post last week for <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/29\/gch-whats-on-your-plate-dubu-buchim-pan-fried-tofu-korean-style\/\">Dubu Buchim<\/a> (Korean Pan-Fried Tofu), you&#8217;ll remember that a Korean meal has many components: \u00a0the rice, kimchee, main dish, and the banchans. \u00a0Banchans are little dishes, meant to be shared, and are usually vegetable-based. \u00a0Today I&#8217;ll show you how to make two very easy banchans: \u00a0spinach banchan and a cucumber salad.<\/p>\n<p>For the spinach, you can buy whole spinach, which is the cheaper option, or a bag of washed and trimmed spinach salad &#8211; it will cost more than whole spinach, but the upside is that the roots and sand have been removed for you! \u00a0This spinach banchan is also a component in several other Korean dishes, including kimbap, japchae, and bibimbap. \u00a0(We&#8217;ll get to those later!) \u00a0For the cucumbers, you&#8217;ll want to look for small cucumbers, often called Persian cucumbers. \u00a0They have thin skin and very little seedy pulp in the middle. \u00a0You could also use a regular English cucumber, or a hothouse cucumber, but you may want to take off some of the skin if it&#8217;s waxed or feels tough to you. \u00a0Also, the cucumber banchan calls for a pinch of Korean dried peppers. \u00a0If you don&#8217;t have these in your pantry, you can use crushed red pepper (like the kind used in Italian cooking or on pizza) or even a little cayenne. \u00a0It won&#8217;t be the same, but you&#8217;ll get the idea!<\/p>\n<p>Both of these banchans are best made fresh, and won&#8217;t last in the fridge more than two or three days. \u00a0Make a batch, cook some rice, and \u00a0practice your chopstick skills: \u00a0it&#8217;s dinner time!<\/p>\n<p><strong>Spinach Banchan<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span class=\"Apple-style-span\" style=\"line-height:13px;\">1 pound whole spinach, trimmed and cleaned, or 1 large bag prepared spinach salad (9 oz.)<\/span><\/li>\n<li>2 cloves garlic, finely minced<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<li>1 teaspoon soy sauce<\/li>\n<li>1 teaspoon toasted sesame seeds<\/li>\n<li>1 green onion, minced<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span class=\"Apple-style-span\" style=\"line-height:13px;\">Fill a large pot with water and bring to a boil. \u00a0Prepare an ice bath: \u00a0a very large bowl filled with ice and water. \u00a0When the water boils, add the spinach, and blanch for 15 seconds. \u00a0You want all of the spinach out of the boiling water within 30 seconds at the max, or it will be mushy. \u00a0Remove from the water and transfer to the ice bath.<\/span><\/li>\n<li>In a medium-sized bowl, mix together garlic, oil, soy sauce, sesame seeds, and green onion. \u00a0Squeeze the water from the spinach &#8211; be firm, but don&#8217;t pulverize it! \u00a0Add the spinach to the garlic mixture, and using your hands, massage the sauce into the spinach. \u00a0(Korean housewives go through more plastic gloves than the school lunch lady. \u00a0I just get in there and don&#8217;t worry about the gloves.) \u00a0Let the spinach marinate in the sauce for about 30 minutes at room temperature. \u00a0Taste for seasoning &#8211; you can add a tiny pinch of sea salt or more soy sauce if you like.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/?attachment_id=5635\" rel=\"attachment wp-att-5635\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5635\" alt=\"Cucumber Banchan\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/12\/cucumber-banchan.jpg\" height=\"399\" width=\"600\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/cucumber-banchan.jpg 4256w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/cucumber-banchan-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/cucumber-banchan-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong>Cucumber Banchan<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span class=\"Apple-style-span\" style=\"line-height:13px;\">4 Persian cucumbers, or one large hothouse cucumber<\/span><\/li>\n<li>1 teaspoon sea salt<\/li>\n<li>1 teaspoon sesame oil<\/li>\n<li>1 teaspoon rice vinegar<\/li>\n<li>1\/4 teaspoon sugar<\/li>\n<li>pinch hot pepper flakes<\/li>\n<li>1 teaspoon toasted sesame seeds<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span class=\"Apple-style-span\" style=\"line-height:13px;\">Wash cucumbers, and if you&#8217;re not using Persian cucumbers, remove the peel. \u00a0Slice very thinly into coins and put in a sieve. \u00a0Sprinkle with the sea salt and let sit for 15 minutes.<\/span><\/li>\n<li>In another bowl, mix together oil, vinegar, sugar and pepper flakes. \u00a0Rinse the cucumber and squeeze out any extra water. \u00a0Add to the oil mixture and let marinate for 30 minutes before eating. \u00a0Sprinkle with sesame
