Lemon-y, Garlic-y Tilapia with Avocado Salsa

Oh…it is getting close! For some of you, spring has already sprung. Here in Upstate NY, the daylight is increasing, the temps are warmer, the piles of snow are beginning to melt! And <slowly…> the fruits and veggies are getting increasingly more tempting in the produce department of our grocery stores. This past week, I could actually smell the fragrance of the ripe strawberries as I shopped my list! And so, two packages of them were added to our shopping cart!

One thing that I determined to prepare was a fruity avocado salsa…so easy-peasy! And so good for us (you, too!). And fits perfectly into our healthy but oh-so-yummy POV! We all are aware of the benefits of eating fresh fruits…loaded with vitamin and fiber. And avocados—such a great addition to your healthy eating plan! Here is some info on the benefits and the nutrition received from eating avocados.

We had this cauliflower rice dish alongside.  This salsa would be delish on quite a variety of seafood…from fillets to shrimp to scallops! What’s your favorite?

LemonyGarlicky Tilapia with Avocado Salsa

 

ingredients:
salsa:
1 mango, peeled and cut into smallish cubes
1 avocado, peeled and cut into smallish cubes
handful of strawberries, cut up
2 teaspoons red onion, finely minced
1 lemon (or lime), juiced
sea salt, freshly ground pepper (I use a lemon-pepper blend)
red pepper flakes (optional)

fish:
4 tilapia fillets (4-5 ounces each)
2 tablespoons red onion, finely minced
4 tablespoons chopped garlic (I use jarred)
2 tablespoons butter
1 large lemon or lime, zested and juiced
3 teaspoons dried parsley
1 teaspoon dried tarragon
salt and pepper to taste
olive (or coconut) oil

directions:

salsa

  • mix all ingredients together in a glass or ceramic dish; set aside

fish

  • preheat oven to 400
  • lightly coat the bottom of a glass baking dish with oil
  • in a small saucepan, melt butter
  • add red onion and saute for 3-4 minutes to soften
  • add garlic and saute on low for an additional minute stirring constantly
  • remove from heat and add lemon juice
  • lay out the tilapia in the pan
  • sprinkle with the herbs, zest, and a generous amount of salt and pepper
  • pour the butter mixture over top the fish
  • bake for 10-20 minutes (depending on the thickness of the fillets) ‘til flaky

serve fish with avocado salsa on the side…perhaps with quinoa, or rice; enjoy!

For Lent this year, I gave up my tablet and the games on my phone.  I couldn’t give up the phone because I do have to stay connected for emergencies, and we don’t have a land-line phone.  I have found that I spend so much time playing on my tablet or phone that I have started neglecting various areas of my life.  I was neglecting my kids, my husband, and my time with God.  It was stealing my time.  I was letting the distractions become the thief in my life.

When distractions become too much, they become the thief of our attention in major ways.  Distractions take us away from work, family, and (most important of all) God.  We wander away from what should keep us whole and grounded into a world of chaos and discontentment. We walk out of the open Door back into what was keeping us from it in the first place when we let distractions overrun our lives.

However, we can easily reenter that Door when we accept Christ as our Lord and Savior.  Christ opened the door to redemption when He died on the Cross for our sins.  He reconciled us to God, so we may have eternal life. A s the children of God, we should pay attention to Jesus and being faithful to Him.  We should not listen to a world that has turned away from God.  If we turn away from God then we will die a certain death when Judgment Day arrives.  All we have to do is see Jesus’ open Door, give up the worldly distractions, and accept Jesus as our Savior.  When we cross over the threshold of that Door, we are no longer of this world.

Dear Heavenly Father, thank You for opening the Door for us to enter Your presence.  Jesus, Your wonderful sacrifice shows how much You love us.  We give our worldly distractions and walk through Your open door.  In Jesus’ name, Amen.

A door gives access to someone to go in and come out of any building, vehicle, etc.  This access helps you to benefit of what is inside the building or outside the building, for example.

Jesus said, “I AM The Door“…what does this imply?  He is giving us access to use Him because those who enter through Jesus will be saved—they will have abundant life (verse 10); they will have all they need to be delivered from sin, guilt, condemnation. He is the ONLY Door; none other exists.

Jesus answered, I AM the Way, the Truth and the Life.
No one comes to the Father except through Me.
John 14:6

…through Whom we have gained access by faith
into this grace in which we now stand.
Romans 5:2

For through him we both have access to the Father by one Spirit.
Ephesians 2:18

In Him through faith in Him we may approach God with freedom and confidence…

The above verses help us to understand what this Door can do and how it is going to help us.  Let us therefore choose deliberately to use this Door which will take us to the highest places.

The Israelites had much more limited access to God than we have today.  Christ, by giving His life as a perfect Sacrifice, has opened a way into God’s very presence and the throne of grace.  Therefore we, as believers, should gratefully and constantly draw near to God in prayer using this Door of access.

Dear Lord, how wonderful and precious You are in all the earth.  There is no one who is like unto You.  Thank You, Lord, for giving us Christ the Savior to be our Door to salvation so that we can have life in abundance which means no more tears and sorrows.  Cause us, Lord, to continually and constantly draw near to You using this Door given to us.  We give You all the praise and honor in Jesus’ name, we pray. The name of God when it’s revealed seems to be a very big moment in history.  He says “I AM.”  That evokes the idea of His presence, of being in His name.  For me that is one of the greatest hopes of the Christian faith.  No matter where you are in life, you live and breathe in the very presence of God and He has given access to Himself.  The Creator of the universe has given access to us and that’s gorgeous.  So many times I forget about that and I need to be realigned to that reality.

Life is full of storms…unplanned changes…unexpected detours.  Some storms are bigger than others.  But how we get through those storms depends on what we are holding onto and, more importantly, Who is holding onto us.

Listening to David Crowder talk about this song, I had a light bulb moment.  I Am is the ‘Great I AM’.  He is holding onto us!  He holds us more tightly than we could ever hold on to Him.  He never lets go of us.  Isaiah 40:13 (NLT) tells us “He will carry the lambs in His arms, holding them close to His heart.”  Isaiah 41:13 (HCSB) states “For I, Yahweh your God, hold your right hand and say to you: Do not fear, I will help you.”  I AM holds us close to His heart.  I AM takes our right hand like a Father and leads us through the storm.  He never leaves our side.

This is what I need to remember as I deal with the curves life is throwing me right now.  Just thinking about I AM holding onto me gives me chills and makes me smile at the same time.  He is my ‘resurrection song’.  He is my ‘hallelujah come’.  That’s why it’s to Him I run because

This week, here on the Seeking Him devotional blog, we have had the joy of being reminded of our Lord’s words in John chapter 6.

When they found Him on the other side of the lake, they asked Him, “Rabbi, when did you get here?”
Jesus answered, “Very truly I tell you, you are looking for Me, not because you saw the signs I performed but because you ate the loaves and had your fill.
Do not work for food that spoils, but for food that endures to eternal life,which the Son of Man will give you. For on him God the Father has placed his seal of approval.”
Then they asked him, “What must we do to do the works God requires?”
Jesus answered, “The work of God is this: to believe in the One he has sent.”
So they asked Him, “What sign then will You give that we may see it and believe You?  What will You do?
Our ancestors ate the manna in the wilderness; as it is written: ‘He gave them bread from heaven to eat.’”
Jesus said to them, “Very truly I tell you, it is not Moses who has given you the bread from Heaven, but it is My Father who gives you the True Bread from Heaven.
For the Bread of God is the bread that comes down from Heaven and gives life to the world.”
“Sir,” they said, “always give us this bread.”
Then Jesus declared, “I AM the Bread of Life. Whoever comes to Me will never go hungry, and whoever believes in Me will never be thirsty.

Verses 25-35

What promises!!!  To know that if we follow Him—The Bread of Life—for eternity we will never spiritually hunger or thirst!  Our devotional writers—Tina, Laura, Cynda, Ann, and Ahmee—have shared some great truths with us this week.  Here are a few highlights….

In The Bread That Quenches Thirst and Hunger, Ahmee reminded us that Jesus is the provision of all that we need:

“Jesus says that He is our Light and that He will lead us in this life we live.  Jesus also says that He is the Bread of Life.  Not only does He light our paths, but He sustains us spiritually.

Everyone is searching for something.  We all are missing something in our lives. We all have a hunger/thirst that only the Lord can fill.  That is how we were made to be. God being the total Provider that He is, made provision for us to have all that we need.  In Jesus, God gave us so much.”

…this same God who takes care of me will supply all your needs from His glorious riches,
which have been given to us in Christ Jesus.
Philippians 4:19

In Eternal or Temporary, Cynda drew our attention to a few points from this passage:

“As I was reading this passage, three key points struck me:

  1. The Bread of Life never perishes (John 6:27) whereas material things perish and earthly food spoils.
  2. The Bread of Life is given by God and comes down from Heaven (John 6:32-33). It is a gift freely given whereas we must work to provide food for ourselves. Our food comes from farms and companies that don’t always have our health or best interests at heart. The Divine Bread always gives us the very best.
  3. The Bread of Life gives life to the world. It is spiritual sustenance for our souls. Physical food supports our earthly bodies temporarily. The Bread of Life provides for us eternally.”

In Hunger for the Word of God, Tina reminded us of the great importance of a devotional or quiet time set apart each day to seek God through His Word.

“By asking for God to enter into our devotional/quiet time, you are inviting the Holy Spirit to speak to your heart.  By allowing the Holy Spirit to be with you, God has the opportunity to speak life into the areas of your life which are closed or where truth and healing can begin.  Trust in God and have faith so He can bring new life.  Let the bread of His Word feed your soul and renew you. ”

In Slice of Life, Laura shared some of the words of Jesus to the  apostles during the Last Supper.

And He took bread, gave thanks and broke it, and gave it to them, saying,
“This is My body given for you; do this in remembrance of Me.”
In the same way, after the supper He took the cup, saying,
“This cup is the New Covenant in My blood, which is poured out for you.”
Luke 22:19-20

“When Jesus attended the last supper, He gave the twelve disciples a piece of Himself through communion with Him.  He would give the rest of Himself to everybody through His death on the Cross.  He would become the Bread needed to have eternal life.”

In The Word Is Life, Ann reminded us that Jesus is the Living Word.

Jesus is the Living Word and the Bible is the written Word.  Jesus call Himself the Bread of Life and elsewhere He relates this bread to the Word of God:

Man does not live by bread alone
but on every word that comes from the mouth of God.
Matthew 4:4

Therefore we eat His flesh by remaining in Him and by receiving and obeying the Word of God.

Easy Chicken Mole

Easy Chicken Mole

The first time I had mole (say moe-lay) it was at a small but very well-regarded Mexican restaurant in Los Angeles, La Loteria.  I had heard of mole poblano before and decided to take a chance.  Que rico!  What a glorious taste!  It was rich, a tiny bit spicy, a little bitter, and a little fruity.  It was really a savory fiesta in my mouth.  However, when I went home with the intent to find out more about this magical dish and how to make it, all the recipes I saw were 40 ingredients long and took days to make.  No me gusta – I just didn’t have time to mess with that.  So after some more research, I came up with this recipe – my Easy Chicken Mole!

The two ingredients that most moles share to give them such depth of flavor are dried chiles and chocolate.  Really!  Buy the darkest chocolate you can find.  You can use baker’s unsweetened chocolate, but that will make it bitter, and you’ll probably want to bring it back around with some added honey or brown sugar.  I used bittersweet chocolate, 63% cacao.  I think it worked well, and next time I might even add a little more.

As far as the chiles go, it gets a little confusing.  Oftentimes a chile will have one name when it’s fresh and a different name when it’s dried (I guess kind of like grapes vs. raisins.)  To be honest, I think I bought ancho chiles, but I’m not sure – there were two kinds and neither were labeled!  You want chiles that are a very dark reddish-brown—like the color of dried blood—and about fist-sized.  I used two but I may use three or even four next time.  I removed the seeds, and that’s where the heat resides, so you only get the smoky, fruity flavor of the chiles and not the spiciness.

Try this recipe.  If you’ve never had mole, this is a great place to start.  If you are a mole aficionado, go ahead and tweak my recipe to get the taste you like.  Either way, I bet you’ll say, Que sabor!  (Or if you don’t habla espanol, ‘So tasty!’)

Easy Chicken Mole

Ingredients:

  • 2-4 dried chiles (use ancho, pasilla, or guajillo)
  • 2 onions, chopped
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup sesame seeds (or use pepitas, peanuts, or almond butter)
  • 1/4 cup dark chocolate chips
  • 1/4 cup raisins
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 2 cups chicken stock
  • 1/2 cup brewed coffee
  • 2 slices bread
  • 2 pounds boneless, skinless chicken thighs (or use breasts, up to you!)
  • diced avocado, cilantro, sesame seeds to serve
  • rice or tortillas to serve, optional

Directions:

  1. Put the dried chiles in a bowl and cover with boiling water.  Put a plate over the bowl and let the chiles soak for about 15 minutes.  When they have softened, remove the stem and seeds and roughly chop.  Discard the stem, keep some seeds if you want some heat.
  2. While the chiles are soaking, cook the onion in the butter in a very large pot or Dutch oven.  Stir to make sure they don’t burn.
  3. Add the chopped chiles, minced garlic, and sesame seeds.  Stir and cook for 3 minutes.
  4. Add the chocolate, raisins, cinnamon, salt, and oregano.  Stir to combine and cook for another 2 minutes.
  5. Add the chicken stock and coffee.  Crumble in the bread.  Cover the pot with a lid and simmer for 10 minutes.
  6. CAREFULLY transfer sauce to a blender and blend until pretty smooth.  You could use an immersion blender, too.
  7. Return the sauce to the pot and add the chicken thighs.  Tuck them into the sauce and stir.  Make sure the chicken is covered in sauce, then cover with the lid.  Let simmer for about 25 minutes.
  8. The chicken is done when you can shred it with forks.  To serve, ladle the chicken and lots of mole into a bowl.  Garnish with lots of avocado, cilantro and sesame seeds.  You can also eat this in tortillas – just serve with less sauce if you are making tacos.  You can also serve it over rice to soak up the sauce.

I AM the Bread of Life‘ is the first of the seven I AM statements recorded in John’s gospel.  Each of the I AMs emphasizes an important aspect of the personal ministry of Jesus.  This first statement tells us that Christ is the sustenance that nourishes spiritual life.

Jesus said… “I tell you the truth
unless you eat the flesh of the Son of Man
and drink His blood you have no life.”
John 6:53

We receive spiritual life by believing in Christ and sharing in the redemptive benefits of His death on the Cross (Romans 3:24-25, 1 John 1:7).  We continue to have spiritual life as we remain in fellowship with Christ and His Word. (Compare John 6:53 and 63).

“…the words I have spoken to you are spirit and they are life.”
Verse 63

Thus we partake of Christ as we continue to have faith in Him and prayerfully receive His Word.

Jesus is the Living Word and the Bible is the written Word.  Jesus call Himself the Bread of Life and elsewhere He relates this bread to the Word of God:

Man does not live by bread alone
but on every word that comes from the mouth of God.
Matthew 4:4

Therefore we eat His flesh by remaining in Him and by receiving and obeying the Word of God.

Father, we thank You for Your goodness and mercy that follows us all the days of our lives.  We thank You because You are not man that You can lie nor son of man that You can change Your mind…what You say You will do, surely You will do it.  We thank You for the grace to reunite us with Christ.  Give us the grace, Lord, to obey and absorb what is truth in our hearts.  May Your name be glorified.  In Jesus’ name, Amen.

The Bread that Quenches Hunger and Thirst

Recorded in the Gospel of John, our Lord made seven statements referring to Himself as I AM

I AM The Light of the World
I AM The Bread of Life
I AM The Door

I AM The Good Shepherd
I AM The True Vine

I AM The Way, The Truth, and The Life
I AM The Resurrection and The Life

Each week during this season of Lent, here on the Seeking Him blog, we will be focusing our devotionals on a different aspect of Jesus’ revelation of Himself as I AM.  The aim of Lent should be to prepare our hearts for the remembrance of Jesus’ sacrifice—His trial and torture, the Crucifixion and His death…and above all, the celebration of His Resurrection from the dead.  We pray that this will be a great encouragement to each of you who read them.  And that all of us will consider the significance of Jesus’ words and, through them, be helped as we remember and are thankful for all Jesus went through during the last few weeks of His life on this earth.

Then Jesus declared, “I AM the Bread of Life.
Whoever comes to Me will never go hungry,
and whoever believes in Me will never be thirsty.
John 6:35

Jesus says that He is our Light and that He will lead us in this life we live.  Jesus also says that He is the Bread of Life.  Not only does He light our paths, but He sustains us spiritually.

Everyone is searching for something.  We all are missing something in our lives. We all have a hunger/thirst that only the Lord can fill.  That is how we were made to be. God being the total Provider that He is, made provision for us to have all that we need.  In Jesus, God gave us so much.

…this same God who takes care of me will supply all your needs from His glorious riches,
which have been given to us in Christ Jesus.
Philippians 4:19

Many people search high and low to fill a longing that they do not understand. Even as Christians we can sometimes forget that we already have all that we need in Jesus. We can often fall into the trap of relying on our money or our jobs or our friends or our family to help us feel better about ourselves or the things happening in our lives. We find comfort and show pride in the things we have accomplished. Nothing wrong with comfort and pride, but when we lean on it as if it is our Rock…that is where we run into problems. Comfort and achievements can disappear just as quickly as they arrived. The only “thing” we can trust to never change is Jesus. He will always provide for us what we need…always.

Psalms 136: 23-26 reminds us of the Lord’s awesome provision and our need to give thanks to Him for His amazingness.

He remembered our utter weakness. His faithful love endures forever.
He saved us from our enemies. His faithful love endures forever.
He gives food to every living thing. His faithful love endures forever.
Give thanks to the God of heaven. His faithful love endures forever.

Lord, You are all that we need. I thank You that we do not have to go searching through worldly things to find what fills our hearts’ desire. You are enough. You will always be enough. Let us remember that YOU are the Bread of Life. Amen.
