{"id":5925,"date":"2012-12-14T00:01:18","date_gmt":"2012-12-14T06:01:18","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=5925"},"modified":"2012-12-14T00:01:18","modified_gmt":"2012-12-14T06:01:18","slug":"gchwhats-on-your-plate-gluten-free-muffins","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2012\/12\/14\/gchwhats-on-your-plate-gluten-free-muffins\/","title":{"rendered":"GCH:What&#8217;s on Your Plate? &#8211; Gluten-free Muffins"},"content":{"rendered":"<h4>This will be Renee&#8217;s last post for GCH. \u00a0She has been offered a job by her local newspaper. \u00a0We would like to thank her for the awesome posts she has submitted, and pray that God will bless her new job! \u00a0Thanks much Renee!<\/h4>\n<h2><\/h2>\n<hr \/>\n<h2>Gluten-free Muffins<\/h2>\n<p>by Renee Porter Sullivan, CHt<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 Very Ripe Banana (approx. 1\/2-3\/4 cup)<\/p>\n<p>4 Whole Pastured Eggs (Or extra Omega-3)<\/p>\n<p>1\/3 to 1\/2 Cup Filtered Water (adjust for consistency)<\/p>\n<p>1 Organic Apple (finely chopped) or 2 Organic Carrots (Grated) or approx. 3\/4 cup pumpkin or winter\u00a0 squash (grated)<\/p>\n<p>2 1\/4 cups Almond Meal (Trader Joe&#8217;s)1\/4 Cup Dried Raisins or Dried Cranberries depending on the combination you choose (optional)<\/p>\n<p>1-2 Tbsp. Coconut Flour (adjust as needed)<\/p>\n<p>1\/2 tsp. Baking Soda<\/p>\n<p>2-3 tsp. Cinnamon<\/p>\n<p>1\/4 tsp. Ground Nutmeg (optional)<\/p>\n<p>1\/4 tsp. Ground Cloves (optional)<\/p>\n<p>1\/4 Cup Coconut Oil (melted)<\/p>\n<p>Please feel free to be creative with your spices and the combination of fruit\/vegetables\u00a0 and dried fruit you choose.\u00a0 The recipe is basic and open to experimentation.\u00a0 Use whatever is in season and fresh.\u00a0 The Almond Meal is high in fat and coconut flour is very dry, so adjust the quantities according to the desired texture you want.\u00a0 More Almond flower will give more moisture, more coconut will balance with a dryer texture.\u00a0 Altitude will change your ratios as well.<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Preheat Oven to 350 degrees<\/li>\n<li>Mash the banana in a large mixing bowl with a fork<\/li>\n<li>Add the eggs, water and apples or other fruit\/vegetables to the banana.\u00a0 Melt the coconut oil and add here. Mix well.\u00a0 Add dried fruit at the end.<\/li>\n<li>Mix dry ingredients in another bowl. Almond flour, coconut flour, baking soda, and spices.\u00a0 Blend well.<\/li>\n<li>Combine the wet ingredients with the dry and mix until all is well incorporated.\u00a0 Don&#8217;t over do it.<\/li>\n<li>Grease muffin tins with coconut oil.\u00a0 I don&#8217;t recommend using papers unless you need to.\u00a0 Silicone muffin molds are excellent for this as well.\u00a0 No extra grease is needed in that\u00a0 case.<\/li>\n<li>Fill each muffin cup about 3\/4 full.\u00a0 These muffins don&#8217;t rise much.
