When life becomes hard, we  call out to God and trust in Him…or we turn our back on God.  Steven Curtis Chapman lost his daughter to an accident several years ago.  In working through his pain, God was able to give him this song. Steven was able to use this in his pain and grief,  and give that away to others who are hurting.

Something Beautiful reminds us that hard times come into our lives.  The way we walk through the trial determines how we come out on the other side of it.  If we walk through it with our eyes on God, then it will not be so hard.  That does not mean we will not walk through the emotions…we will.  That is all part of the process.  You see, we believers have a Hope.  We have a Hope to see our loved ones when we get to heaven.

I pray this song blesses you as you listen to it.  I pray that you are able to heal in ways you never would have imagined.  I pray that you will seek Him for your healing.  God does not want you to stay in one place.  He wants you to go out and share your story.  And never being ashamed of your past.  Let your past go and share your story with others.  You never know what sharing your story will do for others.

Glazed Baby Beets and Carrots

Wait ‘til you see what I found at the grocery store!

So with my list in hand, I started wandering through the produce department… sweet potatoes; check.  Cantaloupe; check.  Red grapes; check.  Broccoli crowns; check! And then I noticed this mound of small brownish-purplish balls filling the case beneath the broccoli…what?  They were baby beets!  Not on my list…but who cares? AND (thank You, Lord!) they were only 99cents per pound! So, 3 pounds came home with me!

I knew that I wanted to feature them in our At Home w/ GCH blog today, but I had to come up with a different way to prepare them. It couldn’t be my favorite way to serve (ok, eat!) beets—roasted over baby greens with goat cheese! We’ve already done that here … so I perused the Internet and found a number of recipes for glazed beets. Here’s my version; enjoy!

Glazed Baby Beets and Carrots

Ingredients:
1 pound baby beets, peeled
1/2 pound small frozen carrots (we use these from Trader Joe’s)tjsparisiennecarrots
2 cups juice or chicken broth (I used mango 100% juice)
1 tablespoon honey
3 tablespoons white balsamic vinegar (I used honey balsamic)
sea salt, freshly ground black pepper

Directions:

  • Steam beets and carrots ‘til almost done (when a thin-bladed knife goes through with just a bit of resistance).
  • Set aside the (almost cooked) veggies, and dump the water out of the pan.
  • Into the same pan, add the liquid of your choice and bring to a boil.
  • Pour the veggies back into the pan along with the honey. Stir ‘til combined and bring to a boil.
  • Reduce heat so that the liquid is gently simmering.
  • Continue to cook veggies for 5 minutes or so, spooning the liquid over them occasionally so that they get good and coated.
  • Stir in the balsamic vinegar and simmer for another five minutes.
  • Remove pan from heat, and pour into a serving bowl scraping in all of the liquid, too.
  • Season well with sea salt and freshly ground pepper.
  • Makes approximately 4 servings.

Today, many of us living in the United States feel we have never been truly persecuted for our beliefs…for doing what is right in the eyes of the Lord.  Oh, we may have been called into question for our actions or harshly criticized for our beliefs but persecuted?  Probably not.  Yet persecution has many forms and comes in varying degrees – from insults, harassment, and ostracism to imprisonment, torture, and even death. As representatives of Christ, the fact that we are a Christian will bother some people Our desire to live for Christ, our non-conformity to this world will bring persecution. 2 Timothy 3:12 assures us of this. “Indeed, all who desire to live godly in Christ Jesus will be persecuted.”

As Greg Laurie states: “If you live a godly life, you will be persecuted. It is not a matter of if; it is a matter of when and how much.”

Why the persecution?

If you belonged to the world, the world would treat you with affection and would love you as its own. But because you are not of the world [no longer one with it], but I have chosen (selected) you out of the world, the world hates (detests) you. John 15:19

The world cannot [be expected to] hate you, but it does hate Me because I denounce it for its wicked works and reveal that its doings are evil.                     John 7:7

For everyone who does evil hates the Light, and does not come to the Light for fear that his deeds will be exposed.                                                                                               John 3:20

Persecution is a result of righteous living. Most of us have never experienced the harshest extremes of persecution.  Many of us never will.  But we will experience persecution in some form.  How we react to persecution, in any form, is what matters.  What happens when we are taken out of our comfort zone?  Are we steadfast, consistent, unwavering in the face of challenges?  Or do we run from confrontation and actively try to avoid persecution?  There comes a point in our lives where we must decide if we will stand for our Lord, no matter the cost.  It takes courage to stand for our faith.  The stand we take paves the way for others to follow.

He who heeds instruction and correction is [not only himself] in the way of life [but also] is a way of life for others. And he who neglects or refuses reproof [not only himself] goes astray [but also] causes to err and is a path toward ruin for others.   Proverbs 10:17

Which path are we paving?

Lord, help us to stand our ground and defend our faith no matter what the challenge.  With Your strength we can remain steadfast and unwavering in any situation. You were willing to die on the Cross for me.  Let me be willing to stand firm in doing what is right in Your eyes.  In Jesus’ name, amen…so be it.

Y’know, I think that grace and love must be intertwined in the heart of God…what do you think? It seems that, whenever we see the grace of our Father being poured out, His love is so evident also.

For God so loved the world, that He gave His only begotten Son, that whoever believes in Him should not perish, but have everlasting life.
John 3:16

God had a plan…He made a way…for the redemption of all mankind. Nothing but the grace (and, oh yes, the mercy!) of God manifested through the sacrifice of Jesus could have ever been enough to give us eternal, everlasting life. Throughout the ages, God’s love and grace kept His plan from being destroyed.

He has saved us and called us to a holy life—not because of anything we have done
but because of his own purpose and grace. This grace was given us in Christ Jesus
before the beginning of time, but it has now been revealed
through the appearing of our Savior, Christ Jesus, who has destroyed death
and has brought life and immortality to light through the gospel.

The apostle Paul was a man who always purposed to magnify and speak well of the grace and mercy which he had received. Paul was humbly and completely aware that ‘grace flowed down and covered’ him!

…and the grace of our Lord overflowed for me with the faith and love that are in Christ Jesus.
The saying is trustworthy and deserving of full acceptance,
that Christ Jesus came into the world to save sinners, of whom I am the foremost.
But I received mercy for this reason, that in me, as the foremost,
Jesus Christ might display His perfect patience as an example
to those who were to believe in Him for eternal life.

In all of Paul’s encouragement and admonition through each of the Epistles, he wrote over and over again to the first century believers of the greatness of God’s grace. Paul seemed always to endeavor to help the people (and us, too!) to remain aware and thankful for God’s love and grace!

According as He hath chosen us in Him before the foundation of the world,
that we should be holy and without blame before Him in love:
Having predestinated us unto the adoption of children
by Jesus Christ to Himself, according to the good pleasure of His will,
To the praise of the glory of His grace, wherein He hath made us accepted in the beloved.

You and I have been so overwhelmingly covered by God’s free grace! Each of us, I am sure, has story after story to relate of the love and grace that God has shown to us. The Task of a PeaceMaker

I have a piece of art on the wall in my children’s bathroom with a verse which reads “Happy are those who seek peace, God will call them His children.

I think as parents we have a peacemaking role ingrained in our hearts and minds. I know I’m constantly trying to patch up spats between our three children, or teaching them how to mend relationships at school. It seems that some nights I soak in the peace and quiet that bedtime brings. Peace is a word that is often used in life today. It seems every day that there is another opportunity to spread peace—in the workplace, at home, even at church. But do we confuse quiet and a lack of fighting with true peace?

I don’t think I fully understood the meaning of peacemaker. It’s more than mending fences and encouraging “getting along.” We are tasked with spreading the Word of God and spreading His love to others. Peacemaking is part of this. He is the ultimate Peacemaker, and true peace can only be found in a relationship with our Heavenly Father. So the part of peacemaking that I need to add is to spread His love through examples of His peace…to model His character. This morning I read this… “God’s children reflect His character as they carry Jesus’ peacemaking mission to the world”… and began to think about how many times I have been a peaceTaker as opposed to a peaceMaker…? And wondered about how many times have I actually spread the words of God’s power and His ability to repair any situation, as opposed to simply offering nice words. Thankfully, He has given us a set of instructions, a “how-to” in regards to peace, along with an example of our task to reflect His character for those around us.

Romans 12:17-21
Repay no one evil for evil.
Have regard for good things in the sight of all men.
If it is possible, as much as depends on you, live peaceably with all men.
Beloved, do not avenge yourselves, but rather give place to wrath;
for it is written, “Vengeance is Mine, I will repay,” says the Lord.
Therefore “If your enemy is hungry, feed him;
If he is thirsty, give him a drink;
For in so doing you will heap coals of fire on his head.”
Do not be overcome by evil, but overcome evil with good.

Let’s pray: Dear Heavenly Father, sometimes peace feels so far away, and the task of being a peacemaker seems difficult. But, You have shown us how. True peace can only come from You. Lord, please touch our hearts to model Your character, to be peacemakers and spread the word of Your love and peace. In Jesus’ name we pray, Amen.

Peacemakers:

a person, group, or nation that tries to make peace, especially by reconciling parties who disagree, quarrel, or fight

Do you know a peacemaker?  Are you a peacemaker?  All of my life it seems I have been a peacemaker.  I usually try to smooth ruffled egos, or try to sooth the person who feels that he/she is not respected enough.  Sometimes this is a tiring task.  It can take a toll on you and on how you help others if you are not careful.  Paul tell us in Galatians 6:9-10 (ASV) 

And let us not be weary in well-doing: for in due season we shall reap, if we faint not. So then, as we have opportunity, let us work that which is good toward all men, and especially toward them that are of the household of the faith.

Why do you suppose God wants to bless the peacemakers?  I like to think it is because of them that treaties are made, pacts are adhered to, and wars are stopped.  Some of these agreements may be for economic reasons but the peacemakers have a unique gift of diplomacy.  These people have a way of studying the opponent by learning the culture and other customs.   For instance…did you know that in Middle Eastern culture, when in negotiations, you are not to speak first?  It is a sign of weakness.  Silence is not the enemy and we should not be afraid to use it.

Today, look at your words and actions, do they glorify the Lord? Do your words honor God as well as lift up and exhort the person to whom you are speaking?  Growing up, did you hear the words, “If it isn’t nice, don’t say it.” How many times have I spoken and then replayed the scene in my mind of how I have failed to build someone up.  This is not meant to condemn but rather to reassure you that you, too, can become a peacemaker—a person who builds up.  To do this we need only to be silent, when we want to speak words that are not kind. Especially when  we use sarcasm to disguise words that would be intended to hurt and wound.

God wants to use us in all of our ways. We may not feel adequate but be assured that God will use you where you are and give you the tools you need to start fresh.  Begin you day with “God, help me to learn something about the person who tests me every day.  Show me his/her heart and give me the peace that You are in control. Let me look at him/her through Your eyes.”

This song is SO powerful! One of the things that struck me to the core is the part where it talks of “…the disease of self runs through my blood. It’s a cancer fatal to my soul….” I think this commentary beautifully sums up being consumed with self.

“People that are self-centered are absorbed in themselves. They have no room in their heart for God. Self-centered people have no room for the true love of another person. A self-centered person glories in him or herself and not in God. Self-centered people are outside of God’s plan. God desires for us to trust Him more than anything else in this world. Self-centered persons trust themselves more than God.”

I can tell you that when I have become consumed with myself, it has never been helpful to me or the people around me. It is also rooted in pride. Pride and selfishness always go together. A truly humble person cannot be selfish.

Let nothing be done through selfish ambition or conceit,
but in lowliness of mind let each esteem others better than himself.
Let each of you look out not only for his own interests, but also for the interests of others.
Philippians 2:3-4 NKJ

Where there is jealousy and selfishness, there is also disorder and every kind of evil.
James 3:16 TEV

Selfishness causes all evil. All evil proceeds from selfish actions. Selfishness is the manifest problem, but pride feeds it. Dealing with the root cause of the problem is the only lasting solution.

Submitting to the Lordship of Jesus Christ, and realizing we are not the center of the Universe, is the answer.  Without Jesus, you can do nothing. Apart from His grace, you would not be able to take that next breath of air!

We are called to be humble people who are consumed only with God.  I know I needed this word today and I am guessing I am not alone….

Heavenly Father, I pray for each of my sisters and myself as we battle our own selfishness.  Instead may we choose to humble ourselves before You and to be the humble women you have called us to be.  Thank You for this much needed word today.  In Jesus’ name AMEN!!!

Honey Corn and Scallion Quinoa….an Easy Side Dish

Eating out does not have to be the only option during a busy week.  There are simple strategies and recipes that you can implement at home to save money and calories. One of my new favorite dishes is Honey, Corn, and Scallion Quinoa.

If you have followed me for a while, you know that I love quinoa.  It is easy and higher in nutrients than the typical rice or pasta side dish. Once again, I love it because I can cook quinoa in my rice cooker which makes it easy and quick to prepare this delicious dish of Honey, Corn, and Scallion Quinoa.

While preparing my meals for a busy week ahead, one of my strategies is to cook enough chicken for a couple of meals. I then change up my side dishes with simple healthy choices that can be prepared in less than 30 minutes. Here is what a mid-week meal may look like after a busy hectic day.

The chicken was ready to eat and my only task was to roast zucchini and eggplant in the oven and prepare my quick and easy Honey, Corn, and Scallion Quinoa side dish.  It CAN be that simple.

Ingredients:

  • 2 cups uncooked quinoa
  • 1 (15 ounce) can of corn, drained
  • 1 tablespoon of fresh lemon juice
  • 1 tablespoon of fresh lemon zest
  • 1 tablespoon of honey
  • 1 tablespoon of  “I Can’t Believe it’s Not Butter”
  • 4 Scallions
  • Salt and Pepper to taste

 Directions:

  • Prepare quinoa according to directions (I cook in rice cooker)
  • Melt butter and mix all ingredients together
  • Pour over and mix well with quinoa
  • Salt and pepper

  • Makes 8 servings
  • Calories – 160
  • Fat – 3gms
  • Protein 6gm
  • Fiber 3gms
