Rustic Sausage, Potatoes, and Veggies

Sometimes you need a few quick and easy to fix meals in your menu plan that are still healthy but oh-so-yummy…wouldn’t you agree?  This is one of those kinds of meals for us—tiny potatoes, onions, mushrooms, and chicken sausage roast in the oven with just a drizzle of extra virgin olive oil and herbs.  Start-to-finish this took about 15 minutes or less to prep.   Oh…and only one pan to clean up!  That’s a big plus, too.

I just love sausage!   Finding these chicken sausage products from al fresco  made me very happy!  They make them in a few varieties; and  in links as well as patties.  I like to keep a package in the freezer.  Click the link above and check out the nutrition facts…you’ll be happily surprised, i think!   You can slice up the raw sausage links…(divide each link into fourths.)  I remove the meat from the casings and just dollop it around the pan in smallish little ‘meatballs.’  You choose!

This is a really easy dish to make!  Make sure to cut everything about the same size and don’t crowd the pan.    I served this alongside some steamed fresh green beans.  Enjoy!

Rustic Chicken Sausage, Potatoes, and Veggies

ingredients:

16 ounce package fresh (raw) Italian chicken sausage
1# baby potatoes, scrubbed and halved
1 large Vidalia onion, cut into half moons
10-12 ounces Baby Bella mushrooms, cleaned and halved
2 tablespoons extra-virgin olive oil
1/2 teaspoon EACH  sea salt, freshly ground pepper

directions:

  • preheat oven to 375
  • line large baking sheet with parchment paper (optional)
  • place cut-up veggies in a large bowl with the olive oil and s&p
  • stir together to thoroughly coat the veggies
  • pour out onto the lined baking sheet
  • scatter the sausage pieces evenly around the pan
  • bake for 35-40 minutes ’til potatoes just begin to brown a bit
  • season to taste (if necessary) with s&p

I am reminded of Jeremiah 1:5…

Before I formed you I knew you,
before you were born I set you apart.

This just shows us how we were created.  In Genesis 1:26-28 God said, “Let us make man in Our image and Our likeness…”  You will notice God was giving power to man to have dominion over things and what distracted is the sinful nature of man.  However God’s compassionate love gave us Christ Jesus in Whom we are born again.  Now that we are born again, what is required of us?

1. Go back to the drawing board and see the purpose of God over our lives

2. Appreciate God for giving us the second chance

3. Fulfil the call that we have without murmuring or blabbing

The anchor Scripture for this week says we were ‘created to do good works.’  What then are the good works, those that God prepared for us to do in advance?

  • Matthew 5:16
    In the same way let your light shine before men that they may see your good deeds and praise your Father in heaven.
  • 1 Timothy 6:18
    Command them to do good to be rich in good deeds and to be generous and willing to share.
  • Titus 2:7
    In everything set them an example by doing what is good.  In your teaching show integrity seriousness.
  • Hebrews 10:24
    And let us consider how we may spur one another on towards love and good deeds.
  • James 2:17
    Faith by itself, if it is not accompanied by good deeds, is dead.
  • James 2:18
    But someone will say you have faith I have deeds show me your faith without deeds and I will show you my faith but I do.

Brethren, as we are doing good works it is not unto man but it is unto God (according to the Scriptures).  Let us take up this noble call with our whole hearts and pursue the calling.

Dear Lord, we thank You for You knew us for all times.  We thank You for You predestined us and You knew our roles on earth for each one of us.  May we come to a full understanding of the good works that we are to do.  Use us to the maximum and all to the glory of your Holy Name.  Open our eyes of understanding to see the best inside us and how we should take action.  On our own we can hardly manage; we need the Holy Spirit—Christ in us—for this to be undertaken.  This we ask in Jesus’ name.  Amen.

Aren’t you glad God’s love is unconditional?

I know I am.

I am glad I do not have to earn it.  I am glad I do not have to do anything but love God and know He loves me.  When I was in my teens, I asked Jesus to be Lord of my life.  His love made my life tolerable.  His unconditional love helped me know I was cherished and, no matter what I was going through, there was a way for me to make it through.

I was able to forgive and to find forgiveness.  I was able to begin to deal with (and sometimes am still working on) feelings of abandonment and rejection.  We have someone that wants to remind us every moment of our faults and failings.  That is where we are instructed to take our thoughts captive and refuse those negative accusing thoughts and feelings.  We are to deny those and replace them with what God’s Word tells us.  We are to dwell on these positive things.

Put on the full armor of God, so that you can take your stand against the devil’s schemes.
For our struggle is not against flesh and blood,
but against the rulers, against the authorities, against the powers of this dark world
and against the spiritual forces of evil in the heavenly realms.
Therefore put on the full armor of God,
so that when the day of evil comes,
you may be able to stand your ground,
and after you have done everything, to stand.
Ephesians 6:11-13 NIV

Father, thank You for Your Word reminding us to guard our thoughts and know we are protected by You.  Help us to refocus on You when our thoughts wander towards negative or wrong thinking.  We love You and pray for Your mercy and grace while we struggle with keeping our thoughts pure.  In Jesus’ name, amen.

Finding Purpose

What is my purpose?  This is a question that everyone has to answer.  People struggle with answering this question…people die trying to answer this question…people search their whole lifetime trying to answer this question.  Some of us start asking this question at a very young age; some have just always known.

I have never been one of the latter.  How lovely it would be to know what you want to do with your life from a young age.  I am one of those people who, well into my late twenties, am still trying to figure out my purpose.

I can’t say for sure what the big picture is, but I can say that focusing on the end game has caused me to miss out on a significant amount of present time.  I believe that yes, a goal should be in mind; but when you don’t know what the future holds (which is often), you should do what you know to do right now.  Doing nothing is a waste of time.

For instance, I have had quite a few jobs in my working career and just about each one I have treated as a means to an end.  I do my job and I do it well.  I excel in the actual performance but my attitude has not always been the best.  Instead of going in with the mindset that this job is what is paying my bills now, I go in with the mindset that this is not what I want to do for the rest of my life, so it’s not important.  Have you ever tried to do a job that you didn’t think was important?  Coupled with the fact that I’ve always had the mindset that there are always more jobs…disaster is what occurs.  And I’m not a bad employee.  It is just the way that I approach the job that is the problem.  I feel that ‘If this were my purpose, then I would be happy doing it.”  Ha! Being content is something that is cultivated, it doesn’t just happen because the circumstances are good.

So, your purpose? Well, your purpose can be in the moment. Your purpose doesn’t define your worth. Your worth is always found in God himself. Your purpose is simply the role(s) you are in at any given moment. Your attitude during any season determines whether you see you in your purpose. Purpose isn’t just a one-time ultimate goal. It shifts. God has “good works” for us. Not just one single work /purpose.

Make sure that you are mindful of your current purpose…and not blinded by your end game goal.

This song touches me in so many ways.  I can so relate to the sentiment in these words:

There’s got to be more than going back and forth from doing right to doing wrong

I really struggle with this!  But, when I do what is right, I have to be careful or pride will kick in and I’ll start thinking “There is worth in what you do.” I have so many flaws, it seems like an impossible tightrope to walk.

The good news is we don’t have to walk it at all.

…A man is justified and made upright by faith
independent of and distinctly apart
from good deeds (works of the Law).
Romans 3:28 AMP

Our works are important as they bring honor and glory to God and reflect His Presence in our lives. But they are not what save us. We have no hope of saving ourselves through works.  We are saved by grace—God’s amazing grace.

But if it is by grace (His unmerited favor and graciousness),
it is no longer conditioned on works or anything men have done.
Otherwise, grace would no longer be grace [it would be meaningless].
Romans 11:6 AMP

The day we called His name, we were made flawless.  The bumps, the bruises, the scars we have picked up along the way…they are gone. Thanks to the Cross.

Father God, thank You for this beautiful reminder that You see us as flawless, in spite of the messes we have made.  Remind me I do not have to strive and work for salvation.  All You require is faith.  Your graciously provided our salvation through the Cross.  Thank You for providing me a way to be flawless in Your sight.  In Your name I pray, Amen – it is so!

Is it too hard for you to accept that Your worst sin has been forgiven? I know that feeling.  If we are honest we have all struggled with that.

I love the lyrics to this song.  It could actually be a prayer that we repeat day after day reminding us of just how flawless Jesus has made us.

Just when you think you’ve done it all, God sends His grace to erase it all and give you a fresh start.  You get a clean slate every single day to write a new story on.  And when you let the Holy Spirit work in you, the story can be so incredible and joyful and full of His peace.

So that thing you’re holding onto…the one thing that you can’t forgive yourself for…the mistakes you made and still dwell on—it’s time to let Him have it because He already erased it.  His Son washed you white as snow!  I pray today that you claim it.  And praise God that He made you new!!!!

Let us pray: Dear God,  You make us flawless!  You sent Your Son to die so that we would be forgiven for everything and anything that we will ever do.  You love us that much.  Thank You, Lord!  Help us today to let go of all of the baggage and start over in You!  In Jesus’ name, amen.

This Week…Galatians 2:20

This week, here on the Seeking Him devotional blog, our sisters have reminded us again and again of this truth.  Here are a few highlights from the devotionals that Ann, Ahmee, Cynda and Tina wrote earlier this week.

In The Great Exchange, Cynda brought our attention to the truth of what Christ accomplished for us.

“I know Christ was crucified for me. But I never thought about what that really means.

  • Christ swapped places with me
  • We exchanged lives
  • He became the sinner, I became the sinless

Even as I type this…I cannot comprehend the full impact of that statement.

What does it mean to be crucified with Christ?  Galatians 5:24 NLT puts it like this:

Those who belong to Christ Jesus have nailed
the passions and desires of their sinful nature
to His cross and crucified them there.

Quite an exchange, isn’t it?  Why would Christ sacrifice Himself in exchange for me?  Romans 8:37 NLT holds the answer “No, despite all these things, overwhelming victory is ours through Christ, who loved us.”  Christ loves us and wants us to be victorious. He laid down His life in exchange for ours, so we could spend eternal life with Him.  He chose to die for me.  Now that is amazing love.”

In Living A New Life, Tina shared some important points of the Apostle Paul’s (formerly Saul) conversion.

“Paul was freed from the Law.  He was freed from the rules the Pharisees had created for the Jewish people to follow, making the burden impossible for everyone to come close to God.  With Paul’s conversion and baptism, he could speak to the Jews and the Gentiles with authority and eloquence.  He learned about faith.  He learned about Jesus’ love for everyone, not just the Jewish people but also for the Gentiles.

I am glad Jesus recruited Paul for the Gentiles.  He is a great example of what Christ did for you and me.  He sacrificed for us His life to give us the gospel.”

In So Wait…Who Am I Then?, Ahmee shared some thoughts concerning her purpose and place in God’s eyes.

“One of the first things I had to learn to do was die to myself.  This is something that has to be done daily.  I hesitated.  If I was to let go of who I had always been, then who would I be?  How could I be me and not be me at the same time?  To me this seemed impossible. God was going to change me into someone different, someone I didn’t know. And the last thing I wanted to do was give up my uniqueness.  It took some time, but God showed me that he did not want to eliminate me…He was proud of creating me.  What he wanted was to improve me. When you improve something, the original is there, but its been made better and that was God’s plan. The angry Ahmee would be kinder, gentler Ahmee. All the while my uniqueness is still present just more Christ-like.

I was then who the world made and influenced me to be.  I am now who my Father says I am.  Each day I am growing and changing to be more like the person God intended me to be.  All the while I am and will always be the only Ahmee He ever has made or will make.  Why not be the best version of me?”

And in Dying With Christ, Ann reminds us of our new life…Resurrection life!

“As Christians we have died to the Law as a means of salvation and now live through Christ for God.  Sin no longer has control over us.

Since you died with Christ to the elemental spiritual forces of this world,
why, as though you still belonged to the world, do you submit to its rules?
Colossian 2:20

As Christ was risen from the dead we also now live with Him in Resurrection life.  Christ and His Strength lives within us becoming the Source of all life and the center of all our thoughts, our words, and our deeds.  It is through the Holy Spirit that Christ’s risen life is  continually communicated to us.

For you died, and your life is now hidden with Christ in God.
Colossians 3:3″

Fruit Pizza

Fruit Pizza Close

My daughter turned four last week, and we had her friends over for an old-school birthday party:  pizza, some play time, and cake.  Except…instead of cake…I presented her with another pizza:  this Fruit Pizza!  All the kids thought it was hilarious – and then the glorious silence of small children who are too busy eating to talk!

This is incredibly easy.  Just make sure you give yourself enough time for the cookie to cool before you frost it.  You can use homemade sugar cookie dough, but a log of store-bought cookie dough saves time and is just as good.  Decorate with any fruits you like – the more colorful the better! – but if you think you might have a lot of leftovers, save really delicate or juicy fruits – like kiwi, mandarin oranges, or bananas – until you are ready to eat it.

Fruit Pizza

Ingredients:

  • 1 tube of refrigerated sugar cookie dough
  • 6 ounces softened cream cheese
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 – 4 tablespoons milk (optional, to thin out the frosting)
  • squeeze of lemon (optional, but I like a more balanced frosting)
  • 2 cups sliced fruit of your choice – berries, halved grapes, sliced kiwi, mandarin oranges, whatever you like – the more colorful, the better!

Directions:

  1. Preheat oven to 350*F.  Cover your largest baking sheet (or a pizza stone!) with parchment paper.  Spread out the cookie dough into a big circle.  (I put a plastic baggie over my hand because the dough was sticking and it worked well.)  Flatten to about 1/4″ thick.  Bake until lightly golden – it took about 22 minutes for me.  Keep in mind – the dough will spread a lot!  If you don’t have a very large baking sheet, you may want to make your pizza oval-shaped, just so it doesn’t climb up the sides of your baking sheet when it spreads.  Remove from the oven and set aside to cool.
  2. In a large mixing bowl, beat together the softened cream cheese,  vanilla extract, and powdered sugar.  If you would like a smoother frosting, add a tablespoon of milk at a time, until you reach your desired texture.  Also you can add a squeeze of lemon (it balances out the sweetness.)
  3. When the cookie crust is cool, cover with the frosting, but leave a border around the edges (so you can see the pizza “crust”).  Decorate with sliced fruit and serve.  Keep refrigerated.

But God Knows

When Joseph was taken to Egypt by the Ishmaelite traders, he was purchased by Potiphar, an Egyptian officer. Potiphar was captain of the guard for Pharaoh, the king of Egypt.  The Lord was with Joseph, so he succeeded in everything he did as he served in the home of his Egyptian master.  Potiphar noticed this and realized that the Lord was with Joseph, giving him success in everything he did.  This pleased Potiphar, so he soon made Joseph his personal attendant. He put him in charge of his entire household and everything he owned.  From the day Joseph was put in charge of his master’s household and property, the Lord began to bless Potiphar’s household for Joseph’s sake. All his household affairs ran smoothly, and his crops and livestock flourished.  So Potiphar gave Joseph complete administrative responsibility over everything he owned. With Joseph there, he didn’t worry about a thing—except what kind of food to eat!

Joseph was a very handsome and well-built young man, and Potiphar’s wife soon began to look at him lustfully. “Come and sleep with me,” she demanded.”  As you can imagine, Joseph didn’t do what she wanted and it angered her…so she set him up and made it look like he came onto her.

Potiphar was furious when he heard his wife’s story about how Joseph had treated her.  So he took Joseph and threw him into the prison where the king’s prisoners were held, and there he remained.  But the Lord was with Joseph in the prison and showed him his faithful love. And the Lord made Joseph a favorite with the prison warden.  Before long, the warden put Joseph in charge of all the other prisoners and over everything that happened in the prison.  The warden had no more worries, because Joseph took care of everything. The Lord was with him and caused everything he did to succeed.

I should tell you that this story didn’t begin here…. Joseph was born into a family of lots of brothers and, of all of them, he was his father’s favorite.  Oh, how Jacob loved him!  It was because of this that his brothers sold him into slavery one day and let his father believe he was dead.  But God was always with Joseph and caused Joseph to succeed in everything he did.  The Lord was always glorified because Joseph pointed it all back to Him.

Joseph could have slept with Potiphar’s wife and Potiphar may never have ever found out about it…but God would have known.  And I am pretty sure that Joseph wouldn’t have been as successful either and all that hardship wouldn’t have been turned into blessing.  Aren’t we tempted every day with something that we could easily get away with…

  • No one would know if we didn’t keep that secret that we promised we would…but God does.
  • No one would know that we didn’t tell the whole truth on an application and who is really going to check if we finished college…but God does.
  • And is that friend calling you to meet her going to know that you don’t really have a doctor’s appointment? Probably not…but God does.  And when it comes time that you really need His supernatural favor, it may not come as easily.

Joseph lived a righteous life. I’m not saying that he was without sin, but his intentions and his heart were always in line with God’s Will.  And because of this, Joseph was eventually saved from prison (Genesis 40) and became a very important person to Pharaoh.

And those brothers that wanted to get rid of him?

Now Joseph was the governor of the land,
the person who sold grain to all its people.
So when Joseph’s brothers arrived,
they bowed down to him with their faces to the ground.
Genesis 42:6

Be all that you know that God wants you to be. Always stay in His Word and you will know what He expects.  And the Lord will help you succeed in all that you do.
