Fish Tacos"},"content":{"rendered":"<p style=\"text-align: center;\">\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/01\/09\/gch-whats-on-your-plate-fish-tacos\/fish-tacos\/\" rel=\"attachment wp-att-7041\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-7041\" alt=\"Fish Tacos\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Fish-Tacos.jpg\" width=\"551\" height=\"367\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Fish-Tacos.jpg 4256w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Fish-Tacos-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/Fish-Tacos-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 551px) 100vw, 551px\" \/><\/a><\/p>\n<p>Ah, the humble fish stick. \u00a0When I was a kid, my favorite meal was fish sticks, macaroni and cheese, and whatever green vegetable was riding shotgun. \u00a0I still love fish sticks, and so do my kids. \u00a0And while they&#8217;re terrific with tartar sauce, sometimes it&#8217;s fun to take the familiar and shake it up. \u00a0And that leads us to &#8211; Baja-style Fish Tacos!<\/p>\n<p>These tasty treats may be unfamiliar to you if you&#8217;ve never visited Southern California or farther down south, into the Pacific Coast of Mexico. \u00a0Fish tacos in Southern California are part of surf culture, the favorite food of stereotypically blonde, tan dudes with surfboards who say &#8220;gnarly&#8221; and wear shorts year round. \u00a0And while they&#8217;re pretty easy to find in my neighborhood, they probably aren&#8217;t in yours. \u00a0So make &#8217;em yourself!<\/p>\n<p>There are a few basic, mandatory components to the fish taco. \u00a0First is corn tortillas &#8211; save the flour tortillas for burrito night. \u00a0Next is the fish: regular fish sticks will work, as will the larger fillet-style pieces, but you definitely want the crunchy breading. \u00a0Also important are the cabbage and cilantro &#8211; regular old green cabbage, sliced as thinly as possible (but not shredded like in coleslaw), and plenty of leafy cilantro. \u00a0Last comes a big squeeze of lemon or lime. \u00a0I like the &#8220;crema&#8221; listed in this recipe, but you can also use regular tomato salsa too. \u00a0After these ingredients, you can add more to suit your taste &#8211; diced onion, avocado, even shredded cheese.<\/p>\n<p>Are you ready to do this? \u00a0Cowabunga!<\/p>\n<p><strong>Fish Tacos<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 package fish sticks<\/li>\n<li>1 package small yellow or white corn tortillas<\/li>\n<li>1 small head cabbage<\/li>\n<li>1 bunch cilantro (use the rest to make the <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/22\/gch-whats-on-your-plate-chicken-or-turkey-fajitas-salad\/\">Fajitas Salad<\/a>!)<\/li>\n<li>2 tablespoons mayonnaise<\/li>\n<li>2 tablespoons sour cream or plain yogurt<\/li>\n<li>1 large lemon or lime<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>salsa, avocado, cheese, green or red onion, or whatever else you like on your tacos<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Bake the fish sticks according to the package directions. \u00a0While they are cooking, slice the cabbage as thin as possible. \u00a0If you have a food processor, you may want to try that. \u00a0Wash the cilantro and remove the tough stems.<\/li>\n<li>Prepare the crema: \u00a0Whisk together the mayo, sour cream, and the juice of half the lemon. \u00a0Stir in the cumin and refrigerate until ready to use. \u00a0If it&#8217;s too sour for you, add a dash of sugar. \u00a0You can also add tabasco or a little chipotle right to the crema. \u00a0Or, my favorite, if you have any leftover dressing from making the <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/22\/gch-whats-on-your-plate-chicken-or-turkey-fajitas-salad\/\">Fajitas Salad<\/a>, use this in place of the crema!<\/li>\n<li>Wrap as many tortillas as you need in a damp dishtowel. \u00a0Place the dishtowel between two plates to seal it up, and microwave for 30 seconds. \u00a0This gets them hot, flexible and delicious!<\/li>\n<li>To assemble: \u00a0Lay out your tortilla (some people use two at a time, which keeps it from ripping or falling apart) and spoon a little crema on the bottom. \u00a0Top with fish sticks, sliced cabbage and plenty of cilantro. \u00a0Squeeze a little lemon on top, and add any other optional ingredients you like.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<p>Please visit me at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>\u00a0for more unique recipes!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0 Ah, the humble fish stick. \u00a0When I was a kid, my favorite meal was fish sticks, macaroni and cheese, and whatever green vegetable was riding shotgun. \u00a0I still love fish sticks, and so do my kids. \u00a0And while they&#8217;re terrific with tartar sauce, sometimes it&#8217;s fun to take the familiar and shake it up.
