\u00a0What a glorious taste! \u00a0It was rich, a tiny bit spicy, a little bitter, and a little fruity. \u00a0It was really a savory fiesta in my mouth. \u00a0However, when I went home with the intent to find out more about this magical dish and how to make it, all the recipes I saw were 40 ingredients long and took days to make. \u00a0No me gusta \u2013 I just didn\u2019t have time to mess with that. \u00a0So after some more research, I came up with this recipe \u2013 my\u00a0<strong>Easy Chicken Mole!<\/strong><\/div>\n<div><\/div>\n<div>The two ingredients that most moles share to give them such depth of flavor are dried chiles and chocolate. \u00a0Really! \u00a0Buy the darkest chocolate you can find. \u00a0You can use baker\u2019s unsweetened chocolate, but that will make it bitter, and you\u2019ll probably want to bring it back around with some added honey or brown sugar. \u00a0I used bittersweet chocolate, 63% cacao. \u00a0I think it worked well, and next time I might even add a little more.<\/div>\n<div><\/div>\n<div>As far as the chiles go, it gets a little confusing. \u00a0Oftentimes a chile will have one name when it\u2019s fresh and a different name when it\u2019s dried (I guess kind of like grapes vs. raisins.) \u00a0To be honest, I think I bought ancho chiles, but I\u2019m not sure \u2013 there were two kinds and neither were labeled! \u00a0You want chiles that are a very dark reddish-brown\u2014like the color of dried blood\u2014and about fist-sized. \u00a0I used two but I may use three or even four next time. \u00a0I removed the seeds, and that\u2019s where the heat resides, so you only get the smoky, fruity flavor of the chiles and not the spiciness.<\/div>\n<div><\/div>\n<div>Try this recipe. \u00a0If you\u2019ve never had mole, this is a great place to start. \u00a0If you are a mole aficionado, go ahead and tweak my recipe to get the taste you like. \u00a0Either way, I bet you\u2019ll say, Que sabor! \u00a0(Or if you don\u2019t\u00a0<em>habla espanol,<\/em>\u00a0\u2018So tasty!\u2019)<\/div>\n<div><\/div>\n<div><strong>Easy Chicken Mole<\/strong><\/div>\n<div>Ingredients:<\/div>\n<ul>\n<li>2-4 dried chiles (use ancho, pasilla, or guajillo)<\/li>\n<li>2 onions, chopped<\/li>\n<li>4 tablespoons butter<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>1\/4 cup sesame seeds (or use pepitas, peanuts, or almond butter)<\/li>\n<li>1\/4 cup dark chocolate chips<\/li>\n<li>1\/4 cup raisins<\/li>\n<li>1\/2 teaspoon ground cinnamon<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 teaspoon dried oregano<\/li>\n<li>2 cups chicken stock<\/li>\n<li>1\/2 cup brewed coffee<\/li>\n<li>2 slices bread<\/li>\n<li>2 pounds boneless, skinless chicken\u00a0thighs (or use breasts, up to you!)<\/li>\n<li>diced avocado, cilantro, sesame seeds to serve<\/li>\n<li>rice or tortillas to serve, optional<\/li>\n<\/ul>\n<div>Directions:<\/div>\n<ol>\n<li>Put the dried chiles in a bowl and cover with boiling water. \u00a0Put a plate over the bowl and let the chiles soak for about 15 minutes. \u00a0When they have softened, remove the stem and seeds and roughly chop. \u00a0Discard the stem, keep some seeds if you want some heat.<\/li>\n<li>While the chiles are soaking, cook the onion in the butter in a very large pot or Dutch oven. \u00a0Stir to make sure they don\u2019t burn.<\/li>\n<li>Add the chopped chiles, minced garlic, and sesame seeds. \u00a0Stir and cook for 3 minutes.<\/li>\n<li>Add the chocolate, raisins, cinnamon, salt, and oregano. \u00a0Stir to combine and cook for another 2 minutes.<\/li>\n<li>Add the chicken stock and coffee. \u00a0Crumble in the bread. \u00a0Cover the pot with a lid and simmer for 10 minutes.<\/li>\n<li>CAREFULLY transfer sauce to a blender and blend until pretty smooth. \u00a0You could use an immersion blender, too.<\/li>\n<li>Return the sauce to the pot and add the chicken. \u00a0Tuck them into the sauce and stir. \u00a0Make sure the chicken is covered in sauce, then cover the pot with a lid. \u00a0Let simmer for about 25 minutes.<\/li>\n<li>The chicken is done when you can shred it with forks. \u00a0To serve, ladle the chicken and lots of mole into a bowl. \u00a0Garnish with lots of avocado, cilantro and sesame seeds. \u00a0You can also eat this in tortillas \u2013 just serve with less sauce if you are making tacos. \u00a0You can also serve it over rice to soak up the sauce.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The first time I had mole (say\u00a0moe-lay) it was at a small but very well-regarded Mexican restaurant in Los Angeles, La Loteria. \u00a0I had heard of mole poblano before and decided to take a chance. \u00a0Que rico!
