{"id":28519,"date":"2015-11-06T00:30:31","date_gmt":"2015-11-06T05:30:31","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=28519"},"modified":"2015-11-05T22:22:02","modified_gmt":"2015-11-06T03:22:02","slug":"thai-coconut-chicken-soup-tom-kha-gai-2","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/11\/06\/thai-coconut-chicken-soup-tom-kha-gai-2\/","title":{"rendered":"Thai Coconut Chicken Soup (Tom Kha Gai)"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/Thai-Coconut-Chicken-Soup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-13297\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/Thai-Coconut-Chicken-Soup-1024x681.jpg\" alt=\"Thai Coconut Chicken Soup\" width=\"491\" height=\"327\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/Thai-Coconut-Chicken-Soup-1024x681.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/Thai-Coconut-Chicken-Soup-300x199.jpg 300w\" sizes=\"auto, (max-width: 491px) 100vw, 491px\" \/><\/a><\/p>\n<p>I am convinced that every culture, every civilization, has a chicken soup recipe. \u00a0Nothing else satisfies, or feels so much like a hug to the tummy, like a big bowl of chicken soup made by someone you love. \u00a0If you are like me and are a frugal girl, you buy a whole chicken at least once a week. \u00a0I remove the breasts and legs and cook them one night, then cook the carcass for broth and about two cups of shredded chicken left on the body. \u00a0If you have a chicken body and the desire to try something new, read on \u2013 here comes<strong>\u00a0Thai Coconut Chicken Soup<\/strong>, also known as Tom Kha Gai!<\/p>\n<p>Now that you know how to make\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/07\/05\/at-home-with-gch-homemade-coconut-milk-and-coconut-chia-pudding\/\">coconut milk from scratch<\/a>, you\u2019ll need about 2 cups of homemade coconut milk, or you can use one can of packaged coconut milk. \u00a0There are a few other unusual ingredients for this recipe: \u00a0ginger, cilantro, and fish sauce. \u00a0Ginger really isn\u2019t that out of the ordinary, and goes great in smoothies and peach dishes; but if you aren\u2019t going to use it soon, you can peel whatever is left and freeze it to use later. \u00a0Cilantro shows up in many different cuisines, so if you don\u2019t want to waste half a bunch of cilantro, you have many options (like Mexican or Indian food), or try<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/06\/14\/at-home-with-gch-asian-pasta-salad\/\">\u00a0this<\/a>\u00a0 and \u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/06\/28\/at-home-with-gch-curried-potato-salad\/\">this<\/a>. \u00a0Fish sauce is a savory liquid distillation of anchovies, sugar, and salt. \u00a0If you can\u2019t find it, you can still make the soup, but fish sauce is the secret ingredient that really brings everything together. \u00a0It keeps in the fridge forever, and is a great flavor booster for clam chowder or a substitute for anchovy paste (think Caesar salad.) \u00a0The only other ingredients you need are a chicken, some limes, and mushrooms. \u00a0Thai restaurants use straw mushrooms (you can find them in a can), but I used dried shiitake mushrooms, and they\u2019re delicious. \u00a0You could also use cremini mushrooms.<\/p>\n<p>Try this with Jasmine rice and a green salad for a light but satisfying dinner!<\/p>\n<p><strong>Thai Coconut Chicken Soup (Tom Kha Gai)<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 chicken body, breasts and legs removed (or use two cooked chicken breasts, diced, plus 3 cups of chicken broth)<\/li>\n<li>1 large piece of ginger, 2 or 3 inches long, peeled and bashed with the handle of your knife<\/li>\n<li>1 can coconut milk, or about 2 cups homemade coconut milk<\/li>\n<li>1 ounce dried mushrooms, broken into little pieces, or 8 ounces fresh mushrooms, chopped<\/li>\n<li>1\/2 bunch fresh cilantro, chopped<\/li>\n<li>1\/2 teaspoon or so fish sauce (to taste \u2013 if you don\u2019t have fish sauce, use salt)<\/li>\n<li>2 limes, juiced<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<blockquote>\n<ol>\n<li>In a large pot, cook the chicken carcass with 4 cups of water and the ginger, until the chicken is cooked through. Remove chicken to a large bowl; shred meat from bones and set aside. Strain the broth into another bowl, discarding ginger. Wash the pot and return to stove. Over medium low heat, add the dried mushrooms to the chicken broth and cook ten minutes.
