and caramelized.
  • Remove from oven and, just before serving, top with crumbled bacon

16 Day Love Challenge: Chapter 6 – Love Is Not Rude

“Oh, dear Lord, please forgive me!” were my words when I looked at that list of adjectives that Rebecca used to define the word, rude. “Lord, I am so deeply convicted in my heart! Not only have at least one of those words been directed towards me but I clearly recognize more than one that can describe my behavior at times!  Please forgive me, Lord!  I so want to be loving…and that my love can speak of just Who You are!  And, Lord, I realize that sometimes I think these things in my heart—not necessarily out loud.  Please help me to not be a hypocrite.   Change my heart, please God…please help me to change my heart!  I need You…in Jesus’ name.  Amen.”

Love is not…rude
1 Corinthians 13:5

Well now, THAT had to happen first.  How about you?  Might I ask if any of you had a similar response of crying out to God, seeking His forgiveness, His mercy, His help as you recognized the sin of being rude?  Oh, how easily it happens…but that is not an excuse. We have the ability to love as Jesus loved.  Our Lord made it clear to His disciples (and us who followed!) that love was the standard.

A new commandment I give to you, that you love one another:
just as I have loved you, you also are to love one another.
By this all people will know that you are My disciples,
if you have love for one another.
John 13:34 and 35 ESV

And, Paul and John (both of whom clearly lived in submission to Jesus), themselves wrote about the need for Christians to love.

Owe no one anything, except to love each other
for the one who loves another has fulfilled the law.
Romans 13:8

Little children, let us not love <merely> in word or talk but in deed and in truth.
By this we shall know that we are of the Truth and reassure our heart before Him;
1 John 3:18 and 19 <addition mine>

My granddaughter, Kaylie Joy, and I were talking about rudeness and what it means. After talking together and my relating to her a few Scriptures, she said to me, “TaTa, then being rude means not caring about somebody else’s feelings…and being mean, too!” There it is!  Rudeness thinks about me…while love thinks about others.  If we love others the way that Jesus loved while He was here on this earth then we will not be thinking about ourselves.  We will not be impatient, or unkind, or envious, or boastful, or proud—all the things we talked about last week.

I encourage you to take Rebecca’s challenge to heart today…perhaps right now. We have a loving heavenly Father Who never withholds His forgiveness when we ask. He will guide you and help you, giving you wisdom and courage to truly be loving and seek the forgiveness of others you may have sinned against by being rude. (And, if I can be of any help to you…perhaps pray with you as you handle this matter…please message me; I would love to walk through this with you!) <3

Lord, we thank You for the blessing of Cherie and Rebecca, and their obedience to the Holy Spirit in the writing of this beautiful book.  Thank You for working in them to hold a standard up to us that cannot be denied—all that LOVE truly is (and is not)!  We are so thankful for their willingness to write and say the hard things that would confront and challenge Your daughters who would read this book.  Bless them for their obedience, Lord!
And, Lord Jesus, please continue to work a work in our hearts to rise up to this higher standard of LOVE that You set for Your followers.  Father, we thank You for Your forgiveness where we have sinned; we thank You for Your help in changing our hearts. You are so good to us…we love You!  In Jesus’ name, we pray.  Amen.
