\u00a0Whether you are blessed to have fresh herbs on hand or are relying (like me) on your stash of dried herbs, this is a very tasty way to serve roasted cauliflower.<\/p>\n<p>Large, beautiful heads of cauliflower are super-abundant in our area now and for the rest of the Fall season. \u00a0Cauliflower makes for an excellent low carb stand-in for more traditional carb-laden foods like potatoes and rice. \u00a0Here are <a href=\"http:\/\/articles.mercola.com\/sites\/articles\/archive\/2014\/02\/22\/cauliflower-health-benefits.aspx\" target=\"_blank\">some nutrition facts<\/a> which will show the value of eating (often!) this wonderful veggie.<\/p>\n<p>And this whole recipe from cutting up the cauliflower (<a href=\"http:\/\/www.popsugar.com\/food\/How-Cut-Cauliflower-Florets-33426186?stream_view=1#photo-37630170\" target=\"_blank\">here&#8217;s a link <\/a>to an efficient way to do that job) to grating on the Parm right before serving will take you just about one half hour&#8230;really!<\/p>\n<h3 style=\"text-align: center;\">Herb-licious Roasted Cauliflower Skillet<\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-04-19.56.25.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-28002\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-04-19.56.25-300x224.jpg\" alt=\"2015-10-04 19.56.25\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-04-19.56.25-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/10\/2015-10-04-19.56.25-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\"><em>ingredients<\/em><\/span><\/strong>:<br \/>\n1 head cauliflower, about 2#<br \/>\n3-4 tablespoons olive oil (or coconut oil), divided<br \/>\n2-3 teaspoons (combined) of dried herbs (thyme, tarragon, crushed rosemary), your choice<br \/>\nsea salt, freshly ground pepper<br \/>\n2 (or more!) tablespoons of minced garlic<br \/>\n3 links of uncooked chicken (or turkey) sausage, removed from casings<br \/>\n1\/2 # ground chicken or turkey<br \/>\n1 medium onion, diced<br \/>\nhandful of grape or cherry tomatoes, halved<br \/>\n2 tablespoons finely grated Parmesan cheese<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>directions<\/strong><\/em><\/span>:<\/p>\n<ul>\n<li>heat the oven to 425; line a baking sheet with parchment paper<\/li>\n<li>cut the cauliflower up into bite-sized florets; and place into a large bowl<\/li>\n<li>add 2 (or 3 if necessary) tablespoons of oil, all the herbs and a teaspoon each of s&amp;p; combine<\/li>\n<li>pour onto the lined baking sheet and bake for 15 minutes; pull out of the oven<\/li>\n<li>scatter the minced garlic and tomatoes over the cauliflower and gently combine<\/li>\n<li>continue to roast for another 5 minutes or so \u2018til cauliflower is lightly browned and easily pierced with a sharp knife; remove from oven<\/li>\n<li><em>meanwhile<\/em>, heat 1 tablespoon of oil in a large saut\u00e9 pan over medium-high heat<\/li>\n<li>add the onion and sausage and cook for 5 minutes, using a spoon to break up the meat as it cooks<\/li>\n<li>crumble in the ground meat; and continue to cook for another 6 minutes or so \u2018til all the meat is thoroughly cooked through and broken up into small-ish chunks;\u00a0reduce heat to very low<\/li>\n<li>taste the &lt;thoroughly cooked&gt; meat, add s&amp;p to taste<\/li>\n<li>when cauliflower is ready, add to skillet and stir to combine<\/li>\n<li>top with cheese, if desired<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #3366ff;\">\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665\u00a0<\/span><\/p>\n<p>God loves you!<span style=\"color: #3366ff;\">\u00a0\u00a0\u00a0\u2665<\/span>\u00a0\u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #3366ff;\">\u2665<\/span>\u00a0\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So, to spare you another butternut recipe \ud83d\ude09 here&#8217;s one that is delicious&#8212;HERB-licious, that is!
