\u00a0I guess I was just &#8216;in a mood&#8217; for something like this&#8212;filling, creamy, sweet yet tangy&#8212;and it smelled so good! \u00a0AND still stayed within the healthy but oh-so-yummy parameters. \u00a0This is an easy, quick (minus the baking time for the potatoes) meal to prepare&#8230;and could be a simple meatless meal, too.<\/p>\n<p>The &#8220;twice-baked&#8221; potatoes of my past have been big ol&#8217; russets&#8230;with butter a-n-d sour cream. \u00a0(how about you?) \u00a0The sweet potatoes, while yes, still containing lots of carbs also are high in fiber and lots of good vitamins and minerals i.e., beta-carotene and anti-oxidants. \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/11\/2015-10-30-19.46.12.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28436\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/11\/2015-10-30-19.46.12-300x224.jpg\" alt=\"2015-10-30 19.46.12\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/11\/2015-10-30-19.46.12-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/11\/2015-10-30-19.46.12-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\"><strong>Twice-Baked Sweet Potatoes<\/strong><\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong><\/span><strong>:<\/strong><\/p>\n<p>2 large &#8211; extra large sweet\u00a0potatoes<br \/>\n1\/2 small red onion, diced small<br \/>\n1\/2 red or yellow bell pepper, diced small<br \/>\n1\/4 &#8211; 1\/3# \u00a0asparagus, trimmed and cut into 1\/2-inch pieces<br \/>\n6 ounces ham, diced (I used a ham steak)<br \/>\n1\/2 cup Greek yogurt (or sour cream)<br \/>\n4 ounces gorgonzola cheese, crumbled, divided<br \/>\n1\/4 teaspoon salt<br \/>\n1\/4 teaspoon white or black pepper<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>bake sweet potatoes at 400 for 35-45 minutes, depending on size &#8217;til soft. \u00a0when done, set out to cool for 3 or 4 minutes. \u00a0slice off the very tops and, carefully, scoop out the majority of the baked potato. leave the shells to one side and place the filling into a large bowl and mash up.<\/li>\n<li>meanwhile, in a large saute pan over medium high heat, heat oil and add the cutup veggies. \u00a0cook, stirring occasionally, for 6-8 minutes &#8217;til asparagus pieces are just tender when poked with a sharp knife tip. remove from pan and add to bowl with mashed sweets<\/li>\n<li>add the ham chunks to the pan and cook 5 minutes or so, allowing to brown up just a bit<\/li>\n<li>add to the bowl with the \u00a0veggies<\/li>\n<li>add the Greek yogurt along with most of the gorgonzola (save a bit out for topping); mix together completely. season to taste with s&amp;p.<\/li>\n<li>place the potato shells into a baking dish and add back the potato mash with veggies and ham (they will be<strong> very<\/strong> well-stuffed.)<\/li>\n<li>top each stuffed potato with a bit of the remaining cheese<\/li>\n<li>place in oven for 10 minutes or so &#8217;til cheese is melting and filling heated piping hot<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff9900;\">\u2665 \u00a0 \u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665 \u00a0 \u2665<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #ff9900;\">\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff9900;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh, now this was comfort food!
