{"id":28277,"date":"2015-10-23T00:30:30","date_gmt":"2015-10-23T04:30:30","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=28277"},"modified":"2015-10-23T01:10:09","modified_gmt":"2015-10-23T05:10:09","slug":"spinach-pakoras-with-royal-dip","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/10\/23\/spinach-pakoras-with-royal-dip\/","title":{"rendered":"Spinach Pakoras with Royal Dip"},"content":{"rendered":"<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28278\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-300x225.jpg\" alt=\"Spinach Pakora\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>I first had these delicious veggie fritters at a stand at the farmer&#8217;s market. \u00a0I&#8217;d never seen them before, but it was love at first bite! \u00a0I swore I&#8217;d have to find a way to make them at home &#8211; and I did! \u00a0<strong>Spinach Pakoras with Royal Dip<\/strong> are healthy, tasty, vegetarian and gluten-free too! \u00a0These Indian snacks are eaten with a minty yogurt dip and are a popular street food.<\/p>\n<p>The only ingredient that may be a bit tough to find is chickpea flour. \u00a0Also called gram flour or besan flour, it&#8217;s just dried garbanzo beans ground powder-fine. \u00a0I made it at home, and while it took a bit of time because my food processor is wimpy, it worked very well! \u00a0If you do grind your own, you will need to sift it through a fine sieve, and return any pebbles to the food processor for a finer grind. \u00a0After that, it&#8217;s smooth sailing. \u00a0If you&#8217;re lucky enough to have an Indian grocery store nearby, stop in and buy some chickpea flour &#8211; and whatever else catches your eye and tempts your nose!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-with-Royal-Dip.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28279\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-with-Royal-Dip-225x300.jpg\" alt=\"Spinach Pakora with Royal Dip\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-with-Royal-Dip-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-with-Royal-Dip-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/Spinach-Pakora-with-Royal-Dip-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Spinach Pakoras with Royal Dip<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 cup Greek yogurt<\/li>\n<li>1 clove garlic, finely minced<\/li>\n<li>1 tablespoon cilantro, finely minced<\/li>\n<li>1 tablespoon mint, finely minced<\/li>\n<li>1 cup chickpea flour<\/li>\n<li>1 teaspoon curry powder<\/li>\n<li>1\/2 teaspoon \u00a0ground fennel seeds<\/li>\n<li>2 tablespoons rice flour (or use more chickpea flour, or use regular flour)<\/li>\n<li>2 cups fresh spinach or other hearty greens (mustard, collard, kale), chopped<\/li>\n<li>1\/2 onion, cut into very thin strings<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1\/4 cup water (may use more or less)<\/li>\n<li>oil for frying: \u00a0grapeseed, coconut, peanut, or vegetable oil<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Make the Royal Dip: \u00a0stir together the yogurt, garlic, cilantro, and mint. \u00a0Cover and refrigerate.<\/li>\n<li>Mix together the chickpea flour, curry powder, fennel, and rice flour in a large bowl.<\/li>\n<li>Mix in the spinach and onion.
