\u00a0So, I figured I should dust off my soup recipes and find a few more that I could add to our soup repetoire.<\/p>\n<p>This\u2014Veggie-full Chicken Chili\u2014filled a vacancy amongst the recipes I rely on. \u00a0And it fits so well into our healthy but oh-so-yummy POV. \u00a0 NOTE: Important to keep the size of the veggies approximately the same size so that they will cook well together.<\/p>\n<p>And this easily could be adapted in a few different ways to make it just exactly the way YOUR family would enjoy it:<br \/>\n&#8211; \u00a0increase the spices<br \/>\n&#8211; \u00a0use a different bean (or more beans)<br \/>\n&#8211; \u00a0add more liquid<br \/>\n&#8211; \u00a0skip the tomatoes (now it is a White Chicken Chili)<br \/>\n&#8211; \u00a0add more variety of veggies and leave out the chicken<\/p>\n<p>I would love to hear how you tweaked it and made it your own! \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.37.04.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-27790\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.37.04-300x225.jpg\" alt=\"2015-09-19 19.37.04\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.37.04-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.37.04-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #ff6600;\">Veggie-full Chicken Chili<\/span><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<\/p>\n<p>2 to 3 tablespoons olive oil<br \/>\n1# ground white-meat chicken<br \/>\n1 medium onion, diced<br \/>\n1 large red, orange or yellow bell pepper, seeded and diced<br \/>\n2 small zucchini, diced<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.10.50.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-27791\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.10.50-225x300.jpg\" alt=\"2015-09-19 19.10.50\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.10.50-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.10.50-768x1024.jpg 768w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2015\/09\/2015-09-19-19.10.50-300x400.jpg 300w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\n5-6 ounces baby bella mushrooms, diced<br \/>\n2 tablespoons minced garlic<br \/>\n1 teaspoon ground cumin<br \/>\n1 tablespoon chipotle powder<br \/>\n2 teaspoons dried coriander, or oregano<br \/>\n1 teaspoon sea salt<br \/>\n1 tablespoon freshly ground black pepper<br \/>\n1 (15 ounce) can chickpeas, rinsed and drained<br \/>\n1 jar of salsa (I used salsa verde)<br \/>\n2 heaping tablespoons tomato paste<br \/>\n1\/2 of a 28 ounce can chunky crushed tomatoes<br \/>\n2 cups chicken broth<br \/>\ntoppings: chopped fresh cilantro, diced avocado, shredded cheese, sour cream<\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"text-decoration: underline;\">directions<\/span><\/strong>:<\/p>\n<ul>\n<li>heat 1 teaspoon of oil in a large saute pan over medium-high heat<\/li>\n<li>carefully add the chicken; cook for 5-6 minutes, gently chopping so that it breaks down into small pieces and \u2018til the chicken is cooked through<\/li>\n<li>remove to a bowl and set aside<\/li>\n<li>add a tablespoon of oil to the pan; when heated, add the onion and peppers. cook for 5 minutes<\/li>\n<li>then add in the zucchini and mushrooms; stir together to distribute the oil (adding a bit more if necessary); cook \u2018til all veggies are softened<\/li>\n<li>lower heat; add garlic and spices; stir constantly for 1 minute or so \u2018til fragrant<\/li>\n<li>increase heat again to medium and add in the chickpeas, salsa, tomato products and broth; stir well to thoroughly combine; bring up to a simmer<\/li>\n<li>reduce heat and allow to simmer for 15 minutes or so<\/li>\n<li>serve along with any of the toppings you prefer<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p>God loves you!
