{"id":5433,"date":"2012-09-16T01:00:11","date_gmt":"2012-09-16T06:00:11","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=5433"},"modified":"2013-09-15T20:37:11","modified_gmt":"2013-09-16T01:37:11","slug":"whats-on-your-plate-balsamic-glazed-turkey-meatloaf","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2012\/09\/16\/whats-on-your-plate-balsamic-glazed-turkey-meatloaf\/","title":{"rendered":"Balsamic Glazed Turkey Meatloaf"},"content":{"rendered":"<p>This week\u2019s edition of \u2018<i>healthy&#8230;but oh-so-yummy!<\/i>\u2019 centers on another comfort food\u2014 meatloaf.\u00a0 The way we have upped the healthy quotient is to use ground turkey along with &lt;shhhh!&gt; sliding in some veggies, like zucchini, mushrooms and onion.\u00a0Also, this recipe works\u00a0for\u00a0gluten-free eaters as the bread crumbs are eliminated and instant mashed potatoes are substituted!\u00a0 \u00a0This might be a good recipe for the NON-mushroom lovers to try \u2018cause you will never be able to detect them in the final product!\u00a0 <em>Balsamic Glazed Turkey Meatloaf<\/em>\u00a0 is also low in fat, high in protein, and simply delicious!\u00a0\u00a0 I almost always double this recipe \u2018cause the leftovers make a great meatloaf sandwich.\u00a0 Enjoy!<\/p>\n<p style=\"text-align: center;\"><span style=\"font-size: large;\">Balsamic Glazed Turkey Meatloaf<\/span><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/12\/03\/whats-on-your-plate-balsamic-glazed-turkey-meatloaf\/2012-11-27-19-17-58\/\" rel=\"attachment wp-att-5434\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-5434\" alt=\"2012-11-27 19.17.58\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/12\/2012-11-27-19-17-58.jpg?w=300\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/2012-11-27-19-17-58.jpg 960w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/12\/2012-11-27-19-17-58-300x225.jpg 300w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<p>2 tablespoons olive oil<\/p>\n<p>1 small zucchini<\/p>\n<p>8 ounces baby bella mushrooms\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/12\/03\/whats-on-your-plate-balsamic-glazed-turkey-meatloaf\/2012-12-02-02-31-17\/\" rel=\"attachment wp-att-5435\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-5435 alignright\" style=\"width: 265px; height: 225px;\" alt=\"2012-12-02 02.31.17\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/12\/2012-12-02-02-31-17.jpg?w=300\" width=\"453\" height=\"225\" \/><\/a><\/p>\n<p>1 small onion<\/p>\n<p>3 tablespoons chopped garlic in oil<\/p>\n<p>Kosher salt and freshly ground pepper<\/p>\n<p>1 large egg, lightly beaten<\/p>\n<p>1 teaspoon dried thyme<\/p>\n<p>2 tablespoons parsley flakes<\/p>\n<p>1 pound ground turkey (15% fat)<\/p>\n<p>1 pound ground turkey breast (7-10% fat)<\/p>\n<p>1 cup instant mashed potatoes<\/p>\n<p>1\/2 cup freshly grated Parmesan cheese<\/p>\n<p>1\/2 cup ketchup, divided<\/p>\n<p>3 tablespoons\u00a0prepared mustard<\/p>\n<p>1\/4 cup plus 2 tablespoons balsamic vinegar<\/p>\n<p>2 tablespoons dark brown sugar (alternately, I use 1 tablespoon molassses)<\/p>\n<p><strong><em>Directions:<\/em><\/strong><\/p>\n<p>Preheat the oven to 400 degrees. Line a small roasting pan with foil.<\/p>\n<p>Cut up the vegetables into a &#8220;small dice&#8221;-size, approximately 1\/4&#8243; cube (or use a food processor to chop them).
