(You can click <strong><span style=\"color:#339966;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/12\/08\/gch-whats-on-your-plate-old-fashioned-scandinavian-spritz\/\"><span style=\"color:#339966;\">HERE<\/span><\/a><\/span><\/strong> to go to that post.) I am back this week with a second, and my favorite, Norwegian Christmas cookie&#8230; <strong><span style=\"color:#0000ff;\">fattigman<\/span><\/strong>!<\/p>\n<p style=\"text-align:left;\">Fattigman is an <strong><span style=\"color:#800000;\">ages-old<\/span><\/strong> Norwegian cookie that translates to &#8220;<strong><span style=\"color:#ff6600;\">Poor Man<\/span><\/strong>,&#8221; and was named so either because purchasing all of these ingredients would&#8217;ve cost someone in the old country quite a bit of money, leaving them &#8220;poor,&#8221; or because sugar was so expensive in Norway that even a poor man (or woman) could afford to make these, since there isn&#8217;t much sugar used in these cookies.<strong><span style=\"color:#993366;\"> <em>I&#8217;ll let you decide<\/em><\/span><\/strong> which version of the story you like better, but I grew up hearing the <em><strong><span style=\"color:#008080;\">first<\/span><\/strong><\/em> version, and I&#8217;m sticking to it \ud83d\ude09<\/p>\n<p style=\"text-align:left;\">The recipe(s) for fattigman was brought to America by <strong><span style=\"color:#e32b1b;\">Norwegian immigrants<\/span><\/strong> in the 1800&#8217;s&#8230; <em>my family included<\/em>. Christmas just isn&#8217;t Christmas without these on the table, and they quickly disappear once put out! They&#8217;re traditionally rolled out, then cut using a fattigman roller. My <strong><span style=\"color:#f6088d;\">grandmother<\/span><\/strong>, however, rolled them out and cut them in <strong><span style=\"color:#31cd8f;\">triangles<\/span><\/strong>, so that&#8217;s how we&#8217;ve always made them&#8230; no special cutter required! I hope you <strong><span style=\"color:#8ac33b;\">enjoy<\/span><\/strong> them as much as we do!<\/p>\n<p style=\"text-align:left;\"><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 eggs, beaten<\/li>\n<li>4 T. heavy whipping cream<\/li>\n<li>3 T. powdered sugar<\/li>\n<li>1\/2 tsp. ground cardamom<\/li>\n<li>1 T. brandy (optional)<\/li>\n<li>1\/2 tsp. grated lemon rind<\/li>\n<li>1 1\/2 &#8211; 2 c. flour<\/li>\n<li>lard for deep frying<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Mix all ingredients together, stirring in flour until dough becomes thick enough to knead. Dough will be slightly rubbery.<\/li>\n<li>Chill in the refrigerator for a few hours.<\/li>\n<li>On a floured cutting board, roll out dough (small pieces at a time) to 1\/8&#8243; thick.<\/li>\n<li>Cut in triangles.<\/li>\n<li>Fry in lard, which has been heated to approximately 350 degrees (F.) Dough will rise to the top. Turn dough over with tongs and fry to a very light golden brown.<\/li>\n<li><a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=6254\" rel=\"attachment wp-att-6254\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-6254 aligncenter\" alt=\"fattigman frying\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/12\/fattigman-frying.jpg\" width=\"426\" height=\"296\" \/><\/a>Remove from lard and place on a cookie sheet covered in paper towels.<\/li>\n<li>Generously sprinkle both sides of cookies with powdered sugar.<\/li>\n<li>Store in airtight container on counter or in pantry.<\/li>\n<\/ol>\n<p><strong>Notes:<\/strong><\/p>\n<ul>\n<li>This goes much faster with 2 people making the fattigman. One person to roll out and cut cookies, and one person to fry them.<\/li>\n<li>The cookies are very fragile (and VERY yummy!)<\/li>\n<\/ul>\n<p><span style=\"color:#33cccc;\"><strong>Praise God!
