Such a comfort food and indulgence!\u00a0 The way we manage to stay within our \u2018healthy\u2019 parameters is that this soup contains evaporated milk instead of heavy cream.\u00a0 Using evaporated milk saves approximately 80 calories AND 12 grams of fat (yes, you read that right!) in <b>each serving<\/b>.\u00a0 All the yummy creaminess&#8230;and now\u2014since you have kept the soup lower in calories\u2014you can thoroughly indulge in those <i>grilled cheese croutons; <\/i>oh my!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=7703\" rel=\"attachment wp-att-7703\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7703\" alt=\"2013-01-18 22.14.54\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-22.14.54-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-22.14.54-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-22.14.54-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline\">Creamy Homemade Tomato Soup<\/span><\/strong><\/p>\n<p>1 Tablespoon butter<br \/>\n1 Tablespoon olive oil<br \/>\n1 onion, chopped small<br \/>\n1 Tablespoon chopped garlic (I use jarred)<a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=7704\" rel=\"attachment wp-att-7704\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-7704\" alt=\"2013-01-18 21.23.16\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-21.23.16-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-21.23.16-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/2013-01-18-21.23.16-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1 Tablespoon dried basil<br \/>\nKosher salt and freshly ground black pepper<br \/>\n2 cups broth<br \/>\n1 cup red wine, or additional cup of broth<br \/>\n1 can crushed tomatoes (28 ounces)<br \/>\n1 can tomato puree (28 ounces)<br \/>\n1 small jar of roasted red peppers, chopped small,<b> optional<br \/>\n<\/b>1 portion <i>homemade condensed tomato soup <\/i>(see recipe below)<br \/>\n1 can evaporated milk<\/p>\n<p>In a medium-sized saucepan (4 quarts or so), melt butter and olive oil together over medium heat.\u00a0 Add chopped onion and saute for 5 minutes until softened and transparent.\u00a0 Add garlic and basil; cook for 1 minute stirring continuously.\u00a0 Pour in red wine to deglaze pan; then add broth, <b>all<\/b> tomato products (also roasted red peppers, if you are using them) and salt &amp; pepper.\u00a0 Stir really well.\u00a0 Bring up to a boil then reduce heat to low and simmer for 20-25 minutes. Stir occasionally, making sure to mix up from the bottom.\u00a0 Carefully taste for seasoning, adding if necessary. Finally, add in evaporated milk and heat through.\u00a0 Keep warm.<\/p>\n<p>Another aspect of this recipe that fulfills our <i>healthy but oh-so-yummy<\/i> needs is the homemade condensed soup.\u00a0 <b>You know&#8230;<\/b> just like in the can <b>BUT<\/b> no wheat, no additives, no un-pronounceable ingredients, no high fructose corn syrup!\u00a0 So easy and quick to pull together!<\/p>\n<p><strong><span style=\"text-decoration: underline\">Homemade &#8220;Condensed&#8221; Tomato Soup<\/span><\/strong><\/p>\n<p>8 ounces tomato puree or sauce<br \/>\n1 Tablespoon brown sugar<br \/>\n1 Tablespoon cornstarch<br \/>\n1\/2 teaspoon kosher salt<\/p>\n<p>In a small saucepan over low-medium heat, stir all ingredients together.\u00a0 Bring just up to a boil, reduce heat to very low and simmer for 2-3 minutes.\u00a0 Ready to use!<\/p>\n<p><em><strong>OK!<\/strong><\/em><\/p>\n<p>Now the part that (some of you!) have been waiting for&#8230;<strong><i>Grilled Cheese Croutons!<\/i>\u00a0<\/strong> Actually, <b>no recipe <\/b>\ud83d\ude42 Prepare your most incredible, delicious, gooey grilled cheese sammies!\u00a0 You choose the bread (I would suggest cutting off the crusts!)&#8230;you choose the cheese!\u00a0 Make sure that they are really nicely <b>crunchy and toasted!
