Fajitas Salad"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/22\/gch-whats-on-your-plate-chicken-or-turkey-fajitas-salad\/chicken-fajitas-salad\/\" rel=\"attachment wp-att-4334\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4334\" title=\"Chicken or Turkey Fajitas Salad\" alt=\"\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/11\/chicken-fajitas-salad.jpg\" height=\"399\" width=\"600\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/chicken-fajitas-salad.jpg 3792w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/chicken-fajitas-salad-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/chicken-fajitas-salad-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Happy Thanksgiving! \u00a0Chances are, if you live in America, right now you are either preparing the Thanksgiving turkey, eating it, or wrapping up the leftovers! \u00a0There are so many great ways to use up leftover turkey, but if you are burned out on your old standbys and are looking for something different, I have the solution to your big bird blahs!<\/p>\n<p>There are two ingredients you may not have in your fridge right now that you need for this salad: \u00a0cilantro and chipotles in adobo. \u00a0Cilantro, that green leafy herb that imparts a fantastic flavor to many south-of-the-border dishes, should be easy to find in your grocery store. \u00a0Make sure you&#8217;re buying cilantro and not Italian parsley! \u00a0(Trust me, I&#8217;ve made this mistake!) \u00a0The chipotles in adobo will be in your &#8220;ethnic food&#8221; aisle at the grocery store. \u00a0They come in a small can, a little larger than a can of tomato paste. \u00a0These are smoked jalape\u00f1o peppers in a spicy red vinegar sauce. \u00a0Their smoky, rich taste is incomparable and irreplaceable in many Mexican dishes. \u00a0Once you taste them, you&#8217;ll never forget them! \u00a0They are not too spicy, but provide the perfect kick to everything they touch. \u00a0You only need one chipotle pepper in this recipe, so transfer the rest to a Tupperware container and stash them in your fridge &#8211; they last for a few months since they are already smoked and soaking in vinegar. \u00a0Blend one up and add to your next batch of chili!<\/p>\n<p>Everything else should be easy to procure. \u00a0This recipe makes two large dinner salads, or 4 or 5 side salads. \u00a0I serve this with chips and salsa, but feel free to supplement with whatever other Thanksgiving leftovers you have handy. \u00a0Rolls or garlic bread would be welcome (but maybe save the pumpkin pie for later.)<\/p>\n<p><strong>Chicken (or Turkey!) Fajitas Salad<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 teaspoon cumin seeds<\/li>\n<li>1 chipotle pepper in adobo sauce (and about a teaspoon of the sauce)<\/li>\n<li>1 large clove garlic<\/li>\n<li>1\/2 bunch cilantro (use the upper stems too, but discard the lower, tougher stems)<\/li>\n<li>1\/2 cup mayonnaise<\/li>\n<li>1\/2 cup plain yogurt or sour cream<\/li>\n<li>juice of 1\/2 lemon (or more &#8230; I like more!)<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/4 teaspoon sugar<\/li>\n<li>1\/2 large onion, sliced into thin strips<\/li>\n<li>1\/2 green bell pepper, sliced into thin strips<\/li>\n<li>1\/2 red, yellow, or orange bell pepper, sliced into thin strips<\/li>\n<li>1 zucchini, sliced into thin strips<\/li>\n<li>1 1\/2 cups cooked chicken or turkey, shredded<\/li>\n<li>1 avocado, sliced\u00a0(optional)<\/li>\n<li>2 tablespoons salsa (optional)<\/li>\n<li>large bag of salad greens &#8211; romaine is best, but regular old spring mix is fine too<\/li>\n<\/ul>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/22\/gch-whats-on-your-plate-chicken-or-turkey-fajitas-salad\/zucchini-peppers-onion-saute\/\" rel=\"attachment wp-att-4335\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4335\" title=\"Zucchini, Peppers, Onion Saute\" alt=\"\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/11\/zucchini-peppers-onion-saute.jpg\" height=\"399\" width=\"600\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/zucchini-peppers-onion-saute.jpg 3615w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/zucchini-peppers-onion-saute-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/zucchini-peppers-onion-saute-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Toast the cumin seeds over medium heat for a few minutes until they get a little darker and start smelling delicious. \u00a0When toasted, grind in food processor or pulverize in mortar and pestle. \u00a0(You could use pre-ground cumin, but please look into \u00a0buying the whole seeds!)<\/li>\n<li>With cumin in the food processor, add chipotle and a little adobo sauce, garlic, cilantro, mayonnaise, yogurt, lemon juice, salt and sugar. \u00a0Buzz to combine. \u00a0Taste for seasoning &#8211; too spicy?
