One <strong><span style=\"color: #666699\">Norwegian tradition<\/span><\/strong> we keep in our home is to serve rice pudding on Christmas Eve. An almond is hidden in one person&#8217;s pudding, and the lucky person who gets it, gets a <span style=\"color: #ff00ff\"><strong>marzipan pig<\/strong><\/span>!<strong><\/strong> (Much like the German tradition of hiding a<span style=\"color: #339966\"> <strong>pickle<\/strong> <\/span>ornament in the <strong><span style=\"color: #008000\">Christmas tree<\/span><\/strong> &#8211; another tradition of ours!) It&#8217;s a fun way to create <strong><span style=\"color: #33cccc\">memories<\/span><\/strong>, and we get to enjoy eating this yummy dessert at the same time!<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 eggs, beaten<\/li>\n<li>2 cups whole milk<\/li>\n<li>1 1\/2 cups cooked rice<\/li>\n<li>1\/2 cup granulated sugar<\/li>\n<li>1 1\/4 tsp. pure vanilla extract<\/li>\n<li>1\/2 tsp. salt<\/li>\n<li>a mixture of ground cinnamon and sugar<\/li>\n<li>Reddi Whip or light cream (optional)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 325 degrees (F.)<\/li>\n<li>Combine eggs, milk, rice, sugar, salt, and vanilla in a bowl and mix well.<\/li>\n<li>Bake in an 11&#215;7 baking dish for 20 minutes.<\/li>\n<li>Remove from oven. Lightly sprinkle with cinnamon sugar. Stir well.<\/li>\n<li>Return to oven and bake for another 25 minutes.<\/li>\n<li>Remove from oven. Put into individual serving dishes. Chill well in the refrigerator.<\/li>\n<li>Before serving, sprinkle the top with cinnamon sugar.
