Food blogger fail! \u00a0So I&#8217;m just giving you the recipe I found at <a href=\"http:\/\/abeautifulbite.com\/sausage-and-mushroom-stuffed-shells-with-pumpkin-sage-bechamel\/\">A Beautiful Bite<\/a>. \u00a0I do want to note that I switched out cottage cheese for ricotta in this recipe, and it worked great. \u00a0Just buzz it in the food processor for a few seconds and it&#8217;s indistinguishable from the pricier ricotta. \u00a0Also, I ran out of sage and I had to garnish with parsley. \u00a0In any case, this recipe was a big hit, and it reheats well, so we&#8217;ll be seeing this again in our house.<\/p>\n<p><span style=\"text-decoration: underline;\">\u00a0<strong>Sausage and Mushroom Stuffed Shells with Pumpkin Sage B\u00e9chamel<\/strong><\/span><\/p>\n<p>(Recipe Courtesy of <em>A Beautiful Bite<\/em>)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 pound pasta shells, cooked al dente<\/li>\n<li>32-ounce ricotta cheese (or use cottage cheese)<\/li>\n<li>2\/3 cup Parmesan cheese, grated<\/li>\n<li>1 egg<\/li>\n<li>1 teaspoon salt<\/li>\n<li>ground pepper to taste<\/li>\n<li>1 pound Italian sausage (I used sage breakfast sausage)<\/li>\n<li>2 large yellow onion, diced<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 cups fresh mushrooms, sliced<\/li>\n<li>4 fresh sage leaves, thinly sliced<\/li>\n<li>3 tablespoons butter<\/li>\n<li>2 tablespoons flour<\/li>\n<li>3 cups milk<\/li>\n<li>1 cup pumpkin puree<\/li>\n<li>1 cup Greek yogurt<\/li>\n<li>1\/2 cup Parmesan cheese, grated<\/li>\n<li>1\/3 cup ricotta cheese<\/li>\n<li>6 fresh sage leaves, thinly sliced<\/li>\n<li>1 1\/2 teaspoon salt<\/li>\n<li>pepper to taste<\/li>\n<li>1\/2 cup Parmesan cheese, grated for topping (I skipped this)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a large mixing bowl, combine ricotta cheese, Parmesan, egg, salt and pepper. \u00a0Set aside.<\/li>\n<li>Cook shells according to directions on box. \u00a0Drain and let cool.<\/li>\n<li>While shells are cooking, brown sausage in a large skillet. \u00a0Remove from skillet and place meat on a paper towel to drain. \u00a0Reserve 1 tablespoon of the fat to cook the onions in.<\/li>\n<li>Cook onions in fat over medium heat until translucent. \u00a0Add garlic and cook for just a minute. \u00a0Add mushrooms and sage and cook for another four to five minutes. \u00a0Remove from heat and add cooked sausage. \u00a0 Allow to cool for several minutes.<\/li>\n<li>Stuff shells with ricotta mixture, then top with sausage mixture. \u00a0Place shells in a 9&#215;13 baking dish. \u00a0Set aside while you prepare b\u00e9chamel sauce.<\/li>\n<li>In a large heavy pot, melt butter over medium heat. \u00a0Add flour and cook, stirring, for several minutes. \u00a0Add milk, pumpkin, yogurt, Parmesan, and ricotta. \u00a0Cook for a few minutes to thicken. \u00a0Add sage, salt and pepper.<\/li>\n<li>Pour b\u00e9chamel over shells. \u00a0Top with extra grated Parmesan. \u00a0Bake at 350*F for forty minutes.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Whoo, that&#8217;s a long title!
