{"id":9683,"date":"2013-02-22T00:30:58","date_gmt":"2013-02-22T05:30:58","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=9683"},"modified":"2013-02-21T22:23:21","modified_gmt":"2013-02-22T03:23:21","slug":"at-home-with-gch-spaghetti-carbonara","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/02\/22\/at-home-with-gch-spaghetti-carbonara\/","title":{"rendered":"At Home with GCH:  Spaghetti Carbonara"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-9694\" alt=\"Spaghetti Carbonara\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Inspiration can strike anywhere, at any time. \u00a0I was reading a magazine in the bathtub last night. \u00a0It had a page about eggs as super foods, and the different ways to prepare them. \u00a0As I was looking at photos of beautifully poached eggs, it came to me: \u00a0Spaghetti Carbonara!<\/p>\n<p>Let me back up a minute. \u00a0Spaghetti Carbonara is usually made with pancetta (or bacon), onions, and is finished by adding whipped eggs to the hot pasta at the very end. \u00a0The resulting sauce is smooth, creamy, and delicious &#8211; but it&#8217;s also a little risky, since the eggs aren&#8217;t really cooked all the way. \u00a0For most people, eating uncooked or underdone eggs is not a big deal, but I thought I might be able to make it my way, and improve the food safety quotient in the process. \u00a0Instead of an egg sauce, this recipe uses poached eggs&#8212;serve with one or two, your choice.<\/p>\n<p>The ingredients for this recipe are probably in your house right now. \u00a0I used whole wheat spaghetti in this recipe, but honestly, I like regular spaghetti better. \u00a0You could also use another long noodle&#8212;fettucini or linguini&#8212;if that&#8217;s what&#8217;s in your pantry. \u00a0If you want to splurge on the pancetta, feel free, but I had bacon ready to go.<\/p>\n<p>This recipe serves two. \u00a0Make it for dinner tonight, with a green salad. \u00a0(Don&#8217;t worry, I don&#8217;t have an Italian Grandmother who&#8217;s rolling over in her grave right now. \u00a0Unorthodox? \u00a0Maybe, but that doesn&#8217;t mean it&#8217;s not tasty!) \u00a0Mangia!<\/p>\n<div style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara-Egg.jpg\"><img loading=\"lazy\" decoding=\"async\" alt=\"Spaghetti Carbonara Egg\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/Spaghetti-Carbonara-Egg-300x199.jpg\" width=\"300\" height=\"199\" \/><\/a><p class=\"wp-caption-text\">The Poached Egg, aka The Sauce Bomb!<\/p><\/div>\n<p style=\"text-align: left;\">\u00a0<strong>Spaghetti Carbonara<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span class=\"Apple-style-span\" style=\"line-height: 13px;\">1\/2 pound spaghetti<\/span><\/li>\n<li>1 teaspoon butter or olive oil<\/li>\n<li>4 slices bacon, diced<\/li>\n<li>1\/2 onion, diced (use a sweet onion, if you have it)<\/li>\n<li>1\/2 pound mushrooms, chopped<\/li>\n<li>2 eggs<\/li>\n<li>salt and pepper<\/li>\n<li>1\/4 cup grated Parmesan cheese<\/li>\n<li>1\/2 lemon<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span class=\"Apple-style-span\" style=\"line-height: 13px;\">Place a large pot of salted water on the stove. \u00a0When it boils, add the spaghetti and cook until almost al dente. \u00a0<\/span><\/li>\n<li>While the pasta boils, cook the bacon and onion together in the olive oil in a large, high-sided pot. \u00a0After five minutes, when the bacon is getting crispy and the onion is turning golden, add the mushrooms. \u00a0Stir and continue to cook.<\/li>\n<li>When the pasta is just barely underdone, remove from the water and place in the bacon pot, but DO NOT drain the water! \u00a0Keep the pasta water simmering over very low heat. \u00a0Stir the pasta and bacon mix together over the lowest heat. \u00a0Turn off the heat and continue to combine.<\/li>\n<li>In a teacup or small bowl, carefully crack an egg. \u00a0Gently lower the egg into the pasta water, and poach. \u00a0This will take 3 or so minutes over low heat. \u00a0Use a slotted spoon to keep the egg white together.<\/li>\n<li>While the egg is poaching, plate your pasta&#8212;make a big pile of spaghetti carbonara, and make a little nest in the top. \u00a0When the egg is done&#8212;still jiggly but cohesive&#8212;place on top of the spaghetti. \u00a0Sprinkle generously with Parmesan cheese, and season with salt and pepper. \u00a0Squeeze half a lemon lightly over the whole thing.<\/li>\n<li>To eat: \u00a0break open the egg, and stir to combine and mix together.<\/li>\n<\/ol>\n<div>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n<hr \/>\n<hr \/>\n<p style=\"text-align: center;\">If you would like to contact Dana in regards to this blog, please email her at\u00a0<strong>Dana@girlfriendscoffeehour.com<\/strong><\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Inspiration can strike anywhere, at any time. \u00a0I was reading a magazine in the bathtub last night. \u00a0It had a page about eggs as super foods, and the different ways to prepare them. \u00a0As I was looking at photos of beautifully poached eggs, it came to me: \u00a0Spaghetti Carbonara!
