{"id":28785,"date":"2015-11-24T00:30:12","date_gmt":"2015-11-24T05:30:12","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=28785"},"modified":"2015-11-23T11:43:54","modified_gmt":"2015-11-23T16:43:54","slug":"gingerbread-cupcakes-2","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/11\/24\/gingerbread-cupcakes-2\/","title":{"rendered":"Gingerbread Cupcakes"},"content":{"rendered":"<div class=\"entry-content\">\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-30-20.38.40.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23117\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-30-20.38.40-225x300.jpg\" alt=\"2014-11-30 20.38.40\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-30-20.38.40-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-30-20.38.40-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/12\/2014-11-30-20.38.40-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p>For our family\u2019s Thanksgiving Feast (as the grandchildren call it!), we always divvy up of the different dishes that make up our spread. \u00a0This year, Robert and I are hosting the Feast at our home, so mine is the turkey to prepare (I always use Alton Brown&#8217;s <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/good-eats-roast-turkey-recipe.html\" target=\"_blank\">Brined Turkey<\/a> recipe), along with gluten-free gravy and the stuffing (see <a href=\"http:\/\/girlfriendscoffeehour.com\/2015\/11\/17\/cornbread-stuffing-with-sausage-and-veggies\/\" target=\"_blank\">my recipe I shared here<\/a> a couple of weeks ago). \u00a0 My daughter, Kassia and her mother-in-law Mary Ann are divvy-ing up the sides and salads! \u00a0And we each are making a dessert\u2026these spicy-sweet <span style=\"color: #993300;\"><em>Gingerbread Mini-Cupcakes<\/em><\/span> are my contribution. \u00a0Oh, they are so darling! \u00a0And just the perfect mouthful (and I mean FULL). \u00a0&lt;Of course you certainly could make these in a standard cupcake size, too!&gt;<\/p>\n<p>For those of you who are just beginning to follow the path of gluten-free baking, try this recipe. \u00a0When I first made these cupcakes, I used a \u2018gf all-purpose flour blend.\u2019 You can pick up a box in the gluten-free section of almost any grocery store. However, if you have a pantry filled with jars of different gluten-free flours, I used ** 1\/2 cup brown rice flour, 1\/4 cup tapioca flour, 1\/4 cup potato starch, 1\/4 cup hazelnut flour). \u00a0Note that these cupcakes are dairy-free if you prepare them with coconut oil\u2026and of course no whipped cream!<\/p>\n<p>This is a quick recipe to pull together\u2026and the mini-cupcakes only take 10-12 minutes to bake. \u00a0We will have ours with Spiced Whipped Cream (see the <a href=\"http:\/\/girlfriendscoffeehour.com\/2014\/11\/24\/pumpkin-pie-gf-nut-crust-spiced-whipped-cream\/\" target=\"_blank\">recipe \u00a0here<\/a>). \u00a0But they are equally yummy with a cream cheese frosting or a simple buttercream frosting, too. \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/2014-11-29-22.51.34.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-23112\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/2014-11-29-22.51.34-225x300.jpg\" alt=\"2014-11-29 22.51.34\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/2014-11-29-22.51.34-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/2014-11-29-22.51.34-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/11\/2014-11-29-22.51.34-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<h2 style=\"text-align: center;\"><span style=\"color: #993300;\">Mini Gingerbread Cupcakes<\/span><\/h2>\n<p><strong>ingredients<\/strong>:<br \/>\n1+1\/4 cup gluten-free all purpose flour blend **(see above)<br \/>\n1+1\/2 teaspoon ground ginger<br \/>\n1 teaspoon cinnamon<br \/>\n1\/4 teaspoon ground cloves<br \/>\n1\/2 teaspoon ground allspice<br \/>\n1\/4 teaspoon salt<br \/>\n4 tablespoons butter, room temperature (I used coconut oil)<br \/>\n1\/2 cup brown sugar<br \/>\n1\/2 cup molasses<br \/>\n1 egg, room temperature<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 cup boiling water<\/p>\n<p><strong>directions<\/strong>:<\/p>\n<ul>\n<li>set out the butter (or coconut oil) and egg to come to room temperature<\/li>\n<li>fill muffin\/cupcake tins with liners (mini = 30; regular = 12)<\/li>\n<li>preheat oven to 350<\/li>\n<li>mix flour(s) and spices together in a small bowl<\/li>\n<li>with mixer, cream together butter (or coconut oil) and sugar<\/li>\n<li>add egg, then molasses; beating \u2018til nice and creamy<\/li>\n<li>microwave the water in a measuring cup \u2018til boiling; remove and &lt;carefully&gt; stir in the baking soda; set aside to cool slightly<\/li>\n<li>add the dry ingredients to the mixer bowl, and blend for about 1 minute \u2018til it all comes together<\/li>\n<li>continue to blend while pouring in the water;
