\u00a0This <strong>Roasted Potato and Cabbage Salad<\/strong> makes use of winter veggies to create a hearty and healthy side dish. \u00a0Next time I make this, I plan to add\u00a0either raisins or another dried fruit, maybe diced apricots; I think a bit of added sweetness would set off the herbs and cabbage wonderfully. \u00a0Eat this with eggs cooked to your liking for a light supper.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Roasted Potato and Cabbage Salad<br \/>\n<\/span><\/strong>(recipe courtesy of www.eyecandypopper.com)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>8 small potatoes (use different colors!)<\/li>\n<li>1 sweet potato<\/li>\n<li>1 or two\u00a0tablespoons of olive oil<\/li>\n<li>1\/2 head savoy cabbage, thinly sliced<\/li>\n<li>1 red onion, thinly sliced<\/li>\n<li>2 tablespoons Dijon mustard<\/li>\n<li>1\/4 cup\u00a0apple cider vinegar<\/li>\n<li>2 tablespoons tahini<\/li>\n<li>2 tablespoons honey or maple syrup<\/li>\n<li>1\/3 cup olive oil<\/li>\n<li>salt and pepper to taste<\/li>\n<li>handful of almonds, crushed or chopped coarsely (I used pumpkin seeds)<\/li>\n<li>fresh cilantro (optional)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 450*F. \u00a0Wash potatoes and sweet potato, slice thickly, and toss with a tablespoon of olive oil. \u00a0Line a pan with parchment paper\u00a0and bake for about 25 minutes. \u00a0Take care they don&#8217;t burn!<\/li>\n<li>While the potatoes bake, prepare the dressing: \u00a0in a resealable container, shake together the mustard, vinegar, tahini, maple syrup, olive oil, and salt and pepper.<\/li>\n<li>Slice the cabbage and onion very thinly. \u00a0Put them in a large bowl and toss with the dressing.<\/li>\n<li>When the potatoes are roasted, remove from the oven and let cool 5-10 minutes, then toss into the salad. \u00a0Top salad with almonds and cilantro (and next time I&#8217;m adding dried fruit here too!)<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I found this delicious recipe here and\u00a0I&#8217;m so glad I did!
