{"id":7608,"date":"2013-01-18T00:01:55","date_gmt":"2013-01-18T05:01:55","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=7608"},"modified":"2013-01-18T00:02:02","modified_gmt":"2013-01-18T05:02:02","slug":"at-home-with-gch-greek-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/01\/18\/at-home-with-gch-greek-salad\/","title":{"rendered":"At Home with GCH:  Greek Salad"},"content":{"rendered":"<p style=\"text-align: center\"><a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=7609\" rel=\"attachment wp-att-7609\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7609\" alt=\"Greek Salad\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Greek-Salad-300x199.jpg\" width=\"500\" height=\"333\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Greek-Salad-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Greek-Salad-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>We are big salad eaters at my house. \u00a0(And when I say &#8220;we&#8221;, I mean my husband and I. \u00a0My girls won&#8217;t go near\u00a0the lettuce unless it&#8217;s shredded in a sandwich, and even then it&#8217;s touch and go!) \u00a0We&#8217;ll have a big salad for dinner at least once a week, sometimes more. \u00a0I&#8217;m always on the lookout for ways to eat healthier, get more veggies, and eat less refined carbohydrates. \u00a0This <em><strong>Greek Salad<\/strong><\/em> really fits the bill!<\/p>\n<p>If you&#8217;ve made this salad before or had it at a restaurant, you know it&#8217;s fresh, bright and simple. \u00a0The two things that make it spark and give it that clean taste are the dressing and the cheese. \u00a0The dressing is maybe the easiest vinaigrette around&#8212;all you need are dried oregano, lemon juice, and olive oil! \u00a0Taste it, add salt, pepper and a pinch of sugar to taste, and you&#8217;re done! \u00a0The cheese is a crumbly white cheese called feta. \u00a0It tastes sort of like goat cheese, but it&#8217;s a little saltier, a little drier in texture. \u00a0It&#8217;s also very low in calories, so feel free to add a few tablespoons to your salad.<\/p>\n<p>We had this salad last night, in huge bowls, with braised chicken. \u00a0If you want to make it a one-dish meal, add diced chicken or grilled shrimp right to the salad. \u00a0Healthy and delicious&#8212;it&#8217;s what&#8217;s for dinner!<\/p>\n<p><strong>Greek Salad<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span class=\"Apple-style-span\" style=\"line-height: 13px\">2 heads romaine lettuce<\/span><\/li>\n<li>1\/2 red bell pepper, thinly sliced<\/li>\n<li>1\/2 cucumber, peeled and sliced in half, then into half-moons<\/li>\n<li>1\/4 red onion, sliced as thin as possible<\/li>\n<li>1\/4 cup black olives (I like Kalamata; make sure you buy pitted olives &#8211; I hate spitting out the pits!)<\/li>\n<li>1\/4 cup crumbled feta cheese<\/li>\n<li>1 teaspoon dried oregano<\/li>\n<li>1 lemon, juiced<\/li>\n<li>salt, pepper, and a pinch of sugar<\/li>\n<li>1\/4 cup olive oil<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Make the dressing: \u00a0In a small Tupperware cup with a tight-fitting lid, mix together the oregano, lemon juice, salt, pepper, and a pinch of sugar. \u00a0Set aside &#8211; this gives the oregano time to &#8220;bloom&#8221; in the lemon juice and release it&#8217;s flavor. \u00a0If you add the oil too soon, you coat the oregano and it&#8217;s flavor won&#8217;t be as strong.<\/li>\n<li>Cut the lettuce into bite-sized pieces and wash well. \u00a0To compose, fill a large bowl with the lettuce, then top with bell pepper, cucumber, onion, olives, and feta.<\/li>\n<li>Add the oil to the oregano and lemon juice, shake well to combine, and pour over salad.<\/li>\n<\/ol>\n<p><strong>Notes<\/strong>: \u00a0This recipe makes 2 big salads, or \u00a04 side salads. \u00a0Many people add tomato to a Greek Salad, and I encourage you to try it out&#8212;in the summer, when they are in season. \u00a0If you have leftover salad ingredients, this makes a great wrap&#8212;just roll it all up in a tortilla and eat like a burrito &#8211;
