{"id":3887,"date":"2012-11-12T00:30:12","date_gmt":"2012-11-12T06:30:12","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=3887"},"modified":"2012-11-12T00:30:12","modified_gmt":"2012-11-12T06:30:12","slug":"gch-whats-on-your-plate-loaded-baked-potato-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2012\/11\/12\/gch-whats-on-your-plate-loaded-baked-potato-soup\/","title":{"rendered":"GCH: What&#8217;s on Your Plate? &#8211; Loaded Baked Potato Soup"},"content":{"rendered":"<p><strong>Yum<\/strong>!\u00a0 Who doesn\u2019t enjoy a baked potato with all the fixin\u2019s?!?\u00a0 Just picture it!\u00a0 What is <i>your<\/i> favorite topping?\u00a0 I admit it\u2014mine is bacon.\u00a0 And even choosing just what to put on top&#8230;when my husband gets done &#8220;loading&#8221; his potato, it is a masterpiece (and he enjoys every bite)!<\/p>\n<div id=\"attachment_3888\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/12\/gch-whats-on-your-plate-loaded-baked-potato-soup\/2012-11-09-19-11-15\/\" rel=\"attachment wp-att-3888\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-3888\" class=\"size-medium wp-image-3888\" title=\"2012-11-09 19.11.15\" alt=\"\" src=\"http:\/\/69.89.31.171\/~girlfrk8\/wordpress\/wp-content\/uploads\/2012\/11\/2012-11-09-19-11-15.jpg?w=300\" height=\"225\" width=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/2012-11-09-19-11-15.jpg 960w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2012\/11\/2012-11-09-19-11-15-300x225.jpg 300w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-3888\" class=\"wp-caption-text\">Healthy but oh-so-yummy Loaded Baked Potato Soup<\/p><\/div>\n<p>Last winter a friend asked if I would include this soup on the menu for one of our soup nights.\u00a0 I had never even heard of \u2018<strong><em>Baked Potato Soup<\/em><\/strong>!\u2019\u00a0 Well, you can only imagine the variety of recipes to be found out on the internet!\u00a0 Sadly, most I found were &#8220;loaded&#8221; with more than just yummy toppings!\u00a0 They also were loaded with many more calories than I desired to serve to my husband and guests!<\/p>\n<p>And that is how we get here to our <i>healthy but oh so yummy<\/i> version.\u00a0 This recipe includes cauliflower.\u00a0 Using cauliflower as a main ingredient does a number of things in a healthy but yummy way:<\/p>\n<p>&#8211; provides our bodies with more veggies<\/p>\n<p>&#8211; and for those of you trying to sneak veggies into your family\u2019s repertoire&#8230;perfect!<\/p>\n<p>&#8211; keeps the carb count down (approximately the same # of carbs in an entire head of cauliflower as in 1 russet potato)<\/p>\n<p>&#8211; bulks up the soup so it is thick and creamy without the any of the usual additions<\/p>\n<blockquote>\n<p style=\"text-align:center;\"><strong>Loaded Baked Potato Soup<\/strong><\/p>\n<p style=\"text-align:center;\">(makes approximately 5 cups; 4 servings)<\/p>\n<p style=\"text-align:center;\"><strong>soup<\/strong>:<\/p>\n<p style=\"text-align:center;\">2 medium-sized russet* potatoes, washed and dried<\/p>\n<p style=\"text-align:center;\">1 head of cauliflower, cut into florets<\/p>\n<p style=\"text-align:center;\">1-1\/2 cups chicken broth, or vegetable broth<\/p>\n<p style=\"text-align:center;\">1-1\/2 cups 2% milk (warmed)<\/p>\n<p style=\"text-align:center;\">salt and freshly ground black pepper<\/p>\n<p style=\"text-align:center;\"><strong>toppings<\/strong>:<\/p>\n<p style=\"text-align:center;\">2 slices bacon, cooked and crumbled (you can use turkey bacon if you wish)<\/p>\n<p style=\"text-align:center;\">1\/2 cup light sour cream<\/p>\n<p style=\"text-align:center;\">1 cup reduced-fat shredded sharp cheddar cheese<\/p>\n<p style=\"text-align:center;\">dried parsley<\/p>\n<p style=\"text-align:center;\">First get your baked potatoes going.\u00a0 After scrubbing them, pierce potatoes with a fork in 4 or 5 places.\u00a0 I prepared mine in the microwave oven (on high for 5 minutes; turn over and cook another 3-5 minutes, until tender).\u00a0 Or, you can bake them at 400\u00b0 for approximately 1 hour or until tender. Either way, when potatoes are done, cool for 10-15 minutes. Then they can be peeled and chopped.\u00a0\u00a0 This recipe is also a great way to use up leftover baked potatoes!<\/p>\n<p style=\"text-align:center;\">While the potatoes are cooking and cooling, you can prepare the other main ingredients.<\/p>\n<p style=\"text-align:center;\">Here\u2019s how I cook bacon: I stack the slices and, using kitchen scissors, I cut it into approximately 1-1\/2&#8243; to 2&#8243; pieces. I find that the bacon cooks much more quickly and evenly this way. Place the pieces into a COLD small frying pan, heat over medium heat.\u00a0 Once the bacon starts frying, reduce the heat a bit and cook to the desired degree of doneness, keeping a careful eye so that it does not burn.\u00a0 I like to cook bacon over a medium low heat so that most of the fat is rendered out.\u00a0 Using a slotted spoon or spatula, remove the bacon, leaving the drippings, and place onto a couple of paper towels to finish draining.\u00a0 Set aside for topping the soup.<\/p>\n<p style=\"text-align:center;\">Now while the bacon is cooking, place the cut-up cauliflower into a medium-sized pot along with the broth.\u00a0 Bring to a boil, reduce heat, then cover and simmer \u2018til tender.\u00a0 <b>Do not drain<\/b>.<\/p>\n<p style=\"text-align:center;\">Once cauliflower is cooked, add warmed milk and the chopped potatoes to the pot, and bring back to a boil. Reduce heat and simmer \u2018til thoroughly heated, stirring once or twice; this will take just a couple of minutes.\u00a0 Remove pot from heat.\u00a0 Now you are going to puree (smooth out) the soup.\u00a0 I use an immersion or stick blender** to puree.\u00a0 Other options would be to use a potato masher, or to puree the soup in your blender.\u00a0 You <b>must<\/b> be very careful doing it this way because it is <b>hot<\/b>! See below for tips (just \u2018cause God loves you&#8230;we don\u2019t want to see you get hurt!).\u00a0 I like to leave a few pieces of cauliflower and potato for texture. Once pureed, place pot back on very low heat, add sour cream, half the parsley, and season to taste with salt and pepper. cook on very low \u2018til heated to your preference, stirring occasionally.<\/p>\n<p style=\"text-align:center;\">OK!\u00a0 Time to &#8220;load&#8221; your potato soup!\u00a0 Ladle soup into each bowl.
