{"id":6900,"date":"2013-01-07T00:01:49","date_gmt":"2013-01-07T05:01:49","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=6900"},"modified":"2014-02-16T12:41:59","modified_gmt":"2014-02-16T17:41:59","slug":"gch-whats-on-your-plate-souppalooza-part-two","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/01\/07\/gch-whats-on-your-plate-souppalooza-part-two\/","title":{"rendered":"GCH: What&#8217;s on Your Plate? &#8211; SoupPalooza, Part Two"},"content":{"rendered":"<p style=\"text-align: left;\"><strong><span style=\"font-size: large;\">Soup-Palooza, Part Two<\/span><\/strong><\/p>\n<ul>\n<li>&#8220;Not from a Box, Nor from a Can&#8221; Chicken Broth<\/li>\n<li>White Bean &amp; Kale Soup with Chicken Sausage<\/li>\n<\/ul>\n<p>Did you know that January is <b>National Soup Month<\/b>?\u00a0 That is good news to one <em>particular<\/em> individual here in the Hayden household&#8230;my husband would eat soup e-v-e-r-y single day!\u00a0 So this month I have committed to serving soup at one meal per day for the entire month (ummm, yeah&#8230;he\u2019s a happy camper!).\u00a0 And I am taking YOU along for the ride, too!<\/p>\n<p>Here on our GCH:WoYP, where Monday&#8217;s are focused on\u00a0<i>healthy but oh-so-yummy!<\/i>\u00a0recipes, we will be promoting soup, <i>soup, <\/i>and <b>soup <\/b>for the next four weeks.\u00a0 Each week we will explore the basics along with a delicious recipe for you to serve to your loved ones.<\/p>\n<p>So, this week we are starting from scratch!\u00a0 <b>Homemade chicken broth<\/b>.\u00a0 Oh, yeah!\u00a0 Now don\u2019t be afraid, please&#8230;this is so simple, I promise!\u00a0 One way to make this easy to fit into a busy schedule would be to start it as you are making your supper preparations.\u00a0 Then the broth can simmer away, and you can finalize it after supper.\u00a0 Just a thought!<\/p>\n<p>This recipe makes a vat&#8230;well, not <i>quite<\/i> a vat&#8230;it makes 8+ quarts.\u00a0 A quart of soup is the size of those aseptically sealed boxes from your grocery store (or approximately 2 cans).\u00a0 Most soup recipes that feed 4-6 people require two quarts of broth.\u00a0 Now you can have delicious, nutritious, chemical-free chicken broth handy right in your refrigerator or freezer!\u00a0 Let\u2019s get started!<\/p>\n<p><strong>&#8220;Not From a Can, Nor From a Box&#8221; Chicken Broth\u00a0\u00a0\u00a0\u00a0\u00a0<\/strong><\/p>\n<p>Makes 8+ quarts<\/p>\n<p>1 8-9# \u2018oven stuffer\u2019 whole chicken, cut-up (or buy cut-up chicken)*<br \/>\n1 large sweet onion (Vidalia), rough chopped<br \/>\n4-5 stalks of celery WITH the leaves, cut in 3-4&#8243; sized pieces<br \/>\n1\/4# carrots (3-4 whole carrots, or \u00bd bag baby carrots),\u00a0rough chopped<br \/>\n1 heaping tablespoon minced garlic<br \/>\n2 tablespoons whole peppercorns<br \/>\n1 teaspoon kosher salt<\/p>\n<p>4-5 sprigs each of fresh thyme and dill, optional<br \/>\n9 quarts of water; I use filtered; use whatever you would drink \ud83d\ude09<\/p>\n<p>Use the largest pot you own.**\u00a0 I use a 12 quart-sized pot. You don\u2019t want to fill your pot up to the top; this needs a little room to move around while it is boiling.<\/p>\n<p>Carefully rinse the cut-up chicken (the better the chicken is rinsed&#8230;the less yuck floating around in your broth).\u00a0 Then place the chicken pieces along with the vegetables, and the seasonings, into the pot and pour water over them all.\u00a0 Cover pot and heat on high \u2018til just coming to a boil; reduce heat and partially cover.\u00a0 You want the soup to be gently boiling.\u00a0 You can occasionally skim off the yucky stuff from the top of the broth.\u00a0 Let everything simmer away for a half hour; remove breastmeat to cool.\u00a0 Continue cooking an additional 45 minutes to 1 hour.\u00a0 Remove pot from heat.\u00a0 Take dark meat sections and add to breastmeat which has cooled.\u00a0 You can strain your broth, if preferred; it all depends on just how clear you would like the broth to be.\u00a0 CAREFULLY pour, or ladle, the broth along with the cooked veggies into storage containers, leaving enough room to add the chicken.\u00a0 Cut up (or shred) the chicken into bite-size pieces; keep every last one of all the little bits!\u00a0 Add back into the broth.<\/p>\n<p>Let cool \u2018til container is no longer HOT to the touch; refrigerate.\u00a0 When thoroughly cooled, I would suggest discarding the layer of fat that will have solidified on the top of the container. This broth freezes very well.\u00a0 I usually keep 2 quarts in the refrigerator (use within 1 week or so) and the rest in the freezer.<\/p>\n<p>* Toss the wings in the trash&#8230;not even worth cooking.\u00a0 I cut each of the breastmeat pieces in half; that way they don\u2019t overcook.\u00a0 You want tender meat in the end (but throw the bones into the pot, too).<\/p>\n<p>**Should you not have a pot this size, or cannot beg or borrow one, just reduce all of the ingredients by half and proceed, ok?\u00a0 Don\u2019t let that stop you!<\/p>\n<p style=\"text-align: center;\">****************************************<\/p>\n<p>Now, to actually USE that <i>healthy but oh-so-yummy<\/i> broth&#8230;<\/p>\n<p><strong>White Bean and Kale Soup with Chicken Sausage\u00a0<\/strong><\/p>\n<p>Makes 6 servings<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/01\/07\/gch-whats-on-your-plate-souppalooza-part-two\/img_0138\/\" rel=\"attachment wp-att-6908\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-6908\" alt=\"IMG_0138\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_0138.jpg\" width=\"538\" height=\"358\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_0138.jpg 5184w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_0138-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/01\/IMG_0138-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 538px) 100vw, 538px\" \/><\/a><\/p>\n<p>8 cups (2 quarts) chicken broth, divided<br \/>\n(1) 12 oz pkg italian chicken sausage, sliced diagonally \u00bd&#8221; thick<br \/>\n2+ tablespoons olive oil<br \/>\n1 large sweet onion (Vidalia), sliced<br \/>\n1 heaping tablespoon minced garlic<br \/>\n\u00bd cup white wine, or additional broth<br \/>\n2 cans cannellini (white kidney) beans, drained and rinsed<br \/>\n1 can great northern beans, drained and rinsed<br \/>\n1 bunch kale, stems and tough ribs removed, leaves roughly chopped<br \/>\n1 teaspoon kosher salt<br \/>\n1+1\/2 teaspoon freshly ground pepper (I used lemon pepper)<br \/>\n\u00bd cup Parmesan cheese, freshly grated if possible<br \/>\n1 lemon<\/p>\n<p>Heat 1 tablespoon of olive oil in a large pot (4 quart) over medium heat. Add sausage slices and cook, stirring occasionally, until sausage is just starting to brown, about 5-6 minutes. Add onion slices and additional olive oil, if necessary.\u00a0 Cook, stirring often, until onions and sausage are slightly browned, about 10 minutes more.\u00a0 Reduce heat to low; stir in garlic and cook for 1 more minute.\u00a0 Remove sausage, onions and garlic; set aside.\u00a0 Pour wine into pot and scrape up brown bits stuck to the bottom. Let simmer for a minute or two.\u00a0 Meanwhile, put 3 cups beans and 2 cups broth into a blender and pur\u00e9e \u2018til smooth; set aside.\u00a0 Add all of\u00a0 the remaining broth to the liquid in pot; increase heat to medium and bring to a boil.\u00a0 Add kale, reduce heat; cover and gently simmer, stirring a few times until kale is wilted and softened, about 5 minutes.
