Blessings in disguise. Are you looking for those blessings even in the hard days? What you focus on is what you will magnify…good or bad. What are you choosing to magnify in your life?  My prayer is that even when we are going through hard times we will choose to magnify God and focus on Him.

“I thought about how when I looked through my magnifying glass all I could see was the object that I was focusing on. Then I thought, when we go through hard times we need to focus on the Lord. We need to MAGNIFY HIM above our troubles and see only His helping hand in every situation.
In Psalms chapter 34 and verse 4 it says, “I sought the LORD, and He heard me and delivered me from all my fears.” We need to seek the Lord in our times of troubles and look to Him for our help. Psalms 69:30 says,” I will praise the name of God with a song, and will MAGNIFY Him with thanksgiving.” When we praise and thank God for being their for us in our times of need and our times of gladness,….when we like Joseph in the Bible, thank God for every situation we find our selves in, we can have peace of mind that God will come through for us.
When Paul and Silas were thrown into prison they didn’t sit there and gripe and say WHY ME….why did we get put into prison…were people of God… how could God let this happen to us!!!!! No… instead they sang the praises of God. They MAGNIFIED the LORD in their situation and the Bible says that the earth shook and their shackles opened up and the doors of the prison opened up for them. There is POWER in magnifying the Lord in our lives Psalms 40 and verse 16 says, “Let all those that seek you rejoice and be glad in you; let such as love thy salvation say continually, THE LORD BE MAGNIFIED!
So the next time you find yourself in a hard place in your life, be a Paul and Silas…. sing praises and MAGNIFY the Lord and see His mighty hand come to help you. And as Psalms 35 and verse 28 says,” My tongue shall speak of YOUR righteousness and of YOUR praise all the day long!”

I just turned 30 this past week.  I know I’m far from old and gray, but I’m also not considered “young” anymore.  (Just ask my kids).  It was an important milestone for me and, apparently, 30 makes you a real adult.  When I read the words, “You have taught me from my youth,” I thought back on the past 30 years.  I was amazed by how much He has taught me over these years; some lessons I needed to learn more than once….  But it is much more than just what He has taught me over the years.

It is the time He has invested in me and the love shown to me.  It is His strength, His wonderous deeds, His greatness.  It is His desire to revive and comfort me again…and again…and again.  At 30 I find myself married with 3 busy kids, working full time, going to school full time—and needing a lot of reviving and comfort.  He does this daily, and sometimes all I can say is “O God, who is like You?”

Today I find myself thanking Him for His greatness and provision in my life.  I find myself repeating the words of David, “Lord don’t forsake me in my old age….” I want to spread His goodness.  I want to show this next generation that, without Him, I could not do what I do.

Let’s pray: Dear Heavenly Father, the things You do for me it’s more than amazing!  Thank You for teaching us in our youth, and for not forsaking us in our adult years. Thank You for Your provision, for Your greatness, and for sustaining us as we share with the world what you do daily in our lives.  In Jesus’ name we pray, Amen.

Granola and Grilled Peaches

This recipe came about backwards…first I was looking for something to do with a few gorgeous, huge, fragrant peaches. Then I saw a picture of a grilled peach topped with homemade vanilla ice cream with a big scoop of granola over top. Oh, yeah!

Grilled Peaches with Ice Cream and Granola

I don’t know if you remember but just a few weeks ago, Dana shared her recipe for “No-Ice-Cream-Machine-Needed” Ice Cream (here’s a link).  THAT would be a great option for the ice cream portion.   To put this yummy simple dessert together, slice a big peach around the middle (the ‘equator’), pull the pit out, and put on a hot grill for 3-4 minutes. (Other options: either place face down on a hot stovetop grill pan or simply broil for a few minutes.)  When the peach halves get a little caramelized, place one (or two!) into a bowl. Top with a couple of tablespoons of granola, a scoop (or two!) of vanilla ice cream, and some additional granola scattered on top.  Get your spoon ready…the ice cream will begin to melt quickly! Enjoy!

Your granola will keep well in the pantry in a glass jar with a lid.  I put a small scoop right into or attached to the jar for easy access to a scoop on the fly for my husband. Oh, and he really likes this best when I add a bag of mini chocolate chips (I just mix it in when the granola is cool enough to place in the jar). Just sayin’.

Granola

ingredients:
5 cup rolled oats*
3 cups nuts and seeds (almonds, walnuts, pistachios, pumpkin seeds, sesame seeds, sunflower seeds, etc.)** – give a quick chop to whole nuts
2 teaspoons spice (cinnamon, or cardamon, or pumpkin pie spice, etc.)
1+1/2 teaspoons sea salt
3/4 cup liquid sweetener (maple syrup, honey, agave nectar)
1/3 cup oil (coconut or canola)
1 teaspoon extract (almond or vanilla)
1+1/2 cups mixed dried fruit (apricots, golden raisins, banana chips, pineapple, papaya, etc.)

directions:

  • preheat the oven to 325
  • place parchment paper in a baking or sheet pan (with sides); use enough parchment paper to slightly extend to use as ‘handles’
  • warm the liquid ingredients for 20-30 seconds in the microwave
  • mix dry ingredients, spice, and salt together in a large bowl; stir well
  • pour the warm liquid ingredients over top and stir it all up ‘til all the oats are well coated
  • place the mixture onto the parchment lined pan; with slightly wet hands, press down gently into an even layer. this will help to make some ‘chunks’
  • bake for 15 minutes or so; remove pan from oven and add the dried fruit. stir to incorporate the fruit and so that everything is cooking evenly. try to pull the mixture from the outside edges to the middle, and the middle ‘stuff’ out to the edges of the pan.
  • return to oven and bake for another 15 minutes or so
  • remove pan, add any roasted nuts you were holding out and stir gently again; place back in oven for 15 minutes…or so
  • at this point, your granola quite possibly is done. the goal is not wet, slightly crunchy, and just beginning to turn golden brown. (y’know, like granola!) if done, let cool before popping a handful in your mouth. if not, 10-15 additional minutes should do it
  • let thoroughly cool before placing in glass storage jar (optional: toss in a bag of mini chocolate chips)

Makes 9-10 cups

*    be sure to use ‘old-fashioned, rolled’ oats not ‘quick-cooking oats! the latter will break down as the granola bakes. 🙁
**  IF you are using any nuts/seeds that are already roasted (like the sunflower seeds I used), DO NOT add them ‘til the last 10-15 minutes. Since they are already ‘roasted’ they will burn if added for the entire baking time

The Bible as a Teacher

Since my youth, O God, You have taught me and to this day I declare Your marvelous deeds.
Psalm 71: 17

David had to recount throughout his life what had been happening to him.  How he has excelled in life, how he has been protected, etc.  And he came to a point of realizing that it was not about him but that the Lord was with him always.  And so it is for us today to have a recount of our own lives.

How does God teach us?

He teaches us through His very own Words in the Bible.  And the Bible is the true book where the wisdom of our wise God is revealed.  God spoke the Word and breathed into it and it became life.  We thank God for the Word that is life today.  The Word that is changing our lives for the best disciples.

I have learned in life that I can only learn better as long as I study much. Learning is a process which goes step-by-step.  Looking at myself I have passed through a nursery school (kindergarten) through a higher level and now a profession in my field.  All this is achievable through teachings, studies etc.

And so the Word of God teaches us—from a Sunday School kid and now a born-again Christian who is not merely born again but also a disciple of Jesus Christ.  In Isaiah 8:11, “ The Lord spoke to me with his strong hand upon me warning me not to follow the way of this people, he said….”

Why does God teach us?

• So that we can walk in the right way: Isaiah says His God instructs him and teaches him the right way. Isaiah 28:26
• That we may know what God have freely given us: We have not received the spirit of the world but the Spirit Who is from God, that we may understand what God has freely given us. I Corinthians 2:12
• That we know the truth that is in Jesus : Surely you have heard of Him and were taught in Him that is in Jesus. You were taught with regard to your former way of life to put off your old self which is being corrupted by its deceitful desires. Ephesian 4:21-22
• Now about brotherly love we do not need to write to you for you yourselves have been taught by god to love each other. 1 Thessalonians 4:9
• All these teachings urge us to appreciate the marvelous deeds God has done. 1 John 2:27

Let us be Christians who are not only mouthing the words but rather renewed in our minds and able to study the Word of God and observe to do what it says we should do. Joshua 1:8.

This song touches me on so many levels.  It reminds me His love is always there for me—to comfort me, to guide me, to anchor me.  But it also reminds me of something I desperately want – His love to flow like a river from me.

Galatians 5:6b (NIV) tells us, “The only thing that counts is faith expressing itself through love.”  Since Christ loved us enough to die for us, why is it so hard for us to love others?  We are repeatedly called to love throughout the New Testament. Ephesians 5:1-2 (AMP) presents it as a lifestyle:

Therefore be imitators of God [copy Him and follow His example] as well-beloved children [imitate their father].
And walk in love, [esteeming and delighting in one another] as Christ loved us and gave Himself up for us…

If you look at these verses, it becomes apparent we cannot love on our own. We have been given love as one of the fruits of the Spirit.  Romans 5:5 (HCSB) shows us this, “God’s love has been poured out in our hearts through the Holy Spirit who was given to us.”  Yet, only through faith can we love as we are biblically called to do.

Ever try to love someone who rubbed you the wrong way, was confrontational, or you didn’t like very much?  It isn’t easy…even loving through faith.  Yet that is exactly what we are called to do.  I constantly remind myself that love is not just a warm, fuzzy feeling.  It is so much more than that!   It requires action.  And patience.  And, most of all, FAITH!  Relying on emotions or feelings can land us in a heap of trouble.  Instead we must choose to have faith in God and believe He will cause our attempts to love to have a profound effect.  Maybe even on us.

Lord, please let Your love flow like a river from my heart.  Amen—it is so!

There Is Still Power in the Name of Jesus

Let me confess a couple of things before I get started:
-My blogs are about things God is showing and teaching me that I hope will touch you too.
-I went about writing this blog backwards. I started with an idea and God showed me the Scripture.

I was watching a video this morning and God thumped me upside the head and asked, “Are you paying attention?” I have included a link to the video (see below) but here is a brief outline:

Samuel Rodriguez is asked to pray at a secular event in Washington, D.C. When he arrives, he finds out a Universalist, an Imam, and a Rabbi have been asked to pray as well. He is given a choice where in the order he would like to pray…and chooses to go last. After he prays there is clapping for 4-6 minutes. When asked why the people kept clapping he states, “There is STILL power in the Name of Jesus!”

Let me ask you something—Do you proclaim Jesus’ power? Do you pray like you believe in His power?
This is where God was drawing my attention. I have not been praying like I believe in the mighty power of His Name. Then when I saw Psalm 71:18 I knew this was something I needed to research and write about.

Jesus Christ

  • His is the Name above ALL names
  • Angels fall prostrate at His Name
  • Every knee shall bow at the Name of Jesus
  • His Name causes the dead to rise
  • His Name makes demons tremble and flee
  • His Name gives sight to the blind, makes the lame walk and heals the sick

Best of all, Jesus’ is the only Name that can wash us white as snow and make us acceptable to God – “…by believing in Him you will have life by the power of His name” (John 20:31 NLT).

In Matthew 28:18 AMP, Jesus tells us, “All authority (all power of rule) in heaven and on earth has been given to Me.”  John 13:3 NIV says “…the Father had put all things under His power…”  That is the ultimate power!  We have been given access to that power. We are to use it when we pray and proclaim it loudly for all to hear so the next generation knows there is still power in the name of Jesus.

All hail the power of Jesus’ Name.

Lord Jesus, we are so thankful for the power of Your Holy Name. Remind us of that power continually so that we may use it to bring You glory and honor. May we lift our voices to proclaim how the power of Your Name is alive and at work in our own lives. In Your precious and Holy Name, I ask this, Amen – it is so!

Kimchee Jjigae (Kimchee Stew)

My blog is called The Frugal Girlmet, because I like to use everything I can in the kitchen and do my best to make sure nothing goes to waste.  Kimchee Jjigae is the Korean embodiment of this principle.  A little background:  Kimchee is a fermented, spicy cabbage dish that, together with rice, is the backbone of Korean cuisine.  Traditionally, Korean families made kimchee in the summer, in gigantic clay pots.  They buried the pots in the ground to preserve them, and the family ate the kimchee over the course of the winter.  Winters are very cold in Korea, so that helped preserve the kimchee…but it still got old.  What to do with overripe kimchee – throw it away?  NO!  Koreans use every last bit of their resources, which is how Kimchee Jjigae came to be.  They made a stew out of the last of their kimchee, adding  meat to make it more filling, and served it with rice for a complete and frugal meal.

The only ingredient you MUST use in this stew is kimchee.  Everything else can vary by region, resources, or personal taste.  One of the most common varieties has pork as the protein component, and this is the way I make it.  You can cut up a few pork chops, or use any leftover pork you have.  I made a pork roast in the crockpot the night before and reserved about 2 cups of meat for this stew.  Other types of Kimchee Jjigae use canned tuna, tofu, other seafood or fish, and even Spam!  During the Korean War, American GIs brought Spam with them, and Koreans adopted it too.  Another variation that was born in the Korean War is called Budae Jjigae, which translates to “Army Stew.”  American soldiers made their own version of Kimchee Jjigae by adding ramen noodles, meat, seafood, and other vegetables to make their rations last longer.

If you like spicy foods, you will love this.  If you feel a cold or sinus infection coming on, this will clear it right out (it’s loaded with Vitamin C and probiotics)!  If your family likes chili, you should really give this Kimchee Jjigae recipe a try.  Feeling brave?  Feeling frugal?  Read on!

Kimchee Jjigae

Ingredients:

  • 1 small onion, sliced fine, or one bunch of green onions, sliced
  • 1 tablespoon sesame oil (or other oil)
  • 2 cups pork (see note above)
  • 2 cups kimchee, preferably old kimchee
  • about 1/2 cup kimchee juice (that red pepper water in the bottom of the jar!)
  • 2 cups water
  • rice to serve
  • sesame seeds, dried seaweed, or sliced green onions for garnish

Directions:

  1. In a large pot with a lid, add the sliced onions and oil.  Cook over medium heat for a minute or two.
  2. While the onion is cooking, chop the pork.  If you are using raw pork, you have two options:  you can add it in whole and then remove it when it’s cooked and chop it up.  You can also slice it thinly and add it now.  I think it’s easiest to use leftover pork that you can quickly chop or shred.
  3. Add the pork, kimchee, kimchee juice, and water to the pot.  Adjust the heat so the stew simmers.  Cover with a lid and cook for 30 minutes.
  4. Serve with rice, and garnish with sesame seeds, dried seaweed, or green onion tops.

Leftovers will keep in the refrigerator for about a week.

It is in our weaknesses that we are made strong through Christ. Jesus is all we need. He is the strength in our weakness. God is our everything in our time of need.

I will call upon the LORD, Who is worthy to be praised;

Jesus is the one who carries us when we feel as though our strength is slipping away. It is in these moments that we must turn our focus back to Him.

I can do all things through Christ Who strengthens me.
Philippians 4:13 NKJV

Heavenly Father, I thank You that You are my strength in ALL my weakness and it is in my weakness that You make me strong.  You are my everything!  Father, I need You!  Thank You for Your faithfulness to see me through to the victory that lies ahead.  In Jesus’ name, Amen!!!

An Infinite God

God is so great. God is so good. God is great all the time. It is hard to fathom just how far-reaching God’s greatness is—it is infinite. Infinity is hard to imagine because it never ends. It is often too hard to imagine infinity. There is no way to put an end to it.

For great is the LORD, and greatly to be praised; He also is to be feared above all gods.
1 Chronicles 16:25

God has been here before any of us were ever born. He created the universe, the world, humans—everything. His reach is infinite. His reach is so infinite that He is able to send His Son to be with us no matter where we are. His reach is so infinite that we cannot hide anything from God. He knows everything and sees everything. God’s reach is so infinite that it is amazing and scary at the same time. It is amazing that our God knows us so well.

He is so great that God deserves praise every day. His greatness and love make Him worthy of eternal praise and love. Once we are in Heaven with God for eternity, we will have the chance to praise Him for eternity.
