\u00a0 Meatloaf is on our menu 2 or 3 times each month&#8230;along with the leftovers, too. \u00a0So, I am always on the lookout for an additional FABulous ingredient to change it up. \u00a0\u00a0We got over the hurdle of making it gluten free by the addition of dehydrated potatoes (or, even better, dehydrated sweet potatoes&#8230;oh!my!). \u00a0But that doesn\u2019t fit into our menu right now. \u00a0For a month or so now, we have been eating <strong>really<\/strong> low-carb&#8230;which presents a problem with meatloaf. \u00a0So I been thinking of something to sub in for breadcrumbs or dehydrated potatoes. \u00a0And I thought perhaps some leftover quinoa&#8230;and when I googled some recipes, I found that this was not an original thought. \ud83d\ude09 \u00a0There&#8217;s a ton of recipes and variations out there! \u00a0Here is what we enjoyed; hope you and your loved ones do, too!<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #993300;\">Turkey-Quinoa Meatloaf<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-13-18.46.21.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28211\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-13-18.46.21-225x300.jpg\" alt=\"2015-10-13 18.46.21\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-13-18.46.21-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-13-18.46.21-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-13-18.46.21-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>ingredients<\/strong> <\/span>:<\/p>\n<p>1 T olive or coconut\u00a0oil<br \/>\n1 small sweet onion<br \/>\n1 small zucchini<br \/>\nhandful of baby carrots<br \/>\n1 stalk celery<br \/>\n1\/2 red pepper<br \/>\n1\/2 yellow pepper<br \/>\nhandful mushrooms<br \/>\n2# ground turkey, 94 or 99%<br \/>\n2 large eggs, whisked<br \/>\n1\/4 cup spicy mustard (or bbq sauce, or ketchup)<br \/>\n2 cups cooked quinoa, cooled<br \/>\n1 T dried parsley<br \/>\n1 T dried thyme (or oregano)<br \/>\n1 T each, sea salt and freshly ground pepper<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong> <\/span>:<\/p>\n<ul>\n<li>preheat oven to 375<\/li>\n<li>line a large baking sheet with parchment paper<\/li>\n<li>clean all veggies and cut into chunks<\/li>\n<li>in batches (depending on size of your food processor) chop all of the veggies into small-sized dice<\/li>\n<li>heat oil in a large saut\u00e9 pan over medium high heat<\/li>\n<li>add the chopped veggies, stir &#8217;til oil is well distributed. \u00a0cook veggie mixture &#8217;til softened. \u00a0set aside and let cool<\/li>\n<li>in a very large mixing bowl, combine turkey, eggs, cooled quinoa and vegetables, herbs and seasonings.<\/li>\n<li>mix well by hand &#8217;til thoroughly combined<\/li>\n<li>divide in 1\/2; shape into two equal loaves about 2-3 inches high on the parchment paper-lined baking sheet<\/li>\n<li>bake for 40-45 minutes. done when temp reaches 165. allow to sit for 5 minutes or so to firm up<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #993300;\">\u2665 \u00a0 \u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665 \u00a0 \u2665<\/span><\/p>\n<p>God loves you!<span style=\"color: #993300;\">\u00a0\u00a0\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #993300;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ahhh, meatloaf! \u00a0Either you love it&#8230;or you hate it. \u00a0(Doesn\u2019t it seem that most folks fall into one category or the other?) \u00a0How about your family?
