{"id":7306,"date":"2013-01-14T00:01:06","date_gmt":"2013-01-14T05:01:06","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=7306"},"modified":"2013-01-14T18:50:01","modified_gmt":"2013-01-14T23:50:01","slug":"at-home-with-gch-souppalooza-part-3","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/01\/14\/at-home-with-gch-souppalooza-part-3\/","title":{"rendered":"At Home with GCH &#8211; SoupPalooza Part 3"},"content":{"rendered":"<p><strong><span style=\"font-size: large;\">SoupPalooza, Part Three<\/span><\/strong><\/p>\n<p>Here on our <strong><i>At Home with GCH<\/i>\u00a0<\/strong> blog, Monday\u2019s are always focused on <i>healthy but oh-so-yummy!<\/i> recipes.\u00a0 We are continuing to celebrate soup, <i>soup, <\/i>and <b>soup <\/b>since this is <em><strong>National Soup Month<\/strong><\/em>!\u00a0 Each week we will explore soup basics sometimes along with a bonus recipe for you to serve to your loved ones.<\/p>\n<p>Last week I shared that I made a commitment to Mr. Hayden to serve soup at least once each day for the month.\u00a0 So far&#8230;so good!\u00a0 He\u2019s enjoyed\u00a0 <i>Homemade Mini-Meatball Soup, <\/i> <i>White Bean &amp; Kale Soup w\/Chicken Sausage<\/i>, as well as Vegetable Tortellini Soup, and homemade Creamy Tomato Soup.<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/01\/14\/at-home-with-gch-souppalooza-part-3\/img_1387\/\" rel=\"attachment wp-att-7308\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7308\" alt=\"IMG_1387\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1387-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1387-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1387.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This week we are making <strong><i>French Onion Soup <\/i><\/strong>accompanied by the traditional baguette with a yummy, cheesy topping.\u00a0 Whenever I think of this soup, I always remember Julia Child!\u00a0 Any other Julia fans out there?\u00a0 For fans, or those who would love to be entertained while learning from the best, I have attached a short video of Julia preparing her version of <em><strong>French Onion Soup<\/strong>.\u00a0 \u00a0 <i>Bon Appetit<\/i>!<\/em><\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/01\/14\/at-home-with-gch-souppalooza-part-3\/img_1386\/\" rel=\"attachment wp-att-7309\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-7309\" alt=\"IMG_1386\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1386-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1386-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_1386.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Onto <strong>our<\/strong> preparation&#8230;\u00a0 This soup is fairly uncomplicated but it does take some time. One important part of the preparation for this recipe is the manner in which the onions are cut&#8230;<b>really<\/b>.\u00a0 In this recipe this is the shape onion that works best.\u00a0 Onions sliced from top to bottom, or &#8220;pole to pole&#8221; also cook more evenly.\u00a0 And they have a shape and size that \u2018eats well.\u2019\u00a0 You don\u2019t want long, stringy pieces of onion falling off your spoon!\u00a0 <em><strong>Try this<\/strong><\/em>: Peel the onions and slice off the ends.\u00a0 Cut the onion in half through the middle (think: along the equator).\u00a0 Then lay the half of the onion down and make thin (1\/4&#8243;) cuts from top to bottom.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1\/4 cup (\u00bd stick) unsalted butter<br \/>\n5-6 small to medium-sized onions (approximately 2#), sliced thin **<br \/>\n2 tablespoons chopped garlic<br \/>\n1 tablespoon dried thyme, 1 teaspoon dried crushed rosemary<br \/>\nKosher salt and freshly ground black pepper<br \/>\n1 cup red wine, or additional cup of broth<br \/>\n3 tablespoons flour<br \/>\n2 quarts broth (beef, chicken, or veggie)<br \/>\n1 loaf French, or Italian, bread<br \/>\n3\/4 cup shredded Swiss cheese (traditionally Gruyere is used; pricey!\u00a0 I use Jarlsberg)<br \/>\n1\/4 cup shredded Parmesan cheese<\/p>\n<p>Melt the stick of butter in a large stockpot over medium heat.\u00a0 Add all the onions, the herbs and a few grinds of salt and pepper.\u00a0 Stir well making sure to thoroughly coat all of the onions with the butter. Now just allow the onions to cook; occasionally, give a thorough stir up from the bottom of the pan.\u00a0 After 10 minutes, turn the heat down just a bit.\u00a0 The onions will need to cook for an additional 20 minutes or so; during the last minute or two, stir in the chopped garlic.\u00a0 You will see the onions getting very soft and turning a light brown.\u00a0 This is called caramelization.\u00a0 <em><strong>Do Not Let Burn<\/strong><\/em>&#8230;just brown&#8230;this is where the majority of all the yummy flavor of the soup will come from.<\/p>\n<p>Add the wine and raise the heat to bring to a quick boil.\u00a0 Immediately reduce the heat to low and simmer until the wine has evaporated and the onions appear almost dry, about 5 minutes.\u00a0 Dust the onions with the flour; give them a stir.\u00a0 Cook for 5 minutes to cook out the raw flour taste. Now slowly add in the broth, and raise the heat to bring the soup back to a simmer; cook for 15 minutes. Season, to taste, with salt and pepper.<\/p>\n<p>When you&#8217;re ready to eat, preheat the broiler.\u00a0 Cut the bread on the diagonal into 1&#8243; slices that will fit into your soup bowl or mug.\u00a0 Place the bread on a baking sheet in a single layer. Sprinkle the slices with the cheeses (mound it up!) and broil until bubbly and golden brown, 3 or 4 minutes.
