And this month we are doing a series of looks at <span style=\"color: #ff6600;\">appetizers<\/span>. Here in the NorthEast, we are in the middle of a snowstorm. So,\u00a0\u00a0I thought&#8230;&#8217;summery food!&#8217; \u00a0\ud83d\ude42\u00a0 This week\u2019s appetizer selections are <span style=\"color: #ff6600;\"><strong>Caprese Salad<\/strong><\/span> and <strong><span style=\"color: #ff6600;\">Zucchini Fritters<\/span><\/strong>. We enjoyed these as a vegetarian supper tonight!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_0149.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-9158\" alt=\"IMG_0149\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_0149-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_0149-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_0149-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I hope you enjoy these fritters as much as we do! They go along with our healthy but oh-so-yummy category because they are loaded with zucchini, and a good shot of whole grains in the cornbread. And, even though lightly fried in a bit of oil, they are no greasier\u00a0than your weekend pancakes!<\/p>\n<p>As I confessed last week: I love appetizers! Whether you call them tapas, small bites, hors d\u2019ouerves, antipasto, or simply appetizers; no matter what you call \u2018em\u2026I like \u2018em!\u00a0 I would <em>love<\/em> for you to leave a comment below sharing with us YOUR favorite appetizer!<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Zucchini Fritters<\/span><\/strong><\/p>\n<p>1 box of Jiffy Cornbread mix\u00a0 <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_1404.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-9159\" alt=\"IMG_1404\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_1404-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_1404-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/02\/IMG_1404.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1 medium zucchini, shredded (do not peel!)<br \/>\n1\/2 cup milk<br \/>\ngood squeeze of juice from a fresh lemon<br \/>\n1 egg<br \/>\n1 tablespoon of melted butter<br \/>\n1\/4 teaspoon freshly ground pepper<br \/>\ndash of ground nutmeg<br \/>\nOil of your choice (but NOT olive oil)<br \/>\nKosher salt<\/p>\n<p>Preheat oven to 250. Place an oven-safe platter into the oven.<\/p>\n<p>Shred zucchini into a colander; sprinkle with a small amount of kosher salt. Let sit to drain 5 minutes or so. Then dump onto a double layer of paper towels. Blot with a couple of additional paper towels, removing as much moisture as possible.<\/p>\n<p>Stir milk and lemon juice together = buttermilk! \u00a0Lightly beat egg in a small mixing bowl. Stir in buttermilk, zucchini, seasonings, melted butter and, finally, cornbread mix. DO NOT overmix; there might be a small lump or two. Let sit for 3 minutes.<\/p>\n<p>While mixture is resting, add a small amount of oil to a large nonstick frying pan; bring up to medium heat; then reduce heat to low. Add the fritter mix by scoops, spacing apart for easier turning. When edges appear dry, and there are a few little bubbles on the surface of the fritters, carefully flip. Once cooked, remove to platter in oven, sprinkle with a bit of salt and keep warm while remainder of batter is cooked.<\/p>\n<ul>\n<li>For larger size fritters: use 1\/4 cup-sized measuring cup or a large cookie scoop.<\/li>\n<li>For smaller, bite-size fritters, use a tablespoon measure or a small cookie scoop.<\/li>\n<\/ul>\n<p>These can be served hot or warm. Serving options are many: Caprese\u00a0Salad (recipe below); guacamole, sour cream, salsa&#8230;<\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">********************************<\/span><\/p>\n<p>Continuing our &#8220;bit of summer in the midst of a snowstorm&#8221; theme, I prepared a quick <strong>Caprese Salad<\/strong>, aka Fresh Mozzarella and Tomato Salad. Not much tastes more like summer to me than a yummy, ripe, delicious\u00a0tomato. Not so easy to find in the wintertime though! However, I find that the tiny tomatoes (grape, cherry, mini\u2014whichever varieties your grocery store carries) are usually very flavorful and yummy all winter long!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Caprese Salad<\/strong><\/span><\/p>\n<div style=\"width: 261px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.belgioioso.com\/FreshMozz.htm\"><img loading=\"lazy\" decoding=\"async\" alt=\"\" src=\"http:\/\/www.belgioioso.com\/images\/fresh-mozz-group_new-pack.jpg\" width=\"251\" height=\"167\" \/><\/a><p class=\"wp-caption-text\">various sizes of fresh mozzarella from my favorite brand&#8212;Belgioso!<\/p><\/div>\n<p>8 ounces fresh mozzarella<br \/>\n1\/2 pint tomatoes<br \/>\nBasil * (fresh is best)<br \/>\nKosher salt, freshly ground black pepper<br \/>\n1-2 teaspoons extra-virgin olive oil. \u00a0\u00a0Easy-peasy!\u00a0 Depending on the size of the fresh mozzarella you have bought, you might need to cut the mozzarella into small, bite-size pieces; halve the tomatoes, and sprinkle with salt and pepper, to taste.\u00a0 Thinly slice the basil*.\u00a0 Add the sliced basil to the seasoned tomatoes and cheese.\u00a0 Pour a small amount of olive oil over and gently mix.\u00a0Serve immediately.*Gourmet tip: stack 3-4 basil leaves; tightly roll-up (like a tiny cigar!); then carefully slice into very thin slices.
