\u00a0This <strong><span style=\"color: #3366ff;\">Roasted Shrimp and Asparagus<\/span><\/strong> is just that! \u00a0From starting the oven to preheat to plating this dish takes maybe 30 minutes (or less). \u00a0And it fits so well into our healthy but-oh-so-yummy POV. \u00a0Low carb, low fat but not low in flavor! \u00a0Between the ginger and garlic, the tangy-ness of the soy sauce, and finished off with the smokiness of the sesame oil&#8212;just delish! \u00a0Enjoy!<\/p>\n<p>(Oh! \u00a0Keep your eye on the shrimp while roasting&#8230;they won&#8217;t take very long at all. \u00a0Don&#8217;t forget that they have their own built-in thermometer: they turn pink when perfectly done!)<\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #3366ff;\">Ginger-y Roasted Shrimp and Asparagus<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-06-18.43.43.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28104\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-06-18.43.43-300x224.jpg\" alt=\"2015-10-06 18.43.43\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-06-18.43.43-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-06-18.43.43-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span>:<\/strong><br \/>\n1 cup quinoa (cook according to package directions)<br \/>\n1\/2# (or more) raw shrimp, cleaned<br \/>\n1 bunch asparagus (about 1#), ends trimmed<br \/>\n1 T olive oil<br \/>\n2 T soy sauce<br \/>\n2 T minced garlic<br \/>\n1 T honey<br \/>\n1 T \u00a0fresh ginger, minced<br \/>\n1 tsp sesame oil<br \/>\nsea salt, freshly ground pepper<\/p>\n<p><strong><span style=\"text-decoration: underline;\">directions<\/span>:<\/strong><\/p>\n<ul>\n<li>preheat oven to 425<\/li>\n<li>line a baking sheet with parchment paper<\/li>\n<li>place asparagus stalks on the baking sheet and drizzle with the olive oil; roll back and forth to thoroughly coat the asparagus<\/li>\n<li>in a small bowl, combine the soy sauce, garlic, honey, and ginger<\/li>\n<li>using a pastry brush (or your fingers!), brush about half the mixture on the asparagus<\/li>\n<li>place in over and roast for 15-20 minutes, \u2018til almost tender<\/li>\n<li>remove pan from oven and toss shrimp onto the pan; brush with a little of the sauce mixture<\/li>\n<li>return to oven for 5 minutes or so (depends on the size of the shrimp)<\/li>\n<li>when everything is done\u2014pile the quinoa in the middle of your plate, add asparagus spears and top with shrimp<\/li>\n<li>drizzle the remaining sauce over top along with a few drops of the sesame oil<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #3366ff;\">\u2665 \u00a0 \u2665\u00a0\u00a0\u00a0\u2665\u00a0\u00a0\u00a0\u2665 \u00a0 \u2665<\/span><\/p>\n<p>God loves you!\u00a0\u00a0<span style=\"color: #3366ff;\">\u2665\u00a0<\/span>\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #3366ff;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We all need a few tried-and-true QUICK suppers for our menu planning; yes?
