{"id":27891,"date":"2015-09-29T00:30:39","date_gmt":"2015-09-29T04:30:39","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=27891"},"modified":"2015-09-29T06:13:21","modified_gmt":"2015-09-29T10:13:21","slug":"apple-butternut-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2015\/09\/29\/apple-butternut-soup\/","title":{"rendered":"Apple-Butternut Soup"},"content":{"rendered":"<p>Oh! \u00a0&#8216;Tis the season&#8230;apple season, that is! \u00a0Here in NY State, our farmers grow a huge portion of the country&#8217;s apple crop&#8230;and it is a GOOD one this year! \u00a0We are going apple picking next week but I didn&#8217;t want to wait to start with the recipes. \u00a0This one, <span style=\"color: #ff9900;\">Apple-Butternut Soup<\/span>, included a few tart green Granny Smith apples. The tartness of the apple along with the sweetness of the squash melded together nicely. \u00a0This recipe is simple and easy, (and quick too!) and makes a smooth, thick soup which was very filling and satisfying. \u00a0If you would like to keep your soup vegetarian (or vegan), just use vegetable broth. \u00a0This soup fits perfectly into our healthy but oh-so-yummy POV, too. \u00a0Enjoy!<\/p>\n<p>And please don&#8217;t let the task of cutting up the squash scare you off! \u00a0Be sure to use a sharp knife and just be careful. \u00a0I used a melon baller to scoop out the seeds and all the string-y business. \u00a0Here are a couple of pics of the process.<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-16.43.57.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-27895\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-16.43.57-150x150.jpg\" alt=\"2015-09-26 16.43.57\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<h2 style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-16.48.37.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-27896\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-16.48.37-150x150.jpg\" alt=\"2015-09-26 16.48.37\" width=\"150\" height=\"150\" \/><\/a><\/h2>\n<h2 style=\"text-align: center;\"><\/h2>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\"><\/h2>\n<p>&nbsp;<\/p>\n<h2 style=\"text-align: center;\">\u00a0<span style=\"color: #ff9900;\">Apple &#8211; Butternut Soup<\/span><\/h2>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-18.38.34.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-27894\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-18.38.34-300x224.jpg\" alt=\"2015-09-26 18.38.34\" width=\"300\" height=\"224\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-18.38.34-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-26-18.38.34-1024x765.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span>:<\/strong><\/p>\n<p>1 large butternut squash (3#), peeled and seeded, cut into 1-1+1\/2\u2033 cubes<br \/>\n2-3 tablespoons extra-virgin olive oil, divided<br \/>\nsea salt and freshly ground pepper (I use lemon-pepper blend)<br \/>\n1 sweet onion, chopped small<br \/>\n2 tablespoons finely minced fresh ginger<br \/>\n2 tablespoons chopped garlic (I use jarred)<br \/>\n2 or 3 apples, peeled and chopped<br \/>\n2 quarts chicken stock<br \/>\n1 cup cider (or additional broth)<br \/>\n1 cup water<br \/>\nbig handful fresh greens (baby spinach, kale, arugula), sliced thinly<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>directions<\/strong><\/span>:<\/p>\n<ul>\n<li>preheat oven to 425<\/li>\n<li>line large baking sheet with parchment paper<\/li>\n<li>in a large bowl, use just enough olive oil to lightly coat the squash and season well w\/ s&amp;p<\/li>\n<li>pour seasoned squash onto the baking sheet; spread them out in a single layer&#8230;use two pans if necessary (I needed two)<\/li>\n<li>roast until just beginning to brown, about 20-25 minutes; remove from oven and set aside<\/li>\n<\/ul>\n<p>meanwhile\u2026<\/p>\n<ul>\n<li>in a 6 quart stockpot, heat 1 tablespoon olive oil and saute onion for 8-9 minutes over medium heat (or \u00a0\u2018til softened and translucent)<\/li>\n<li>reduce heat to low; add ginger and garlic and continue to cook for 1-2 minutes stirring constantly &#8217;til fragrant<\/li>\n<li>add chopped apples, cider, chicken stock and water;\u00a0bring to a boil, reduce heat to a simmer<\/li>\n<li>save out a cup or so of the roasted butternut; add the rest to the pot and simmer \u00a0for 15 minutes or \u00a0so<\/li>\n<li>using an immersion blender**, puree soup &#8217;til <em>almost<\/em> smooth<\/li>\n<li>carefully taste and season, if necessary, with salt and pepper<\/li>\n<li>place a handful of sliced greens and some of the reserved squash in bottom of bowl; fill with soup<\/li>\n<\/ul>\n<p>**also can be pureed in a standard blender <strong><em>but be very carefu<\/em><em>l<\/em> <\/strong>and puree in batches<\/p>\n<p style=\"text-align: center;\">\u00a0 <span style=\"color: #ff9900;\">\u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665\u00a0<\/span><\/p>\n<p>God loves you!\u00a0<span style=\"color: #ff9900;\">\u00a0\u00a0\u2665\u00a0\u00a0<\/span>(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #ff9900;\">\u2665\u00a0<\/span>\u00a0coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh!
