Homemade Chicken Meatballs

Y’know those fully-cooked ground chicken sausages and meatballs that you can find in almost every grocery store?  There are any number of brands that now make them…plus they come in quite a variety of flavor variations.  You can find breakfast sausages, dinner sausages, mini-sausages, and meatballs.  I have been a big fan of these for quite some time now.  Of course, there is ‘variety’ in quality amongst the different brands, too. You probably wouldn’t have to search too hard to find organic chicken sausages and meatballs.  All very helpful towards a healthy eating lifestyle! And they are so handy for those nights when your meal plan falls apart (or you forgot to take something out of the freezer)! These even defrost right in their package in a bowl of cold water for 10-15 minutes!

But recently I had the crazy thought, ‘Why can’t I do that? I should be able to make my own, right?’ And then I found it that wasn’t really so crazy!  Easy to find the ingredients…easy to throw together…easy to prepare…easy to cook!  And here’s the best part—making them from scratch in your own kitchen, the variety’s are almost endless.  But I started fairly simple…check out the recipe!  The variety I made this time lent itself well to serving with some Tzatziki (zah-d/zee-kee) Sauce (Greek yogurt cucumber sauce) alongside some spaghetti squash and steamed broccoli…yum!  I would love to hear about your version, if you decide to make them.  Enjoy!

Homemade Chicken Meatballs—Greek Style

ingredients:
meatballs:
2 (10 ounce) boxes frozen chopped spinach
1 tablespoon +/- olive oil
1 small onion, finely chopped
2 heaping tablespoons chopped garlic
1 egg, lightly beaten
(2) 4 ounce pkg. crumbled feta cheese (set aside 2 ounces or so)
2# ground chicken (or ½ chicken, ½ turkey)
2 tablespoons lemon-pepper blend
1/4 cup almond flour

tzatziki sauce:
1+1/2 cups Greek-style plain yogurt
1/2-1 teaspoon garlic, finely minced
1/3 seedless cucumber, peeled and chopped small
3 tablespoons fresh dill (or 2 teaspoons dried)
1/2 lemon, juiced
sea salt, freshly ground pepper (to taste)

directions:

  • mix up the tzatziki sauce and refrigerate ’til ready to serve
  • preheat oven to 400; line a baking sheet w/parchment paper
  • cook frozen spinach (stovetop or microwave) just ‘til heated through; drain excess liquid, dump out onto a clean dishtowel and squeeze dry; set aside
  • preheat the oven to 400 degrees F
  • in a large bowl combine onion and garlic; add egg
  • add the spinach, pulling it apart to separate it
  • add feta, chicken, and seasoning to the bowl
  • dust the almond flour over top
  • start combining and add a 1 tablespoon of extra-virgin olive oil
  • lightly mix everything ‘til well-combined
  • using a 1+1/2″ cookie scoop, or something similar, form 36-40 meatballs; they do not have to be perfectly round…I left mine fairly rustic
  • place the meatballs on the lined baking sheet and bake for 10 minutes and then turn them over
  • cook for additional 8-10 minutes (depending on the size of them) ‘til they are beginning to brown
  • I used my instant-read meat thermometer (165 degrees for poultry); you can also test them by poking one and making sure the juices run clear
  • serve with tzatziki sauce and a sprinkle of the leftover feta cheese

I know I often mention that I use ‘lemon-pepper seasoning’ in the place of salt&pepper.  Here is a link to what I use.

I AM the True Vine, and my Father is the gardener.
He cuts off every branch in Me that bears no fruit,
while every branch that does bear fruit He prunes so that it will be even more fruitful.

Just reading these verses makes me think of everyone who is blessed with a green thumb. (I know I have not been blessed with one.)  I can’t even get a potted plant to survive past a week.  It is usually dead in just a day or two.  I definitely do not have a green thumb.

People who love to grow gardens know exactly what it takes to keep them growing.  They tend to it.  They water it.  They weed out the parts that are not growing.  They prune and trim it to keep their gardens growing beautifully among the rest of God’s beautiful Creation.

Just as a gardener works to keep their garden beautiful, so does God in His relationship with us.  He points out the things that we need to cut off and get rid of in order to strengthen our relationship with Him.  The stronger we are in God the more fruitful we are in His Spirit.  We are the branches of God’s beautiful Creation—His own garden. God makes us (the branches on His vine) stronger through our blessings and the hardships He guides us through.

Dear Heavenly Father, we are part of Your spiritual garden.  We are the branches on Your vine that produce the fruit of Your Spirit.  Without remaining in You, we would snap off the vine and be forever lost.  In Jesus’ name, Amen.

One morning I was feeling a bit sad…life wasn’t going as I had envisioned.  And I was wondering why God wasn’t answering my requests and my desperate pleas.  Then, in the mail, I received a beautiful card with some much-needed reminders.  In it was this Scripture:

For the Lord your God is living among you.
He is a Mighty Savior.
He will take delight in you with gladness.
With His love, He will calm all your fears.
He will rejoice over you with joyful songs.
Zephaniah 3:17 NLT

As I walked up the stairs to enjoy my quiet time, I was thinking about that verse, and this song sprang into my mind.  Christ lives!  He lives in me.  He walks with me and talks with me.  He is my Hope and my Help.  No one loves me like He does.  Whenever I need Him, He is always near.  Christ is my Savior and He takes great delight in me.  He actually rejoices over me with singing!  (If that doesn’t lift your mood, honey, you DO have problems!)  In a matter of moments my whole perspective had shifted.

All of this reminded me of another card I had received earlier in the week that contained this Scripture:

Fear not [there is nothing to fear], for I am with you;
do not look around you in terror and be dismayed, for I am your God.
I will strengthen…yes, I will help you;
yes, I will hold you up and retain you with My [victorious] right hand.
Isaiah 41:10 AMP

Another card I received reminded me that God is with me ALL the time and that ‘God is my Strength and Power, and He makes my way perfect’ (2 Samuel 22:33 NKJV).  God reminded me through these ladies and these cards that I have no reason to be dismayed or discouraged.  I have nothing to fear.  Christ lives and He holds me in His VICTORIOUS right hand.  (I just love that phrase!)  Christ alone is my Strength and my Power.  He loves me and ‘makes my way perfect.’  Who am I to question His plan?

Lord Jesus, thank You for the much needed reminder that You are alive and live within my heart.  Thank You for walking with me daily, talking with me, and calming my fears.  I am so very blessed that You take great delight in me and rejoice over me with joyful songs.  Thank You for the lesson I learned through all of this and giving me the words to share it with others.  In Your holy name, Amen – So Be It!

What if the only thing we really chased after was God’s own heart?  And what if the things of this world really didn’t matter and we consciously thought of how fleeting they truly are…because they really are.  What if the spiritual gifts were the only gifts that we asked for.  What a beautiful, loving, peaceful world we would live in!  But it seems we are really always looking for and hoping for something else to fill the void. We want what our friend has…or what we used to have…or what we have always dreamed of.  That void can only really be satisfied with God, your Father and your Creator.

And when we really have tried it all and nothing works—not money or alcohol or a woman or a man—we run as fast as we can to the God Whose arms are waiting and Whose love can really heal all wounds and fulfill all our needs.  Even though there may be shame in how far you may have gone, your Savior took your guilt away.  There is enough grace,  too, for every sin you ever have or will commit.  There’s redemption, too, in His name.

Are you down today?  Dear soul, I ask you to lift up your face and look up. There is hope and healing today.  And though it has been dark, His light shines bright.  No, we cannot go back and change the past…but we can cling to the One that holds our future and it is full of Jesus!  And, remember, this is but a blink.  Earth is so temporary as we are created for so much more than this…Heaven waits for us.

But, as it is written,
“What no eye has seen, nor ear heard,
nor the heart of man imagined,
what God has prepared for those who love Him…”
1 Corinthians 2:9

Pray with me today…

Dear Lord, You are so amazing and awesome.  Your Name is above all other names and You are worthy of all praise and honor and glory. Lord, may we realize that all this chasing and looking for things that we think will make us happy or fill our cup is only a temporary fix.  We will never be fully satisfied until we empty everything and fill the void with only You.  And though You have made this world full of beauty and wonder, it is not our permanent home…Heaven is ours and we will live with You!  What a day of rejoicing that will be!  But until then, keep our eyes on You and our hearts so full of You that love just spills over.  In Jesus’ name, amen.

I AM the Good Shepherd.  The Good Shepherd lays down His life for the sheep.
The hired hand is not the shepherd and does not own the sheep.
So when he sees the wolf coming, he abandons the sheep and runs away.
Then the wolf attacks the flock and scatters it.
The man runs away because he is a hired hand and cares nothing for the sheep.
I AM the Good Shepherd; I know My sheep and My sheep know Me—

just as the Father knows Me and I know the Father—
and I lay down my life for the sheep.
I have other sheep that are not of this sheep pen.
I must bring them also.
They too will listen to My voice and there shall be one flock and one Shepherd.
The reason My Father loves Me
is that I lay down My life—only to take it up again.
No one takes it from Me, but I lay it down of My own accord.
I have authority to lay it down and authority to take it up again.
This command I received from My Father.
John 10:11-18

This week, here on the Seeking Him devotional blog, our sisters have shared some insight on these words spoken by our Lord.  What love and sacrifice Jesus has proven as He laid down His life for us, His people…the sheep of His flock.  Here are a few highlights from the devotionals that Tina, Laura, Cynda, Ann, and Ahmee wrote to encourage us.

In Surrender, Cynda brought our attention to Jesus’ example of choice.

 2 Timothy 1:9 (NIV) tells us, “He has saved us and called us to a holy life—not because of anything we have done but because of His own purpose and grace.”

“Christ led by example.  He became our example.  He is our Good Shepherd—the one who cares for us and leads us to safety.  He has called us.  Yet the choice is ours.  No one else will make the decision for us.  No one is going to snatch our struggles from us.  We must willingly…voluntarily…surrender our will to His and allow Him to lead us.

For me, the surrender is daily; sometimes minute-by-minute.  But when I do and I trust my Good Shepherd following His lead, well, therein lies the victory!”

In The Good Shepherd is Selfless, Tina shared the record of Jacob and his tireless efforts as the shepherd, as well as God’s love.

“If God cares enough for the sheep to have those kind of shepherds like Jacob, how much more will He care for us…?  God’s love is so immense.  It is so full of goodness, and will help us overcome our feelings of inadequacy. As long as we lay our feelings down at His feet, we will be able to overcome them.  God loves us so much.  The fact that He sent His Son to die on the Cross is evidence of His great love.”

In Dedicated to You, Ahmee reminded us of how much the Lord loves us and is always there to be our Good Shepherd by leading and guiding and watching over us.  She also asked an important question.

“God cares for us. He sent us Jesus. Jesus cares for us, and because He does, He has chosen to be our everything.

  • Are you hungry…physically or spiritually? He will lead you to the food you need.
  • Are you tired? He will give you a safe place to rest.
  • Are you lost? He will guide you.
  • Are you scared? He will shelter you.

He is our EVERYthing. There is nothing in this world that you can experience that He Himself cannot help you with. The real question is…

Will you let Him be your Good Shepherd?”

In The Good Shepherd Cares for His Sheep, Ann also encouraged us to follow Jesus’ example and to be shepherds. 

“Christ was mentioned as Good Shepherd in John 10:11-14; Great Shepherd in Hebrews 13:20; and the Chief Shepherd in 1 Peter 5:4.

We also, as His followers and believers, are shepherds.  We win souls, we are shepherds of His sheep also.  Others (pastors/evangelists) also shepherd the flock.  Do we sacrifice ourselves for our sheep or we leave them to die of thirst?  We are to take our sheep to the river banks where they can get water (the Word of God).  As true believers we are to care for the sheep, and are to think about the sheep first and then ourselves.

Let us truly take care of the sheep—pray with them, feed them with the Word every day, and follow up with them—so that they should not be in any want.”

In The True Shepherd, Laura made the comparison between how Jesus has shepherded our lives, and how parents are to shepherd their children.

“When I see that sheep, I think about how my children are my sheep. They are mine to lead and take care of until they are grown.  It is my job to help them learn right from wrong.  It is my job to help start their spiritual foundation.  I am supposed to nurture them and help them.  They listen to my voice and look to me for security and love.

Just as my children are my sheep, we are the sheep of God.  We are His children.  When we listen to His voice and accept Him as our Savior, we become part of His flock.  Jesus laid down His life so that we may be reconciled to God and return from sin.  He went to the Cross to bring us home.  He is the Good Shepherd.”

We have been set apart as holy because Jesus Christ did
what God wanted Him to do by sacrificing His body once and for all…this chief Priest (Jesus) made one sacrifice for sins,

What does it mean to be set apart? I looked at dictionary.com and found these definitions:

  • Set” is to place in some relation to something or someone
  • To be “set apart” is defined: to reserve for a particular purpose, or to cause to be noticed

As Christians, we are set into relationship with Jesus Christ through His sacrifice. He has called us to be holy as He is holy (Leviticus 11:44, 1 Peter 1:15-16).

For God has not called us for impurity, but in holiness.
1 Thessalonians 4:7 ESV

That is, to be dedicated to God and not to the things of this world.  If we are “set apart for the One we love,” we are reserved for a particular purpose.  That purpose is to worship and serve Him.

And so, dear brothers and sisters,
I plead with you to give your bodies to God
because of all He has done for you.
Let them be a living and holy sacrifice—the kind He will find acceptable.
This is truly the way to worship Him.
Don’t copy the behavior and customs of this world,
but let God transform you into a new person by changing the way you think.
Then you will learn to know God’s will for you,
which is good and pleasing and perfect.
Romans 12:1-2

When we are set apart for God, we will be noticed because our lifestyle looks different.  We think differently, talk differently, and act differently than those around us who don’t have that relationship.  We make God our first love, focusing on our relationship with Him, allowing Him to refine us, and in our lives making Him known to others.

As I listen to this song, I’m singing and praying these words.  As we are coming into the Easter season, I think many of us are searching our own hearts.  God is holy.  We, as His children, are set apart for His glory.  But we are human, and we fail in our own efforts to be worthy of that place in His family.  Sometimes in the crazy busyness of this life we forget our first love (much as the church of Ephesus did, read Revelation 2:1-7.)  The exciting thing about being one of God’s children, is that when we repent, and come back to our first love, God is waiting “to be found” so He can refine our hearts.

If we confess our sins, He is faithful and just to forgive us our sins
and to cleanse us from all unrighteousness.
1 John 1:9

You can be sure of this: The LORD set apart the godly for Himself.
The LORD will answer when I call to Him.
Psalm 4:3

For you are a people holy to the Lord your God. The Lord your God has chosen you to be a people for His treasured possession, out of all the peoples who are on the face of the earth.
It was not because you were more in number than any other people that the Lord set His love on you and chose you, for you were the fewest of all peoples,

Deuteronomy 7:6-9

These verses thrill me because we are a part of “…to a thousand generations.”  God loves us so much that through the ultimate sacrifice of His Son, Jesus, He set us apart to be His holy people.  What amazing grace!  Now it is our turn to lay down everything for Him alone.  It’s time to allow His Holy Spirit to refine our hearts, and to be set apart for God’s glory.  It’s time to come back to our first love, and give everything to Him, for He is worthy.

Dear God, thank You for Your great love and sacrifice for us, Your children.  As we worship with this song and Your Word, we rededicate our lives to be holy, set apart for You.  Through Your Holy Spirit, please help us to set aside the things of this world, and allow You to refine us so that we may be witnesses for the sake of Your glory.  In Jesus’ Precious Name, Amen.

You read that correctly:  B.O.M.B.  This stuff will blow you away!  Bacon Onion Maple Bourbon Jam is an out of this world condiment you will want to smear on everything!

This is easy and amazing.  I ate some of this bacon jam on my baked salmon.  Next I’m going to try it on a cracker, maybe with a little goat cheese, or as part of an olive and cheese tray.  And I may just go off the rails and slather it on bread with cheddar and sliced apple and make the best grilled cheese sandwich I’ve ever had!  This recipe yields a cup and a half of jam.  Let’s see how long it lasts!

Bacon B.O.M.B. Jam

Ingredients

  • 3/4 pound bacon (I used 7 slices), diced
  • 2 large onions (try sweet onions, if you have them), sliced
  • 1/4 cup maple syrup
  • 1 tablespoon bourbon
  • 1/4 cup coffee (or use water if you like)

Directions:

  1. In a heavy pot with a lid, cook the bacon over medium heat.  You want all the fat to render, but you don’t want the bacon to get really crisp.  Remove the bacon from the pan, and pour out all but one tablespoon of bacon fat.  (I keep mine in a jar in the refrigerator, and use it to pan fry.)
  2. Add the sliced onions to the bacon fat in the pan.  Cover and cook on medium low for 15 minutes.  Stir, making sure nothing is burning, and cook another 10 minutes.
  3. Add the bacon, maple syrup, bourbon, and coffee; stir, making sure to scrape the bottom of the pan (use a wooden spoon).  Cover with the lid, cook another 10 minutes.
  4. Remove the lid and cook uncovered for 15 minutes.  I sort of mashed the jam with my wooden spoon to get a smoother consistency.  You can do that or you can leave it chunky.  You could even put it in a food processor and pulse a few times to get it even smoother.  Taste it and see how you like it.
  5. Refrigerate the leftovers and eat within a week.

Beautiful…In His Time

Ecclesiastes 3:1 NLT

Before we get started today, will you read Ecclesiastes 3:1-11 with me?  I’ll make it easy for you:

For everything there is a season, a time for every activity under heaven.
A time to be born and a time to die.
A time to plant and a time to harvest.
A time to kill and a time to heal.
A time to tear down and a time to build up.
A time to cry and a time to laugh.
A time to grieve and a time to dance.
A time to scatter stones and a time to gather stones.
A time to embrace and a time to turn away.
A time to search and a time to quit searching.
A time to keep and a time to throw away.
A time to tear and a time to mend.
A time to be quiet and a time to speak.
A time to love and a time to hate.
A time for war and a time for peace.
What do people really get for all their hard work?
I have seen the burden God has placed on us all.
Yet God has made everything beautiful for its own time.
He has planted eternity in the human heart, but even so,
people cannot see the whole scope of God’s work from beginning to end.

Time is something that I would love to pause as I watch so much around me change.  This past year I have seen my babies leave the nest and move away (I guess I really never thought it would happen). They are getting older, and I am getting older. With each month, day, year and minute, you and I are aging.

I imagine that you have weathered some hard things by now: loss and learning by doing; being married, divorced or single; raising children or not being able to have children…and so much more.  By now, many have probably benefitted from knowing your story.  Maybe you have mentored some younger sisters and shown them how God has helped you through rough times and shared some lessons that you have learned from just clinging to your faith.

Age isn’t all bad, right? Along with it comes wisdom and stamina (if not physical then spiritual), insight into deeper things, as well as looking at the more meaningful things instead of focusing on the trivial.

And as verse 11 (AMP) says,

“He has made everything beautiful in its time…”

That is YOU.  You are beautiful and God has a purpose designed for you at exactly this time in your life that is so different than any other time.  All those bumps and bruises you have had along the way and all the hard valleys and steep hills you have trudged are all so that He can grow you.

I remember as a child asking my mom, “How many days do I have left here on vacation?”  I so loved being at our favorite vacation spot that I didn’t ever want to go home and sometimes I worried more about the end than enjoying the vacation.  My parents would say “Enjoy what we are doing right now, Kim, and don’t worry about what tomorrow or any other day will be like.”  I think God says that to me, too—that wherever I am (and wherever you may be) that right now is so important to Him.  And that we should not worry about tomorrow and don’t spend time regretting yesterday but love Him now.  Trust Him now and worship and delight in Him now.  Now is all we have. See, it is in the process and in the living that the events of our lives glorify God, not just the outcome.

So whether you want time to stop or you are expecting the next phase, enjoy where you are now and ask your Father to show you just how much you mean to Him now and how important you are in His great plan!  All you have been through has meaning and will be used for something huge. Enjoy the process!

Dear God, thank You for this time of life.  Help me to see Your plan for me.  I want to glorify You in all that I do and say and in the experiences I have already had and those I have yet to do.  Give us the peace we need now and the faith to trust in You in the process.  In Jesus’ name, amen.

Each week during this season of Lent, here on the Seeking Him blog, we will be focusing our devotionals on a different aspect of Jesus’ revelation of Himself as I AM.  The aim of Lent should be to prepare our hearts for the remembrance of Jesus’ sacrifice—His trial and torture, the Crucifixion and His death…and above all, the celebration of His Resurrection from the dead.  We pray that this will be a great encouragement to each of you who read them.  And that all of us will consider the significance of Jesus’ words and, through them, be helped as we remember and are thankful for all Jesus went through during the last few weeks of His life on this earth.

I AM the Good Shepherd.  The Good Shepherd lays down His life for the sheep.
He who is a hired hand and not a shepherd, who does not own the sheep,
sees the wolf coming and leaves the sheep and flees,
and the wolf snatches them and scatters them.
He flees because he is a hired hand and cares nothing for the sheep.
I am the Good Shepherd. I know My own and My own know Me,
just as the Father knows me and I know the Father;
and I lay down My life for the sheep.
And I have other sheep that are not of this fold.
I must bring them also, and they will listen to My voice.
So there will be one flock, one shepherd.
For this reason the Father loves me,
because I lay down My life that I may take it up again.
No one takes it from Me, but I lay it down of My own accord.
I have authority to lay it down, and I have authority to take it up again.

Everyone knows about the window clings that you can get cheaply at Wal-Mart and dollar stores during the holidays.  I recently hung one of a cross and a sheep with flowers on our front door.  Our children saw it this morning.  Our daughter, who is four, says proudly that it is for Jesus. I smiled…at least for now she knows what the Cross stands for. Hopefully in the next 5-10 years, I can get her to understand the meaning.  The sheep, however, catches my eyes every time I look at that window cling.

When I see that sheep, I think about how my children are my sheep. They are mine to lead and take care of until they are grown.  It is my job to help them learn right from wrong.  It is my job to help start their spiritual foundation.  I am supposed to nurture them and help them.  They listen to my voice and look to me for security and love.

Just as my children are my sheep, we are the sheep of God.  We are His children.  When we listen to His voice and accept Him as our Savior, we become part of His flock.  Jesus laid down His life so that we may be reconciled to God and return from sin.  He went to the Cross to bring us home.  He is the Good Shepherd.

Dear Heavenly Father, thank You for being our Shepherd.  Thank You for protecting us as a shepherd does the sheep.  Without that protection, we would fall to our sin.  In Jesus’ name, Amen.
