Veggie-full Chicken Chili

It’s getting to be that time of year when a soup or a stew or a chili are often on the menu around here; how about at your house?  If you have followed this blog for a little while you have heard how VERY MUCH my husband enjoys soup—any kind of soup…the more variety the better!  So, I figured I should dust off my soup recipes and find a few more that I could add to our soup repetoire.

This—Veggie-full Chicken Chili—filled a vacancy amongst the recipes I rely on.  And it fits so well into our healthy but oh-so-yummy POV.   NOTE: Important to keep the size of the veggies approximately the same size so that they will cook well together.

And this easily could be adapted in a few different ways to make it just exactly the way YOUR family would enjoy it:
–  increase the spices
–  use a different bean (or more beans)
–  add more liquid
–  skip the tomatoes (now it is a White Chicken Chili)
–  add more variety of veggies and leave out the chicken

Veggie-full Chicken Chili

ingredients:

2 to 3 tablespoons olive oil
1# ground white-meat chicken
1 medium onion, diced
1 large red, orange or yellow bell pepper, seeded and diced
2 small zucchini, diced2015-09-19 19.10.50
5-6 ounces baby bella mushrooms, diced
2 tablespoons minced garlic
1 teaspoon ground cumin
1 tablespoon chipotle powder
2 teaspoons dried coriander, or oregano
1 teaspoon sea salt
1 tablespoon freshly ground black pepper
1 (15 ounce) can chickpeas, rinsed and drained
1 jar of salsa (I used salsa verde)
2 heaping tablespoons tomato paste
1/2 of a 28 ounce can chunky crushed tomatoes
2 cups chicken broth
toppings: chopped fresh cilantro, diced avocado, shredded cheese, sour cream

 

directions:

  • heat 1 teaspoon of oil in a large saute pan over medium-high heat
  • carefully add the chicken; cook for 5-6 minutes, gently chopping so that it breaks down into small pieces and ‘til the chicken is cooked through
  • remove to a bowl and set aside
  • add a tablespoon of oil to the pan; when heated, add the onion and peppers. cook for 5 minutes
  • then add in the zucchini and mushrooms; stir together to distribute the oil (adding a bit more if necessary); cook ‘til all veggies are softened
  • lower heat; add garlic and spices; stir constantly for 1 minute or so ‘til fragrant
  • increase heat again to medium and add in the chickpeas, salsa, tomato products and broth; stir well to thoroughly combine; bring up to a simmer
  • reduce heat and allow to simmer for 15 minutes or so
  • serve along with any of the toppings you prefer

This Week…Psalms 139:19-22

If only You would slay the wicked, O God!
Away from me, you bloodthirsty men!
They speak of You with evil intent;
Your adversaries misuse Your name.
Do I not hate those who hate You, O Lord,
and abhor those who rise up against You?

This week, here on the Seeking Him devotional blog, we have continued along in our series on this wonderful chapter, Psalm 139.  The passage that our devotional writers have written on is NOT an easy one.  But each of them has reminded us of the standard that God has for us and the example that Jesus set.  Here’s a little of what they shared….

In Loving Our Enemies, Ahmee reiterated the standard we already know….

Did Jesus agree with sinning?  No.  But yet he was still able to mingle among sinners.  Jesus did not stand apart from them and shake his finger at them. Not our Jesus.  That is just not how He operated…We are so quick to point fingers at other people, especially non-believers.  We cannot hold non-believers to the standards we would believers—they don’t believe what we do.  Our first goal should be to win them over and show them God’s love and mercy.  I say this in regard to Psalm 139:22, where it says, “I have nothing but hatred for them, I count them my enemies.”  The psalmist does say this, but we have been called to love those in the world.

But I tell you, love your enemies and pray for those who persecute you.
Matthew 5:44

As followers of Jesus, He obey His commands…and if He said that we are to love our enemies…then we are to love our enemies.  He is not saying  “Love all the sin that your enemies do.”  Nope.  He is saying—love the person, hate the sin.

In Attitude Towards Righteousness and Wickedness, Ann reminded us of God’s attitude….

Having meditated on God’s great love for him, the psalmist reciprocates with great love and loyalty to his Lord.  His anger is stirred against those who oppose and blaspheme God’s wonderful name.  In deep sympathy with God and His cause, he so identifies himself with the Lord that he hates what God hates and loves what God loves.

You have loved righteousness and hated wickedness
therefore God, your God, has set you above your companions
by anointing you with the oil of joy.
Hebrews 1:9

This shows that it is not enough for God’s children to love righteousness, they must also hate evil.  We see this clearly in Christ’s devotion to righteousness (Isaiah 11:5) and His hatred of wickedness in His life.

In Respect, Tina reminded us of the importance of respect….

Through respecting and honoring them, I am showing the same respect for God.  God tells us we will be blessed with long life and abundance when we respect and honor our parents.  But we also need to teach this to our children and to those around us.  When everyone has a respect for each other, then this world will become a better place.  It only needs to start with us.

Honor your father and your mother,
so that you may live long in the land the Lord your God is giving you.

Here is David…once again…on the run for his life from Saul, hiding in a cave, acknowledging the need for his God’s deliverance and protection.  And don’t you just love his motivation?  Listen again to what he writes:

“…[so] that I may praise Your name,
then the righteous will gather about me because of Your goodness to me.”

Yes, he definitely needed to be rescued from the cave.  Yes, he surely needed to be delivered from this situation.  Yes, he absolutely was in dire straits fearing for his life.  But, even more than being rescued, delivered, and saved, he wanted to praise his Deliverer, his Rescuer, his Savior and tell others about God’s goodness.

And this was always the recurring theme of David’s heart—to praise God!  Even now, thousands of years later, you and I are so often brought to the place of praise through the beautiful, praise-filled words of David’s psalms, yes?  Here are a few of my oh-so-very favorites:

But I have trusted in Your lovingkindness;
My heart shall rejoice in Your salvation.
I will sing to the Lord,
Because He has dealt bountifully with me.
Psalms 13:5-6

My mouth shall tell of Your righteous acts
and of Your deeds of salvation all the day,
for their number is more than I know.
Psalm 71:15

Many, O Lord my God, are the wonders which You have done,
And Your thoughts toward us;
There is none to compare with You.
Psalm 40:5

In Psalm 142, we hear of David’s desire to not only praise God for rescuing him but that other’s, also, would praise God for this.  How about me (and you)?  When we cry out to our God for His deliverance in our situations and circumstances, is it only for relief for ourselves?  Or is our prayer that out of our deliverance would come honor and glory and majesty and praise of our God…? Oh, for sure, we need God’s deliverance!  Daily each of us need God’s provision and protection and blessing.  But we should always be sure to tell others about the wonderful and mighty and awesome things that He does as He cares for us.

So, tell us, would you…how has God set you free lately?  We would love to praise His name because of His goodness to you!

We hear in this sweet song (and read in Psalm 19:7-14 which inspired it)  that God’s commands (His laws, His statutes, His precepts, His decrees) are:

  • perfect…they convert our souls
  • right…they give joy to our hearts
  • sure…they make us wise
  • pure…they give light to our eyes
  • true…they all are righteous
  • clean…they endure forever

How encouraging is that?!?  What a merciful, gracious, kind, compassionate God we serve!  Throughout time, He has communicated with His people and given them His commands—which, in this psalm, include His laws, statutes, precepts, and decrees.

In the beginning, God told His man, Adam, ONE simple command—not to eat of the tree of the knowledge of good and evil in the Garden (Genesis 2).  To the children of Israel as they journeyed for forty years to the Promised Land, He gave them His rules to follow (e.g, Deuteronomy 6).  When Jesus was instructing His disciples, He pulled it all together, giving them TWO direct commandments—1) to love God with their whole heart, soul, mind, all their strength and 2) to love their fellow man as they loved themselves (Mark 12:29-31).  Our hearts’ response to our loving God should be loving obedience…plain and simple.  I pray that the following verses will be a reminder and encouragement for us all to trust and obey the Great I AM.

In fact, this is love for God: to keep His commands.
And His commands are not burdensome.
1 John 5:3

I obey your precepts and Your statutes, for all my ways are known to You.
Psalm 119:168

Blessed are those who keep His statutes and seek Him with all their heart—
Psalm 119:2

Thank You, dear Lord, for how gracious, kind, and merciful You are to us.  You are not a harsh, exacting God Who demands perfection…rather You are a loving Father Who sets righteous, life-giving commands before us!  You guide us and help us to seek You and obey You from our hearts.  You are SO good!!!  We love You, Father…and pray in Jesus’ name.  Amen.

Indian-spiced Chicken and Spaghetti Squash

Have you noticed ALL the squash at the grocery store (even more abundant, probably, at your local farmer’s market)?  Oh, h-a-p-p-y me!  This week there were quite a few small-ish spaghetti squash…so I snatched up 3 of ’em!  They are the perfect size for a meal for two (and some leftovers).  Spaghetti squash, as most of you know I am sure, is a really good substitute for traditional spaghetti…minus most of the carbs.  Here is some nutrition info for spaghetti squash.  This fits in so well with our ‘healthy but oh-so-yummy‘ POV.

My husband Robert’s favorite rendition of “spaghetti squash and…” is with Italian spaghetti sauce and meatballs.  But me…I am not a huge fan of so much liquid being dolloped over top the prepared spaghetti squash.  So this is what spaghetti squash #1 became….  The ‘warmth’ of the garam masala, the cumin, and turmeric spices added so much to fairly flavor-less ground chicken and spaghetti squash.  Enjoy!

Indian-spiced Spaghetti Squash

ingredients

small (2#) spaghetti squash
1 pound ground chicken (or turkey)
1 tablespoon + 1 teaspoon coconut oil (or extra-virgin olive oil)
1 small sweet onion, diced
1/2 teaspoon cumin
1 teaspoon turmeric
1 tablespoon garam masala
1/2 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 teaspoons minced garlic
10-12 ounce package frozen chopped spinach, defrosted and squeezed dry
handful (or two) of cherry or grape tomatoes, halved
1 cup frozen peas
1/2 cup chicken broth (or water)

directions

  • cook the spaghetti squash (wash the skin off first). I usually just microwave it…in 5 minute increments ‘til the outside is softened and a sharp knife easily pierces the skin. (there are a number of other methods, click this link for some suggestions.) when done, set aside ’til cool enough for you to scoop it out
  • in a large saute pan, add 1 T of the oil and heat over medium heat
    add the ground chicken and cook, stirring occasionally, for 8-10 minutes; remove from pan and set aside…season w/s&p
  • add the diced onion to the pan (and additional 1 tsp of oil, if necessary); 2015-09-14 20.15.50saute for 5 minutes or so
  • reduce heat and then add the seasonings and the garlic; continue to cook, stirring constantly, for another 3-4 minutes to allow flavors to blend together
  • then add the spinach, halved tomatoes, and peas; stir to combine.  pour broth evenly over top; cover the pan and simmer ‘til broth has been absorbed (just a few minutes).
  • meanwhile, using a fork, scrape out strands of spaghetti squash; season well with some additional s&p.  pile up in serving bowl to make a nest of the ‘noodles’; top with meat mixture (NOTE: if spaghetti squash has gotten cold, place in a small saute pan along with a pat of butter and gently heat)

Change My Heart, o God

{friends, this week the verses from Psalm 139 that our devotionals will focus on are not the prettiest…not the most praise-filled…not any thoughts to emulate.  these thoughts of the psalmist are a response, a reaction to things happening in his life…and his outraged cries to his God.  what a gracious God that He allowed him to speak from the depths of his heart…and that He allowed us to read and ‘hear’ these words.  we, too, at times respond like this to evil and persecution.  But we know that Jesus taught that LOVE is the response…and to NOT hate our enemies.  as such, like the psalmist, we need to change our thinking, our responses.  we need God to help us to change our heart.  This song is a great tool to do so.  I pray for you (please pray for me, too!) that we will seek God asking Him to change us, to mold us, to help us to be like Him.}

This Week…Psalms 139:17-18

This week, here on the Seeking Him devotional blog, we have continued along in our series on this wonderful chapter, Psalm 139. Our devotional writers have reminded us how vast, how precious, how awesome are God’s thoughts of us.  Here are a few of their thoughts….

In Thoughts, Tina reminded us about being still and waiting on God….

David was a great example of waiting and sitting before the Lord.  He would go to a quiet place and meditate on the great love God had shown him and his family…David was wonderful at being humble.  He did not let the fact that he was a king stop him from baring his heart and soul to the One who formed him in his mother’s womb.

As we wait on God to answer our prayers, we may become discouraged thinking, “He does not care about my little issue…” or,  “I have asked way too many times about the same thing….”  Let’s change our thoughts.  Let’s see how they align with Scriptures.  God wants us to acknowledge that He is first in our lives (not second, or third, or even fourth).  We need to train ourselves to put Him first in all that we do, all that we think, and all that we are.

In What He Thinks of Me, Ahmee reminded us of Who’s thoughts of us we should be concerned….

…However, not all opinions should be accepted.  In fact, before we accept anything about ourselves we should prayerfully go to God.  He can show us our flaws in a different light and show us what He thinks and show us how to change.  God does that.  Now, if God says that it is so, then it is so.

…We are loved and thought very highly of. God sees our potential and loves us right where we are.

Thankful to be in Your Presence

How awesome is this Truth, oh Lord, that Your thoughts of us are vast…and, really, uncountable!  This Truth humbles us!  And yet it also leads us to draw closer and closer to You, our Faithful God!  May our hearts and our thoughts of You be as the psalmist communicates as we meditate on this passage.   May we recognize the privilege of being in Your presence.  May the thought of Your presence be oh-so-very precious to us.  We love You and adore You, dear God!  We pray these things in Jesus’ name.  Amen.
