Tex-Mex Shrimp, Tomatoes and Olives

Tenga un feliz Cinco de Mayo!  (Have a happy 5th of May!)  From what I have read the citizens of Mexico do not really celebrate Cinco de Mayo like we here in the United States do!  (What is that all about?!?)  But nevertheless we do!  According to a number of <seemingly> reputable sources, there are more Mexican/Tex-Mexican restaurants here in the US than any other ethnic-style restaurants.
And we all have our favorites, right? Of course, tacos in all their many variations probably reign supreme. But guacamole, salsa & chips, burritos, _________ (fill in your fav!) are extremely popular also.  Do you and your loved ones plan to indulge in some Mex or Tex-Mex foods today?
Here is a dish that Robert and I enjoyed recently which would be perfect for lunch or supper!  I served it with homemade guacamole (easy-peasy!) along with this black bean salad.  This meal fit so well into our healthy but oh-so-yummy POV—lots of fresh veggies, healthy fats, and protein low in fat and calories. But, best of all, delicioso! ¡Buen provecho! (Enjoy!)

Tex-Mex Shrimp, Tomatoes, and Olives

ingredients:

2 teaspoons olive oil
1 medium red onion, halved and sliced into thin half moons
1 jalapeño pepper, seeded and very thinly sliced, (optional)
2 tablespoons minced garlic
1 pound shrimp, peeled and cleaned
1 cup grape tomatoes, halved
1/2 (or more!) cup pitted green olives
1 lime, zested and juiced
lemon-pepper seasoning, to taste
1/2 avocado, cubed
1 lime, cut into 4 wedges (for garnish)

directions:

  • heat oil in a large saute pan over medium heat
  • add onion and jalapeños (if using), cook for 7-8 minutes ‘til just beginning to soften
  • lower heat and add garlic; cook, stirring constantly for 1 minute
  • stir in tomato halves, cover and cook for 3 to 4 minutes’ til tomatoes begin to soften
  • add olives, lime juice, and zest; cook for 5 minutes more to allow flavors to blend
  • season well with lemon-pepper seasoning (or simply salt & pepper)
  • garnish as desired

God so wants to bless us!  All we have to do is call upon His name and He will bend His ear to hear our cry.  For we have been grafted into His family through Jesus Christ, His on.  Without the people of Israel—the Jewish people—we would not have the Bible and we would not know the person of Jesus.  We are a blessed people!
As we go through this week, let’s focus our thoughts on the nation of Israel, finding ways to bless them by praying for them daily and lifting up their nation. Asking for their protection, we are bringing on a blessings to us…for we are to bless God’s people.

In the Middle: It’s Called Balance

Since you have been raised to new life with Christ,
set your sights on the realities of heaven,

Think about the things of heaven, not the things of earth.
For you died to this life, and your real life is hidden with Christ in God.
Colossians 3:1-3

Verse 1 of this passage tells us to “…set our sights on the realities of heaven…”  I agree with this statement (it is in the Bible, after all, and it is not wise to argue with the Bible).  However, I also believe in balance.  Although the reality of heaven is very real, we are not to be blind to that which is going on around us.  If we did this, a countless number of souls would be lost because everyone would be solely concerned with the afterlife.

I believe what this verse is saying is that we need to live our lives with heaven in mind; but not to ignore our earthly life now and live in a dream world.  Nobody ever said, “I’m running low on gas in my car…oh well, that’s an ‘earthly’ thing. I don’t need to be concerned with that.”  The facts are as facts are: if you don’t stop to get gas, you will run out.

No, we don’t need to worry about things in our lives because God will provide for us in all situation.  However being practical is not the same thing as “worrying or being concerned with.”  Jesus felt that it was important enough to come to Earth and help people. He came and walked among the people of earth.  He did good deeds and performed miracles.  And we should do as He did.

Colossians 3:3 says, “…your real life is hidden with Christ in God.”  Let us live for our God.  Let us point people towards Him. Let us remind each other and comfort each other discerningly with the very real reality of heaven.  Sometimes, we can get so overwhelmed with life and forget that all that we strive for here will pass away.  In these moments—when we are so immersed in our earthly doings—we need each other to remind us that what we have here on earth is not all that we have.  Matthew 6:19-20 says, “Do not store up for yourselves treasures on earth…but store up for yourselves treasures in heaven…” We live with our ultimate goal in mind, but we don’t simply stop being productive.

Be productive for God…always point people to the Father.
And remember that heaven isn’t all that far away.

Surely I am not the only one that can relate to these words!  Thoughts and questions just like these have played over and over in my head at least a thousand times (sometimes in just one day) but as I was listening to this song on the radio, the light bulb went on!  I have to know WHOSE I am before I will really understand WHO I am. Duh!  {Mental head slap here}

As I looked through the many lists of Scriptures about ‘who I am’, I began to see ‘Whose I am’:

For you are all children of God through faith in Christ Jesus.
Galatians 3:26 NLT

But you are a chosen generation, a royal priesthood,
a holy nation, His own special people…
1 Peter 2:9 NKJV

…For our citizenship is in heaven…
Philippians 3:20a HCSB

So, as those who have been chosen of God, holy and beloved…

Little children, you are of God [you belong to Him]

I am a child of God!

And He holds me close.

Since I belong to Christ, that means:

Did you get that?  We are God’s masterpiece!

A masterpiece is beautiful.  It is lovely.  It is treasured.  It is of immeasurable worth!  So that means God sees us as beautiful, lovely, treasured, and of immeasurable worth!

Knowing Whose I am gives me a sense of identity, of self confidence.

We are strong, we are good enough, we are loved!
{And I really need to remember that!}

How many times do you question if you are where God wants you to be?  The hurt and heartache are too much.   And you think that if this was His will, it would be so much easier.  That’s so not the truth!  Nowhere in God’s letters to us in His Word does He say that we are to be happy.  Rather we are to have joy and the peace that passes all understanding.  And that the storms are never too strong that He can’t still quiet them.

We are so blessed to have a Father Who is there to pick us up when we are tired and Who lifts us above the circumstance so that we can see the way.  The path may seem dark but His light shines so bright in those times and He meets you right where you are.  You don’t have to be good enough or smart enough, you just have to be willing to follow Him through it all.

And when God’s loving arms wrap around you tightly, it is time for you to let go and let Him take over.  He is capable and so willing to take your burdens.

It is the Lord who goes before you.
He will be with you;
He will not fail you or forsake you.
Do not fear or be dismayed.
Deuteronomy 31:8

I have set the LORD continually before me;
Because He is at my right hand, I will not be shaken.

Let us pray:  Dear God, You are so amazing!  You love us so much and You truly care about each problem we have, big or small, and You want to lift it from us.  Lord, help us to be able to let go of the things that are keeping us from moving forward and let Your capable hands take over.  And, today, give those who really need to feel Your Presence an extra special moment that can only come from You.  In Jesus’ name, amen.

This Week…1 John 4:4

This week, here on the Seeking Him devotional blog, our sisters have been encouraging us with this Truth.     Here are a few highlights from the devotionals that Tina, Laura, Cynda, and Ahmee wrote earlier this week.

In Success, Cynda did a Biblical word search on ‘success’ and shared a number of verses with us.  She wrote of a common struggle we have:

“All of us want success.  Yet so many times we get bogged down and frustrated.  Why?  We forget to let God lead.  We forget He is always with us.  We forget He is greater than anything we could come up against.”

(And then reminded us of the truth:)

“Who brings about our success? God
Why? Because we seek His guidance and leadership
How? Because God is Greater than he who is in the world”

In Who You Are, Ahmee shared some things that have been happening in her life and the struggles she has been going through.  She shared some good encouragement about what we choose to believe about ourselves.

“Be mindful of the spoken words you choose to believe about yourself. John 8:44 says that the devil is ‘the father of lies’.  The people we encounter may not be of the devil or demons, but their words can be used to plant seeds that Satan will use against us.  Anything time you choose to believe words spoken about yourself, first test it against the Word of God.  God has the final say about who you are, because He made you.  God is greater than Satan.  He will always be greater than Satan. Therefore, His Word is always going to be greater than anything Satan could have to say about us.  Test the words you hear, against the Almighty’s words. ”

In Living In Us, Tina  shared a very good question:

“How to be in the world but not of the world.  We strive everyday to live in a fallen world…surrounded by hate, mistrust, deception, malice, negative thoughts, and backbiting.  We are guilty of it no matter how hard we may try to remove ourselves from it.

The question is, how do we live in the world but not of the world ?
By inviting the Holy Spirit to live in us.”

In Weapons of God, Laura shared an experience and how it reminded her of Who is living in her and how that protects us.

“This past weekend I had the joy of enjoying the Priscilla Shirer simulcast…her topic was on the armor of God.

God is greater than all in the world.  He is greater than man and greater than all disasters and sin on the earth.  It is hard to protect ourselves from the world.  Yet, when we accept God we are from God. He sends us to spread His message, and we must be prepared.  The armor of God is a set of weapons that we can use to protect ourselves with and be part of the one who is greater than us.”

We certainly can sense there is turmoil and strife in the world.

They were filled with all manner of unrighteousness, evil, covetousness, malice.
They are full of envy, murder, strife, deceit, maliciousness.
They are gossips….
Romans 1:29

God knew there would be trouble in our lives.  Some because of our choices and some because of the world.  It is how we meet those challenges, lifting His name in all situations, that sets us apart from the world.  He will not always remove the testing, but He will walk with us through it.  If God can be with David all the while, He will surely be with us.

We need to search our hearts to see where we might doubt Him—where our faith is weakest.  We must ask God to help us strengthen it, to help us grow our faith, and to trust more and more.  David sometimes wondered where God was; and even the prophets did, too.

Look at Elijah….  With God, he had just destroyed all of the prophets of Baal but upon hearing that Jezebel was going to kill him, he was afraid. But isn’t that the man in us—our human side? To forget what God had just done…?  (How quickly we forget when our peace is threatened?)  God knew that Elijah was tired and needed rest and reassurance.  After receiving it, Elijah’s faith was restored and God told him what would happen in the future (see 1 Kings 19).

As God was faithful in restoring Elijah,
how much more will He restore us?

Humble yourselves, therefore, under the mighty hand of God
so that at the proper time He may exalt you,

casting all your anxieties on Him, because He cares for you.
Be sober-minded; be watchful.
Your adversary, the devil, prowls around like a roaring lion,
seeking someone to devour.
Resist him, firm in your faith, knowing that the same kinds of suffering
are being experienced by your brotherhood throughout the world.
And after you have suffered a little while, the God of all grace,
Who has called you to His eternal glory in Christ,
will Himself restore, confirm, strengthen, and establish you.

Sriracha Popcorn

Sriracha Popcorn

I have a well-documented popcorn addiction.  I’m not ashamed!  I like to fiddle around with the flavorings and see if I can change it up from regular butter and salt.  I think this one is an experiment gone RIGHT:  Sriracha Popcorn!

I went pretty easy on the Sriracha because I knew my girls would want to eat some of this and I didn’t want to burn their little tongues.  But if you live in a house full of chile heads, crank it up!  I used honey to balance out the spiciness, but you could use brown sugar instead.  Ready to get poppin’?  Let’s go!

Sriracha Popcorn

Ingredients:

  • 4 tablespoons butter
  • 1 teaspoon Sriracha (or other hot sauce – use more if you like!)
  • 1 teaspoon honey
  • 1 teaspoon Mrs. Dash, Italian herb blend, or other seasoning blend
  • 3 tablespoons grapeseed oil or coconut oil for popping
  • 1/2 cup popcorn kernels
  • salt to taste

Directions:

  1. In a small pan over very low heat, melt together the butter with the Sriracha, honey, and seasoning blend.
  2. Meanwhile, pop the popcorn in the grapeseed oil.
  3. When popcorn is popped, pour the Sriracha butter over the popcorn.  Cover with a lid and shake.  Add salt to taste and shake again.  Store any leftovers in a Ziploc bag.

I play music in my car almost constantly. And while most of my selections create a sense of peace and calm in the mornings with an uplifting beat as we began our journey, there are times when some songs do more than this.

Over the past few months faith has been at the center of my thoughts and prayers.  I have cried to God asking Him to give me strength, asking that He open my eyes to situations that will require me to walk in faith.  I read stories of heroes and heroines of the Bible walking in their faith…and great things happening!  But here I was—I felt faithless, helpless.  I didn’t know how to be like David, or like Peter.  I felt as if I did not have even an ounce of faith to stand on.  It was a scary place filled with what feels like very little hope.

I was talking to my husband and he reminded me that all God asks for is faith the size of a mustard seed.  I went and googled what a mustard seed looked like; and realized that a mustard seed was truly all I had.  I realized that I could be like David and tackle the Goliaths of my own life, and I could walk up the mountains in my life, move them, making the sacrifices necessary, all because I did have faith like that little mustard seed.  And slowly (and not without days of questioning) I realized that God was all I needed.  Some days my faith was shown by simply saying the name of Jesus when I did not know what to do.

All this week I have been seeking direction in finding a song to share in this blog. I wanted something different—something that spoke not only to my own heart but one that would speak to the heart of the women who read these words.  While driving I heard this song but kept missing the title.  Finally I caught it and pulled up the lyrics.  These words mirrored what I have been feeling, what I have been praying about.  They shared my fears, concerns, and shortcomings, but they also gave me hope.  The last nine lines of the song express what I want to and can tell myself daily.  These are truths I am making an intentional choice to stand on.

I believe You’re strong enough to save
I believe every promise You’ve made
And when I just don’t understand,
You hold my world inside Your hands

I’ll speak Your word and mountains move
I’ll reach beyond all I can do
‘Cause You’re doing things I cannot see,
So I’m gonna trust You and believe
You are all I need, give me faith

Dear Heavenly Father,
Thank You that mustard seed!  You can do great things with something so small…this fact amazes me daily.  Forgive myself and others who have allowed our fears, our shortcomings, our life in general to hide the truths in the words of this song.  You are enough, and because You are enough, we are enough.  Because You stand by Your promises, we can move mountains, whatever they may be.  You are all we need Lord!  You and our mustard seeds.  In Jesus Christ’s name we pray.  Amen.
