{"id":5715,"date":"2012-12-10T00:01:21","date_gmt":"2012-12-10T06:01:21","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=5715"},"modified":"2012-12-10T00:01:21","modified_gmt":"2012-12-10T06:01:21","slug":"gchwhats-on-your-plate-chicken-shepherds-pie-with-parmesan-cauliflower-topping","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2012\/12\/10\/gchwhats-on-your-plate-chicken-shepherds-pie-with-parmesan-cauliflower-topping\/","title":{"rendered":"GCH:What&#8217;s on Your Plate? &#8211; Chicken Shepherd&#8217;s Pie with Parmesan Cauliflower Topping"},"content":{"rendered":"<p>Now that title&#8217;s\u00a0a mouthful, hmmm? \u00a0Pun FULLY intended!\u00a0 My husband <em><strong>loves<\/strong><\/em>\u00a0Shepherd&#8217;s Pie&#8212;and any variation\u00a0I can come up with!\u00a0 And so\u00a0I indulge him! \ud83d\ude42\u00a0 This recipe fits into our <em>healthy but oh-so-yummy<\/em> category in a couple of ways:<\/p>\n<ul>\n<li>it is low-carb (with the absence of mashed potato topping)<\/li>\n<li>it\u00a0 is made with natural ingredients\u00a0that you can pronounce (as\u00a0the gravy is made from scratch)<\/li>\n<li>it is low in fat\/high in protein (using boneless chicken breast as the protein)<\/li>\n<\/ul>\n<p>This recipe could easily be doubled and baked in an 11 x 13 baking dish.<\/p>\n<p style=\"text-align:center;\"><strong>Chicken Shepherd&#8217;s Pie with Parmesan-Cauliflower Topping<\/strong><a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=5716\" rel=\"attachment wp-att-5716\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-5716\" alt=\"IMG_1310\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/12\/img_1310.jpg?w=300\" height=\"225\" width=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/img_1310.jpg 960w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/img_1310-300x225.jpg 300w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Filling Ingredients:<\/strong><\/p>\n<p>4 tablespoons olive oil, divided<br \/>\n1# boneless chicken breast, pounded evenly, cut into 1&#8243; cubes<br \/>\n1 sweet (vidalia-type) onion, chopped in pieces about 1\/2 inch<br \/>\n4 ounces baby bella mushrooms, wiped clean sliced chunky<br \/>\n2 tablespoons chopped garlic in oil (from a jar)<br \/>\n16 ounce package frozen mixed veggies (your choice), set out to defrost<\/p>\n<p>1 tablespoon butter<br \/>\n2 tablespoons\u00a0flour<br \/>\n1\/4 cup white wine (or broth)<br \/>\n1 + 1\/4 cups chicken broth<\/p>\n<p><b>Topping Ingredients:<\/b><\/p>\n<p>1 medium-sized head of cauliflower, cored and chopped into small pieces<br \/>\n1\/4 cup milk<br \/>\n1\/2 cup finely grated parmesan cheese<br \/>\nsalt and freshly ground black pepper to taste<\/p>\n<p>1\/3 cup shredded cheese (sharp cheddar, smoked gouda) *use a flavorful cheese<\/p>\n<p><b>Instructions:<\/b><\/p>\n<p>Preheat the oven to 375.\u00a0 Bring a medium-sized pot of salted water to a boil. Chop cauliflower into small pieces and simmer \u2018til\u00a0 soft enough to mash easily (10-12 minutes). Drain cauliflower very well in colander; place back into pot and\u00a0 use an immersion blender or hand beater to &#8220;mash&#8221; the cauliflower with the milk and Parmesan.
